Râpure
1 ¼ cup of cubed pork 10 lbs potatoes 2 tbsp salt 1 tsp summer savory ¼ cup lard 1 cup peeled and cooked potatoes 1 large onion, finely chopped
In a frying pan put lard and cubed pork , cook until browned. Peel and grate potatoes. Squeeze out excess liquid. Add cooked potatoes, onion, summer savory and salt to taste. Mix cooked pork , undrained, over the mixture and mix. Cook in a greased pan 9” x 13” pan for 20 min at 375°F. Lower heat to 325°F and cook for 2 hours.

4 strips of bacon cut up into piec es In a medium sized sauce pan rend er the 1 tbsp. butter bacon till almost crispy then add in the 1 garlic clove chopped butter, red onion and chopped garlic. Sautee until onion is soft then add 3 cups loosely packed fresh spin in ach the spinach and hot pepper sauc e and 1/2 red onion chopped stir. Carefully add in the sambuc a and 2 oz. Sambuca or other aniseflambÊ. Once the flames have gon e down flavored liqueur add in heavy cream and stir. Let the Hot pepper sauce to taste cream simmer until it becomes thick. Remove from heat and puree mix 1/4 cup of heavy cream (34%) ture in a blender or food processor. Bake in a preshucked, bottom shells reserved heated 350° oven till cheese is melted and 1/4 cup freshly grated Parmesan cheese starting to turn golden brown.

Oyster Apple Soup
Local Recipes (Serves 8 portions)
200 g of mushrooms (sliced) 450 g of onions (sliced) One large (or three smaller) local carrot (peeled/sliced) 2 cloves of garlic (slivered finely) 50 g of butter 3 local apples such as Cortland, MacIntosh, etc. (peeled and sliced) 6 medium-large potatoes (peeled and sliced) White wine or brandy (optional) Pepper, salt 2.5 - 3 litres of water One cube of chicken bouillon (optional) One head of fresh cabbage (or any white/green cabbage) Thyme and green onion 300 ml of whipping cream 16 P.E.I. Oysters (shucked and reserved with their juices) Warm a large soup pot to medium heat, melting the butter until it has foamed and begun to brown. Add mushroom, onion, carrot and garlic to the pot and allow to cook on medium heat until they begin to get translucent and just begin to brown. Salt and pepper to begin the seasoning process. Add a splash of wine or brandy and stir a bit to scrape up any browned bits of onion. Add the water, potatoes, apples and bouillon cube if you are using one. Bring the pot to a rolling boil and cook until the potatoes are fully cooked. Meanwhile, finely slice the cabbage avoiding the core. Add the cabbage and the thyme to the boiling soup, stirring to incorporate. Add the cream and allow to simmer for 5 minutes more, checking the seasoning and adding salt and pepper to your taste. (Remember the salty oysters are still to come!) Finally, add the oysters to the soup and blend it until it is very smooth. Top each serving with some finely sliced green onion and enjoy with good company!

Rustic Apple and Maple Tart 2011 Applelicious Pie Baking Competition Winning Recipe Pastry 2 ½ cups of all-purpose flour ½ tsp salt 1 cup lard 1 ½ tsp b. powder
½ tbsp vinegar ½ slight beaten egg, (reserve other half for pastry wash) Very cold water to top to half a cup (see directions)
Combine flour, salt and b powder in a large bowl, stir till well combined. Using a pastry blend, blend in lard until mixture resembles coarse crumbs. Slightly beat egg in measuring cup, pour off about half and reserve. Mix in vinegar and top up with water to measure half a cup in total and mix well. Pour over flour mixture. With fork blend until the dough holds together. Form the dough into a ball and flatten into a disc. Wrap in plastic wrap and refrigerate for at least one hour and up to a day. Roll the dough into a 20 inch round disc, approximately 1/8 inch thick. Transfer to pie-plate, leaving a large overhang. (Or make a traditional bottom and top crust.) Filling 2 tbsp. lemon juice ¼ cup ADL unsalted butter 3 tbsp. all-purpose flour 1 cup maple syrup 1 tsp. ground cinnamon 3 tbsp. cornstarch ¼ tsp. ground nutmeg 2 tbsp. cold water ¼ tsp. salt Approximately 3 lbs. Paula Red and Jersey Mac mix, or enough to fill pie shell (Arlington Orchard) Place the butter and maple syrup together in a medium-sized saucepan over medium heat. Place the cornstarch in a small bowl. Add the cold water, stir to make a paste and add to the maple syrup mixture. Stirring constantly, slowly bring the mixture to a boil, reduce heat and simmer for 4 to 5 minutes or until mixture thickens. Cool to lukewarm before continuing. Meanwhile place the apples in a large bowl and pour in the lemon juice. Mix the flour, cinnamon, nutmeg and salt. Sprinkle over the apples and toss until the apples are coated with the mixture. Pour the cooled syrup mixture over the apples and toss well to coat the apples. Preheat oven to 375°F. (190°C). Spoon the apple mixture over into the prepared shell. Fold the overhanging dough over the apples. Pastry Wash Mix the reserved egg and 1 tbsp. of ADL cream or milk in a small bowl. Brush the pastry mix over the dough. (Course white sugar may be sprinkled on dough at this time if desired). Bake until the crust is golden brown and the filling is set, approximately 1 hour and 15 minutes. If rust browns too quickly, place tin foil loosely over the pie. Prepared by: Sandra Sharpe

How to Shuck Oysters

yster-shucking is a connoisseur’s art form, an entertaining, conversational show in the hands of the most nimble and dexterous shuckers. World champions you should know, have come from Western Prince Edward Island!
• Hold oyster in the palm of your hand, or hold tightly against a hard surface with the cup or deep side down. • Protect your hand by wearing a heavyduty rubber glove or folded kitchen towel. • Keep the bottom shell level to prevent spilling liquor. • Locate the hinge and insert a knife between the shells by gently working it back and forth. • When the knife is well in, twist back and forth to open. • Slide the knife across the top of the shell to cut the muscle and run under the body of the oyster.

U
se seawater or salted water. In a large pot, bring about 2 inches of water to a rolling boil over high heat. Drop in the live lobsters, one at a time. Cover and return to a boil as quickly as possible. When water returns to a boil, cook approximately 18 minutes for a 1- to 1¼-pound hard-shell lobster and 20 minutes for a 1½-pound hard-shell lobster. If the lobster has a soft shell, reduce the cooking time by 3 minutes. Lobsters will turn bright red when cooked.
