ith Valentine’s Day just around the corner, I say forget the chocolates and roses, boys — those are so overrated — sure it’s sweet and all, but a girl like me is puckering up for pizza! Yes, I said it, pizza. I’m headover-heels in love with this pie of all pies! Thin as in a typical hand-tossed pizza or thick as in a typical pan pizza aka Chicago-style pizza; I’m all over it. I am a self-proclaimed pizza fanatic! So, doing away with all the sweet stuff, this week I bring to you some hearty and savory pizzas, full of passion and made with love. And if you’re in the mood for some pizza perfection, bring your sweetheart to the following Ono, You Know hot spots and treat your loved one to some of the best pizzas in town. They’re great for sharing by candlelight, but if you’re appetite is anything like mine, these pizzas are best shared with me, myself and I! Xoxo.

industry for 15 years, couldn’t wait to share some of the eatery’s best-selling items. “I was born and raised in Japan and my family was in the restaurant business, so I always grew up around food,” says Saito, who also serves as chef at Happy Valley Pasta & Pizza. “We sell a lot of pizza and pasta, of course, and we’re open daily for lunch and dinner.” At a glance, you’ll notice a multitude of appetizers on the menu, including Homemade Focaccia ($1.98), Fried Calamari & French Fries ($7.98), soups, salads and more. However, eat smart and save plenty of room for your entree because Happy Valley’s pizzas and pastas are definitely worth filling up on — especially Happy Valley Style Margherita Pizza ($9.98). This classic, thin-crust pizza is simple in ingredients, but doesn’t in the least bit hold back on flavor. “The pizza is hand-tossed and made fresh,” Saito explains. “It’s a tomato-based pizza topped with mozzarella and Parmesan cheese and a spiral of pesto sauce. Instead of basil leaves, we thought it would be nice to substitute it with fresh pesto.” For all of you carnivores, Meat, Meat, Meat ($11.98) is the pizza for you — morsels of sausage, chicken and bacon adorn this onolicious pie. And while you’re at it, go beyond the realm of your typical pizza and take a bite out of the restaurant’s unique pizza options, such as

Bacon, Potato and Corn ($10.98), Karaage Chicken & Broccoli ($11.98) and Happy Valley Mix ($16.98). “We’re changing the menu in April, and will be presenting diners with new pizza and pasta choices,” Saito says. Zpizza Zpizza is the purest of them all when it comes to fresh flavors for the healthy appetite. So, who said you can’t have it all? Because here at Zpizza you can! Hawaii owner Cesar Llarenas opened the Ward Centre restaurant in 2008, and most recently added a second location in Kailua (151 Hekili St.). Business has been booming at both locations known for its onolicious Southern CalifornianItalian cuisine, and I couldn’t wait to grab a slice of this guilt-free pizza pie! “All of our pizzas begin with the best ingredients that are all natural or certified organic,” Llarenas says. “And it’s important that we keep everything at a reasonable price.” My list of Zpizza favorites could go on forever, but since I’m honoring the perfect pizza, I might as well reveal my top three zesty picks, including Moroccan Rustica Pizza ($12.95), Provence Pizza ($12.95 small, $23.95 large, $26.95 extra-large) and Italian Pizza ($12.95 small, $23.95 large, $26.95 extra-large).

For starters, Moroccan Rustica Pizza offers up a crispier, crunchier crust decorated by the most refreshing flavors of basil pesto, mozzarella, roasted eggplant, feta cheese, caramelized onions, and garnished with a dash of pine nuts. And if you’re on a major health kick, you’ll be glad to know that this famous rustica pizza also is available with either a regular or wheat crust. Then, if you’re in the mood for a classic at this pizza palace, opt for Provence Pizza made with a gluten-free crust, organic tomato sauce and roasted garlic sauce, and loaded with a variety of toppings — mozzarella, artichoke hearts, capers, tomatoes and fresh basil — that’ll please any veggie lover. Add chicken sausage for an additional cost if you care to spice it up some. Now, being a bit biased, the Italian gal in me just had to save the best pizza for last, because let me tell you, Zpizza’s Italian Pizza is an absolute winner in my – See page 12

