A Word From Us
A big heartfelt thank you from everyone at NorthBound Magazine. Starting off last month’s issue under a bit of uncertainty, to sending it to press under a full lockdown and unable to buy any pasata, loo roll or hand sanitiser from the shops - it was a strange month to say the least. However, the amount of emails we received from readers was fantastic, and it’s really spurred us on to keep going and produce this May issue. Honestly, thanks for that. It means a lot. For us, and everyone else, it’s hard to escape slipping into a state of reflection during these times. Flicking through some issues of NorthBound over the last 10 months, our Shot of the Month pages have always been of the highest quality. That isn’t me tooting my own horn, that’s down to all the readers and local snappers who’ve sent in their shots to be featured. This issue is all about them, in particular Walkley resident Michael Barnes who snapped our gorgeous cover shot. We’re still working through a back log of submissions for that feature, so bear with me if you haven’t been featured yet. We also had a look back at some of the older landmarks that have dominated (and still do in some ways) the Sheffield skyline. Did we miss any of your favourites out? You know what to do. Let us know! Food For Thought Plans for a food hall at historic Oughtibridge paper mill site New plans for the renovation of an historic paper mill in Sheffield have been submitted with the intention of bringing a unique food hall and innovative housing to Oughtibridge. Sky-House Co has secured approval for 35 of its ‘Sky House’ homes – a back-toback housing concept pioneered by CODA Studios – are now preparing to submit further plans to Sheffield city council for a development comprising 24 threebedroom ‘Sky Houses’, six three-bed end-terraces and a further five four-bed riverside properties. The old Mill Cottages will also be converted into four apartments and a cottage. The existing mill building on the site could be turned into a mixed-use food hall, community hub and leisure facility, also featuring facilities for start up businesses. Sky-House Co co-founder David Cross said: “The interest in this site has been enormous and we are already in talks with

two operators who are very interested in the food hall development, which would bring a new dining experience to the north of Sheffield and serve what is set to become one of the city’s most ambitious residential developments. “The food hall will be a fantastic community, family and social space that will be of benefit not only to the people on this site but also for the north of Sheffield as a whole. “And having seen the success of our Krynkl development at Shalesmoor in Sheffield, we are very keen to give the same sort of support to start up businesses in this part of the city too, working with independent business to create an exciting new dynamic. “This whole site has enormous potential and if plans to re-establish the Woodhead rail link also prove viable it this whole area will have access not just to Sheffield but to Manchester.”

Paul Heaton and Jacqui Abbott to play free gig for NHS workers Paul Heaton and Jacqui Abbot will play a free show for NHS staff working on the frontline of the Coronavirus pandemic in Sheffield later this year at the City Hall venue in the city centre. Paul, who spent his childhood in Sheffield, and Jacqui are giving away thousands of tickets for the show on Wednesday 28th October. “Hospital staff can never be thanked enough”, Heaton said. “The Coronavirus pandemic should remind everyone, and let no-one forget, that our National Health Service is the most brilliant and significant institution in our lives. We are just musicians, so there is little we can do but sing." Applications can only be made by trade union members who work in social care or care homes.
Ticket holders must bring their membership cards to the show and their names must match those on the tickets. Guests must enter at the same time. Sue Wood, GMB senior organiser, said: “We're so proud to be part of this event with Paul and to do something special for the care workers who are helping to keep the country running. “Unions are all about the values of solidarity and mutual support we're proud to be coming together in Sheffield.” For more information head over to tinyurl.com/y7wzl3ue

The Plague Village
Back in 1665, there was very little knowledge of how germs spread or the importance of personal hygiene. What many people don’t know is that a small village in Derbyshire selfsacrificed themselves to avoid the Great Plague spreading beyond their tiny confines – and as a result suffered double the mortality rate of London and saved countless lives. The small village of Eyam was infected when the local tailor ordered a bale of cloth from London. To prevent the deadly disease spreading elsewhere, Eyam cut all ties with the outside world and confined themselves to the village for 14 months. Only 83 villagers out of 350 survived. Now, the village of Eyam celebrates this bravery with a remembrance service held every Plague Sunday, generally the last Sunday in August.

