into a greased 13cm x 36cm rectangular tart tin. Refrigerate. Finely chop the chocolate and put in a heatproof bowl. Over a low to medium heat, melt butter in cream until cream is hot. Pour over the chocolate and let sit for a minute, then combine until nice and smooth. Although if you leave some chunks, it’s a nice little surprise when you go through the softness of the ganache. Pour over the base and let set for at least two hours. If not overnight.

Farmers’ markets continue

Having access to fresh food is an important part of everyday life. What better way to purchase your fresh fruit, vegetables and more than attending the weekly farmers’ markets. “We are pleased that the Napier Urban Farmers’ Market and Hawke’s Bay Farmers’ Market are open at level two in accordance with government regulations for farmers’ markets,” says marketing manager, Alexandra Martin. “We do have to adhere to the public health guidance surrounding safe health practice in relation to Covid-19. That means there are changes to how the market operates at Delta level two. “We ask you to adhere to the following rules of operation to ensure everyone remains safe. “All food and drink is takeaway only and should be consumed outside of the markets. If you don’t want to take it home, please picnic in the parking paddocks in Hastings and Memorial Square in Napier. “This is the government guidance for farmers’ markets. It states: if food and drink is sold for people to eat on-site, everyone must be seated to be served. There is a maximum of 100 people that can be seated at any one time for food and drink table service.

“Unfortunately, this is not possible in our setting, and so all food and drink is takeaway only. So grab it on your way out once you have shopped. “Masks must be worn, and we ask that you limit the number of people from your family coming to shop at the market. “Everyone must sanitise their hands on entry into the market and log entry on the NZ Covid Tracer app or complete the manual contact register. Please maintain a physical distance of two metres from yourself and other customers while flowing through the market. “Please Shop and Go to ensure all shoppers can access the stalls. Many of our stallholders have the click and collect options available to reduce shopping time. At this time, there is no seating available or buskers performing. “We ask everyone coming to the markets to act responsibly and reduce risk. If you are feeling unwell, please stay away from the market. “We want to thank you for your ongoing support of our local farmers and artisan food producers. Many depend on their weekly trading at the market.”

The Hawke’s Bay Future Farming Charitable Trust was founded to shine a light on the region’s existing and emerging farming expertise, creating a local hub of knowledge, research and education.

ith this come opportunities for profitable and resilient farming to ensure the health of the region’s soil and water, communities and farmers, into the future. Current trustees are John van der Linden (chair), vice-chair Phil Schofield, treasurer Scott Lawson, Liz Krawczyk, Greg Hart, Tom Belford and Will Foley. “Our mission is to promote, inspire and celebrate profitable farming systems that enrich the environment and the community,” says Phil Schofield. “We see our work as falling into two categories; communications and evidence-building, the former to receive roughly 25% of our resourcing, the latter, 75%. “From a communications standpoint, we want to recognise and celebrate all sorts of initiatives Hawke’s Bay farmers and growers are making to have a positive environmental footprint and regenerating the environment they are working with. “Those could range from riparian planting or establishing wetlands to

improving water efficiency or planting erosionprone hillsides to overall farming systems change, for example, regenerative practices. We have begun to provide such examples on our website via case studies and videos, with the intention of stepping this up in the coming year. “Over the last two years, we have sponsored a series of face-to-face forums to present alternative grazing and pasture management approaches to Hawke’s Bay farmers. Taken together, over 200 HB farmers have participated in these workshops that will become regularised in the coming year.” The trust aims to establish to farmers and growers using evidence developed in Hawke’s Bay that more beneficial environmental practices and better financial performance go hand-in-hand. “We plan to work with leading-edge farmers and growers, documenting the

success of their overall farming systems, and hopefully, making their practices irresistible to others who are watching expectantly or sceptically from the sidelines. “Our trustees are united in the belief that our long-term focus must be on healthy soils and the land, plant and animal management practices, label them however you like, that yield healthier, carbon-enriched soils.” The trust committed limited funding to preparing two major, multi-year demonstration project proposals to MPI and has completed an analysis of soil carbon potential on a set of dairy farms in the region. A project led by Phil Schofield is designed to measure the ability of farm practices to increase soil carbon. “We have measured soil carbon across three properties at various stages of organic/regenerative development owned by farmer John Kamp in Patoka. These

