Whether you’re doing a few updates or tackling a full reno, our Renovation Issue is packed with on-trend inspiration for you. On the cover this month is The Haven—a sprawling Whistler chalet that’s undergone a Euro-chic renovation with the help of its French owner. Our managing editor Lise Boullard had the chance to take a tour and didn’t want to leave! In this issue we also look at what’s hot in lighting trends, and interior designer Jamie Banfield shares what's in vogue in bathroom cabinetry, as well as in tub, shower, faucet and sink design. On the food front, our resident culinary writer Chris Dagenais delves into the Nuevo Latino resto trend and puts chef Quang Dang into the hot seat for a Q&A about his move to Whistler as the new executive chef at Araxi. LOUVRE LUST A WEST VANCOUVER BUSINESSMANTURNED-ARTIST HAS ACHIEVED THE ULTIMATE GOAL—HAVING HIS WORK EXHIBITED IN PARIS. W h e n i t c o m e s t o T o r o n t o - Vancouver flights, “uneventful” is usually the best one can hope for. That wasn’t the case, however, for president and founder of Ocean West Financial Group, GK Hinkson, whose life changed course on a business flight home. Hinkson re-watched a film he’d seen before, the 2000 biopic Pollock, about the modern American painter. (Chosen mostly, he admits, because star Ed Harris is one of his favourite actors.) “By the time I’d gotten halfway through that movie, I was so pumped, all I could think about was how I was going to get my assistant to find me a studio,” he remembers. The following day, and for the first time in his life, the ersatz artist who’d never touched pen to paper except to sign a contract, was standing in a rented studio space looking at a large, empty brown-paper panel surrounded by acrylic paints. Three hours later, he’d finished his first piece of art and started down a new path. Just over two years later, Hinkson’s large-format, abstract pieces are coming into their own. Built up by hand and with no paintbrushes or knives, he layers colours on wet canvas and manipulates paint by “washing” it off. Occasionally, sand (and in his most recent works, coffee grounds) are incorporated. The result is soothing but with an underlying tension not unlike a naturalized version of the marble paper flyleaf of an antique book. G.K. Gala creators Doug Holtby and Blair Shier chaired the interactive gala dinner and auction to help empower athletes with intellectual disabilities to gain pride and acceptance. on a quiet private road at the foot of Blackcomb Mountain, The Haven chalet in Whistler is unlike any other home you’ll find in the world-class ski resort. That’s because the Hong Kong-based owner, a French businessman with a taste for fine art, had a hand in every aspect of the 14-month renovation of the 6,000-square-foot space. Adorned with custom design touches and furniture, art from the owner’s collection and Asian and European décor, it’s no surprise that this ski-in retreat has become an annual gathering place for the owner, his family and their friends—a respite in which to enjoy one another’s company—and the owner’s renowned dinner parties. Those who have been lucky enough to tour the property, or stay there, can see and feel that the chalet is truly a unique space. The list of visitors includes Whistler-based interior designer Karen Ripper, a friend of the owner’s who worked with Paris-based interior designer Dillon Garris on the 2013 renovation. Set on a secluded street just off of Blackcomb Way, the property’s privacy and proximity to the surrounding wooded area is the first thing I notice as I pull in after driving LIVINGMAG.CA
up on a sunny Friday to be given a tour by Karen and Thornhill Real Estate listing agent Katherine Currall. A Douglas fir, pine, hemlock and cedar forest surrounds the half-acre property, providing just the right amount of intimacy while letting light through the home’s many windows and skylights.

Being in the room on this sunny day with the light streaming through windows layered with Hermès-inspired cashmere curtains, provides an almost spiritual experience. The entire back wall of the living room is composed of floor-to-ceiling windows, providing a view of the adjacent lush forest (“It’s Crown land so no one can build there,” Karen tells me), and a feeling of being at one with and glass fireplace designed by the owner (“he had a photo of a round fireplace in his pocket for years,” says Karen), which is mirrored by a similarly shaped sculpture and book shelf by Ron Arad, dividing the living room from the entryway. “When you’re sitting [in the living room] and there’s snow coming down, we have lights up all throughout the woods, which you can see twinkling through the trees,” says Karen. Layered with textiles such as a teal Indian rug and boasting vintage Scott Landon lights, the living room encapsulates the European esthetic of the house, and the owner’s impeccable taste when it comes to art, sculpture and furniture. “You can see he has an incredible art collection,” says Katherine. “You look around and there’s just art everywhere.”

h e n I m e e t J a m i e B a n f i e l d o n a r a i n y Tuesday at The Parkside Brewery in Port Moody, he greets me with a warm smile—and proceeds to buy us craft beer and snacks (pepperoni sticks, a cheese croissant) which we share as he tells me about his interior design ventures.

