nOrWICh CraFt Beer week 2017 Norwich Craft Beer Week aims to bring people together to enjoy the best craft beer our city has to offer. A range of events will run between 18 and 27 August in a selection of hand-picked public houses, breweries and bottleshops within Norwich city. This new style of UK beer festival will combine the discovery of creative and radical styles of brewing, music and quality food, bringing the craft revolution to a city that’s ready for change!

what is this craft beer you speak of? For us, it’s not a specific type of beer with a definition that you can pin down – but we like it that way! We like that craft beer is unconstrained and often ‘turned up to eleven’, encompassing a kaleidoscope of styles, containers and flavours that puts the beer before conforming.

The ‘craft’ of beer is something we celebrate and support, by creating one-off collaborations you’ll only find at this year’s event, hosting homebrew competitions and bringing some really amazing brewers out of their sheds for five minutes to speak to you.

Craft beer has a following that are constantly looking for the next new great beer, and sharing the good and bad with a passion and verve that is infectious. Our aim is for you, the fine people of Norwich, to discover your new favourite beer and continue to seek out your next favourite! To achieve our aim, we have worked with the pubs, breweries and bottle shops to create choices that are for the newbie, novice or nerd alike.

In many ways, craft beer is more akin to a cultural movement, like punk or jazz, which is being protected not by a rulebook but the people who get it and love it. This is why we have focused on a select group of pubs, bottle shops and breweries who share similar values, and any of whom you’ll be able to speak to about what beer you should try, and then swap notes with after. We hope to see you at one of the many events we have planned having a great time and wanting more!

The pursuit of the ‘new’ has an obvious outcome – breweries and their brewers are constantly crafting their next best brew. This means batches are often smaller and there are new breweries and oneoff collaborations appearing in a constant evolution, and the beer right now has never been better!

All in a day’s work We caught up with Andy, founder and head brewer of Ampersand Brew Co. based in Earsham, Norfolk, to get an insight into what’s involved in getting a new brewery up and running.

“Our first aim is to brew beer that we like to drink and that other people enjoy drinking.”

As is the case with most professional brewers, Andy Hipwell’s first taste of making beer was as a keen homebrewer. This hobby soon became an obsession and he took the leap in to setting up his own brewery. Although brewing beer has now become second nature, doing it on a commercial scale throws up its own challenges. “It is not just installing some shiny kit and cracking on brewing, there is a lot more to it than that with loads of paperwork and bureaucracy to get through at a local authority and a national government level.” “On top of this we did the majority of building works and part of the installation ourselves to keep the project within budget. Thankfully we have a lot of friends who have given up a lot of time to pitch in and help when the going has been tough.” Ampersand’s brew kit was a bespoke fabrication from the highly regarded Olan Ales Ltd in Fort William. This allowed Andy to upscale to a larger mash tun and liquor tanks. 15

“This gives us huge flexibility in terms of the styles of beers we can make and higher strength beers are achievable too”. “We had a few teething problems with some of the equipment but once we started brewing we soon ironed these out. There was also the not so small matter of getting some large tanks through some not so large doorways!” Now that the dust has settled both literally and metaphorically, Ampersand Brew Co. are up and brewing and Andy has a clear direction in which he wants to take the brewery. “Our first aim is to brew beer that we like to drink and that other people enjoy drinking. On top of that we want to be a brewery that continually strives to improve our quality along with staying at the progressive end of the market producing seasonal beers. The UK at the moment is blessed with some outstanding breweries and we want to work towards being considered among them.”

On a hot September day last year, your Norwich Craft Beer Week hosts Craig Cutting and Jake Thorogood were hand-harvesting pungent piles of resinous hops as part of the All Day Brewing Company’s inaugural Norfolk Hop Festival. Words: @alldaybrewing 16

Our freshly picked green hop cones preserve their oils and deliver distinctive flavour and aroma characteristics, as was discernible in the celebratory bottles of ‘Norfolk Green Hop – Beer of the People’ presented to the hop-pickers at the end of last summer’s harvest. They are also spectacularly sticky.

Cascadian dark lager especially for Norwich Craft Beer Week that marries light floral hops with a soft mellow maltiness, and was brewed using classic fermentation and lagering processes. First emerging from the mountaintops of the Pacific Northwest and now freshly interpreted here in the ‘bread basket’ of Britain, our version of this crisp, clean, and creative beer style will be on offer at Norwich BrewDog in the city centre throughout the week.