farms were formerly high chemical input dairy operations. “Our carbon measurement methodology utilises the approach ‘blessed’ by MPI for nationwide application. In our view, soil carbon is a key indicator of overall soil health, which we regard as the prime driver of farming success. “Additionally, as is well-known, the current government has an interest in assessing whether carbon sequestered in soil (and potentially increased) can eventually be factored into its carbon neutrality objectives. “Our soil samples have been analysed by Landcare Research and indeed provide strong evidence that alternative land management can build soil carbon (and better fix nitrogen) in the pastoral setting. “The differences in soil carbon stocks between the three farms are large, with 64-tonnes per ha more soil carbon under the farm that has been managed under various components of regenerative farming for 10 years. This work will be published in the coming year.”

The trust has developed two major projects and funding proposals for MPI aimed at demonstrating the viability of alternative farming practices in the

Samen NZ managing director Cees van Baar moved from the Netherlands 36 years ago as an opportunity to have a go at farming.

“M

y grandfather was a farmer but not my dad, so at 20 years old, I moved out to New Zealand after attending agricultural college to be able to go farming,” says Cees. “I went into the contract and sharemilking system. It was easy to get into back then as not many people wanted to sharemilk. After eight years of being single and alone on the farm, I returned to the Netherlands and got a job with KI Samen, an artificial breeding company. “I was in the export department and set up markets in the UK, Ireland and Scandinavian countries. I then worked in India, Pakistan and other places and travelled a lot, learning about the breeding business.

“My partner and I got married and returned to New Zealand, where we established Samen NZ in 1997. Since then, 11 other international breeding companies who wanted to bring their breeds here have joined us. “We select specific genetics for New Zealand, and we have tough selection criteria on the traits that are important to New Zealand farmers. This gives us a good assortment of different genetics designed primarily for pastoral farming and New Zealand conditions. “I don’t have a favourite breed because, for me, it is not about pushing a specific animal. “I believe New Zealand should be proud of itself for having one of the lowest environmental footprints as far

as methane emissions go per kilogram of meat and milk solids. “We use fewer antibiotics, we are reducing bobby calf numbers, and where we can lower methane emissions and improve water quality, yet we are told by our politicians that we need to reduce cow numbers. I ask, but why would you when you are the best in the world? It doesn’t make sense. “Logically, you think we should be supplying more and producing more. Other countries are getting rid of intensive farming systems. Food production will reduce rather than increase, so agricultural countries will still need to feed an extra two billion people in the future. “In the breeding industry, you need to look at where we will go in 20 years time. In the beef industry, we see that

the traditional way of beef farming in New Zealand, where a cow has a calf sucking on it, isn’t as sustainable as raising a beef animal out of a dairy cow. “For the dairy farmer, it is important that beef breeds are easy calving, shorter gestation and colour mark the calves for easy recognition. The Belgian Blue, as we have bred them over the past 25 years, meet all these criteria. “When you see the ‘White’ Belgian Blue’s offspring, the white colour marks with white and speckly stands out, whether the calf is from a Jersey, Friesian or crossbreed cow. “The beauty of the breed is it carries the double muscling gene. That gives you much quicker finishing, growing more meat economically. Traditional beef breeds generally dress out at 50 to 54 per cent.

“Our own data indicates that we are achieving dress out at 56–65 per cent or higher, depending on age but between 15 and 22 months. We are growing animals that utilise most of the feed or protein they eat to lay down meat rather than fat. “The beef finishers who raise them into beef can kill anywhere from 15–22 months, which is before the second winter for animals out of the dairy industry. It means people carry the animals for less time and produce young tender beef. This eliminates the second winter, which is the costliest time. “We have found young Chinese consumers want to introduce beef to their

pork and chicken diets. Young tender beef for stir-frying and clay pot cooking is the ideal meat. Belgian Blue works perfectly for this. “American and European high-end customers want a marbled piece of steak with a little fat on the outside. Although that section of the market will always be a niche, during Covid, that market suffered badly. “If we are to produce increasing numbers of dairy beef, to reduce our bobby calf numbers, we are better off with a young tender carcass that we can fully utilise.” Read part two of establishing the KiwiBlue™ next month.