pieceby piece Barnsley art gallery turns collection into online jigsaw The Cooper Gallery in Barnsley has turned its collection into jigsaws for people to piece together online, with a daily challenge put to their followers on Facebook. People from all over the globe have logged on to solve them in the quickest time, with people as far away as Brazil joining in the lockdown fun. Councillor Tim Cheetham said: “In these unusual and difficult times Barnsley Museums want to bring joy and excitement direct to people’s homes. These free online, digital jigsaws will not only raise a smile
but also highlight the magnificent collection which The Cooper Gallery is proud to display.” The Cooper Gallery is home some 400 works dated from the 17th to 20th Century and includes paintings by artist JMW Turner. The best times for each puzzle – posted daily – are then displayed on a leader board. REGENERATION New investment brings huge West Bar Square development a step closer A new investment of £150m from Legal & General is set to bring forward the first phase West Bar Square – a huge mixed-use regeneration project which aims to link Sheffield city centre with the bustling Kelham Island area. The company has partnered with Sheffield City Council and Urbo (West Bar) Ltd – the development will comprise 200,000 sq ft of Grade A office space, 350 built-to-rent homes, a multi-storey car park and landscaped public spaces. The first phase will comprise a large footprint, modern office space and is expected to accommodate up to 1,800 workers. Nigel Wilson, chief executive of Legal & General, said: “There has never been a more important time to invest in our regional cities. Legal & General is in a unique position to support the UK economic recovery by recycling hard earned savings and pensions into real assets which promote job creation – through construction to office occupation – and create landmark master plans which incorporate grade A office space, a variety of housing and high quality public space. “This is not new territory for L&G. Our investment partnerships in
cities such as Cardiff and Newcastle are already delivering at pace. Likewise our vision for West Bar Square is to deliver a much needed new quarter for the centre of Sheffield. Tramlines 2019 - giles smith
Giles Smith snapped this incredible panoramic of Hillsborough Park during Tramlines Festival last year. More than 30,000 festivalgoers visited the North Sheffield park each day, bringing a wondrous party atmosphere to the area throughout the weekend. It remains to be seen whether Tramlines 2020 will go ahead, but fingers crossed it eventually takes place when it’s safe to do so.

More Hall reservoir is a popular walking destination situated in the Ewden Valley between Wharncliffe Side and Deepcar. Local sights include Prehistoric earthworks, Bronze Age barrows and the legendary Wantley Dragon – made famous by Thomas Percy in his work ‘Reliques of Ancient English Poetry’ in 1767. Behind The Lens We caught up with the man behind our cover shot michael barnes to discuss his love for photography and shooting in Sheffield.
So the audience is an important part of your creative process as a comedian? How did you get into photography? I’ve always liked taking pictures however my route into professional photography was accidental really. I am a lover of space and got a DSLR camera initially to image the night sky. I then began using it to capture walks, trips to the zoo and all of the normal things you would do. Once I began posting some of the images on Instagram I was told by many they were really good. In February 2019 a friend and work colleague of my partner asked out of the blue if I wanted to shoot her wedding as the photographer booked had fallen through, I immediately said no! Then I thought about it and convinced myself to do a short test shoot with the couple to see how it went, long story short, three months later I purchased a second camera and shot the wedding from start to finish, it was great and they loved the images. I haven’t stopped shooting since! What is your favourite shot you’ve taken, and tell us why? It’s hard to choose a favourite but I do really like this image (left). No Photoshop or trickery, a perfect reflection on Sheffield Canal one December morning. What once would have been a loud industrial area, now a quite spot for a moment of peace. What do you get up to outside of photography? I do have a normal day job in a call centre however I would like to be able to give that up and make photography a full time career at some point soon. As mentioned before I love space so I do spend a lot of time looking up at the stars, the Moon and any passing satellites. I have met a few heroes of mine in the last year, like the members of mission control from the Apollo program that got us to the Moon. I also make paper scale models, aviation and space related, and have a large selection of rockets and the International Space Station. www.NorthBoundmagazine.co.uk | 35

