Candy Cane Hot Chocolate

Jubilee Christmas Cocktail

This can be made from scratch or using your favourite hot chocolate mix. Make it an “adult version” by adding some Kahlua.

New York-based mixologist Jeremy Oertel of Donna BK is the genius behind this crisp and cheerful holiday party cocktail. 1½ oz vodka, such as elit by Stolichnaya Vodka 1½ oz dry red wine

Ingredients for hot chocolate:

½ oz St. George Spiced Pear Liqueur

½ cup whole milk (or milk of your choice)

¼ oz maple syrup

½ cup heavy cream

1 oz seltzer

3 tbsp sipping chocolate

Freshly grated nutmeg

¼ tsp pure vanilla extract

Apple slice for garnish

Remaining ingredients: 1 candy cane Whipped cream Candy cane (broken into small pieces) Optional: 1-½ oz Kahlua 1. In a saucepan over low heat, warm whole milk and heavy cream.

¼ oz lemon juice

3. Stir in sipping chocolate and vanilla extract. 4. Remove from heat (and stir in Kahlua if making the adult version), pour into your favourite mug. 5. Top with whipped cream and candy cane pieces.

Build in a glass and top with seltzer. Garnish with an apple fan and grated nutmeg.

Olde Holmes Family Stuffing

This easy and classical recipe is Daniel’s grandmother’s recipe. SERVES 4 4 eggs 4 tbsp (raze) fine granulated sugar

3. Cook the meat in another fry pan, breaking up as it browns to get as crumbly as possible.

4 cups crushed ½” bread crumbs

4. Do not drain the fat because you want moist stuffing.

1 cup fine bread crumbs

5. Mix everything together is a big bowl.

1 cup oats

100gr (4oz) dark Belgian chocolate

1 cup sunflower seeds

1. Separate the egg white from the yolk.

1 cup raisins

6. Add the broth and refrigerate.

1 cup diced walnuts

7. Stuff the bird if desired. For the rest of the stuffing, bake in a covered baking dish at 300 degrees F for ~ 2 hours. Take the lid off for the last 30 minutes to have a crunchy top.

½ lb butter

2. Place the chocolate in the top section of a double boiler that is set over, but not touching, lightly simmering water.

3 diced celery sticks 3 medium diced onions 2 tbsp Italian spice

3. Stir occasionally with a wooden spoon until melted. Remove from heat and let cool slightly.

6. With the spatula, delicately fold the egg whites in three parts, into the chocolate.

4. Beat the egg whites until they hold stiff peaks.

7. Spoon the chocolate mousse into 4 champagne glasses, wineglasses or ramekins.

5. Mix the egg yolks in the melted chocolate and then add the sugar. Fold through then transfer immediately the chocolate mix in a mixing bowl using a spatula.

A double recipe for lots of leftovers – one for the bird one in a baking dish. Best to make the day before.

8. Cover tightly with a plastic wrap and refrigerate for a few hours to allow the mousse to solidify.

½ tsp each of oregano, savory, sage, rosemary, thyme 3 lbs pork sausage (or 2 frozen tubes) 1 cup chicken broth 1. Mix the first 6 ingredients in a big bowl and set aside. 2. Lightly sauté the celery and onions in the butter. Add spices and set aside.

Bacon Parmesan Brussels Sprouts Not a fan of Brussel Sprouts? You might actually like these, and not just because of the bacon!

½ clove fresh minced garlic

SERVES 4

2 tbsp fresh grated parmesan cheese (extra)

30 fresh medium size Brussel sprouts* 6 slices of crisp cooked crumbled bacon 5 tbsp sour cream 5 tbsp fresh grated parmesan cheese

1 tbsp butter Fresh ground black pepper 1. Cut ends off Brussel sprouts and remove yellow or spotted leaves.

3. Steam or boil sprouts until tender but slightly crisp still. 4. Heat the sour cream, parmesan cheese, butter and minced garlic over low heat, stirring constantly until mixture is hot. 5. Combine cooked Brussel sprouts, crumbled bacon in a covered casserole dish, pour heated white sauce over and toss to coat. 6. Grate fresh ground black pepper over top, sprinkle with extra parmesan and serve. *Tip: try to find similar-sized Brussel sprouts so they cook evenly.
