INGREDIENTS 500g chicken thigh/prawn/pork ½ cucumber cut into battens 1 capsicum cut into battens 1 carrot cut into battens Mint Basil Rice paper skins 1 packet vermicelli noodles 2 cups chicken broth 2 tbsp soy sauce 2 cloves garlic 1 onion 1 tsp coriander seeds 1 tsp whole peppercorns 1 chilli Dipping sauce: ¼ cup soy sauce ¼ cup fish sauce ¼ cup rice wine vinegar 1 tsp chilli and garlic paste 1 tsp sesame oil METHOD In a pot, add coriander and peppercorns and toast until aromatic. Once aromatic,

add chicken broth, onion, soy, chilli and garlic and allow to simmer until flavours have combined. Once combined, add the chicken and allow to poach until cooked through. While the chicken is poaching, prepare capsicum, cucumber, pick mint and basil leaves and prepare vermicelli noodles following the instructions on the packet. Set aside. Combine all dipping sauce ingredients and set aside. Once the chicken has poached, pull apart and start the assembling process. Dip the rice paper roll into water (make sure you don’t make it completely sodden, otherwise it will be hard to roll), add vermicelli noodles, chicken, cucumber, capsicum and then the mint and basil leaves, then roll. Then enjoy. The sauce is easy enough to tweak where you need to, I like it a bit tart and salty; however, do whatever works for you.

The Pet Refuge appeal is underway, with refuge staff concerned for victims of family violence and their pet animals these holidays, after a tougher than usual year for many New Zealanders. Pet Refuge, the brainchild of Julie Chapman, founder and CEO of children’s charity KidsCan opened in August. The organisation has partnered with Women’s Refuge, Shine and Shakti to assist pets via referrals and has a goal to reach $200,000 to help keep the shelter operating. “Due to practicalities, women escaping family violence are usually unable to take their pets with them to safe houses,” says Julie. “We transport small animals from around New Zealand to the shelter and have a national network of safe farms to care for larger farm animals.” Police are expecting a steep increase in family violence as Christmas pressures combined with the stresses of Covid-19 hit home. “Animals provide solace for people living in abusive relationships but are also often a barrier to leaving because victims can’t take pets to refuges. Pet Refuge was set up to remove that barrier. “Animals come from all over the country to the shelter, at an undisclosed location on the outskirts of Auckland. Last year, police responded to 16,833 family violence incidents nationwide in December and 16,905 in January. They are expecting another busy season due to the impact of Covid.”

Crisis social worker Larah Bottomley says without Pet Refuge, some women would never escape their dangerous environments. She recently had Pet Refuge help a client relocate her two beloved horses. “Pet Refuge means that the women I work with are able to feel a lot more comfortable with leaving violent situations, knowing that their beloved furry family members are going to be just as protected and kept safe as she will be,” says Larah.

“It can very often be the difference between a woman staying in a violent situation or her leaving.” The refuge relies on donations and has launched its Christmas appeal aiming to raise $200,000 to continue running. “The money helps buy blankets, toys and exercise equipment, medication, transport, and pays for vets, expert animal carers, caseworkers and support staff,” says Julie. “Since the refuge was set up, 54 animals have been helped, and 22 have been reunited with their owners. The shelter has provided over 2,217 safe bed nights. “There are so many barriers to victims escaping dangerous and sometimes lifethreatening situations. It is great to be

able to take one of those barriers away in New Zealand.” Police National Prevention Manager Harm Reduction Inspector Natasha Allan says the discreet service helps victims of family harm make decisions about their wellbeing and safety, reassured that their pets would be safe. “It is a vital support to those who may need to find safety for themselves and their whānau this Christmas.” To donate or get help — go to petrefuge. org.nz or call 0800 Pet Refuge. “We work with the Te Mata Park team on the little wetland area that we are helping to develop at the bottom of the Chambers Walk by the car park. At present, we are planting natives, and the money we contribute is a significant help. “To us, it is a special area, and we want to give toward the upkeep given that we are all avid users of the area. Driving to the top to see the views is spectacular, especially if you have visitors to the area. “Ultimately, it is an adult version of the balls we had during our high school days,

and many people look forward to it. The ball is a great reason for people to get dressed up and get excited about a night out. “Due to Covid, we had to move this year’s date to January 29 2022. We had sold out, but due to some people having to cancel, we have reopened ticket sales. Do I need a nutritional supplement? by John Arts