I

chiriki Japanese Nabe Restaurant is known for its authentic Japanese cuisine, but more so, this chic and modern establishment brings family and friends together for an entertaining and interactive dining experience like no other. Open for lunch and dinner, patrons flock to this renowned eatery to enjoy an assortment of Japanese nabe — a term referring to an array of Japanese steamboat or one pot dishes — as well as sukiyaki, tasty shabu shabu options and more. This restaurant of choice for many hungry diners opened the doors to its initial location on Piikoi Street in 2006, and most recently opened its second location this past June in Westridge, Aiea. Dining Out recently caught up with Ichiriki Piikoi general manager Min Kim, who graciously shared with us the ins and outs of this nabe hot spot, which has been intriguing the appetites of foodies galore!

DO: Ichiriki is always bustling with diners who can’t wait to sample the famous cuisine here. What makes Ichiriki stand out from other Japanese restaurants? Kim: Ichiriki specializes in a very unique dining experience, that uses a hot pot to create savory meals, like shabu shabu and sukiyaki. We are well known for our nabe. Nabe is Japanese hot pot, and our broths are flavored! We have almost every flavored broth you can imagine: Shoyu, Pork, Salt/Chicken, Tomato, Curry, Kimchi, Ginger, Yuzu, the list goes on! We also offer a wide variety of vegetables, meats, seafood and noodles to cook inside the broth. Our specialty is Kami Nabe, which is a pot made out of paper. The kami paper is set right over the flame, and cooks the broth and fresh ingredients, while also absorbing the natural oils of the meats, making it a healthier option. Many people find it hard to believe that the paper does not burn, and I’ve been sworn to secrecy on that magic trick. I really enjoy watching the exciting “ooohs and aaahs,” when our diners are first introduced to Kami Nabe. Our staff is always thinking of ways to make our diners fully happy — which we try our best to do by providing exceptional service that is always improving and one-of-a-

kind dining experiences that are memorable. DO: For someone who has yet to dine at Ichiriki, how would you describe the dining concept? Kim: Our concept is fun, traditional Japanese dining where everyone can eat, drink and be merry. We are family, date, group friendly! We’re also very affordable, and for those looking for that extra special deal, we have early bird discounts where all our nabe, shabu shabu and sukiyaki dishes are 25 percent off from 5 to 6 p.m. Late Night Specials start at 9:30 and nabes start at $11.95. We also have Happy Hour drink specials at both locations. It’s a fun place to eat with lots of menu items. DO: How would you describe the atmosphere and dining environment at Ichiriki? Kim: We like to think of our restaurant as a living room — it’s a fun place to be, and definitely a great place to entertain. We have traditional Japanese floor seating, where you sit on the floor, but we made it more relaxing by adding wells for your legs so you don’t have to sit Indianstyle. It’s extremely comfortable and different. We cater to all ages, families, groups and special occasions. DO: Ichiriki has been very successful. How did the idea for the restaurant come about? Kim: The restaurant’s concept came about when founders Riki Kobayashi and Issei Kazama decided to pursue their lifelong dream of opening a restaurant. What’s funny is that shabu shabu and sukiyaki were always Kazama’s favorite childhood meal. Then, it turns out Riki actually studied nabe in Japan for a while and had a passion for inventing great hot pot dishes. It was only destined that they would open up Ichiriki Japanese Nabe Restaurant. DO: Well, we’re glad that dream became reality. Who is the main chef here? Kim: The owners of both locations actually create and come up with each

