am man. I am carnivore. I love bacon and steak and ribs and burgers and brisket. I love the feeling of biting into a big juicy hunk of pork. I even enjoy beer chicken, grilled lamb and deer sausage from time to time. My girlfriend’s not such a fan of my fare. She’s not a vegan or even a vegetarian, but she eats more veggies in a week than I’ve probably eaten in my entire life. Needless to say, it’s darn near impossible to cook something that both of us will enjoy. So, I’m trying to broaden my horizons, which is admittedly difficult for someone who owns bacon-flavored toothpicks. After a few attempts and lots of research, I’m starting to fi nd a few meatless recipes that I really savor. Even though most of you probably don’t have new veggie-loving girlfriends in your life, I thought I’d share some of these dishes with you. After all, adding more vegetables to your diet is always a healthy goal, and meaty meals every night of the week can start to strain your wallet. Hopefully, you’ll fi nd something you like, too.

ruth is not only stranger than fiction, but it can be spookier, too. See for yourself on Oct. 13. That’s when the members of the Harris-Kemper historical district in St. Joseph will be hosting a fundraiser Haunted Harris-Kemper Walking Tour. Starting at 7 p.m., guides will take you on a lamp-lit stroll around a four-block area where you can learn about some of the people who originally lived here — and the ones who never left. “This whole Harris-Kemper area is like a crazy quilt,” says

Wickie Utley, co-coordinator of the tour. “... full of richness, historic homes, wonderful people and our very own spirits.” The neighborhood was one of the first areas developed in the early days of St. Joseph, and it includes some historically significant homes, such as the house built in 1890 for the owner of the Aunt Jemima Milling Co., and a home President Abraham Lincoln spoke from on his inaugural tour. Walter Cronkite was from this neighborhood, too. “Our psychic says he will be visiting this particular weekend, just by chance,” Mrs. Utley says. A few of the ghostly tales you will hear might be a bit embel-

lished, she says, but the majority are true. One is the story surrounding the ghost of Clara Fannie. It’s a tale so bizarre it’s hard to believe, but it’s all documented. Clara was the daughter of Dr. Samuel Richmond, who in 1877 moved with his wife into the house where Mrs. Utley lives now. The doctor made his living selling a patented elixir called Samaritan Nervine. In his newsletter, The World’s Journal of Health, he published testimonies from patients and their families about how miraculous this elixir

was. Interestingly, the main ingredient was belladonna, also known as deadly nightshade. “That’s a hallucinogen of huge proportions,” Mrs. Utley says. “He claimed it was a cure for epilepsy.” While the Richmonds lived in the home, there was an elaborate fountain statue in the yard called “Venus Rising from the Sea.” At one entrance were two crouched lion statues, and at the south steps were two cocoa-colored elk with bronze antlers. Dawn Jackson Blatner, a registered dietitian and the author of “The Flexitarian Diet,” recommends keeping lentils, chickpeas, or kidney, white or black beans on hand. Swap 1/4 cup of them for an ounce of meat in chilis, tacos and pasta salads.

Tomato Salad Bread Tomato season will be over soon, but don’t worry. You can still make a tomato flat bread through the rest of fall and the winter using sun-dried tomatoes with some of the more flavorful cherry ones. This dish includes a healthy sprinkling of cheddar cheese. Tip: According to Real Simple, nuts and cheeses have nearly as much protein as meat. Sprinkle

them on salads, soups and pilafs. Nut butters are also protein-rich, kidfriendly staples.

Spaghetti Squash “There’s not meat in this dish, and guess what? There’s no pasta either,” says Linsey Knerl, a chef and writer for WiseBread. com who specializes in meatless dishes that meatn-tater lovers prefer. By substituting one baked spaghetti squash for your traditional noodles, you can enjoy a rich meatless sauce (like Alfredo or a creamy red) over the squash strands. Use a fork to lightly scrape the noodles out of the squash shell.