It is not hard to motivate someone in pain to do things that will relieve pain. We make more of our Bettaflex joint support supplement than any other. It is harder to motivate healthy people to adopt measures that will keep them healthy. Today, we look at the benefits of nutritional supplements. During the past 25 years, I have seen thousands improve their quality of life with high-grade nutritional supplements. I consider a well-formulated multimineral/vitamin/antioxidant formula is one of the best health investments we can make. Three words summarise the reasons to use nutritional supplements: deficiency, suboptimum and optimum. There are some nutrients lacking to the point where a deficiency causes disease. For example, vitamin D deficiency will cause the bone disease rickets. We thought rickets was a third world problem, but an excellent study (Wheeler et al., 2015) commented that vitamin D deficiencies in NZ children are again causing rickets. Blood levels below 50 nmol/L are considered a deficiency. We then move to sub-optimum nutrition. That is where nutrient levels are above deficiency levels

but below what is really needed. The results are not so obvious, but over time, a range of health problems emerge. Again, choosing vitamin D, sub-optimum levels increase the risk of respiratory problems, immune system disorders, learning difficulties and mental health issues, and many cancers. I consider 50–100 nmol/L is sub-optimum. Then, we have optimum levels. For vitamin D, I consider that above 100 nmol/L is ideal and means your body will have plenty of vitamin D. Adding a well-formulated multi-mineral/ vitamin/antioxidant will firstly prevent deficiencies. More importantly, it will lift nutrient levels to the point that our cells can function at their best. e began Merkaba NZ as a way to bring knowledge, information and hemp products to people,” says Daniel. “I am from Hamilton and moved to Raglan six years ago. Amanda joined me from Boston, USA, last year. The name Merkaba has sacred geometry origins, and the meaning corroborates our passion. Mer stands for light, ka spirit and ba body. “We are trying to encourage people back to a lifestyle that benefits the body through nature. Over the years, hemp is something many humans have forgotten about. It was used for food and clothing but was outlawed through misconception. “The more you explore, the more you find. Seeing the state the world is heading in, we believe we need a more eco-friendly

product, and hemp will help that. It can replace many things, and production can start from a three-month growth period compared to 20 years for a tree. “Last year, we trialled a crop working alongside a family trust in Taupo. It grew well but was unsuccessful as the crop was stressed and tested positive for Tetrahydrocannabinol, the principal psychoactive constituent of cannabis known as THC. “New Zealand laws have a low threshold of THC, so we had to dispose of it. One of the factors was we rushed the trial and planted late. That has happened to many first-time farmers, which makes it expensive for the development and growth of the industry. “There is nothing scary about it, it is like a corn crop except it behaves

better. There are thousands of hectares of successful crops in the South Island. It is all timing and practice. It holds nutrients that are good for the body, and topical application does wonder for the skin, and it would be great to see more farmers give it a go. “We don’t understand why we don’t have mass production already. “It is a totally different plant to marijuana; it is a cousin. It looks and smells the same but is grown for different reasons and doesn’t have the strong THC molecule in the flower heads. can range from 90–120 days depending on the cultivar and cycle you use. “There are 14 different cultivars in New Zealand, and we hope to do another trial crop in the near future. We are eager to work with others and are pushing for progress as product development of textiles will be the next step in the industry. “It is quite a difficult process to make textiles. We have to see how they do things overseas to make the materials they have. Someone in Waikato is breaking the fibres down from scratch, which is exciting.

“Our sunblock was released last summer. The non-nano zinc oxide doesn’t block the pores; it is gentle and great for farmers and surfers. We also have a balm for surfers. The healing aspect helps with scarring, acne, and moisturises. “Hopefully, the rules will start changing so the progression can speed up to help things be more accessible to start producing. We now know that the shop local recipe works. Last year’s post lockdown surge didn’t just silence naysayers who predicted a lasting recession; it blew expectations of local tourism and local spending out of the water. Now we know; let’s do it again for summer. It feels odd to thank Covid and its attendant lockdowns for anything. The nasty virus has few silver linings, but one of them has got to be the newfound realisation that we can create prosperity by shopping, dining and exploring locally. The proof is in the fact that unemployment is down, tourism was up all last summer with only Kiwis able to visit, consumer spending swung back hard, and there’s a new appreciation for local enterprise’s contribution to society. WATER MATTERS Getting into hot water

