The Young Grower of the Year, run by Horticulture New Zealand, is an annual competition comprising regional finals in major fruit and vegetable growing areas with a national final, won this year by 25-year-old Melissa van den Heuvel. Melissa is an avocado grower services representative at Apata Group Limited, based in the Bay of Plenty. HortNZ President, Barry O’Neil, says supporting young people and encouraging more of them to join the industry is critical to the industry’s continued success and growth in what is the new normal — life affected by Covid. “At times like these, having a cause and taking time out to celebrate it is even more important than it was before,” Mr O’Neil said. “This year’s regional finals were oversubscribed, which shows the inherent optimism in our industry as well as the pride inherent in providing New Zealand and the world with tasty and healthy fruit and vegetables.” The national final was held at the Lower Hutt Events on October 20 and 21, following all alert level two health and safety protocols. “I am very proud to be in this industry. It is something I am very passionate about. What we produce is very top-notch,” says Melissa. “It was great to be part of this competition and get to know my fellow competitors. We’d all like to thank the sponsors and HortNZ for giving us this opportunity.” The competition is to encourage young people to take up a career in horticulture and celebrate the success of young people in the industry. This year’s finalists were: Heather Feetham, Pukekohe; Jamie McIntyre, Gisborne; Melissa van den Heuvel, Bay of Plenty; Bryce Morrison, Bay of Plenty; Regan Judd, Hawke’s Bay; Jonathan Bates, Nelson; and Jordan Carroll, Central Otago. THE HOLLY BACON EXPERIENCE BY ANN VAN ENGELEN Claire Vogtherr is the fourth generation to run Holly Bacon New Zealand alongside her daughters Ellie and Lydia.

“T

he family were originally pork butchers in Germany, and my great-grandfather Carl Vogtherr came to New Zealand from England in 1914,” says Claire. “He started Holly Bacon’s ‘Elite’ bacon factory, petrol station, fruit cool store and ice factory. Holly is a big part of Christmas in England, so he used Holly Bacon as his business name. “A delicatessen opened on the day the first world war broke out on August 4 1914, and that business continued until November 1938. “In 1937, my grandfather Ernest established the Hastings Bacon Company. The Holly Bacon curing tradition moved to these premises on the corner of St Aubyn Street East and Warren Street in 1962.

“My dad Gordon joined the company in 1942, and I started in 1982. There were only men working here then, and I joined at the bottom of the ladder. It was

different back then, and you needed the respect of those who work for you. “I learned what the staff did and did it as well as them, including the boning.

I still believe you need the respect of your staff and you can’t be a business for five generations making a bad product. “We still use the same handmade brines and natural wood smoking and drying processes that make Holly Bacon cook crisply and taste the way you remember bacon used to. “We now run courses on pork butchery and sausage making and have a range of speciality meats including prosciutto, smoked chicken, lamb rumps, gammon, real pork sausages and ham shanks. “We don’t raise our own pigs as we don’t want to vertically integrate and never use imported pork. I strongly believe in using only New Zealand grown pork to support our farmers. This guarantees our quality to continue our business for the next 100 years as well.

“If you use frozen imported products you, can’t guarantee what you are producing. You can’t control its age or anything. Sixty per cent of all pork in New Zealand is imported frozen from other countries, and we don’t know the welfare conditions the animals are grown in, but it is often not the same level we demand of our farmers. “I love our bacon — we honestly make the best. We dry stack to cure it so excess brine comes out, and we hang, and air dry it to remove the surplus moisture. “We also cold smoke our bacon, which adds a level of flavour. We also cure on behalf of farmers who raise their own

pigs, provided they are sent to an abattoir where they are inspected. “We recommend taking your pig off grass about 10 days prior to slaughter. Pen them and give them scraps and grain as this gives you white fat instead of sloppy yellow.” Claire says when bacon boils in the pan, it is because there is too much water in the product. “Butchers are the best place to buy bacon as their reputation hangs on what they sell, and they usually don’t use multi injector technology that keeps water in. If water is high up in the ingredient list, it will not crisp — it will just boil. Water should be at the bottom of the list.

“At home, remove the plastic packaging and pop it in a sealed plastic container or wrap it in greaseproof paper and newspaper. This allows it to breathe and not sweat. “We love what we do. We have online sales and send products door to door across the country. Ellie works in dispatch and is learning to manage the factory and looks after our marketing and Holly Bacon New Zealand Facebook page. Lydia is a trained chef and runs our kitchen at our cafe. “A few years ago, a historian in Germany tracked down relatives from the original family business, and

16 representatives met in Germany. Only two of us were still operating, Michael Dickson in Sunderland, UK and ourselves. “We saw a little pork butcher shop with people lined up, and they were cooking what they made on-site. Seventy per cent of our customers are men, and we decided it was a good idea. “We opened a cafe beside our factory and sell things like bacon and egg rolls with bread from our local French baker. Tradies love them. “Like grandfather said, ‘people will always need to eat, and bacon is still a bit of a treat’.”

