ince 2000, Kaylynn Tims has served breakfast, lunch, laughter, and community in Kay’s Orcutt Country Kitchen—and although she sold the restaurant at the beginning of 2022, the Santa Maria Valley staple is staying in the family. “I just felt that if she sells it to anyone but a family member, it would change the legacy of it, because we built the place on family and friendship.” Kay’s daughter Shiloh Flagg said. “The community of that restaurant got my sisters and I through so many tough times. It’s like family.” Flagg said her mother started serving at Orcutt Country Kitchen when Flagg was 8 years old, working part time for a little extra income. “She ended up buying it when I was 17 years old. I was working at Giovanni’s Pizza at the time, and she just said, ‘Hey I need you to come in,’” Flagg said. “There were days when the cooks didn’t come in, and guess what? Mom and I were cooking.” The restaurant became Kay’s Orcutt Country Kitchen, filled with family, food, and regular customers. Flagg’s two younger sisters also worked at the restaurant—fighting over customers and creating memories—and Flagg eventually took over as general manager, working there until she was about 30, when her mom fired her. “It’s funny. To this day, I still don’t know why she fired me. I never had anyone fire me, only my mom,” Flagg said with a laugh, adding that she moved on to bartending at the Far Western Tavern and Trilogy before going into real estate. “But I needed it to help me figure out where I needed to be in

this world ... and ultimately, that is what afforded me the opportunity to even buy the restaurant from my mom, was the real estate career. To this day, I thank my mom, because who knows what would have happened otherwise.” Flagg said she wanted to take over the restaurant for a couple of reasons: Kay’s Orcutt Country Kitchen means the world to her mom, so Kay still needs it in her world. And Orcutt needs her mom, Kay, so keeping the restaurant as a family operation is important. “I’m not changing anything,” Flagg said, but then added that she has actually changed one thing. “The only thing I’ve changed a little bit is I’ve gotten rid of Styrofoam products because I don’t think they’re good for the community, the world. But that is the only thing that’s changed. The same team members work there. Same values ... same name, same bacon, same orange juice.” The food is the best, Flagg said. Most of the menu items were created by Flagg and her sisters, so they absolutely love the food. The orange juice is fresh-squeezed, the coho salmon is wild, and the biscuits are made from scratch, just like everything else on the breakfast and lunch menus. “The biggest thing you can say about the restaurant is that it’s built on family. It’s built on family values. That’s who we spend our time with,” Flagg said. “And sharing our family with all the world, with this community is just amazing, and having them share their families with us.” Kay’s serves breakfast and lunch Thursday through Monday from 7 a.m. to 2 p.m. ❉

he keys to a successful brunch are a mimosa, a well-garnished bloody Mary, or a hot Irish coffee. And you can get all of them at SeaVenture on Saturdays and Sundays, where the bottomless mimosas are $15, the food is fresh and fabulous, and the views of the Pacific Ocean are wide open. Chef Steve Smeets has a thing for breakfast and putting a twist on nostalgic classics like the eggs Benedict, huevos rancheros, or biscuits and gravy. His approach to the menu items at SeaVenture is to keep it simple. “With simple food, there’s not a whole lot you have to do to make it great, especially if you have really great ingredients,” Smeets said. What’s great about the huevos rancheros, Smeets said, is the house made fire-roasted salsa. Tomatoes, onions, and jalapeños get thrown in the kitchen’s charcoal oven, where they blister and gain a touch of smoke before being blended together to accompany two eggs on top of a crispy tortilla, bacon, chorizo, jack and cheddar cheese, and local pinquito beans. “It’s to die for,” Smeets said. The biscuits and gravy includes fresh biscuits loaded with cheddar cheese, bacon, and jalapeños with gravy made with ham, bacon and linguiça; while the standard breakfast sandwich transforms into a BLT (bacon, lettuce, tomato) egg croissant. One of the brunch menu’s more popular items is the lobster Benedict, which comes out a little differently than most bennies— without an English muffin. SeaVenture sautés lobster, shrimp, and asparagus, which sit comfortably on their puff pastry shell perch and get topped with poached eggs and house made hollandaise.

