INGREDIENTS • 700 grams fresh berries (raspberries, strawberries, blueberries) • 1 loaf gluten free bread (approximately 12 slices) • 4 heaped tablespoons coconut sugar or xylitol (your sweetener of choice) • Whipped coconut cream or Greek yoghurt with Lifestream Certified Organic Super Berries and serve. DIRECTIONS: 1. Using a pudding mold or mixing bowl of desired pudding shape. As this will act as the end shape for the summer berry pudding cake. 2. In a bowl, weigh out the 350 grams of berries or half the total berry amount, then mix through with 2 heaped tablespoons of coconut sugar. Then put aside.
3. In a food processor, place the remaining half (350 grams) of berries with 2 heaped tablespoons of coconut sugar or sweetener of choice. Puree until nice & smooth. 4. Remove the crust from enough slices of bread to fill entire bowl. Next, dip the slices into the mixed berry puree and spread around the entire bowl. 5. Fill your pudding bowl or mold with the first lot of mixed berries. pressing down firmly and line the top with more berry puree dipped bread. Put this into the fridge overnight or for at least 6 hours. With a saucer on top to hold it firmly in place. 6. Remove from the fridge and with the saucer just on top, then gently turn upside down to allow the pudding to come out. 7. Sprinkle with extra fresh berries over the pudding. Mix Lifestream Super Berries into a generous amount of whipped coconut cream or coconut yoghurt for on top and serve for a delicious perfect evening treat.

HOW TO COOK A STEAK WITH REVERSE SEAR METHOD
Hailed as the ultimate way to cook a perfect medium-rare steak every time, it’s easy to learn how to cook the Reverse Sear method – Traditionally, the restaurant method of cooking steak involved searing over incredibly high heat, then transferring to an oven to finish on a more gentle heat until done. The reverse sear method pretty much just flips the order, and involves first cooking the meat on a very low heat before searing the outside on a super hot surface. The basic idea is that with reverse sear, you have greater control over the Maillard Reaction (that magical process that turns the cooked edges of meats yummy and brown), because you’re making sure the high heat only comes into play right at the end and that the steak inside will be perfect. So, instead of an internal ring of different ‘doneness’ your steak will be perfectly medium all the way through, save for the very outside.
INGREDIENTS •
One behemothly thick Well Hung Angus Pure steak (The steak is going to need to be at least 1 inch thick, if not more. The thicker, the better.)
INSTRUCTIONS 1. Preheat oven to 135C/275F 2. Place well seasoned steaks on a rack over a baking tray (cover the tray with foil to save yourself a clean up) 3. Put in oven and cook til an internal temp of 5157C / 125 -135F depending on your preference of ‘doneness’. Usually takes around 45 -60 minutes. 4. Remove when at desired temperature and rest for 10 -15 minutes under foil. 5. Preheat a skillet or heavy based pan to a screaming hot temperature. 6. Sear steaks for one minute each side. 7. Serve immediately. 8. Internal Temperature Guide: You will definitely need a meat thermometer to do this correctly.
