T
here are certain things in life that are just meant to be, and when it comes to the culinary world, eggplant is no exception.The versatility of the eggplant is phenomenal and flows ever-so smoothly from one cuisine to the next, as it has a flavor all its own and a texture that can vary from meaty to creamy. You name it, eggplant equates to a number of remarkable edible creations.
In fact, in the Middle East it’s believed that a woman is not ready to marry until she knows 1,000 ways to cook eggplant! Take it as you will, but that’s saying quite a lot about this beloved fruit, and if there’s any truth to that, I better get to cooking! Yet, while that exact mission seems rather unattainable, I thought why not aim for something a bit more within my reach. So, this week, in search of this culinary staple with so much potential, I ventured off and indeed stumbled upon an assortment of eggplant delights at the following Ono, You Know establishments. Delicious! Oh, and about those 1,000

Story by Alana Folen hai cuisine discriminates against no one. This world-famous culinary craze has always been one that generates quite an explosion onto the food scene — and for good reason. When it comes to Thai classics, each dish can be refined and adjusted to suit all palates. Whether intensely chili-hot or comparatively bland, Thai cuisine is a blending of various cultural influences that result in a marriage of richly decadent flavors and fresh ingredients. And here at Bangkok Chef, owner Patrick Chang and his wife, Sansane Pornchairattanakun, bring a taste of Bangkok to our island home. With three locations islandwide (Nuuanu, Manoa and Nimitz), this renowned establishment has garnered quite a following among locals and tourists alike. Dining Out most recently sat down with Chang and an assortment of the restaurant’s most sought-after dishes. It wasn’t long before Chang revealed the secrets behind Bangkok Chef’s many successes and made our mouths water with talk of hearty Thai masterpieces that are alluring to all appetites. DO: What is the concept of Bangkok Chef? Chang: We specialize in simple, home-cooked Thai cuisine. It’s very delicious and perfect for those on the go, and we offer our food at a very reasonable price. Our menu currently has about 33 items listed — it is very easy to understand as we offer a full description and photo of each dish.

DO: What is something diners would find interesting about Bangkok Chef, even the most loyal of patrons? Chang: Not too many people are aware that in 2001 Bangkok Chef Nuuanu started off as a produce store, not a restaurant. We sold a lot of fresh
produce and authentic Thai ingredients necessary in Thai cuisine. My wife was also teaching a Thai cooking class at the time, and all the students loved her food, so we figured we’d offer some of her cuisine to customers at our produce store. We ended up

gaining a very good response and we started serving a few customers a day. It was a year later, in 2002, when Bangkok Chef really blossomed into a fullfledged restaurant. We did away with the produce store, but our Nuuanu location still offers some Thai ingredients for sale. DO: Very neat! Now, close to 10 years later, Bangkok Chef is a thriving establishment with two additional locations in Manoa and on Nimitz Highway. Are there any differences when it comes to the three locations? Chang: The food and prices are the same, however, the Nuuanu location is takeout-style only, where all the dishes are served in styrofoam containers. The Manoa location offers takeout and dine-in service, and the Nimitz location really focuses on dine-in dining and table service — but again, we do a lot of takeout there as well. Bangkok Chef also does catering, and we have separate catering menus. DO: What are some signature favorites at Bangkok Chef? What’s always flying off the menu? Chang: Of course, we have our classic Thai Green Curry ($6.65) served with sliced chicken breast, eggplant, bamboo shoots, kaffir lime leaves, peas and fresh basil in a green curry sauce and coconut milk over Jasmine rice, sticky rice or brown rice. It also can be served with fish or shrimp for an additional price. Our best-seller has to be our Pad Thai ($6.65), which features rice-noodles fried with egg, chicken, tofu, bean sprouts and chives doused in a house Pad Thai sauce. Again, fish or shrimp may be added for an extra cost. Then we have our Chicken Larb ($7.90) that consists of minced chicken with herbs and spices served with a special lemon sauce.
heat, will they still find something they’ll enjoy on the menu? Chang: Oh, definitely! When it comes to Thai food, there’s this misconception that it’s always spicy, and some people are afraid to try our food, but that’s not always how it is. There are certain levels of spiciness and we can always cater it to the specific customer. And some foods are much spicier than others.