Smeets added that SeaVenture has brunch on tap for vegans and vegetarians as well, with plenty of veggie-rich salads, the option to make menu items meatless, and a coconut milk yogurt parfait. House made coconut granola interspersed with coconut milk yogurt, fresh berries, and bananas gets sprinkled with toasted coconut and pumpkin seeds. If you’re feeling especially froggy, you can even get dessert to finish your big weekend meal off with a flourish—creme brûlée, chocolate lava cake, bananas foster, or cheesecake. Each stands on its own as a classic. But Smeets said SeaVenture takes that nostalgia to the next level. The cheesecake is made with goat cheese (chèvre) and served with strawberries and basil. Bananas foster comes with sticky banana bread and vanilla bean ice cream, while the hot banana rum sauce is poured table-side. If you prefer your dessert after dinner, SeaVenture has a great meal for that. You can get striped sea bass, lobster vol au vent, or salmon to go with your ocean view; take on a charcoal-grilled half of Mary’s chicken with butternut squash risotto and roasted local carrots; or you can carve into a 2-inch thick, 24-ounce charcoal-grilled ribeye served with a loaded baked potato, local garlic green beans, and caramelized shallot butter. That tasty topping is full of caramelized shallots, fresh herbs, and lemon zest. “I put it on bread sometimes and just eat it as a snack,” Smeets said with a laugh. t’s a Friday night in Downtown SLO. Higuera Street is bustling with people, and at Old San Luis BBQ, it’s live music night. llan Hancock College’s Culinary Arts and Management program is offering more course sections than ever before this fall, thanks to a growing demand for classes. Program Coordinator and instructor Ron Lovell said interest and enrollment in culinary arts has increased by 10 percent at the college. “With the increase in enrollment, we have hired four new part-time faculty that have spectacular experience in the local industry,” Lovell said. “We have absolute legends teaching the lab classes, with a combined 100-plus years of experience.” These new faculty members include professional chefs who graduated from top culinary schools, each with at least 20 years of experience in the industry. Hancock’s Culinary Arts instructors teach students how to do everything from bake a wedding cake, to restaurant management, to the science of food—and then transfer those skills into the industry. “All of the faculty that teach in our program have years and years of real world experience, so we can partner with local businesses to help the students find a job and get not only the educational experience, but practical experience in the industry so that they can earn money while they’re going to school,” Lovell said. “We all have connections with the local restaurants and hotels, and I have never had a student that we have not been able to help place into a job.” And Lovell said the restaurant industry needs skilled employees like never before. “California is one of seven states that

requires the minimum wage for tipped employees, so no matter what position you go into in the hospitality industry, you’re making at least $14 an hour plus tips,” Lovell said. “They’re so short staffed, they’re allowing people to get overtime, they’re doing on-the-job training, and it’s just a great opportunity for people to get into our industry.” Hanco ck’s Culinar y A r ts and Management program also empowers its graduates to work for themselves. Baking and pastry making are among the program’s most popular courses, and Lovell said many students who earned their baking certificate at Hancock have gone on to own their own businesses. Starting this fall, the education extends beyond just Hancock’s campus. The Culinary Arts program partnered with Santa Maria High School’s Career Technical Education program to allow high school students to take college credit courses that count toward an associate degree in Culinary Arts and Management. “They’re going to open up the brand new culinary school, which is spectacular,” Lovell said of Santa Maria High School’s new offering. “Just the equipment alone, they had $800,000 to equip the kitchen with the very top-of-the-line pieces of equipment. In April/May, his small-batch craft distillery in San Luis Obispo hopes to host more whiskey tours, spirits classes, and launch a new malt whiskey. “A lot of people get confused about what a malt whiskey is compared to a bourbon, rye, or wheat whiskey. What makes up a rye whiskey? What makes up a wheat whiskey? We are going to impart a little wisdom while tasting on some delicious whiskey,” Kroener said. Kroener added that the whiskey classes would be a 2-hour course but those with a deeper interest can opt for a more extensive package that lets guests make a spirit from grain to distillation. The different courses to be offered will be gin production, whiskey production, bitter production, and cocktail making. Krobar’s cocktail menu would also get a makeover this spring. The revamped list would feature bourbon, rye, and gin blends plus the new malted whiskey as soon as it gets bottled. Until then, Krobar bartender Jon Ross shared how spirit aficionados can enjoy the distillery’s very own gin. Ross recommended the Coco Cowgirl – a blushing sunset-pink drink made up of 1.5 ounces of Krobar’s pink gin, 0.75 ounces of lime juice, 0.75 ounces of blood orange juice, 0.5 ounces of coconut cream, and 0.5 ounces of fresh grapefruit juice.