The All Day Brewing Company’s quarter-acre hop garden is currently the only one of its kind in the county, where British, American, Czech, and even Japanese hop varieties thrive on our region’s exceptional terroir. This summer, Craig, Jake, and our other hardy hop-harvesters can look forward to retaining resin on their hands from Bramling Cross, Brewer’s Gold, Cascade, Challenger, Cobb Golding, English Mathon Golding, Fuggle, Northdown, Redsell’s Eastwell Golding, Saaz, and Toyomodori cones at our Norfolk Hop Festival. Gloves recommended, if only for gripping glasses of cool beer freshly drawn from the brewery’s taproom.

A short stroll southwards to Ber Street will bring you to HarperWells, where, amid Rob’s ample craft beer shelves, you will discover fetching bottles of the All Day Brewing Company’s Norfolk Farmhouse, Salle Saison, Printer’s Ink Baltic Porter, and Raspberry Tart beers, among other quality quaffables. You may also encounter a wineand-yoga session; if you must join in, recall that you have been sampling stunning craft beer citywide, and should perhaps restrict yourself to the corpse pose. No one needs to see your peacock at this stage of the game.

Norwich Craft Beer Week attendees can also savour a small-batch brew showcasing hops grown here at the brewery, as the latest release in our limited-edition Norfolk Green Hop series – a light Kölsch-style beer featuring the ‘noble’ Saaz, and displaying headily herbal and surreptitiously spicy signatures – will be available exclusively for your enjoyment in our fine city from 18 August.

Norwich Craft Beer Week I am, in publican years, quite young. I have been running The Plasterers Arms in its current guise for no more than 5 years. I didn’t grow up in a pub, and I haven’t spent the last forty years working 48-hour days heaving barrels and rowdy locals around without so much as a bank holiday off. So with that in mind I’m going to spend the next six hundred words authoritatively telling you exactly what the state of the pub industry is, where everyone’s going wrong, and how we’re going to save it.

Is Craft Beer the Saviour of the British Pub?

In my short time at the bar I have experienced a huge assortment of people, and witnessed the depth of the continuing change that the industry sees. I have seen unrivalled generosity and camaraderie from customers, and also unparalleled projectilevomiting and punching. It doesn’t take long in a pub to realise you see people at their very best and at their absolute animalistic worst. And this is the vitality of pubs. Yet they continue to close on a daily basis. People often blame supermarkets and cheaply available wines, although my personal theory is that television and social media have reduced the need for people to convene in order to communicate ideas and entertain themselves. Most people spend all day talking about cats and Ed Sheeran on Facebook whilst pretending to adjust excel spreadsheets, so what do they need to meet up afterwards for? With nothing new to say, what is left but Netflix? Having said that, in the last year supermarkets have all upped their game in the craft beer – the Tesco down the road now sells cans of Stone and Oskar Blues from the US… so maybe I’ll be forced to eat my words when no-one comes in to drink craft beer in the pub now it’s so easily available at home. So if people are turning away from the pub, how do we get them back, and keep the pubs trading? Obviously pubs need to provide something that you cannot get at home, which is where beer fresh from a tap, in a startling array of different colours and flavours comes in. I’m not a fan of the term ‘craft beer’ because it’s already been

Celebrating the craft beer culture in our fine city highjacked by shit mega-breweries as a marketing term to apply to their standard range of marmy brown piss-water, which is absolutely not what I’m talking about here… so let’s call it indie beer for now. Indie beer is characterised by its inventiveness, creativity and pursuit of one quality above all else – to be delicious.

all sorts of buildings had been used as pubs; all sizes and all varieties of licensable activity. The only thing that binds them is the beer they sell, and the people that drink it. So as well as beer, we must consider the other aspect: people. Pubs need to reflect the society they exist in, so yes, as consumers become more educated in their tastes, and as beer production methods improve, we are able to serve better and better beer. But also we must try and reflect the increasingly educated and acceptant society we exist in. The days when the room is dominated by loud, jovially racist men sitting at the bar complaining about the old ‘trouble and strife’ are over, and whilst it’s sometimes a struggle to change these diehard traditions, it is the most important aspect by far. Society no longer binds women to the kitchen or minorities to the fringes, so pubs must not either. Being a venue that is a centre for everyone in a community is critical, to be a place in which everyone is offered something, and everyone feels comfortable. To be a home from home.

Given the quantities of beer that pubs sell and the constant, flexible way they are supplied, it is much easier for pubs to reflect the developing beer market and be at the very forefront of the brightest and the best that the beer world has to offer. Indie beer

Craft beer is an exciting and vital part of our pub culture, but this is just now. Something else may well come along to usurp it and catch our interest in the years to come. Many of our locals have seen the guises of The Plasterers Arms come and go. Some of our customers have been visiting the pub over ten times the number of years that any of us behind the bar have been here. But the essence of pubs is not the building, nor the beer, the sports or music, but the people who visit. We are all just stewards of an infinite dream. Our communities extend beyond us and will outlive us. The best thing we can do as custodians is to celebrate and preserve the spaces that allow people to socialise and converse freely, and to enjoy themselves. A pub is a Public House and just like residential houses they have many families over time. They are never really defined by their transitional owners but by their warmth, their shelter and the people that use them.

