So, this week in celebration of tofu, I ventured off to some of the most coveted Ono, You Know establishments in town to sample their take on tasty bean curd, as tofu is most certainly my go-to pick when it appy Sunday, Ono readers! comes to cleansing my palate. Wasting no time here, let me get straight to the point. Lately, I’ve been crazy busy! My life is so hectic and Tropics Bar & Grill Paradise awaits at Tropics Bar & Grill. sometimes it seems like I’m holding on for dear life. Between work, play and fam- Located at the beautiful Hilton Hawaiian ily it can be difficult to find a balance. So, with this said, just to keep my sanity, I’ve been feeling the need to de-clutter my home, work space, car, wardrobe — everything — even the food that I eat. Currently, I’m craving nothing fancy and extravagant, in fact, what I want more than anything is something pure, clean and simple … thank God for tofu! Tofu, also known as bean curd, is a component found in many East Asian and Southeast Asian dishes, and it’s made by coagulating soy milk and then pressing the resulting curds into soft white blocks. What I love most about this food of choice is that it has a subtle flavor and can be used in a plethora of dishes. Better yet, tofu has a low calorie count, relatively large amounts of protein and calcium, and very little fat content.

Village, this world-class dining establishment is the destination of choice for locals and tourists alike who have worked up an appetite after a long day at the beach or by the pool. Open daily from 7 a.m. to 10 p.m. for all-day dining, enjoy renowned cuisine prepared by Tropics chef de cuisine Kapo Kealoha while taking in a picture-perfect view of Diamond Head. On my most recent visit to the eatery, Kealoha revealed some new items on the menu, including none other than Grilled Tofu ($18). Listed as Tropics’ specialty, Grilled Tofu is honestly one of the most delicious entrees I’ve ever sampled that’s quite beneficial to your health. No calorie counting needed with this dish. And postmeal guilt trips? Forget about it! “Tofu is made with a soy bean curd paste,” Kealoha explains. “It’s a vegetarian option that also can be used as a vegan option, and all the advantages that you would have with vegetables, you have with tofu, which can be used as a steak or fish substitute.” According to Kealoha, tofu is an excellent source of protein, and the flavor is very neutral — perfect for incorporating different ingredients and tastes. Tropics’ Grilled Tofu features a savory blend of firm Aloha Tofu grilled to perfection and accompanied by roasted tomato, green beans and an array of seasonal vegetables doused in a wasabi ponzu sauce. A side of buttered brown rice completes this dish with a dash of rosemary for that additional flair.

elli Kay Chun, owner and chef of Opulicious Restaurant, is twisting things up when it comes to your typical plate lunch hot spot — and when we say “twisting,” we mean literally. Chun has an avid love for balloon twisting and is a renowned balloon artist at that. She recently turned her lifelong dream into reality with the opening of Opulicious Restaurant on Coolidge Street. “I’ve always wanted to bring an ‘air’larious dining experience to Hawaii,” she says. “Ono local food and balloons are what we’re all about! Opulicious is based on the belief that the customers

are the most important part of the equation for success — our goal is to make people happy!” Dining Out met up with Chun and a bunch of her balloon buddies as we were eager for the opportunity to immerse ourselves in food, fun, family and friendships here at this new and improved establishment. It’s an inviting breath of fresh air at Opulicious! DO: Opulicious offers something very unique. What is the concept of the restaurant? Chun: Yes, Opulicious is very different and we’re the first balloon-themed restaurant in the nation. There are two things that I’m really passionate about: Good food and balloons, and that’s how Opulicious came to be. I’ve been a balloon artist/twister for 10 years and have a separate balloon business on the side. I can make more than 300 balloon creations, ranging from dogs, to flowers, sushi, lobster and more. Just incorporating balloons and food into one business is something that I really enjoy. The theme of the restaurant is creating an “air”larious dining experience. We have many balloon creations scattered around the restaurant, so

DO: Balloon creations are always fun, yet foodies are always eager to learn about the food. What does Opulicious specialize in in terms of cuisine? Chun: We specialize in homemade local food from recipes derived from my mother and me. We serve breakfast, lunch and dinner, and we also have great daily specials. Everything is made fresh to order, and people seem to love our food.

when people come here to eat they can take balloon creations home with them! When there are kids here, I’ll even take the time to make balloon creations on the spot. Opulicious is a great place for kids. We have a keiki fun day the last Saturday of each month where kids especially can come and enjoy the many balloon creations.