menu item together. They are constantly meeting, almost weekly, inventing new menu items. There also are a few kitchen staff members who have gone to culinary school, and we are always encouraging them to embark on menu creativity. Our very own kitchen supervisor, Andrew Doi, was the mastermind behind the Tomato Nabe and the secret Angry Goma. DO: What are some of the restaurant’s most popular dishes? Kim: Our Kobe Beef Shabu Shabu is gaining fast popularity, especially at the late night price of $19.95 ($28.95 regular dinner price). We’ve noticed people lining up at 9 p.m. to grab a table for late-night dining. This shabu shabu option features 5 ounces of melt-inyour-mouth slices of Kobe Kalbi Eye, served with a wide variety of vegetables, ponzu and goma dipping sauces, and your choice of ramen, udon or zosui. Our two most popular nabes since we’ve opened are Ichiriki (shoyu broth) and Pirikara (spicy shoyu broth). We usually recommend these two nabes for first-timers. Both come with a large variety of vegetables and your choice of beef, chicken or pork. These nabes also are on our late-night menu for $13.95 and $11.95 respectively. Regular dinner price is $21.95. People also love Seafood Kami Nabe ($59.95 for two people). This seafood lover’s paradise comes in our signature Ichiriki Shoyu soup base with snow crab, jumbo shrimp, calamari, scallops and an large assortment of vegetables. DO: Delicious! Are there any new items on the menu? Kim: Yes, we have new nabes: Tomato Nabe ($21.95), Paitan ($21.95), and, of course, our secret Angry Goma Nabe with Habanero Peppers ($22.95) for spicy lovers. Angry Goma Nabe is not printed on our menu, this is actually a secret nabe that has sparked an underground cult following. This nabe was created to make those that love to live on the spicy edge happy. This Nabe is slowly simmered in a deep flavored Goma (sesame) broth and made out of real habanero and jalapeno peppers. We also recently started offering Sukiyaki Beef Bento ($7.95) that consists of beef sukiyaki with our homemade tsukune meatballs and some seasonal vegetables. Sukiyaki Bento is available daily

from 11 a.m. to 2:30 p.m. at both locations, and if you purchase four, you get one free. DO: Do you folks offer any appetizers? If so, what are the best-sellers? Kim: Yes, our appetizers include Chicken Karaage ($5.95), Ahi Poke ($5.95), Mushroom Medley ($6.95), Pork Kimchi ($9.95), Fried Calamari ($4.95) and Tofu Salad ($4.95). DO: What do you think has contributed to Ichiriki’s continued success? Kim: Well, besides our nabes — there’s so many options and so many flavors — you’re bound to get hooked on one you love, we’re also told that our sukiyaki is a favorite. People also love the floor seating. It’s super comfortable and great for parties and kids especially. We get diners visiting from Japan who say, “It’s just like Japan!” Lastly, our Green Tea Shave Ice is always a hit. Plus, we have lots of options for vegetarians, vegans and people with food restrictions.

DO: Who is your clientele at both locations? Kim: We have a good mix of locals and tourists. A lot of tourists come to visit after reading about us on Yelp or other online forums, which is great! It’s always such an honor to meet these folks who 3 taxi their way over here just to have nabe! We also have a lot of regulars, and we are lucky to have such great supporters — they have seriously helped shape Ichiriki and continue to encourage us to improve every day. DO: What do you foresee in the near future for Ichiriki? Kim: We hope to continue to make customers happy — it’s what keeps us going. And we would be very fortunate to be able to open up a third location someday. f you make a stop at Fukuya Deli and Catering, the okazuya (Japanese delicatessen) on King Street, you’ll find old-timers whose families have known and loved the little shop since it opened down the street from its current location in 1939. Laughter and familiarity permeate the walls as regulars talk story while lining up for handselected meals filled with samplings of potato hash, sushi, chow fun noodles, nishime and more. “Those are all original recipes from way back when,” says owner Arrison Iwahiro. The restaurant also specializes in catering for anything from large events to home parties. Items such as Sushi Tray ($30, 43 pieces; $48, 70 pieces; $60, 70 pieces), with a