Granny McNab’s boutique nursery is the place where Andy Taylor and Billy Mathie produce a select variety of produce, including heirloom herbs and vegetables.

“W

e supply Chontelle Foods in Napier daily and also attend the Hastings Farmers’ Market every Sunday,” says Billy. “We came up with Granny McNab through looking at a sketch of a lady with a watering can. It is a bit ironic because on my side of the family, it was the grandfathers who had the green thumb. “We grow heirloom because we like the tried and true varieties. You can’t get the seeds of a lot of the produce anymore, so we save our own to avoid hybrids. “We try to grow the things you used to get in grandma’s garden, such as the older thyme and the beautiful Dalmatian parsley that is not available commercially. We also have a lot of flowers like carnations and sweet peas.

“To save the seeds such as the Dalmation parsley, we boost the plant and let it go to seed and then collect the seeds. There are particular lettuce seeds that we bring in from an international organic grower. They arrive unnamed, and we grow the plants, and if we like them, we save their seed. “Alpine strawberries are also a good one to keep. To save tomatoes, you squeeze the insides into a jar and fill it with water. The good seeds sink to the bottom. You let it sit for a while, and it forms a jelly on top. You then clean off the top and sieve the seed through with water.” Flowers are left on the plant until they are finished flowering. “Things like violet freckles are close to phasing out, and we have started to grow them again. I cut the stems of the flowers I want to save upside down in a paper bag.

“We don’t use sprays because you don’t need to. If we have aphids, we use soapy water to remove them. If we have snails, we go out with a torch at 10pm and collect them. “Everything is here for a reason. I love seeing hedgehogs because they keep control of the bugs. If you don’t touch them, you won’t catch anything if they happen to have something. “All of our plants grow outside naturally. We rely on the sun, and don’t use any false heat. Relying on the weather gives you stronger, hardier plants. “If there is a frost, our plants just have to handle it. For this reason, we don’t start our basil and tomatoes too early, and

there is no point in growing microgreens if it is cloudy. “I love planting seeds and pulling weeds. I find it very therapeutic and enjoy anything to do with being outside working with the plants or soil. There isn’t a day that I don’t go into the garden. “It is good to stagger things like looseleaf lettuce, so you can pick it as you need. I have no rules and don’t do things by the book. If I want to plant something somewhere, I do, as I believe plants are pretty hardy. Doing it your own way generally works. “I grow in soil because I believe that is where we get nutritional value. We have been growing for around 13 years now

and absolutely love it. There is nothing I would rather do.” Alpine strawberries and raspberries are favourites for Billy. “They taste amazing and don’t put runners out, and the clump divides. We grow red and white strawberries that have a true strawberry flavour. “I had a raspberry block 20 years ago and have always grown the yellow New Zealand variety. It is a nice big desert fruit. “It is always good to have a little garden at home, that was made quite

clear in lockdown when our sales went up because people went into a mad panic. It is so easy to have one silverbeet plant on-site. “If you grow your own, you also know what has been put on it, and it really is good therapy getting in the garden and working with the soil. “Our grandparents all had vegetable gardens, even if it was a few tomatoes and potatoes. It would be nice to see more families get back to basics and keep some land as land to have vegetables growing.”

Planting by the sea

Living on the coast has challenges for anyone planning to garden on sandy soil. Combined with salt-laden air, choosing plants to handle harsh conditions can be difficult for first-timers. There’s also the wind to factor in and the lack of moisture-holding capacity that comes with sandy soil. Plants miss out when water channels through the large spaces between the sand particles out of reach of the roots. Before rushing off to the nursery to buy all those plants on the wish list, put compost at the top of that list. Compost, combined with other organic matter, has excellent moisture retention and will save a lot of disappointment longterm if it’s used to establish plants. Add in other materials such as seaweed, old hay, sheep pellets, well-aged stable manure, newspaper and paper shopping bags. It’s best to use a layering method starting with manure, then newspaper, compost mix and mulch on the top. Since sand has excellent drainage properties, any issues with poor drainage are eliminated. The garden beds should be topped up each autumn with additional layers. Alternatively, the compost and organic material can be dug into the sand and forked in. The other factor to consider is the strong winds that blow in from the open ocean, if it’s an exposed coastal site. Further inland will be less exposed; however, establishing shelter trees or shrubs should be priority. Consider coastal natives such as pohutukawa, flax, cabbage trees, kowhai, corokia, coprosma, toitoi and pseudopanax.

All of these should be planted in autumn with some temporary screening such as windbreak cloth for protection. Planting in autumn will give the plants time during the winter to get their roots established. The positive is, many of these species are now available in a multitude of colours — so green isn’t the only colour.