Spirits aren’t the only item Krobar is distilling. Kroener said they have five different kinds of bitters, specialty liqueurs, and even signature cocktail cherries. So, what separates Krobar from other distilleries? “We are a distillery that makes a whole swatch of different products. We want to make products for all types of different palates. We source local ingredients where we can and are always experimenting,” he said. Having more than 27 years of experience in the wine and spirits industry helps. Kroener tapped into his decades of learning and honed his whiskey craft with studious precision. Through his years of experience he has gained great knowledge on utilizing barrels and aging distilled spirits. “The barrels are like our spice racks. I’ve been making wine for a long time and in the wine industry, we really do call our barrels our spice racks. Each barrel – how long you air-dry them, how long you toast them, what char level you choose – it all makes a huge difference,” he said. “When I got into this, that’s the one thing I wanted to make sure we did: that we used the same quality wood for our whiskey that we did for our wine,” he said. “That’s proved to be beneficial, and now most people are doing that in California.” His attention to detail paid him back in bushels. It sprung Krobar ahead of the curve, and Kroener plans to keep the distillery moving forward! ❉

an Luis Obispo’s culinary dream team Brian and Krystal Appiano are up to their elbows in more than just barbecue sauce. The Rib Line owners are hard at work expanding tastebuds through their two latest ventures: The Switch and Sunsets at Pismo. Sunsets at Pismo serves gourmet street food out of a vintage Airstream trailer parked on Pismo Beach’s Pier Plaza. They dish up colorful options like filet mignon tacos, Rib Line’s “triple threat” chili, and kid-friendly bites like mac balls. “For such a small Airstream, we have a diverse menu,” Brian said. Located right next door to Rib Line on SLO’s Los Osos Valley Road, The Switch is a beer and wine bar with a rotating menu that the Appianos shuffle every two to three months. “Most of our catering is through Rib Line, but The Switch is more like our elevated offerings outside the barbecue realm,” Brian said. The Appianos’ chefs at The Switch plate up items like the smoked tenderloin, the charred corn, avocado and tomato appetizer, and honey-whipped chevre cheese and berries over toasted baguette discs. A test kitchen in essence, The Switch is the Appianos’ springboard to push the envelope beyond barbecue, especially when the company caters 80 to 100 weddings a year. Krystal said it was also their way of staving off stagnation, and keeping the kitchen crew passionate and excited about the craft of cooking.

“We have a few wedding coordinator friends who know how great Brian is at building wedding menus. They’ll come and give him some off-the-wall wedding challenges,” Krystal. “We had one where he had to do pho; we’ve had rehearsal dinners that wanted sushi; we did a full Indian wedding. We really can do anything.” The Switch also aims to host private events for up to 50 people. For instance, it will entertain a ticketed wine and art bar at the end of March. In the spring, customers can expect a deli bar at The Switch that’s loaded with turkey, ham, pastrami, and spicy fried chicken sandwiches. The space will also feature build-your-own salads, and a variety of soups. The Appianos are working to make it a breakfast and lunch spot. Its theme? “Super freakin’ tasty,” Brian laughed. Rib Line loyalists can still visit its new location in Grover Beach where they can enjoy outdoor grilling views and the popular barbecue Western burger. Even with their versatility, the Appianos still pay attention to their roots. Everything– from their dry rubs and sauces, to their four-cheese béchamel mac n’ cheese–is made in-house. The proof is in their sheer number of awards: 22 of 26 first-place food cook-offs, the Las Vegas World Championship for People’s Choice Chili, and winning all 10 Cal Poly rib cook-offs that Brian’s competed in, among others. “I don’t just buy Sweet Baby Ray’s, add a couple of ingredients, and say it’s my sauce,” Brian said. ❉