variety of maki, cone sushi, cucumber, takuan, tamago and oshizushi are beautifully presented for large groups as well. The families that have made Fukuya a staple in their lives also love a taste of its specialty teri beef ($4.75), chicken ($4.75) and hot dog ($4.50) rolls, made with plain rice as opposed to sushistyle rice. “They’re great for picnics, kid’s sporting events or after surfing. And they’re easy to eat, kind of like a meal in a roll,” Iwahiro says with a laugh. Teri Beef Roll, for example, is like eating a plate lunch rolled up with Spam, beef, rice and furikake. The owner also puts his personal touch on the legendary delicatessen’s menu with his take on Nori Chicken ($2.10 per piece). Japanese-style marinated chicken is topped with small sheets of nori, then deep-fried to sumptuous perfection. Just as generation after generation has done, take a queue from the old-timers and make Fukuya Deli and Catering your favorite okazuya.

s its name suggests, Fendu Boulangerie offers delightful European-style pastries and breads, baked fresh every day. But with a range of American pastries, sandwiches and even pizza, there’s more to this charming bakery than meets the eye. Owner and chef Niel Koep describes Lemon Merengue Pie ($5.25) as a classic American dessert that’s not often found in Hawaii. First, a mixture of freshly flavored lemon curd and sabayon fills an almond sugar pie crust. Then, sweet peaks of merengue are piped on and torched before candied lemon peel and green cacao butter garnishes are added to complete the light pastry. Other unexpected decadences include warmly served sandwiches created by the eatery’s cooks. n the 35 years and counting since Keo Sananikone opened the doors to his popular Thai restaurant in the heart of Waikiki, customers have grown fond of the authentic cuisine made with quality, fresh ingredients served at affordable prices. Another key ingredient to the success of Keo’s Thai Cuisine is “consistency,” according to Paul Sananikone, Keo’s brother who manages the restaurant. “Especially when you deal with local people, you can’t fool Hawaii diners; they are very smart. A lot of people here are knowledgeable, especially when eating out.” Keo’s welcomes diners 1 into its open air atmosphere and garden setting complete with an array of fresh floral arrangements, and Thai statues and décor. Cool breezes pass through the eatery, carrying with them aromas of sweet curries and tantalizing spices that are incorporated in a wide array of desirable dishes. 10 | DINING OUT | FEB. 12-18, 2012

In addition to countless loyal local customers who dine at the Waikiki eatery on a regular basis, Keo’s has fostered a following amongst celebrities as well. As the enormous celebrity photo wall at Keo’s entrance attests, the restaurant has hosted hundreds of athletes, actors, recording artists and dignitaries including Mike Tyson, Tina Turner, Keanu Reeves, Michael J. Fox, Paula Abdul, Elton John, Will Smith and Kareem Abdul Jabbar. According to Paul, while high-profile figures are always stopping by the restaurant, the friendly staff goes out of its way to treat each guest like royalty. “We try to do ordinary things extraordinarily well,” Paul says. “We try to treat everybody like a movie star. I tell my workers that when people walk in the door, they are coming to spend their hardearned money. You have to give them what they pay for. In the restaurant business, you don’t get a second chance.” Keo’s popularity can also be linked to its signa-

ture dish, Evil Jungle Prince ($14.95 with chicken, $16.95 with seafood and $12.95 with vegetables and tofu). What sounds like a villainous movie character is actually the restaurant’s flagship dish that has been featured in publications around the world that tout Keo’s as the premier dining destination. The dish features one’s desired meat or vegetables combined with fresh basil, coconut milk and red chili pepper and served on a bed of chopped cabbage. “Our Evil Jungle Prince bring in a lot of movie stars who come in just because they heard about this dish,” Paul says. “Everybody tries to copy it, but it’s never the same. We must be doing something right! The spices and basil, a lot of chili all come together to make a dish that people can associate with. When people think of Evil Jungle Prince, they think of Keo’s.” Keo and Paul came from a family of