Can you tell us about the area you live in and what it means to you? Walkley is quaint in a busy city. Close to the university and overlooking the town centre it has become a small village again in recent years with local businesses supporting each other. The butchers and breadmakers, small cafes, restaurants and craft beer shops...I have lived in a few areas of Sheffield and find Walkley one of the friendliest places there is. Tell us about your favourite spots to shoot in the city I love my local area, especially Bolehills that has a great view at sunset. The Kelham Island area with its old cobbled streets and buildings mixed with the new flats is a great place to shoot to get a feel for Sheffield. I also love just walking around. So many things can be seen if you stop and look for a minute or so. Where you do you get your inspiration from? I would say I get my inspiration from what I see around me in day to day life, or images I see and like some aspect of and I try and use in my work. It is hard to find inspiration during the lockdown so I am currently shooting at home from a photographer journal book, it names a subject to shoot each day, this helps keep ideas going until we can get back outside fully. Let The People Flourish WespoketoJo Eckersleyfrom mentalhealthcharity sheffieldflourishon theimportanceof sharingyourstories Can you give our readers a brief history of Sheffield Flourish and the work you do? We were founded in 2012 by a group of friends who were passionate about mental health, both because of their own lived experiences and because of working in the field. Our aim is to nurture the talents, insights and skills already in the community, and one of the way we do this is through our community enterprises. We support six enterprises which are semi-independent. They are mental health friendly but not mental health focused, so their focuses are: music, football, gardening and growing, art, writing, and theatre. Our creative arts group CAST is entirely volunteer-led, and has been running since 2010 with an annual exhibition. Last year they produced artwork for HSBC’s new Sheffield HQ. Each week we have at least seven free sessions taking place across the city where people can meet new people and develop their skills and interests. But we recognise that there can be massive barriers to getting down to a new group when you’re struggling with your mental
health. For this reason, in 2016 we launched the Sheffield Flourish website, a hub which now hosts over 300 honest, funny, and creative stories by local people who have experienced difficulties and distress. Through the website people can read stories they can relate to, can feel proud of the struggles they have managed through, and can learn more about mental health. In 2017 we started delivering the Sheffield Mental Health Guide, a website and phone line commissioned by Sheffield city council to support local people to find the right service for them. We built the website in collaboration with our community, which meant it really reflected their needs, and launched the new site in 2018. Later that year, we worked with former Lord Mayor Magid Magid on an event where we asked people what we could do collectively to help prevent suicide in Sheffield. One of the key things people said they wanted was a digital resource to signpost them to the right support, so in 2019, on World Suicide Prevention Day, we launched another new website: sheffieldsuicidesupport. co.uk. Finally, this year we launched My Toolkit, which is a really beautifully simple website where you can plan activities to help feel good day to day. How did you get involved with Sheff Flourish? I got involved through seeing a job application four years ago, when our charity was much smaller. I saw a job description and was basically like: this is the perfect job. On interview day this was all confirmed, the people I met were all genuinely really passionate about mental health, and about supporting others to recognise their talents and strengths. And they had some really good ideas about how to do this.

