Step into two eras at once when dining at Parchetto, a new fine dining establishment that blends 1900’s style cuisines and cocktails with a modern and elegant atmosphere.
Meaning “little park” in Italian, Parchetto pays homage to the Paso Robles City Park, a space that Managing Owner and Sommelier Carole MacDonal and her husband, Executive Chef Santo MacDonal gravitated towards when arriving in Paso Robles 16 years ago.
“The park was our central focus. We went to a lot of the events there, we hung out there, and it was always something in the back of our minds,” Carole MacDonal said.
Sister to the Italian Il Cortile Ristorante, MacDonal said once they moved into the building located at 1234 Park St., Parchetto turned into an unexpected nostalgic and 1940’s-like space.
“As it started to evolve, it was almost like it spoke to us,” she said. “The lighting is very reminiscent of an old chop house in New York, and so it kind of dictated what we were going to do here.”
Go back in time and order a classic cocktail from the 106-year-old bar—maybe the Water Lily made from gin, creme de violette, orange liquor, and fresh lemon juice, or a Grasshopper, an after-dinner drink that’s minty and sweet.
A lot of places are creating complicated craft cocktails. So MacDonal said they decided to take a different course. “Ours are going to go back to the 1900’s, the 1950’s in cocktails,” she said.
While not a steakhouse, Parchetto’s
protein-dense menu features dry-aged beef and duck —delicacies unique of its kind among the Paso Robles food scene.
When describing the dry aged-duck, MacDonal said “It’s crispy on the outside, beautifully cooked on the inside, and it’s just served with whatever seasonal fresh vegetables that we have.”
Parchetto also sources all its ingredients locally, and Chef Santo MacDonal works with various farmers for the most quality products—some of the vegetables even come from the MacDonal’s own garden.
“Our fish is fresh all the time. [Santo] has really beautiful ways of treating Chilean sea bass,” MacDonal said. “We have a striped bass. Here we have salmon. All the seafood dishes are amazing. People go crazy over our scallops...so everything is fresh in season.”
Sunday brunch anyone? Parchetto offers an extensive menu every Sunday from 11 a.m. to 2:30 p.m. with dishes to impress any diner including a lemon and ricotta Belgium waffle with a berry maple syrup, or the Parchetto Benedict featuring poached eggs on brioche with ham and fontina fonduta.
If you’re not feeling breakfast for brunch, Parchetto has it covered. Their midday menu, available Tuesday – Sunday from 2:30 to 5 p.m., includes delicacies such as fried calamari, a bacon burger, or lamb sliders with goat cheese and tzatziki sauce.
Having been open for only two months, Parchetto has already curated elegant and thoughtful menus for wine, cocktails, brunch, lunch, and dinner that will leave diners planning their next visit.

Of course, it wouldn’t be a seafood spot without fish and chips. And if you’re into that kind of thing, Kicker’s has it with crispy battered cod and French fries served alongside cocktail and tartar sauce.
However, if you’re looking to kick your lunch or dinner up a notch, you really should try the lobster roll, 100 percent lobster claw and knuckle meat warmed in garlic butter and served on a nice soft roll; the crab cakes, succulent chunks of Dungeness crab blended with seasonings and bound together with a light, crispy breadcrumb coating; or the smashed crab and beef melt, a surf and turf style sando that includes 6 ounces of Black Angus, a 3-ounce crab cake, lemon dill aioli, provolone cheese, and lettuce, tomato, and onion on your choice of marble rye or sourdough. llan Hancock College’s agriculture program supports students pursuing careers through several pathways. Agriculture isn’t just a career path for Heriberto Mendez Zayas.
“When I’m out in the fields, I see it as something fun,” he said.
The Allan Hancock College student is now in his second year studying plant science in the school’s agriculture program.
“What I like about agriculture for me is it’s just the process I’ve seen from seed to a whole crop,” Mendez Zayas said. “That’s what caught my attention: the whole process of agriculture. To see the whole flower bloom… that’s a part of agriculture and I was just amazed at how the whole process works.”
Mendez Zayas is one of about 350 students enrolled in Hancock’s agriculture program, where students can specialize in soil science, plant science, agricultural business, sustainable agriculture, and horticulture. Students can earn a twoyear degree that can transfer to a fouryear university or earn a certificate that can get them into the industry right after graduation.
“You can tailor that with the electives with what part of the industry you want to go into,” said Erin Krier, the agriculture program’s coordinator and associate professor. “There’s a broad range of the opportunities available with the degree.”
Hired in 2017, Krier came on board to teach sustainable agriculture at a time when the agricultural degrees were within the viticulture department and specific to the wine grape industry, she said. One year later, Hancock received a National Science
Grant that helped develop the agriculture program.
“That’s why we have these degrees and certificates available today. The program was able to explore and develop these offerings with that support from the National Science Foundation,” Krier said.
Alongside agriculture activities, students can do adjacent work like working in a facility, packing house, or conducting lab work such as looking at pesticide residues or plant breeding.
“We also have an animal science [course], and we have environmental horticulture, which concentrates on learning about ornamental types of plants like flowers and green plants,” she said.
In addition, Hancock now offers a certificate that can help students get a pest control advisor license—which used to require a bachelor’s degree.
“Students who get that license can become pest-control advisors, which is required if you are making recommendations to a farm for any pest control measures that need to be implemented,” Krier said. “It’s a really great career opportunity you can enter into without having to transfer.”
Mendez Zayas potentially sees himself running a business that sells pesticides and works with farmers on pesticide management to help other farmers take better care of their farms, he said.
Zayas’ advice to future students? Choose a career path that catches their attention the most.
“It’s an up-and-coming program that has opened doors to a lot of people who have been through it,” he said. “This program has a lot of amazing things to offer.”