A LIFESAVER BY ANN VAN ENGELEN Hawke’s Bay’s bright yellow rescue helicopter is a common and welcome sight around the region.

“W

ith more than a mission a day, up 60 per cent on last year, our highly qualified rescue chopper crews are providing a lifesaving service to the region’s population,” says general manager of the Hawkes’ Bay Rescue Helicopter Trust, Ian Wilmot. The service is one of critical importance for the widespread rural community. “Whether it is a rescue mission involving accidents or medical events or swooping in to transport critically ill patients to specialised care at hospitals around the country, the helicopter is ready 24/7, 365 days a year.” Flights include transporting seriously ill or injured patients to Hawke’s Bay Hospital from Wairoa, Central and Southern Hawke’s Bay or anywhere between the region’s ranges and the sea.

“The team also transfers sick and injured patients to Wellington or Auckland, or patients with heart problems or complicated health issues to specialised medical teams waiting in surgical theatres to take immediate action to save lives. “The service now has a full contingent of three pilots, three crewmen and three specialised intensive care paramedics. They completed 200 missions in the first six months of this year and are on track for 400 missions this year, making it our busiest ever. “Accident and medical event patients receive critical treatment on the scene that often makes the difference between life and death. We can make medical assessments immediately and fly patients directly to hospitals around the country for specialist heart, stroke, spinal and burns treatment.”

As part of the emergency services, the helicopter crew can find themselves in many different locations

This speed of treatment can significantly improve the patient’s recovery chances. “Keeping our teams at the top of their game is an ongoing priority,” says pilot and base manager Bill Hartree. “We have a stringent training plan that covers all the bases such as flying, rescue and medical procedures. This also includes being able to escape from a helicopter upside down when immersed in water, rescuing panicking patients in water, and managing a winch rescue in treacherous weather. “There is a full myriad of medical situations utilising the sophisticated equipment on board is covered through intensive training. “Our paramedics are continually upskilling in the use of our defibrillator, ventilator, fluid warmers, ultrasound for

pre-hospital diagnostics, and advanced airway management. “As a young child on a farm in rural Puketitiri, I remember the rescue helicopter coming out on rescue missions. I now split my time 50/50 between flying and running the base operations, ensuring the helicopter and crew are totally fit for the job. “My top priority is ensuring that patients are reached in the fastest time possible. Our target is to be airborne within 10 minutes in the day and 20 minutes at night, and we pride ourselves on being well within this time for the majority of the time.” To date, the rescue helicopter and its teams have not transported any patients with the virus. “The trust has invested significantly to be prepared. protective screening in the helicopter and comprehensive training to assess and treat patients who may be infected, have all become the norm, but costs have eaten into the trust’s operating budget. “During the higher alert lockdowns, there were less motor vehicle accidents, but people continued to have heart attacks, strokes, and other serious medical events and accidents that required urgent transport to hospitals around the country for specialist treatment. “Once out of lockdown constraints, we found we were going to a lot of out of the way places to the aid of locals tramping, biking, bushwalking and navigating the great outdoors. We also attended accidents of people travelling

our highways and country roads to see more of Hawke’s Bay.” ACC and the Ministry of Health provide around half of the funding required to keep the rescue helicopter service in the air. “The trust must fundraise $1.25 million every year to keep the service available. The previous standards, set out as part of a broader range of environmental management targets for farmers, had been decried as over-legislative and unworkable, not only by protest groups such as Groundswell NZ but also industry monitors such as Beef + Lamb New Zealand. Now, these have been replaced with a more flexible environmental management approach. Details were included in a revised set of intensive winter grazing proposals, circulated for public consultation in late August. It’s an acknowledgement in principle that one size does not fit all. “We believe the government’s new proposed approach, which focusses on practical management by farmers, is more workable, and that’s progress,” said B+LNZ CEO Sam McIvor when the new regulations were shared. “Nevertheless, we still have concerns around the proposed 10-degree slope rule for winter grazing and the certified freshwater farm plan process.”