A couple of years ago I hosted a tour of pubs on Magdalen Street, which used to number as many as 20 but now are three. Obviously at the time I was saddened by how many pieces of our communal culture had evaporated in the wake of roads and shopping centres, but it also struck me that 19

When and how did you get into commercial brewing?

What inspires you to brew the beers that you make?

I started commercial brewing May 2017 after making the decision to open our own brewery mid 2016. Having spent over 4 years making beer at home in the garage it was the opportunity to convert a barn at the farm I grew up on that made starting a brewery a reality.

The world around me. There are so many flavours, so many experiences. Some people write about their experiences, while others take photos... I brew beer. Coming from the States, it is always easy to fall back on the common styles from over there, but generally speaking I don’t like easy.

What is your personal favourite beer style?

What are your thoughts on the Norwich craft beer scene?

For me this is always a big Imperial Stout. Even though Stouts are bold and in your face I love the complexity they can have through the use of different dark malts and the development of flavours as they age.

It seems to be keeping the infighting to a minimum and instead have found a way to exist together. This is exciting because it enables growth and development. I think that Norwich is headed in the right direction.

What are your thoughts on the Norwich craft beer scene?

What is your personal favorite beer style?

I think the craft beer scene in Norwich is evolving. Norwich is a great city for drinking beer with some fantastic breweries and a great array of pubs that really know how to look after beers whether they are from cask or keg.

Wet? I don’t really have a go to style of beer. For me, beer drinking is dictated by environment and situation. Generally speaking, I prefer keg beer or bottles/cans mostly because in this country, they tend to be more experimental or have more flavor (not always the case, mind). If I was forced to choose just one, I’d probably say stout because there is so much you can do with them. It isn’t just reliant on a single element (ahem... Hops) to give you a flavor profile. Instead, people who make the best stouts draw on anything and everything in the brewing process to dial in the flavor.

What should we watch out for from you during Norwich Craft Beer Week? Look out for our collaboration with the guys from NCBW along with a couple of small-batch one-offs.

DEAN BAKER BAKERS DOZEN When and how did you get in to commercial brewing?

When and how did you get in to commercial brewing?

My parents ran pubs, so I grew up with a love of beer & cleaning. I still run my own pub now & the homebrewing was outgrowing the space I had available. With a ready-made outlet, it just seemed like a good idea to brew ‘properly’ and reclaim the kitchen at home.

S: I made my first sale in August 2014. I sold a total of 190 litres that year. I had made a raspberry wheat beer, and couldn’t shift it, as it was a live, cloudy, slightly sour fruit beer in keg, and I couldn’t find many outlets for that style. We drank a lot of that beer at the brewery that summer and autumn.

What are your thoughts on the Norwich craft beer scene?

What inspires your to brew the beers that you make? Quite a lot of my beers are of a musical theme. I tend to put some music on & think, what would I like to be drinking now? Then take it from there...

S: Craft beer has been a bit slower at getting a place at the table than in some other cities. Things are really picking up now, with some really good retail outlets now open, a more receptive licensed trade, and greater consumer enthusiasm.

What are your thoughts on the Norwich craft beer scene?

What should we watch out for from you during Norwich Craft Beer Week?

It’s a bit of a trek to Norwich from Rutland, but I’ve been over several times in the last few months. The fact I’ve been returning when there are places much closer I could go to pretty much speaks for itself I’d say.

M: Our hand-harvested green hops deliver distinctive taste profiles, so you can expect a LOT of flavour! Including our collaboration with BrewDog Norwich, a Cascadian Dark Lager when you’ll also have an opportunity to meet the brewers.

What is your personal favourite beer style?

What inspires you to brew the beers that you make?

IPAs do it for me every time, be it double, triple, red, black or otherwise. Just give me all the hops!

M: Sustainability is central to our ideology; in particular, utilising ingredients sourced from within 300m of the barn door of our brewery at the former organic Salle Moor Hall Farm, and ensuring the lowest possible environmental impact. 23

What inspires you to brew the beers that you make? We don’t go for fads, and whatever beer we create, believe that its success comes from a good balance of flavours and aim to ‘hit the spot’. Inspiration comes from trying different beers in different parts of the world, as well as a good beer closer to home. When and how did you get into commercial brewing? Geoff and I began brewing at Grain in 2006, and although we’ve expanded considerably,

we’re still in the farm buildings where we began at South Farm in Alburgh. We both wanted to get out of the office environment and work for ourselves. And we liked beer. What is your personal favourite beer style? It’s got to depend on the place, the weather and the time of day, but I still think you’re hard pushed to beat a cold wheat beer on a sunny day. What is your ‘guilty pleasure’ drink? Bailey’s.