It’s been a proper privilege to see the charity grow over those four years. I’ve met a whole load of people who’ve been through really difficult life experiences, and have taken those experiences and decided they want to help others, and to share what they learnt along the way. Like everyone, I’ve struggled with my mental health. What’s really helped in those difficult times is to have a community around me of people who care about the same things, and who really want to make a difference. Sharing stories seems to be quite important to the charity, how important is it to open up and discuss experiences? I can’t speak for everyone, but in my experience a simple chat can be seriously powerful. I think there’s a few reasons it is so meaningful. Firstly, when we’re struggling it can be really shame-inducing. You can feel like there’s something wrong with you for feeling how you feel. But so often when we do finally say something, we realise that actually we’re not alone in feeling that way. It can be a huge relief. And that brings me on to the second point, when we discuss our experiences, especially with someone who can relate, we know we’re not alone, and they might even be able to give us some clues for finding a way forward. Anyway, I think the community speaks better than me on this: “Seeing individual testaments / creative outlets on the site really makes me feel positive about living with my mental health.” “I have learnt through the Flourish groups, meetings and writing on the website that I am not unique in my experiences of depression and fears. It helps me to feel accepting of myself, helps me to be less judgemental about myself.” How have you adapted to the Coronavirus situation? Delivering the Sheffield Mental Health Guide day to day means we are one of the main information providers for mental health in the city. Since the lockdown began, we’ve been proactively working to make sure as many people as possible know what support is out there for them. Our signposting phone line is open during normal working hours on 0114 273 7009, or mhguide@sheffieldflourish.co.uk. We’ve got a full list of what mental health support is currently available on the Sheffield Mental Health Guide, under the tab ‘Covid-19’. Our enterprise groups and sessions have moved to online, but we wanted to give something more (especially as some of our
community don’t use digital). So, over the last few weeks we’ve begun delivering art and seed packs to our community. The art packs are available for anyone to download online at: sheffieldflourish. co.uk/news/art-packs-for-thecommunity. We’re hoping to get some extra funding in so we can post the full art packs out to anyone who might want one (and I’m really pleased we’ve already had a really kind sponsorship offer from an individual). We’ve also been running a programme of online games twice a week, from bingo to kahoots, to keep people busy.

If someone reading this is struggling with their mental health, what would you say to help them? “You are clearly going through a really difficult time. I want you to know you are not alone, though. There are people in your life who care about you, even if it’s hard to believe that right now. There are also people across this city who have been through these incredibly difficult times too, and who have come out the other side.
“How have you coped with this situation up to now? What strategies have you used to help manage? A lot of the people we talk to find it can be really helpful to think about the times when things have been just a little bit easier, and work out what has made those times easier (a funny TV programme, a pet, some nice food, a friend, whatever it might be).” FYI I’m not a mental health practitioner, it’s worth mentioning. These are just the things I’d say as one human being to another!

Could you briefly run us through your community enterprises and their purpose? Within the city, we support six community enterprises who run regular sessions which are open to everyone: • Brunsmeer Awareness FC – a mental health-friendly football team. • CAST – a creative arts group who run art and creative writing groups. • Connected Worlds – an art-based project which runs courses designed to build communities and solidarity. • Flippin’ Mental Theatre – a theatre company set up by Kathryn Littlewood, author of mental health autobiography Cultivating Madcow. • Oasis – they run weekly vegetable growing sessions, and eat the food they grow together. Their work is funded by the Oasis Gardening Service, available for hire! • Open Door Music – a music group for people to learn and develop their skills and interests. This includes music production, jam sessions with instruments, and a singing group. Do you have any tips for staying on top of your health during lockdown? Generally speaking, what do you think of local government and central government’s approach to mental health? It’s great that more and more politicians are saying the right things: that mental health is as important as physical health, and that we need to do more across the board to support people. Over the last few years politicians and the policies have started to recognise the importance of community activities like ours in supporting people’s mental health. ‘Social prescribing’ – where people are referred from the NHS to non-clinical sessions like ours – is a real buzzword and rightly so.
But the NHS is really, really stretched, which means that people in need of real clinical help are ending up being supported by community organisations. Central government need to put more funding in to mental health, this couldn’t be clearer. Another issue is local authorities have lost a great deal of their own funding over the last few years. This means people with complex needs are falling through