DO: What has been flying off the menu here? Chun: Our No. 1 hit is Chicken Katsu ($5.50 mini plate, $7.75 opu). We serve two huge pieces of chicken katsu (which equates to more than a pound of chicken) with white rice or brown rice, tossed salad or mac salad. Our next best seller is Hamburger Steak with Grilled Onions ($5.50 mini plate, $7.75 opu). And if you love these two dishes Hamburger Steak Plate and Chicken Katsu is our special this month and it’s reasonably priced at $9.95. I also recommend Kilauea, Kauai Apricot Baby Back Ribs ($12). My mom is from Kauai and this is her recipe, it’s so tasty. All of our local plates come with choice of rice and tossed or macaroni salad. For those who want healthier options, we have a wonderful Salmon Tofu Salad ($10.25). We also offer your choice of mahi, furikake-crusted ahi or salmon served over linguine ($10.25) with garlic shoyu butter sauce or a lemon butter pesto sauce. This is a great choice for Lent, and it always seems to sell out. What’s even better is that it comes with

($6.75, $1 more for fries and a drink) is our famous burger that features two 1/3-pound homemade patties with your choice of melted pepper jack cheese or sharp Cheddar smashed between the two patties on a hamburger bun and topped with lettuce, tomatoes and onions. This is actually a newer item on our menu and we sold 30 burgers in a week and a half. We couldn’t believe it. It turned out to be a hit — when you bite into it, it just melts in your mouth. The meal comes complete with french fries or sweet potato fries with our famous Opulicious sauce. 3

DO: Very appetizing. You’re making mouths water! Many customers have been stopping by to try the daily specials as well, correct? Chun: For sure! We have a variety of daily specials including Baked Spaghetti with Garlic Bread or Kal Bi with Kim Chee Relish on Mondays. On Tuesdays we offer Meat Loaf ’n Gravy with Smashed Potato or Fried Chicken. Wednesdays we have Pork Tofu or Cold Ginger Chicken, Thursdays Roast Turkey or Grilled Pork Chops and Fridays Kilauea, Kauai Style Apricot Baby Back Ribs or Lau Lau. Although everything is delicious, our Grilled Pork Chops usually sell out by lunch time. It’s very tender and is topped with sauteed mushrooms, onions and smothered in gravy. And many rave about our Lau Lau special, which is paired with Hawaiian Stew, two scoops of rice, a side of macaroni salad and lomi salmon.

DO: Your menu also features burgers and sandwiches, and there’s a new burger that’s been recently unveiled. Tell us about it. Chun: Aunty Tita’s Burger

DO: How did your interest in the culinary world come about? Chun: Food has always been of great interest to me. I went to culinary school at Kapiolani Community College and I also studied Food Science and Human Nutrition at the University of Hawaii. Having that nutritional background, I find it very important to provide my customers with healthier options, so even though we have a lot of local food here with macaroni salad and white rice, there’s always that option of brown rice or tossed salad. We also like to do our part within the community, so Opulicious also caters to preschools as well as Meals on Wheels.