Mass planting bronze flax, for example, can create a spectacular effect. These can grow up to a height of 1.8m and span to a maximum width of 1.4m. Exotics, too, can also withstand difficult coastal conditions. However, in Hawke’s Bay, many of the varieties usually used such as buddleia, bottlebrush and others, are

Hawke’s Bay’s bright yellow rescue helicopter is a common and welcome sight around the region.

“W

ith more than a mission a day, up 60 per cent on last year, our highly qualified rescue chopper crews are providing a lifesaving service to the region’s population,” says general manager of the Hawke’s Bay Rescue Helicopter Trust, Ian Wilmot. The service is one of critical importance for the widespread rural community. “Whether it is a rescue mission involving accidents or medical events or swooping in to transport critically ill patients to specialised care at hospitals around the country, the helicopter is ready 24/7, 365 days a year.” Flights include transporting seriously ill or injured patients to Hawke’s Bay Hospital from Wairoa, Central and Southern Hawke’s Bay or anywhere between the region’s ranges and the sea.

“The team also transfers sick and injured patients to Wellington or Auckland, or patients with heart problems or complicated health issues to specialised medical teams waiting in surgical theatres to take immediate action to save lives. “The service now has a full contingent of three pilots, three crewmen and three specialised intensive care paramedics. They completed 200 missions in the first six months of this year and are on track for 400 missions this year, making it our busiest ever. “Accident and medical event patients receive critical treatment on the scene that often makes the difference between life and death. We can make medical assessments immediately and fly patients directly to hospitals around the country for specialist heart, stroke, spinal and burns treatment.”

This speed of treatment can significantly improve the patient’s recovery chances. “Keeping our teams at the top of their game is an ongoing priority,” says pilot and base manager Bill Hartree. “We have a stringent training plan that covers all the bases such as flying, rescue and medical procedures. Full PPE gear, protective screening in the helicopter and comprehensive training to assess and treat patients who may be infected, have all become the norm, but costs have eaten into the trust’s operating budget. “During the higher alert lockdowns, there were less motor vehicle accidents,

We also attended accidents of people travelling our highways and country roads to see more of Hawke’s Bay.” ACC and the Ministry of Health provide around half of the funding required to

keep the rescue helicopter service in the air. “The trust must fundraise $1.25 million every year to keep the service available. I have a younger client who had poor immunity with regular colds, low energy and generally feeling unwell for no medical reason. Our first priority was to improve his immune system. The process of introducing a new sideby-side to the market has come with its challenges in terms of selecting the best,

most robust components for the vehicle. However, the benefit that we have over the competing multinational companies is that if we have a component or design aspect that is failing regularly, we have free range to make changes and design improvements. Christmas is fast approaching and truffles are great for nibbles or gifts for the person that has everything. Chocolate covered coconut truffle  1 can of condensed milk  225g of desiccated coconut  250g of milk chocolate Mix condensed milk and coconut together and roll into balls or bars; tip keep your hands moist as this is a very sticky mixture and place on baking paper. Refrigerate until firm. Melt chocolate in a double boiler and make sure no water or steam gets into the chocolate, so it doesn’t cease. Dip the balls into the chocolate, place back on the baking paper, and let the chocolate set before storing in a container in the fridge. You can decorate with nuts or coconut if you want to do that, while the chocolate coating is just still a little soft. Chocolate Cake Truffles Use a chocolate cake recipe of your choice.

 One chocolate cake (16 inch tin)  500g cream cheese  300g chocolate  Cream the cheese until soft. Add finely crumbled cake. If the cake is a bit dry, you can add more cream cheese or juice or a liqueur like Kahlua just enough to make it a little moist but not tacky. Mix until well combined. Roll into balls and put in the fridge until chilled. Melt the chocolate and dip the balls. Once the chocolate has set a bit, sprinkle it with cashews or any other nuts or decoration of your choice.

Over it

I don’t know about you but I’m over it. There are so many things going on in our country right now that I am getting a little sick and tired of it. I have been vaccinated because I think it is the right thing to do, and to get back to some sense of normality, we will have to be 90% double vaccinated. How will that ever happen? For whatever reason, there are too many that have no wish to be vaccinated. The government is now using the fear of restrictions to force the vaccination issue, no jab, no job, no freedom. If the fear of getting sick isnt enough of an incentive, then why does the government think that what they have proposed is going to work, and when it doesn’t, then what? The poor old employer is now being made responsible for monitoring vaccination status for staff and those that walk in. It is just another layer of stress put on already highly stressed businesses. Perhaps, it is time to open up our internal borders so family and friends can be together, so businesses can open their doors and trade normally and just let the chips fall where they may as far as the unvaccinated and Covid are concerned. Perhaps improve

Why is the government not addressing the supply issues we keep hearing about? I want to buy local, but if local can’t supply, what’s the alternative? Covid is here to stay, and we all need to be able to learn to live with it. However, we choose to do that; it is an individual’s choice rather than the government’s. All I will say is consider your choice with our children and civic responsibilities in mind.