This separate part of the government’s farming plans aims to increase rural water purity. However, it has been marred by the roll-out of inaccurate mapping, which designated the wrong kinds of land for fencing and livestock restrictions. Farming groups lobbied hard to have the inaccurate mapping rolled back. “The government has proposed an improvement on the slope rule, but we

still think the approach is more restrictive than it needs to be to manage the environmental risks,” Mr McIvor said. “For example, we’d like to see flexibility in situations where there is no receiving water body nearby.” As with some other recent central government initiatives, such as the civic Three Waters concept, stakeholders in this regulation debate feel that there is a lack of data preventing them from tabling a solution. “Without having visibility of the exact text of the certified freshwater farm plan, and given the requirement to demonstrate environmental outcomes would be the same as the rules, we have reservations about how workable the proposed farm plan approach will actually be,” says Mr McIvor. “We are urging the government to work with industry on ensuring that the certified freshwater farm plan process is practical, effects-based and based on industry plans.”

Spring is here, and National Gardening Week will be running from October 18–25, with this year’s theme across the country being Grow to Give.

People across the country are encouraged to be involved in National Gardening Week and grow vegetables to share with others in their community

Herbs to power up livestock

The addition of herbs to a pasture mix is the weapon you need to enhance pasture quality and quantity when feed supplies tighten during dry periods. Locally proven herbs, including Herbivore chicory and Hercules plantain, can be added to perennial pastures or short rotation pastures, providing extremely mineral-rich specialist feed for stock health, growing out young stock where there is a requirement for higher protein and metabolic energy. As a stand-alone crop, Herbivore chicory is a versatile option allowing multi-purpose grazing opportunities. The rationale is to retain a crop to graze when the animals need it rather than when it’s optimal for the crop. Chicory regrowth will restore the feed quantity after each subsequent grazing. It is fast establishing and has regrowth vigour, meaning crop yields do not diminish with subsequent grazings. Its deep fibrous taproot means the plant can tolerate moisture stress and has the ability to draw nutrients and trace minerals from deep within the soil reserves. Herbivore chicory is a very highquality feed source MEs of 11.5 to 13 MJ ME/kg DM at a time when nonirrigated ryegrass can contain both low ME and low crude protein. Plantain variety, Hercules, naturally enhances the quality of feed, and it significantly augments the availability of cobalt, B12, calcium, sodium, copper, selenium and tannins. It is a unique

Certainty for dairy industry workers

This month has seen the government give some certainty to overseas workers who are doing their part for the New Zealand dairy industry during the Covid pandemic.

A pathway to becoming legally a Kiwi means that overseas workers can fill some of the estimated 4,000 gaps in the dairy workforce

The announcement allows many international dair y workers to become residents. It recognises their years of hard work on farms and positive contributions to dairying. It is the culmination of 18 months of collaborative work between Federated Farmers, the government and Dairy New Zealand to ensure a robust workforce to bolster the dairy sector.

“We appreciate that the government has acknowledged the pressure farmers are under due to being short-staffed, and also recognise the critical role which international workers play,” said DairyNZ chief executive Dr Tim Mackle. “We are genuinely delighted for these workers and their families. Many dairy workers can now plan and look forward to a future in New Zealand with their

families. Their contribution will assist the dairy sector to continue playing a key role in New Zealand’s economy.” The 2021 Residents Visa will be open to an estimated 4,000 dairy workers, which should go some way towards filling the staff shortages reported on many farms around the country. DairyNZ put the figure of workers required at between two and four thousand.

DairyNZ opines that many rural communities will benefit from these workers and their families formally becoming New Zealanders. As well as their skilled labour and knowledge of dairy farming, there is the factor of population gain for isolated and small rural settlements. New citizens have families who will contribute to clubs and societies, bolster school rolls, support businesses and add diversity.

Urea technology for a changing climate

The past few summers in New Zealand have been hot and dry ones, with record temperatures, sunshine hours on the rise, and, in many areas, water woes for town and country alike. Betting on summer rain is never best practice in the coastal North Island, extending north into the subtropical belt and prey to the whim of El Nino and La Nina weather patterns that can deliver months of dryness. For one aspect of farming, however, technology has created a breakthrough for such conditions. Urea is important for pasture growth, and pasture growth is necessary for feed, especially when dry conditions threaten. However, one of the most well-known adages in the fertiliser business is that urea needs rain mere hours after spreading, or it begins to lose its valuable nitrogen content into the air. Roll the dice, bet on rain, and a percentage of the benefits could evaporate without it. Dry coastal winds such as those we also experience here are an exacerbating factor. No longer, with an advancement pioneered by Ravensdown, whose fertiliser scientists realised that there was a way to stop the loss. Beating lack of rain, dry winds and lack of plant cover was the goal, and they have tackled these factors by coating the urea, slashing nitrogen loss by half. Now, this method has been in the field long enough for statistics to prove its effectiveness.