Hot water costs in the dairy shed can top $50 a day, even for a moderately sized herd, once wash-down of the milk plant, vat and accessories are all accounted for. Here are some options to knock that down to size. Old-fashioned electric resistance elements, like the one in your kitchen kettle, work by sending a current through a metal coil that resists the flow. This resistance makes heat, and hence, your water boils. It’s the second oldest way of creating hot water, after lighting a fire under a cauldron and it’s a robust if relatively expensive technology. The big question is, how to replace or augment it for the best results? How about a heat exchanger? Products exist that can transfer the heat from your excess wash-down water through to freshwater, and some even take the warmth of milk in the vat and do double duty, helping chill the milk and preheat the water at the same time. Even the most efficient of these systems will not bring cold water up to 80

degrees Celsius, but taking the water from its ground state to a middling temperature still slices away a hefty chunk of your power bill. The benefits include possible gains to the milk cooling cycle, cheap operation and simple maintenance, but these are offset by the fact that a secondary heating source is definitely still required. Heat pump technology is ubiquitous in our living rooms, but it’s only just becoming the preferred option for hot water heating. That is because early hot water heat pumps tended to be large industrial-sized models to handle institutional laundry or commercial dishwashing, hotel showers or swimming pool heating. Smaller, more efficient units are now out there to provide an alternative for the home, and medium sized machines can assist in the milking

Replacing the old boiler is a great way to save money around the milking shed, and a combination of technologies may present the best option for year-round hot water

shed to heat washdown water. The bonus? Lower power bills and greater efficiency. The only downside is a higher investment cost to install over old electric resistance elements. Heat pumps work best between 4 and 32 degrees Celsius. A heat pump unit may be driven, at least in part, by photovoltaic solar panels. That brings us to the ultimate form of free energy, the sun. Solar hot water heating systems range from simple coils

of black pipe through to advanced panels using similar technology to photovoltaic arrays, but using the sun’s power to heat cold water to near boiling point. These systems work best in direct sunlight, but pack a surprising thermal punch even on cloudy days. The bonus? Tiny operation costs, just for pumping water to the roof. The downside? These systems can be costly to install and really do require some backup when it’s cold, dreary and dark.

WATER MATTERS From science to solution

A revised proposal that aims to reflect farmer’s views is being drawn up with the first phase of Fonterra’s capital structure consultation now complete.

The science of separating water from solids has led to a big advancement in dairy industry water saving, as well as helping manage slurry application and holding volumes

One core area where a breakthrough was needed was in the treatment of farm dairy effluent (FDE). Washing down yards and sheds is a large water cost; 70 litres per cow a day is the accepted average. The resulting FDE is 99% water, with a load of only one per cent solid waste material. If a way could be found to recycle the water while separating the waste, massive gains could be realised. Enter a scholarly paper from 2018 by Keith C Cameron & Hong J Di. These researchers hit upon a solution; flocculation. This term means, in layman’s language, making the solid matter clump up and settle to the bottom of a tank via gravity. By using a coagulant, a substance that promotes this process, solid waste in FDE could be encouraged to ‘floc together’. To say that experiments on this idea (using polyferric sulfate, safe for human consumption) was successful is an understatement. “The new method of treating FDE was highly successful in removing the colloidal material and producing clarified water that can be recycled to wash the farmyard,” say Cameron and Di.

Turbidity in the treated FDE was reduced by 97%, and the presence of E Coli was slashed by 99%. Effectively, FDE was converted to settled, solid sediment and reusable water ready for further washdowns. Ag company Ravensdown then asked a pertinent question about turning this science into a practical system. What if FDE water could be treated and reused without fear of contamination or risk to the environment? The difference would amount to a potential total reduction in freshwater use on dairy farms of up to 42 billion litres a year. Working alongside Lincoln University, they developed a system called Clear Tech to make this technology available to farmers. A field test at Greenpark dairy farm in the South Island delivered real-world figures; a Clear Tech system reduced freshwater consumption by 2,885,700 litres per year, recycling 66% of FDE. Could this breakthrough in science, converted to a practical system, be the future of watersaving for the dairy sector? If so, it’s a homegrown idea that could change the world.