Paesano jump-starts any and every appetite

S

itting with Billy Rattanasamay, owner of Paesano Ristorante Italiano, while dining on delicious appetizers, you begin to understand why the name fits so well. The inviting atmosphere and good service are just what you would expect with a meal among friends. For 20 years, Rattanasamay has been serving some of the best Italian food on the island at his Manoa Marketplace restaurant and, at its newest location, Waimalu Plaza in Aiea. Kahuku Shrimp with a spicy diablo sauce ($14.90) is a nice way to kick off 1 a meal and the conversation. The shrimp is sweet and has a mild spicy flavor thanks to the dia-

blo sauce that mixes cayenne pepper, olive oil, paprika, salt, pepper and butter to create an added dimension to the shrimp without overpowering its naturally light flavor. Don’t be afraid to suck the heads, shells or just eat the whole thing. There is a lot of flavor hidden within the cracks. Another appetizer with kick and flavor is Homemade Hot

Antipasto ($15.90). The clams, shrimp, calamari and mussels come bathed in the diablo sauce that adds flavor, and makes for great dipping sauce with Paesano’s warm, soft bread that one familiar diner called “the best ever.” Such full-flavored treats often benefit from some cooler accompaniment, and Paesano has two very good ones, Homemade Cold Carpaccio ($12.90) and Buffalo Mozzarella ($10.90). I’ll save my favorite for last. Homemade Cold Carpaccio is a simple dish of raw, thinly sliced filet mignon served with cut lettuce and a slightly spicy dipping sauce

made from Tabasco, olive oil, capers and a French soy sauce. The carpaccio by itself is soft and buttery, and with the lettuce it is crunchy and fresh. Finally, add the dipping sauce and it’s just, real good! Great Italian food comes from fresh ingredients that are handled correctly. A perfect example of this is Buffalo Mozzarella — it’s simple. Fresh tomato, basil, mozzarella, with olive oil and balsamic vinegar that mix to create a colorful swirl of flavor on top of each tasty morsel. Oh, so good!

“You can taste the sweetness in our rice,” says Eiki Tamaki, operations manager. “And when it’s cold and you reheat, it’ll taste the same.” The menu features a great selection of everyday Japanese food, including traditional Teishoku (combo) meals with a variety of chicken, pork and fish options, as well as tempura, fried oysters and sizzling hamburger steak. Also on the menu are Japanese curry dishes and udon. The ichiban or No. 1 seller is Chicken “Ama-Kara Age” ($11), which is crispy fried

chicken with grated daikon and a sweet ginger sauce. It also comes with a piece of fried eggplant, pumpkin, Okinawan sweet potato and string beans. “It looks like regular fried chicken but when you eat it, it’s really refreshing,” notes Tamaki. “And it doesn’t have a greasy texture or flavor.”

Discovering more at Sekiya’s

n a never-ending quest for vegetarian options at Island eateries, sometimes nonmeat eaters have to be downright sleuths. Even though a restaurant may offer meat- and fish-free dishes, the manager may not think of the establishment as a so-called “vegetarian” restaurant, and may dismiss callers when asked if there is anything vegetarian on the menu. But here’s a clue: You’d be surprised at what a little digging can do. You just may discover a new fave. “We’re not really a vegetarian restaurant,” Sekiya’s Restaurant

A taste for all seasons

T

he winds and weather of each season of the year are unique. From summer to winter, each season has its own mood, traditions and flavors. Vietnamese restaurant Saigon Cuisine emphasizes these seasons with its variety of seasonal appetizer rolls. Not to fret, each roll is on the menu regardless of the time of year. A customer favorite is Saigon Cuisine’s Summer Rolls ($4.99), which consists of boiled shrimp, fresh mint, sliced cucumber, bean sprouts, chives and rice noodles tightly wrapped in rice paper and served with a homemade peanut sauce. Autumn and Winter Rolls are similar as they are both wrapped in steamed rice paper. Autumn Roll features shredded pork, fresh mint, sliced cucumber, lettuce

and bean sprouts, while the Winter Roll is filled with grilled pork hash, rice noodles, sliced cucumber, pickled daikon, lettuce and bean sprouts. Both are priced at $4.99 and come with Saigon Cuisine’s special fish sauce for dipping. Traditionally spring rolls are very popular because of their fresh ingredients and scrumptious crunch, as they are usually lightly fried. Saigon Cuisine’s Spring Rolls have a plethora of fillings, including shrimp, ground pork, egg yolk, long rice, taro, fungus, carrots and onions wrapped in a wheat flour wrap and deep-fried to a golden touch. Spring Rolls ($4.50 for two and $7.25 for four) are served with lettuce, fresh mint, cucumber, rice noodles and special dipping sauce. A new addition to Saigon Cuisine’s roll