Kroener’s inspiration derived from his experience in the wine industry, where he started in 1995. Feeling unimpressed with the tedious, seasonal work of wine, yet still fascinated with its philosophy, Kroener forged a trail to combine the science of wine and the art of distilling to create KROBAR.

“The philosophy behind making spirits is to treat it like a wine,” he said. “You’ve got your front, back, and mid-palette. I wanted to make sure that it was true to the actual spirit itself. There’s a lot of stuff out there that says it’s gin, but it’s got a little weird funk to it—I just wanted to be true to the form.”
And when the ingredients are good, the cocktails are even better.
While KROBAR distills spirits to their most pure state, it takes cocktails to a new level by tweaking timeless recipes with experimental and complimentary flavors.
Imagine a margarita. Tequila, lime juice, agave, and salt—a classic featured on KROBAR’s menu. Look to the right on that same menu and see “Sun Reye’s,” an in-house spin-off with mezcal, beet and serrano syrup, scorched rosewater, and burnt rosemary. Or even Kroener’s personal favorite Tea Lime Pie, a drink inspired by key lime pie featuring distinctive ingredients
In addition to its alternating live music and line dancing nights on Fridays, Kroener said they will soon host bartending 101 and gin-making classes throughout the week.
“Just to make it a little bit more fun, funky, and cool,” he said. “This place warrants itself for a lot of fun things.”

“Our Brussels sprouts are really good. … We go through probably 40 pounds a week,” Kroener said with a laugh.

“I will put any of our cocktails up against anybody in the county, because they’re delicious and phenomenal and they’re creative.” Kroener said.

The Ramey family has had a love affair with Ragged Point Inn since 1962, when Mildred and Wiley Ramey shared a vision that eventually evolved into the Ragged Point Inn of today.
Through the years, each generation has helped to forge and shape the iconic landmark. Brothers, Wiley Jr. and Jim Ramey, have managed and shaped the restaurant, the hotel, and the wedding and event business, while Elaine, the eldest of the second-generation siblings, was focused on modernizing the guest rooms and even brought some of her Southern charm to the boutique-style hotel units.
The third generation is doing much of the same but taking a more hands-on approach. Matthew Ramey, Ragged Point’s new executive chef, started early in the business, flipping burgers when he was just 10 years old. After serving as the inn’s assistant general manager for 15 years, he realized he could have a greater impact on guest satisfaction by putting his love of fine dining and his experience in the hospitality business to work heading up the kitchen. And that is exactly what he did.
Matt has been refining the menu for the past two years, and with the help of his wonderful staff, including the very talented pastry chef, Rebecca Fields, has been creating memories every step of the way.
“The main thing we’ve done is we’ve gone back to highlighting just the highest quality ingredients,” Ramey said.
The restaurant staff is curating an experience, focused on fresh seasonal produce and the finest proteins available, while highlighting the best of the California Coast. From the Mediterranean sea bass

Anew face on the wine country food scene dishes up authentic, Neapolitan style pizza to pair with Paso Robles’ iconic wines.
“If you follow the wine industry in SLO County, it’s all moved North,” Via Caravaggio 147 owner Pat Haran said. “We felt like Authentic Neapolitan pizza would be a good pairing here in Paso.”
Pat Haran hasn’t always been a restauranteur. He grew up working in an Italian restaurant in Camarillo, CA but took a long hiatus to become an ER physician. Haran attended medical school at UCSD and then completed his residency at Harbor UCLA and subsequently moved to San Luis Obispo where he had a successful career in emergency medicine.
In 2021, Haran embarked on a lifechanging trip to Italy attending a pizza school run by Enzo Coccia, the world’s leading expert on Neapolitan pizza. Coccia wrote the only globally recognized textbook for authentic Neapolitan pizza and can be found on CNN with Stanley Tucci’s ‘Searching for Italy.’
Haran worked long hours with Coccia at Pizzeria La Notizia, recognized by the Michelin guide. There he learned the importance of quality ingredients, received deep knowledge of tradition, and found a great passion for Neapolitan pizza.
After hundreds of hours of training, Haran completed one of the hardest and highest levels of training to becoming a pizzaiolo and immediately decided it was time to bring what he learned back to Paso Robles.
In December 2022, Haran and his wife, Kathryn, opened Via Caravaggio 147 in the
Paso Market Walk. The pizzeria is named for the street on which Haran trained in Italy, Via Caravaggio and the two addresses of La Notizia, 53 & 94 (added together is 147). Within the first year of being open, Via Caravaggio 147 became VPN certified. This is a prestigious certification recognizing the strict requirements and standards set by the Association Vera Pizza Napoletana (AVPN) including sourcing correct ingredients from the Campania region of Italy as well as the use of appropriate technique and equipment.
Haran dishes up traditional red sauce pizzas like the classic Margherita and puts his own spin on American favorites like pepperoni and sausage. If red sauce isn’t your first choice, the pizzeria also offers delicious white pizzas like the popular mushroom and taleggio, which has the perfect blend of cheeses, thyme, local Mighty Cap Mushrooms, garlic, and basil.
Residents can also enjoy their pick of calzones, rotating seasonal salads, and appetizers ranging from caprese stacks to garlic cheese bread and burrata toast.