DO: All these dishes are very tempting! The restaurant also offers soup and salads for those interested, correct? Chang: Yes, Bangkok Chef’s Mango Salad ($8.20) is very tasty. It’s on the spicier side and comes with shredded mango, carrot, shallot, Chinese parsley and chili peppers topped with cashew nuts and a house special dressing. I would also recommend Tom Kha Gai ($7.90), a coconut soup that is moderately spicy with pieces of sliced chicken breast simmered in coconut milk and garnished with Thai ginger, kaffir lime leaves, lemon grass, chili and head cabbage.
DO: What specific cultures have influenced Thai cuisine? Chang: Well, Thai food has been influenced by many different cultures including Chinese, Vietnamese, Cambodian and Laos. Thai cuisine has expanded throughout the years and consists of many different spices and fresh herbs. DO: People can't seem to get enough of Bangkok Chef! What’s the secret to the restaurant’s success? Chang: My wife always says that the most important thing is that you put your heart into your cooking, and that’s what we do here — that’s what makes our cuisine the best! Besides that, we always use the freshest ingredients possible and our portions are very, very generous.

DO: Is the cuisine derived from your own personal recipes? Chang: Yes. My wife, Sansane, is from Bangkok, Thailand, and is responsible for all of our dishes here. She’s trained all of our cooks and chefs, and she’s very talented — her family even owns their own restaurant in Thailand called Watsana. DO: Thai cuisine is generally known for its intense level of spiciness. For those who can’t take the

Kicking up the flavor with Kung Fu Soup Noodle By Ali Resich
F
rom saimin to ramen and countless variations between, Hawaii’s diners love a good noodle soup. Lucky for us, Kit ’n Kitchen owners Kit and May Yiu recently added a slurping sensation to the Night Owl menu (available 9 p.m. to midnight). The Euro-Asian cafe’s latenight eats include tasty grilled panini sandwiches, pizzas and even breakfast options, but it’s Kung Fu Soup Noodle that’s getting all the buzz. Kit knew he had to bring the bowl of noodles to Hawaii after learning the nuances of the dish in Hong Kong, where it originated. “(Local customers) have never seen this combination of noodles in the Islands before,” he explains. In addition to a flavorful broth, the reason Kung Fu Soup Noodle has been popular since the 1950s is because you can customize your meal. “You create your own. You can pick
the soup, pick the noodles and two toppings for $8.95. And additional toppings are available for $1.95,” says Kit. Patrons may choose from a Classic Shrimp soup base or a Szechuan Spicy one. Noodle choices include Cantonese Thin Noodle, Thick Noodle, Rice Vermicelli or Lo Mein. Inside, a satisfying combination of chicken wings, won ton and fish balls kick up the flavor. Then, pile on any toppings you
desire, from shabu shabu beef to enoki mushrooms. The midnight snack already has a following after debuting at the University Avenue eatery a few months ago. It won’t be long before all of Honolulu’s night owls are slurping away.

T he trio is part of the Children’s Miracle Network Hospitals, which is a national nonprofit organization that helps Kapiolani Medical Center for Women & Children. t’s time to head to the mountains. Time to venture deep into Manoa Valley, where the wind blows a bit cooler and the Koolau mountain range seems to rise above you like a giant ascending from bended knee. As you weave your way through the peaceful town of Manoa, the restaurant to stop for a warm and comforting lunch or dinner has to be Hanaki. Hanaki, which used to be known for its elaborate buffet menu, now specializes in shabu shabu-style meals, with plenty of a la carte options to choose from as well, many taken from the buffet menu as recommended and remembered by loyal customers. “We have a nice family atmosphere. We can seat a lot of people. Most come for a combination of shabu shabu and side orders like tempura or our Misoyaki butterfish,” says general manager Mark Mitsuyoshi. Shabu Shabu allows you to pick your simmering soup base, which at Hanaki includes your choice of konbu (a light seaweed base), clear seafood, hot and spicy broth, beef, a heavier currystyle soup, a healthy herb with ginseng and Chinese herbs or a traditional miso-style, which Hanaki has been serving for more than 15 years. A foundation of Hanaki is its 6-foot-tall refrigerator which holds all of your pre-portioned shabu shabu additions fit for your chosen broth. Many of the items cost between $2.50 and $4.50, and include a variety of meats, vegetable and seafood choices such as shiitake mushrooms, chicken, beef balls, tofu, cabbage and many more. “Shabu Shabu is great, it is easy and nutritious,” adds Mitsuyoshi, whose personal favorite is the konbu or seafood broth.