eight children, and moved to Hawaii during their junior high school years. Paul credits his father, a successful businessman in Thailand, with giving him and Keo the tools to succeed via an American education. “Our father invested in education for his kids rather than just giving us money,” says Paul of his dad, who sent all eight children to school in America. “Money can be taken away or stolen; an education can’t be taken away. As you get older, you start to understand what your parents are talking about. If you are willing to work hard in America, anything can happen.” In addition to the restaurant and family grocery store, Keo also operates a farm in the Mokuleia area, where he grows most of the vegetables used in the eatery. This self-sustaining system allows Keo to both enjoy his hobby as well as provide fresh ingredients for the restaurant that go from the farm to one’s plate within hours. “His farm is all organic and free of any pesticides,” says Paul of his brother. “Keo has a green thumb. He can grow anything!” Some of the farm’s fresh vegetables can be found in Soft Shell Crab with Basil ($19.95) as

well as another seafood favorite, Panang Shrimp and Scallops ($15.95), which incorporates kaffir lime leaves, fresh ground lemon grass, peas and coconut milk. Keo’s also is known for its famous SaTeh Chicken ($9.95), four pieces of juicy, white meat chicken on skewers served with a spicy peanut sauce. Another favorite is Tom Yum Soup ($4.95), an eclectic mix of shrimp, lemon grass, kaffir lime leaves, green onion, cilantro, mushrooms and lime juice. “We know that a lot of local people like seafood, so we try to feature it a lot,” Paul says. In addition to the regular menu, Keo’s is serving up a special Valentine’s Day Dinner ($29.95 per person) that appropriately includes a fresh rose for each couple. Each V-Day diner receives an appetizer selection, Green Papaya Salad, choice of entrée — including the infamous Evil Jungle Prince — and a choice of white Jasmine, brown or sticky rice. End the night with ice cream or tapioca for dessert, and during the meal, Paul suggests ordering the Mango Daiquiri ($6.50) to complete the experience. As is the case with most nights at Keo’s, the dining room fills up quickly, so reservations are recommended. 7

Other popular dishes are Ahi Sashimi Don ($9.75), Salmon Sashimi & Ikura Don ($14) and Chicken Don ($8.50). While the restaurant’s focus is primarily on Japanese dishes, Sakura Terrace also has added a bit of local fusion. For some fusion flavor, try Spicy Ahi Roll ($10.50) or Ahi Poke ($11.50). Sakura Terrace prides itself on serving fresh, healthy food. Cariaga says that it’s important to the restaurant to promote healthy eating to their customers. At Sakura, it’s easy to eat healthy with tasty salads such as Shrimp Salad ($9.75) and Sashimi Salad ($10.75). Soon, Sakura Terrace will unveil a number of new dishes for its grand opening. “In accordance with the sakura blossoms in Japan, we are going to have our grand opening that will begin at the end of March or early April,” Cariaga says. “We will showcase a whole extensive menu.”

akura Terrace gets its name from the sakura, or cherry blossom, flowers that bloom in Japan in the spring. During the time of the sakura blossoms in Japan, which usually occurs in late March or early April, Sakura Terrace will honor its namesake with its grand opening. Making an appearance during the Marilyn Cariaga i grand opening will be extensive new Ah icy Sp h wit menu items, which will become permaRoll nent additions to Sakura Terrace. “We wanted to coordinate the grand opening with the blossoms,” Cariaga says. “And some of the things we add to the menu will include little touches of the sakura flower.” For example, the restaurant currently serves hot drinks that include a small sakura for flavor. Sakura Terrace is currently in the process of creating dishes for the new menu, and they’ve got a lot of ideas in the works. They are looking to incorporate more healthy ingredients like vegetables and tofu. The chefs are busy thinking up innovative dishes, and have been working with their regular customers to get feedback and suggestions. The new menu will be out soon, but customers don’t have to wait until the sakura is in bloom to try some new dishes. During the month of February, Sakura Terrace offers Sakura Steak ($15). The restaurant offers one or two rotating specials each month. And for those who are still looking for Valentine’s Day plans, Sakura Terrace is a perfect place to take your date. The restaurant is chic, and the patio seating in particular has an intimate feel. “It’s a casual elegance,” Cariaga says, adding that Sakura Terrace is an ideal Valentine’s Day location. “It has such a nice feel, and it’s very romantic.”