Meatless Quesadillas Layer refried beans, black beans, shredded cheese and green onions (you can add fresh diced tomato, too) on a flour tortilla. Place another on top, spray with light cooking spray and flip it over so the sprayed side is down. Let it get all brown and toasty on one side over medium heat in a frying

pan. Then flip. Put it on a plate, slice into triangles with a pizza cutter and serve with salsa and sour cream. “A quick and crunchy snack or meal, these take few ingredients and taste heavenly,” Ms. Knerl says.

Eggplant Parmesan This is not only an easy dish to prepare, but it has eggs — something meat-lovers will appreciate. Simply slice eggplant lengthwise thinly, dip in egg and dredge in a combo of flour and Italian bread crumbs. Fry lightly in oil (Ms. Knerl recommends using canola or safflower) and then layer in a baking dish, separated by marinara, cheeses and your choice of fresh Italian spices and herbs. Bake at 350 degrees until crispy on the edges and bubbly in the middle. Serve over pasta. Tip: Besides being a source of protein, eggs contain vitamins and minerals, says Ms. Blatner. She recommends trying a couple for dinner in a frittata or

Haunted Harris-Kemper walking tour set for Saturday

CONTINUED FROM Page 2 had an eight-sided gazebo with winged arbors and a conservatory where the doctor housed the medicine factory. Life for the Richmonds changed in 1886, when the managing editor of the St. Joseph Daily Herald, Col. James W. Strong, wrote something that apparently did not please the doctor. “He got mad and went down and shot him,” Mrs. Utley says. “Killed him dead, right in his office.” Dr. Richmond was tried and convicted, but it was determined he was also insane. So he was committed to State Lunatic Asylum No. 2. (Where the Glore Psychiatric Museum is now.) Then he escaped. “He basically left town and left his wife and five children,” Mrs. Utley says. The doctor was never apprehended, but the elixir started showing up in a little town outside Chicago. As for poor Clara Fannie, she committed suicide in 1934.

“Clara would invite my mother as a young child to have tea on the veranda,” Mrs. Utley says. “Mother said she couldn’t imagine that she killed herself. I always thought she hung herself, but my sister said she drank carbolic acid.” Of course, there is more to this story which you can learn on the tour. And if you don’t believe in ghosts, you might change your mind. Ralph Filipelli, owner of Luna’s Fine Dining and Catering, a private restaurant in the Harris-Kemper district, says he never believed in ghosts until he bought the building which is now Luna’s. “I asked if there was a ghost when I bought the place, and they were afraid to tell me,” Mr. Filipelli says. He heard some unexplainable sounds like the tapping of high-heeled shoes but shrugged them off. Even when he would hear the front door open and close – with nobody there — he dismissed it as the rumblings of an old house. That is until one day when

There are seven stops in all and the tours are expected to last around an hour. Tours start at Whiskey Mansion located at 1723 Francis St. and leave every 15 minutes starting at 7 p.m. There is a maximum number of 15 people at a time. The last tour leaves at 8:15 p.m. Tickets are $8 for everyone age 10 and older and include refreshments at Whiskey Mansion. Reservations are required. RECIPES Black Bean and Jalapeño Soup 2 tablespoons unsalted butter 1 carrot, scraped and chopped 1 medium onion 4 garlic cloves, chopped 1 cup dry red wine 3 cups black beans, rinsed 4 jalapenos, rubbed with olive oil and roasted in the oven at 350 degrees for 25 minutes, then peeled, seeded, and chopped 1 pablano prepared in the same manner as the jalapenos 4 cups homemade vegetable stock 2 tablespoons lime juice 2 jalapenos, roasted but not peeled or seeded, pureed 1/2 cup sour cream In a saucepan over medium heat, melt the butter and sweat the carrot, onion and garlic for five minutes, until translucent. Add the wine, bring to a boil, and let reduce for 10 to 15 minutes. Drain the beans. Reduce the heat to medium. Add the seeded jalapenos and pablano, beans and stock. Simmer for 45 minutes to one hour, or until the beans are cooked through. Remove from heat and add lime juice, plus salt and pepper to taste. Stir to combine. Remove half the mixture and puree in a food processor, then return it to the pot and stir well. May be made up to two days ahead of time, covered and refrigerated. Reheat just before serving.