Design and the craft industry have always had a special relationship; labels and more recently, cans are becoming more design conscious in order to stand out from the crowd. Colourful and quirky cans and labels have quickly become synonymous with the industry, as well as driving it forward in its infant years. And whilst design is being embraced it’s far from easy. By its very nature a craft brewery produces small batches of a variety of beers and styles and all require a catchy name and a shiny new label. In a world where people ‘buy with their eyes’, creating a brand that people fall in love with can be just as important as what’s in the glass. We have chosen some of our favourites, pictured opposite, but if you think we have missed any let us know.

Terry hughes of the Belgian Monk explores

the craft beer (r)evolution If it wasn’t for the extraordinary brewers of Belgium, the craft beer revolution that has taken root across the world may never have happened – debatable maybe, although probably true. Handcrafted beers now take pride of place all over the modern world and is certainly true here in Norwich.

However, Belgian brewers set the standard for all others to follow. It’s great to see the growth of craft brewers in the UK, America, South Africa and Australia rising to a challenge to offer the consumer more quality and choice than ever before. In the early years of beer brewing in Belgium, when the monks were originally responsible for brewing, the lighter lower- strength beers were brewed for the peasants, Dubbel beers for the monks themselves and Tripel beers were brewed for the bishops and the abbots. When a beer is called a Dubbel the brewmaster uses twice as much malt as usual and Tripel is when he uses three times the amount. By doing so the brewmaster starts with more starches, obtains more sugars after boiling and increased alcohol after fermentation. Therefore these categories are an identification of strength.

So leave your traditional lagers and bitters behind and move on to enjoy oak-aged ales from West Flanders, hop-packed farmhouse beers from Hainaut, wild beers from Payottenland and Brussels and the heavy Monastic beers from the Trappist Abbeys. From the sweet and spicy to the fruity and sour, let Belgian and indeed all craft beer open your mind and your tastebuds to some of the world’s best brewed beers. Belgium’s smaller regional craft brewers concentrate on quality not quantity choosing not to try to compete with much larger breweries, therefore ensuring their beers are packed full of flavour and, in most cases, increased strength using only the finest ingredients. It is often said that an exceptional Belgian beer is almost a meal in itself.

Belgian beer or craft beer brewing is always brewed with passion following centuriesold traditional methods or modern-day experiments. The result should always be the same…. An exceptional glass to savour.

With well over 600 beers and continuing to grow, the craft beer market in Belgium is almost impossible to keep up with. 28

Homebrewing is in the midst of a revolution with a younger, more open-minded generation taking up the hobby. With high-quality ingredients easily available and the internet providing endless inspiration commercial quality beers are being made in homes up and down the country. There can be no doubt that the boom in homebrewing is helping fuel the craft beer movement in the UK. Many of the best craft breweries in the country are the result of a homebrewer who dared to dream big. The Kernel, Beavertown and a small Scottish brewery called BrewDog all started on the kitchen hob. For many, the attraction of brewing at home is saving money; you can make decent beer from as little as 50p a pint. But it is also a

chance to experiment and push the boundaries. Few hobbies provide the levels of satisfaction you get from sharing a few homemade brews with your buddies.

Our attitude to beer in Britain is changing, we are increasingly expecting more from our humble pints and drinkers are beginning to understand what the world of craft beer has to offer. There is also a growing sense of ‘if they can do, it so can I’. Of course not all brews go to plan and every homebrewer will have their own heartbreaking tale of a batch that found itself going down the sink. But for every drain pour there are 10 good ones that more than make up for it. After all the cleaning, mashing, boiling and weeks of patiently waiting, sometimes the outcome isn’t quite what you were expecting. It doesn’t matter, after all tomorrow is another brew day.


How to get started Get what you need You can get a basic kit together for around £60 and you might find you have most of the equipment you need in the kitchen cupboard. Try your local homebrew shop for advice or there are plenty of good websites offering everything you will need.

Find a recipe Get a decent book, ‘Home brew beer’ by Greg Hughes is regarded as the homebrew bible. But start simple for your first brew: a SMASH (single malt and single hop) recipe is an ideal way to learn the ropes.

Keep a day free When homebrewers say a brew day they mean a day; you have to clean, then wait, then clean again.

Relax Brewing beer is a science and it rarely goes to plan, but that’s fine. Learn from your mistakes and have another go.