3. OVERSIZED TILES. “Large format tiles in a four-by-eight-foot format instead of one-by-two, are very popular,” explains Jamie. This size of tile, in a porcelain that looks like natural stone, is easier to clean and maintain. In terms of colour, blush and grey are big trends Jamie is seeing come out of Australia, which he sees as a pioneer on the décor scene.

K., J a m i e showed interest in design and architecture from an early age (“In Grade Nine I sketched up a house which eventually ended up being built in Mission,” he tells me), but it took a marketing stint in Australia and a gig at the Home Depot in Vancouver to lead him back to interiors. In 2013, he established Jamie Banfield Design—and hasn’t looked back since. With a portfolio that includes residential projects in West Vancouver, Anmore and Belcarra (including Love It or List It star Todd Talbot’s Lions Bay home), a cabinetry line called The Banfield in partnership with Kohler, and 13,000-plus Instagram followers, Jamie is quickly establishing himself as one of the Lower Mainland’s most sought-after designers. The Kohler partnership, which is going to be expanding with more product lines in the future is a natural fit for Jamie, and not only because one of his favourite spaces to redesign is the bathroom. “Kohler’s values align with (my company’s)

3 lbs beets, mixed colors without tops 2 tbsp olive oil 1 bunch fresh thyme salt to taste Separate the beets into their individual colours. Wrap the yellow beets together in tinfoil with a splash of olive oil, thyme and seasoning. Repeat with the other colours of beets. Place the foil packages on a baking sheet. Bake at 350F for 45 minutes or until the beets are cooked through. To test for doneness, poke the beet with a small paring knife. The knife should slide through with ease. Once cooked, remove the beets from the foil and let cool to room temperature. Remove the skin and cut into rounds or wedges. Store the beets in separate containers to prevent the colours from bleeding into each other. FOR THE CHEESE:
2 cups farmhouse chèvre 2 tbsp whipping cream 2 tbsp fine ground black pepper In a mixing bowl, whisk together all ingredients. Store in the fridge in an air-tight container until required for assembly. FOR THE FINE HERB VINAIGRETTE:
1 bunch fresh tarragon 1 bunch fresh dill 1 bunch fresh thyme 1 bunch fresh Italian parsley 1 bunch fresh chervil 3 tbsp olive oil 2 tbsp white wine vinegar 1 clove shallot, julienne 1 tbsp Dijon mustard 2 tsp black pepper 1 tsp sugar 1 tsp salt In a high-speed blender, add all ingredients except the oil. Blend until you have a smooth green purée. Slowly drizzle the olive oil in until you

WINES OF SPAIN AND PORTUGAL. HERE, THE TOP BOTTLES FROM THREE OF
M o n t h s b e f o r e t h e a n n u a l f e s t kicks off (which runs Feb. 24 to March 4 this year), West Coast wine aficionados start dreaming about the wines they must taste and begin wondering how quickly they can get into the wine festival store. This year, organizers have chosen to feature the wines of Spain and Portugal. Even though they are neighbours geographically, the Spanish and Portuguese are very different when it comes to their wines and other releases. While Spain is “world-friendly,” Portugal is like the winemaking uncle who never comes out of his basement. (Portugal makes fabulous wines and ports—but until recently seems to have forgotten to tell the rest of us.) If you’d like to start training your nose and taste buds for your spring tastings, here are my three suggestions from wineries that will be participating in the festival. TAYLOR
FLADGATE

TAWNY
PORT
(PORTUGAL). This year, Taylor Fladgate is celebrating 325 years in the port wine business. Fully matured in seasoned oak casks, this port wine gradually takes on its characteristic amber tawny colour, slowly developing the complex mellow-yet-spicy, nutty flavours and the smooth luscious palate which are the hallmarks of this style of port. The most popular 20-year-old aged Tawny Port in the U.S. is best enjoyed at the end of a great meal, ideally paired with

A mouthful of fruit. Cherries, black fruit with clover, pepper, vanilla and coconut notes. Eighteen months in oak and 18 months in bottle. Did I mention it’s well under $20? I decided my bedroom caused me more stress and anxiety than the calm I was looking for in the

space. In October 2017 I did a renovation that focused on making it clutter-free, light and airy. I opted for an entirely new closet system, which meant I had to do a purge. It wasn’t easy but what I got was an open concept closet. Everything is on display so it’s easier to put outfits together—a dream for every fashionista! With new wall-to-wall curtains, I get more natural light on sunny days so it feels like I gained extra square footage. Hanging my hats was designer Amanda Hamilton’s idea, whose firm was the driving force behind this renovation. Her

added black accents to keep things grounded. My advice to anyone is, just go for it. I’ve wanted to redecorate for years and I’m so happy I finally did it.