Stocksbridge Palace
thestory ofthe palace A new book released by Deepcar author Mark J Foster tells the story of a man who finds himself trapped inside the old abandoned Palace cinema building in Stocksbridge. We caught up with him to find out a little bit about the book, Mark’s own inspiration and what made him write about the famous old building. Can you tell us a little bit about your new book? ‘Palace’ is my first attempt at writing a ghost story. It is a short story that follows an incident in which a young man called Andrew finds himself trapped inside the dark, disused and derelict auditorium of the former Palace cinema building in Stocksbridge. Andrew is found laying unconscious in the street directly outside of the cinema building with numerous physical injuries. Following his emergency admission to hospital, his trauma and experiences within the Palace, have left Andrew deeply disturbed.
What is it about the Palace that made you write about it? I have lived in the area for over 25 years, and I have always found that the former Palace cinema building emanates such a sinister and dark presence within the vicinity. Over recent years the Palace Mall has made use of an integral part of the building. But it is the unused and derelict part of the building that fascinated me, and has often relayed upon my imagination. The dark red brickwork, faded stone facade, and broken bay windows of the upper floors all add to the sinister appearance of the large disused empty space inside. The description on Amazon talks of locals having fond memories of the Palace, any memories from yourself? I am so aware that the Palace will hold such special and fond memories for many Stocksbridge / Deepcar residents. The comparison of the building from those earlier halcyon days, to today’s appearance being so different, with only memories and ghosts to now reflect upon that once loved building. I would have loved to have visited the Palace during it earlier tenure, but regrettably the venue had closed as a cinema, long before I moved to the area. I have also read that following its closure and subsequent conversion to a Bingo Hall, many local residents staged a demonstration outside, such was the feeling of losing this much loved venue.

Are there any other buildings similar to the Palace that give off a similar vibe? I have always held a fascination with disused cinemas and theatres, as being places that can emanate such fear from the darkness and dereliction found inside. These large windowless buildings once so vibrant and much loved, now being such a different,

The derelict Carlton Cinema on the Arbourthorne estate (now long demolished) was such a building that would evoke so much fear whenever passing by, as my imagination would often take over, as to the horrors that lurked inside the darkness. I had the opportunity to visit the former Abbeydale Cinema during its earlier renovation and the fascination as to the workmanship and detail that was still intact inside. Yet the dereliction and dark spaces held such a lasting memory for me.
As a writer, what is your inspiration? I have always tried to write with realism and of experience. My stories all have an underlying Sheffield theme, and many include stories or experiences that have been relayed to me in earlier years. I was brought up in the Heeley area of the city, and even during my lifetime, I have seen the city change and diversify so much. I have always tried to capture the mood of the city even from before my own experiences, especially with the titles ‘Up at the Sky Edge 1917’ and ‘An Arbourthorne Lad.’ Have you always wanted to pursue a writing career? I have loved creative writing from an early age. Although because of both work and family commitments I have never been able to pursue this activity until more recent years. You touched on your other works just then. Can you tell us moer about them? Palace is my most recent book to have been published by Amazon, and all of my titles are fictional. My other titles include

What is your connection to the area? I was born in the Nether Edge Hospital and have resided in Sheffield for all of my life. My formative years were spent living in the Heeley area of the city. the tinsley towers
Originally part of the coal-fired Blackburn Meadows power station, these towers were a relic of a bygone age. The power station had been built in 1921 to support the steel industry in the Lower Don Valley. For safety reasons, the two cooling towers proved difficult to demolish, and as a result were left standing for a full 30 years after the power station itself was closed down. Even younger readers are likely to remember idly gawking at the towers through their car window, on the way past Meadowhall.
What happened to it?
The inevitable. The towers were finally demolished by controlled explosion in 2008, with onlookers watching from Meadowhall parking lot. With that, another remnant of Sheffield’s history as an industrial powerhouse was destroyed.