othing is more unique to Hawaii than spectacular local grinds, and Rainbow Drive-In in Kapahulu is the mecca for all your local favorites. This iconic landmark was founded by Sejiu and Ayako Ifuku in October 1961. Today, you’ll see the Ifuku’s son-in-law Jim Gusukuma overseeing everyday responsibilities as vice president of the operation. “We like to stick with the original Rainbow Royal ($3.75) Leah Friel photos
cheese, tomato, onion and lettuce. “This is one of the most requested burgers, and what really makes this burger so good is our special sauce that’s mixed and seasoned by us in-house. “Customers also go for our BBQ Pork Sandwich, which is a simple but tasty option as well,” he adds. This finger-licking good sandwich presents hungry diners with succulent pieces of sliced pork marinated overnight in a special teriyaki sauce, accompanied by a hint of mayonnaise and lettuce atop a fluffy bun. “You can never tire of these originals,” Gusukuma says, adding that a side of fries is sold separately.

or a city with such a large Filipino community, finding an authentic Filipino restaurant can be a challenge. So into the void came Max’s of Manila to fill the need for pancit, dinuguan or nilagang baka. But since those items find life during the main course sections of the meal, I’ll leave those tantalizing descriptions to others and focus on the kick starters. One of the benefits of Max’s pupu menu is the price, you can fill up without having the feeling of getting held up. A good example is Max’s Teasers platter ($7.95) with Lumpiang S h a n g h a i (which can be ordered as an individual item for $7.25), calamari and crispy tentacles. ff the top of my head, I can’t think of a good lunchtime Chinese restaurant that’s in a convenient location that also has ample, free parking. But Nice Day Chinese Seafood Restaurant, located in Liliha Square Shopping Plaza, is a great place to have a nice lunch with co-workers, family or friends (and yes, there’s ample parking). In the four years that Nice Day Chinese Seafood Restaurant has been open, owners Lisa Lum and Yung Sang Chan (also owners of Happy Day Seafood Restaurant on Waialae Avenue) have provided customers with excellent service, great Hong Kong-style food and a beautiful atmosphere. Red Chinese lanterns and Chinese knots hang from the ceiling, and the lighting indoors is welcoming to all those who pass by. According to Lum, Nice Day is perfect for family get-togethers, and the facility can hold up to 200 people in a comfortable setting. Customerservice is of utmost importance at Nice Day, and there are about 25 friendly employees, donning their Chinese-style uniforms, who serve dim sum on pushcarts. If you don’t have time to sit down and eat, Nice Day offers speedy takeout service, as well as catering. Honey Walnut Shrimp ($13.95) is a favorite among customers, who enjoy the crispy outside and juicy inside. The sweetness of the honey complements the large pieces of shrimp and crispy walnuts nicely, but none overpowers the others. Harmonious and satisfying, Honey Walnut Shrimp is always fresh and is sure to be a pleaser. It wouldn’t be a seafood restaurant without a
good clam dish, and Nice Day serves up a great Clam with Black Bean Sauce ($13.95). Black bean sauce is known to accompany many Asian vegetable dishes, and Nice Day’s black bean sauce has the perfect combination of flavors. With an ample serving of plump clams, this dish is a savory addition to a family-style meal. If you’re craving a veggie dish, Green Beans ($8.95) is a great choice. The green beans are crisp and crunchy, so even though it’s a hot dish, it has a refreshing effect on those who partake. Nice Day also serves a traditional Orange Chicken ($9.95) that’s sweeter than most other places, and they don't skimp on the sauce. The chicken is moist and the flavor of the sauce will put a smile on your face. patrons on a daily basis as it seats 320 people comfortably. And when it’s genuine fare that you’re after, The Mandalay’s elaborate menu runs the gamut, simply offering a little bit of everything. Therefore, when in the mood for eggplant, I was ecstatic with the restaurant’s many choices. “Eggplant is very healthy, so, of course, it’s really popular. It has a really nice texture and it just melts in your mouth,” says server Wilfred Leung, who quickly presented me with three of the restaurant’s most fantastic eggplant dishes. For starters, I highly recommend Stuffed Eggplant with Shrimp Paste ($3.50). Romano’s Macaroni Grill Don’t let the name fool you, Romano’s Macaroni Grill offers much more than just your typical macaroni dishes. Yet, if we’re talking about Tuscan-inspired Italian favorites, this top-notch eatery is second to none, and the dining experience is one to remember. Top Of Waikiki’s menu showcases a flavorful array of dishes that seamlessly fuse together different types of cuisine from around the world. “My brain is always going,” Neff says. “I wake up in the morning and I am already thinking about work … I would say that my biggest influences are going out to eat and traveling. I learn best that way. “When you look at the menu, you can see where I’ve been,” Neff says. “I take Italian food, I take French food, I take every different kind of cuisine you can think of and put it together. I take what I have learned on the Mainland and I take what I have learned growing up in Hawaii — and knowing the local flavors, I put a twist on it.” 2
Camembert En Croute ($15), which is camembert cheese wrapped in puff pastry, with candied Cajun walnuts, Granny Smith apples, grapes and pomegranate balsamic reduction. “This dish is meant to be eaten by taking a little piece of the puff pastry and cheese and pairing it with whatever you think tastes right,” Neff explains. Popular entrees include Filet Mignon ($39), which Neff says is the top-selling entree. Another customer favorite is Blue Moon Braised Pork Osso Buco ($33). “For this, I take Blue Moon beer, and I braise the pork in the beer with vegetables,” Neff says. “It gives it a nice citrus flavor.” The dish also has smoked bacon lentils, apple confit, roasted baby carrots, orange gremolata and pork jus. A shining example of the kind of combinations of various types of foods and flavors that Top Of Waikiki brings to its dishes is Tea Smoked Duck Duo ($37). “I take the duck and I smoke it with black tea,” Neff says, adding that the dish is one of his personal favorites. “It is kind