“At Ravensdown, we are seeing farmers tackle their greenhouse gas emissions by considering these three factors and choosing coated urea,” said Greg Costello, the innovative company’s fertiliser product manager. “Our field-based teams are encouraging shareholders to think about their utilisation rates, nitrogen use efficiency and environmental mitigations. After all, a co-operative should be helping its owners

apply the right amount, rather than the largest amount.” That’s food for thought as we approach the warm half of the year, with forecasts predicting more of what we’ve seen in previous summers. The window of application is widened by the inclusion of that specially engineered coating. While there is a slight cost increase to apply the N-protect product instead of uncoated urea, this

technology is becoming mainstream because of results. The final and welcome knock-on effect, which comes from a coated urea solution, is a lack of stress for applicators. In previous seasons, the forecast of even the patchiest rain would make telephones ring off the hook at fertiliser spreaders’ offices, with everyone wanting urea at once. Now, the curve is broadened by science, and everyone can claim a win.

Tahere Wiltshires a ‘wonder flock’

Great feet and great meat make Tahere Wiltshires hard to beat and for Peter and Aira Bremner, the decision to change to a pure-breed Wiltshire flock was an easy one. Higher meat yields with an average increase of 1.5kg to 2kg for each lamb and zero wool maintenance made the transition a no-brainer for the Whakaki farming couple. “I first trialled them around 15 years ago, and the results were promising. Now that we’ve bred for better feet in my current flock, I couldn’t be happier. There’s no dags, no need to crutch or shear, and we have zero flystrike,” says Peter. “Our sheep are clean. In addition, the self-shedding breed are hardy, and they have high resistance to facial eczema. The fertility and survivability rates are also strong in our Wiltshires. We don’t even need to dock. “I think wool is a fantastic natural product, and I’m not knocking it, but with wool values being so low, we needed to make a change. With Wiltshires, we’ve been able to eliminate the need for shearing and crutching, and the expenses that come with that.” Wiltshires are a typically more compact breed. Their high fertility sees mix-aged ewes scanning around 176 per cent and the two- tooths around 167 per cent.

In terms of shedding, the wool falls off, decomposing and disappearing into the soil. Both Peter and Aira grew up eating lamb roasts and were impressed with the Wiltshire flavour. “It’s some of the best meat I have ever tried,” says Aira. “It is tender, moist with a delicious flavour.” Bremner’s flock won Best Lambs in the 2021 Wairoa A&P Show and are in very high demand. Last year Tahere Station sold a number of ram hoggets with resounding success and are looking forward to selling a round of two-tooth rams this November. Ewe lambs will go on sale between January and February next year as well. A recent Hawke’s Bay Regional Council survey of Hawke’s Bay river birds has shown that shorebirds continue to thrive on rivers in the region. The survey is carried out every year, for three years, along 286 kilometres of the Tukituki, Ngaruroro and Tūtaekurī rivers to monitor state and trend in numbers and diversity of river birds. ”The great results from this year’s survey, the second of three, are similar to what was found last year for bird numbers,” says Hawke’s Bay Regional Council terrestrial ecologist Keiko Hashiba. “It is awesome to see that two years in a row, our rivers are strongholds for many of our threatened shorebirds. This is fantastic because many of these species are reported declining elsewhere, so we are delighted that some Hawke’s Bay bird populations remain steady. “Many of the birds along our rivers are classified as at-risk and threatened by the Department of Conservation. For example, the banded dotterel; 2,564 adult banded dotterels were counted during the 2019 and 2020 surveys — an 11 per cent increase from the 2019 count. “This number represents an estimated 13 per cent of the global population, and the count shows that the Tukituki River supports the largest population of banded dotterels in New Zealand.” The population counted during the 2020 survey is the largest number of banded dotterels counted on these rivers since counts began in 1962. “It is great to see how important our rivers are to supporting the birds that rely