Underneath the roundabout in Castle Square, this network of underpasses and shops came to be known affectionately as ‘Oyl Int Road’. Each branch of the network was home to different kinds of stores, from little shops (GT News, Thorntons, Tobacconists) to entrances to street level department stores (Walsh’s/House of Fraser). One of the most unique features of the place was a large fish tank built into one of the walls, containing over 2000 gallons of water and over 20 kinds of fish including carp, goldfish, bream, rudds and roaches.
What happened to it?
Over time, the area became dilapidated. It became a less popular shopping destination and started to become a loitering spot for the homeless. In 1994, the hole was filled in to make way for the new Supertram network.
Where is it now?
The former site was filled in and is now part of the tram tracks in the city centre. If you weren’t alive to see the hole for yourself, you would never know there was anything there but concrete.

This extension to the Town Hall was built in 1977, and immediately divided public opinion, its unique appearance earning it the nickname ‘The Egg Box’. I trawled some internet forums to find out if nostalgia had warmed people on the Egg Box since it was demolished, and the answer was a resounding ‘no’.
What happened to it?
The extension was constructed to last at least 500 years, due to concerns about the integrity of other concrete structures put up earlier in the decade. Despite this, the extension was demolished in 2002, just 25 years after its construction, to make way for a new attraction.
Where is it now?
The former Egg Box has since been replaced with the more aesthetically pleasing and universally popular Winter Gardens.
Castle Market opened in 1959, while Sheaf Market Hall was constructed in the 1970s. Together these markets were the beating heart of the city centre for a long time. Older readers may still remember the Sheaf Markets, which thrived in the 1970s and 1980s with stores like Cooplands, or the Granelli’s sweet shop which lives on in a nearby location to this day. Almost all readers will remember the Castle Market, with its vibrant colours and sounds, and the smell of fresh meat and fish from the butcher’s and fishmonger’s stalls which seemed to dominate the entire place.

Where are they now?
The former Sheaf Market has now been replaced by office blocks near Park Square. The former Castle Market site was excavated in 2018 in search of a castle where Mary Queen of Scots was held prisoner. Since the market disappeared, the Castlegate area has been less popular and vibrant than much of the city centre, home to few shops. However, the area is set to experience a transformation as part of the councils ‘Grey to Green’ scheme.

Sheaf Market was the first to fall. The Market spent a few years as a dilapidated eyesore before being demolished in 2002. Castle Market closed down in 2013 as things moved to the newly opened Moor Markets instead.

The post-war housing estate was groundbreaking for its time. Often derided by its critics as ugly, the values of post-war Britain are reflected in the architecture. Brutalist and practical, the organisation of the estate reflects the spirit of community and the desire to live together. The flats were built in a block formation, rather than vertically (like many flats at the time) with wide external hallways, known colloquially as ‘streets in the sky’, making it an easy environment for engaging socially with neighbours. It was hoped that the estate would be a model for a new way of living and organising communities in Britain.
The Ski Village
First opened in 1988, the site boasted a sports shop, bar, restaurant, a ten pin bowling alley, quad biking, laser tag and a downhill biking track, in addition to an extensive range of ski slopes. It was believed to be the largest artificial ski resort in Europe at the time. The village quickly became a very popular place for young people to hang out, including the ‘Sheffield Sharks Ski Club’ a group aimed at promoting children’s skiing, who met at Sheffield Ski Village on Saturday mornings and Thursday evenings.

Recently, Sheffield city council announced plans to revamp the former slopes. Skyline, a New Zealand-based extreme activity company will form of part of the revamped ‘Parkwood Leisure Complex’.

What happened to it?
A run of bad luck. Between 2012 and 2018, the site was destroyed by a series of fires. The first fire, in April 2012, was ruled to have started accidentally, and destroyed the main building of the Ski Village. This was followed by a series of 50 arson attacks which destroyed the once-beloved village beyond recognition.
Over time, the flats became dilapidated and seen as an a undesirable place to live. The site was saved almost certain demolition when developer Urban Splash took over in 2004 and began the slow process of regenerating the estate. The site is now becoming a jumble of houses available for rent, private sale, and student accommodation. But with prices for the renovated flats starting at well above the cost of similar properties, some have criticised the renovation as defying the original spirit of the properties and as a form of ‘class-cleansing’.
Where is it now?
It’s still there! During spring 2019, the Crucible Theatre joined forces with Richard Hawley to produce a musical, backed with Hawleypenned soundtrack, based on three generations of families at the flats.