ocated conveniently in Honolulu on Rycroft Street, Choi’s Garden is budding with exceptional customer service, a wide variety of menu items and flavorful Korean cuisine. The restaurant, which opened in 2000, is popular among locals because of its yakiniku option. Yakiniku, meaning “grilled meat,” refers to the do-it-yourself style of cooking vegetables or bite-sized meat over gas/electric grills. “Yakiniku style is a fun way to cook,” says hostess Temi Chang. “Some people don’t know what’s inside of meats (they’re eating), but this way, they can see the meats are really fresh. Our meats are good for yakiniku … we always try to serve the best, highest quality meats.” The two-person yakiniku combination ($39.99) is one of the most frequently ordered

options at Choi’s Garden. For this combination — only offered Monday through Wednesday — customers can try a variety of meats, including sliced seasoned beef tongue, marinated short ribs, seasoned prime pork belly and seasoned brisket. “If you don’t know much about yakiniku style, you should try this (combination),” advises Chang. Other popular dishes at Choi’s Garden include Seafood Tofu Soup ($13.95) and Kal Bi Tang

($13.99). “Kal Bi Tang is a kal bi soup … it has the whole big bone short ribs in it,” explains Chang. For its Easter special, Choi’s Garden is offering customers a discount on Kal Bi Tang (discounted price $11.99) as well as Kal Bi Chim ($23.99; discounted price $18.99) from now through April 31. “Kal Bi Chim is steamed kal bi; you can make it hot, spicy or regular,” says Chang. While Choi’s Garden is
well known for its yakiniku, the eatery’s menu has many other options. Chang explains that the restaurant is known for its Healthy Stone Pot Rice combinations as well. “(The combinations) come with the healthy rice, stone pot and you have choices of Pacific Saury Fish ($12.99), Kal Bi ($17.96) or Pollack Fish ($18.96),” she says. “You also have one choice from three different kinds of soups — miso soup, kim chee soup or soft tofu soup.” For customers coming to Choi’s Garden for lunch, a lunch special is offered from 10 a.m. to 3 p.m. Customers can select from popular items such as Bi Bim Bap ($9.99) — a variety of vegetables in a
rice bowl — and Man Doo Kook Soo ($9.99), or homemade dumplings in a beef soup with noodles. Customers over 65 years old receive a special 10 percent off lunch discount on Tuesdays and Thursdays. Although the eatery has existed for more than a decade, Chang says that many locals are not as familiar with the shabu shabu and Jun Kol options on the restaurant’s menu. Shabu shabu refers to the Japanese dish comprising vegetables and thin slices of meat cooked at a table in a simmering pot of broth, while Jun Kol is translated as a big pot of stew. Shabu shabu options include beef shabu shabu
($44.90) and seafood shabu shabu ($44.90), while Hae Mul Jun Kol ($39.99) — large seafood stew with veggies — and Kim Chee Jun Kol ($39.99), or large kim chee stew with veggies, exist under the Jun Kol category. Jun Kol dishes can feed two to three people. Large dining groups can often be found at Choi’s Garden because of the yakiniku option, and with graduation season approaching in May, Chang recommends the eatery for upcoming parties. “We have a private room and there’s no charge,” she says. “There were a lot of people who reserved it for graduation (parties) last year.”