The eatery, which first opened in 2006 at Ala Moana Center, features special sweets every Valentine’s Day, and this year is no exception. Numerous customers often crowd the patisserie during the days leading up to — and the day of — Valentine’s Day. For Valentine’s Day 2012, La Palme D’Or proudly presents two different cakes — Passion Delight and Raspberry Amor ($37 small; $26 extrasmall). Comprising of a variety of fruity mousse flavors, Passion Delight features layers of white chocolate, banana and strawberry mousse with passion cream accents atop a layer of vanilla sponge cake. Raspberry Amor includes layers of milk tea chocolate cream and a chocolate hazelnut crunch atop chocolate almond sponge cake. The dessert is adorned with a raspberry ganache. The extra-small sizes are recommended for two to four people, while the small sizes can be shared

among four to six people. While the two special cakes are often sold whole, slices of each are available as well, according to executive chef Akiko Kimura. “They’re (slices) available in our display case for $4.95,” she says. The unique flavors and upscale décor of the pastries at La Palme D’Or make the eatery different from other patisseries, as does the eatery’s fine ingredients. “It’s a store where you can buy desserts that have both Japanese and European flavors,” explains sales associate Erika Donohoe. “The elegance of the pastries makes it unique (as well).” The patisserie’s signature pastry is Gateau Au Fraise ($4.95), or a strawberry shortcake, with layers of light moist sponge cake sandwiched with fresh whipped cream and sliced strawberries. This pastry can be sold by the slice or customers can order the entire cake ($25 extra small, $35 small, $45 medium and $60 large). Cheese D’Or ($4) is another customer favorite. “It’s like a fluffy cheesecake — very light in texture,” says Kimura. La Palme D’Or offers customers many unique treats. For example, Crunchy Choco Sandwich ($2.50) — a fancier twist on the classic brownie — features a walnut and macadamia nut-laden brownie sandwiched with a milk chocolate hazelnut crunch. La Macha ($4.45) is a distinctive combination of green tea mousse, chocolate mousse and a layer of fine chocolate sponge cake. Finally, Chocolate Mint pastry ($4.50) — comprising of mint mousse atop a light combination of chocolate sponge filled with chocolate mousse and chocolate pearls — was introduced during the holidays and is still available for purchase. While elegant pastries are La Palme D’Or’s claim to fame, the patisserie is also well known for its Jelly au Lait drinks. Customers can choose to eat or drink Jelly au Lait ($3.25 without milk), or flavored French jelly topped

with whipped cream. Jelly au Lait comes in several variations, incorporating milk ($4.55), soymilk ($5.25) or mocha ($5.55) to the drink. Signature Jelly au Lait ($4.55) drinks include Plantation Tea Pastry chef Hikaru Hatano Jelly ($4) — a whips up a cake. textured summer drink made with 100 percent pineapple juice with sweetened black tea — and Jelly au Lait Mocha ($5.55), La Palme D’Or’s house-made chocolate milk with real chocolate. Lava Flow ($4) — a creamy blend of La Palme D’Or’s original strawberry puree mixed with condensed milk — is another popular drink. In addition to the patisserie’s pastries and drinks, its brunch sandwiches and apple pies — half slices of green apples covered in almond crème and wrapped in puff pastry — are best-sellers. “Our sandwiches — Homemade Croissant Tuna Salad or BLT sandwiches ($4.15) — and apple pies are really popular,” Donohoe says. “They usually sell out around 1 p.m. and we make a limited amount each day.” La Palme D’Or does not feature daily or monthly promotions; rather, the specials are usually featured around occasions, such as Valentine’s Day. The various holidays influence the patisserie’s menu. “We tend to change as we have special events; we bring in new items and take out the old ones,” Donohoe states.