New initiativeformed to tackle food poverty duringthe coronavirus pandemic HAS LAUNCHED IN sHEFFIELD. A brand new not-for-profit organisation has been launched with the support of numerous UK businesses affected by the coronavirus outbreak, with a view to re-purposing closed restaurant kitchens across the nation to provide free nutritious meals to those in need. Individuals set to benefit from the scheme include key workers and anybody who is struggling to maintain a well-rounded diet as a result of physical isolation or financial hardship caused by the COVID-19 lockdown. Donations are needed to cover the essential running costs for each Open Kitchen with every £1.85 donated enough to provide a single, restaurant-quality meal. The planned initiative has already received high levels of interest from restaurant owners across the UK wanting to do their bit. George Ktori who runs popular Greek restaurant Yamas in Nottingham city centre was thrilled to learn of the initiative: “When Open Kitchens came to me, I was immediately on board. It’s important to help in these times and feed those who need it most. We’ve got the equipment and the talented chefs, to volunteer their time and cook fresh meals for those who don’t have access to them. “We just hope that we’ll be able to drum up enough support in the way of donations and volunteers, to continue to make this fantastic idea a reality.” The significant delivery operation required to get meals out to recipients will be solely reliant on a network of volunteers known as ‘Delivery Angels’. Now we are putting everything we have into raising the funds required to get these kitchens up and running.”

Thornbridge brewery to support hospitality workerswith charity donation Thornbridge brewery is working alongside JKS Restaurants to donate a percentage of profits from their collaboration beer ‘4TH Rifles’ to Hospitality Action in response to the COVID-19 pandemic. Thornbridge teamed up with JKS restaurants back in spring 2018 to collaborate on a beer for their brand-new venue, Brigadiers. The idea was to brew a bespoke beer, brewed at Thornbridge with a nod to India. ‘4th Rifles’, a light and citrusy pale ale was born.

ToadintheHole for the toad in the hole
Preparation time: 10 minutes Cooking time: 50 minutes Serves: 4
Preheat the oven to 200°c.
For the toad in the hole
Put the sausages in a 20cm by 20cm roasting tin with a tablespoon of oil, toss them around and then cook for 15 minutes in the preheated oven until they are lightly browned.

Make the batter by whisking the eggs, flour and milk together until smooth, and then add the sage and seasoning.
65g plain flour 100ml milk 1 tsp fresh sage, chopped Salt and pepper
For the onion gravy 25g butter 1 tbsp olive oil 1 bay leaf 2 sprigs of thyme 4 onions, sliced 1 tsp sugar 1 tbsp flour 200ml red wine 2 tsp red wine vinegar 500ml beef or vegetable stock
Once the sausages are browned, take the tin out of the oven and carefully pour the batter over the sausages. It will sizzle so be careful! Place the tin back in the oven for 30 to 40 minutes until golden and crisp.
for the onion gravy Melt the butter with the olive oil in a large frying pan over a medium heat, add the bay leaf and thyme then cook for 1 minute to infuse the flavours of the herbs. Add the onions and coat well in the butter and oil, sprinkle over the sugar and a big pinch of salt then slowly cook them down for 45 to 50 minutes, stirring occasionally until sticky and caramelised. Add the flour and stir well, coating all of the onions. Cook for a minute then add the wine and vinegar. Turn up the heat and reduce the liquid by half, which should take about 2 minutes, whisking a little to ensure the flour doesn’t form lumps at all. Pour in the stock, bring to the boil and cook for 6 to 8 minutes, until the gravy is thick enough to coat the back of spoon. If you cook it a bit too much and it gets too thick, add a splash of water. Season well and serve. Serve the toad in the hole with the onion gravy and Henderson’s Relish on the table for splashing over the top.