he collection of Big Sur guidebooks at the entrance to the Avocado Shack in Morro Bay is a big clue to what organic produce stand and market owner Michael Wolfe likes to do with his free time. And while he may bring snacks like Hearst Ranch Beef Jerky to get him through a weekend hike, for him, the real reward comes when he gets home. “We can work hard, but we always need a carrot in front of us,” Wolfe said. “I like to do the hard hike, come home, have a little wine and charcuterie.” On Feb. 27, the post-hike cutting board was filled with Bread Bike baguette slices, a block of Central Coast Creamery’s Ewenique manchego cheese, and Alle Pia’s Nostrano salami—all locally produced and all available at the Avocado Shack. They’re just a handful of the cheese, meat, dairy products, snacks, pantry staples, and more that Wolfe has brought in over the last several months, and he has plans to stock his shelves with as many organic, locally produced grocery staples as possible. “We’re adding 800 more items into the store to be a real, a true natural organic grocery store in all categories, from cashews to pecorino and our focus is to push out all non-organic items,” he said. “We’re going into the future. It’s an exciting time. I’ve waited 30 years for this.” Wolfe worked as a produce manager in local grocery stores for 20 out of his 40 years in the produce business, starting in Los Osos at Williams Bros. in 1983. Vons acquired the coastal grocery store chain in 1992. Wolfe worked for Vons stores all over North County, as well as Spencer’s Fresh Markets and Cookie Crock Markets.

He started his dream job in October 2019, when he opened the Avocado Shack in Morro Bay. In the last two and half years, the Shack has morphed from produce stand to organic grocery store, with a hyper-local focus on clean food that does the body good. It’s a concept that might not have worked 10 years ago, Wolfe said, but his customers crave high quality food that they can’t really get anywhere else. As ever, Avocado Shack continues to focus on fresh, organic produce from local farms. Green onions, kale, baby broccoli, strawberries, and lettuce from Blosser Urban Organic Farm in Santa Maria. Certified organic Valencia oranges from Old Creek Ranch run by the Blanchard Family—one of the oldest ranching families in the county. Fresh turmeric root from Kandarian Farms. “This is an example of something that puts exclamation points behind it,” Wolfe said. “Certified organic turmeric from within 10 miles of the store. You can’t do much better than that.” Kandarian Farms grows more than fresh produce, though, and Avocado Shack is tapped in. Dried organic celery leaf, date flour, and brown lentils are just a smidge of what’s offered along the Shack’s back shelves. And Wolfe already has the upcoming season of produce in the hopper: Surfside Farms will be delivering strawberries starting in April and heirloom tomatoes in August. Traceland Organics begins avocado drop-offs in May. Visit the Avocado Shack at 2190 Main St. in Morro Bay, Monday through Saturday from 9 a.m. to 5 p.m. and Sunday from 9 a.m. to 3 p.m. ❉

Mistura adds artisan chocolates By Malea Martin

M

istura is known by SLO locals for its bold flavors and diverse Peruvian cuisine. Now, you can also find artisan chocolates crafted at the downtown establishment. “Our chocolate tier features craft chocolates and desserts,” said Nicola Allegretta, owner and chef at Mistura. “They’re displayed as soon as you enter our dining room. It looks like a Tiffany jewelry store, but with beautiful, handcrafted chocolate.” The chocolates come in unique shapes, colors, and flavors, and are all created in-house. Chocolate flavors include espresso, passion fruit with black sesame seeds, hot pepper, rosemary and honey, and guava, just to name a few. “Now, people can come in and just shop for chocolates and desserts to-go, for any occasion,” Allegretta said. Allegretta’s pastry chef, Florencia Breda, has worked for Michelin Star restaurants in the past, and has been with Mistura for four years. “She had this idea to make chocolates,” Allegretta said. “So I said, let’s do it here.” In addition to Breda’s one-of-a-kind chocolates, her pastry creations are like little pieces of artwork. At Mistura you can find carrot cake, coconut mousse with dark chocolate, and fior di mandorla (almond, coconut, and marsala wine), plus many more. Mistura’s delicately crafted dessert options are just the tip of the iceberg:

There’s something for everyone on the lunch and dinner menus, from glutenfree and vegetarian dishes, to locally sourced vegetables, meat, and seafood. A personal favorite for Allegretta is the tiradito, a Peruvian take on sashimi. Celebrating Japanese culture and its impact on Peruvian cuisine, the Mistura Tiradito features thinly sliced sustainable yellowtail, ají amarillo, yams, Andean cancha, and soft-shelled crab tempura. Allegretta said his customers love the Seco de Cordero entrée, featuring New Zealand free-range lamb shanks that are marinated in a beer ají panca for 24 hours, before being cooked in a mild cilantro chicha de jora reduction. The gluten-free dish is served with golden yucca and tacu tacu, a traditional Peruvian way of cooking rice and beans. Mistura’s drink menu also delivers. If it’s your first time at Mistura, you have to try the restaurant’s house-distilled pisco brandy, Allegretta said.