But, when we investigate a bit, she realizes that non-meat eaters actually can find what they’re looking for on Sekiya’s menu. “Actually, we take the meat out if people ask,” she says. “They seem to be happy with that.” So there you go. It can be that easy. Sekiya’s menu has a wide selection of Japanese dishes with a dash of local flair, and tucked in the midst of them you’ll find Vegetable Stir-fry with tofu ($11.95), a healthy combination of tofu, Chinese peas, zucchini and shiitake mushrooms served with

Evolving flavors at YuZu

I

n recent years, you may have noticed a “food revolution” of sorts, with blogs, lunch trucks and gastropubs popping up faster than you can say “feed me.” This explosion of culinary expression has sparked a burst of creativity when it comes to food concepts — the list of cuisine types is endless. Husband-and-wife duo Isam and Moco Kubota took part in the evolution of all things food when they opened YuZu four months ago at Ala Moana Hotel. It all started with a simple concept: to incorporate yuzu, or Japanese citrus fruit, into a variety of menu items. The resulting eatery is a maximally modern dining space offering a melange of creative flavors in a cool, contemporary setting. Their idea may have been new, but the Kubotas’ cooking experience is not. Only knowledge gained from 23 years in the kitchen could result in such original recipes as Kamiya Papaya Dynamite ($11.95). Maui onion, asparagus, scallops, tomatoes as well as Hamakua, button and eringi mushrooms fill locally grown papaya halves. What makes the dish pop? A surprisingly delicious vegenaise (non-dairy mayonnaise) topping that contrasts well with the sweet fruit shell. It’s a unique flavor, for sure, but oh, so satisfying.

The restaurant feels like a snazzy world of its own, with colorful walls, mod-style furniture and large-wooden tables, which are great for large parties. But if you’re in the mood for something quick, grab pupus at the fun bar and lounge area. Lotus-root Pizza ($8.95), full of crunchy lotus root slices melted with different cheeses including Mexican, mozzarella and Cheddar, is a great one to munch on. Moco suggests topping the appetizer with Yuzu-It, a citrusy, mild version of Tabasco sauce. While trying new flavors, sip

Sushi reigns supreme By Ali Resich

or an authentic taste of Japan, you’ve got to pay Sushi King a visit. You won’t find fusion sushi or interpretations of Japanese fare, but rather traditional dishes prepared by Japanese-trained chefs behind the restaurant’s unmistakable sushi bar. Sashimi Omakase ($35.95), for example, is a no-fuss, time-honored dish that simply highlights prime seafood. “Omakase means leave it up to the chef,” explains owner and manager Shu-Lee Kondo. Sushi wizards masterfully arrange a delicious combination of fresh seafood from maguro to hamachi. “It’s totally quality

seafood,” says Kondo. Another Japanese favorite is Yosonabe ($17.95 a la carte, $23.95 complete dinner). “This is getting very popular because you get so much inside,” says Kondo of the appetizing nabe filled with Chinese cabbage, bok choy, chicken meatballs, shrimp, salmon, butterfish, scallops, shimeji mushrooms, Chinese peas, oysters, tofu and kamaboko (fish cake). Kondo also recommends Dynamite ($14.50), served spicy or mild with an assortment of fish and mayonnaise baked in an abalone shell. The South King Street establishment has long satisfied its regulars with Four Rolls,

including Hawaiian ($13.50), Sunshine ($12.50), Dragon ($12.50) and Caterpillar ($12.50) varieties. Sushi King has kept tradition alive for 20 years and with its beloved, genuine menu, the tried-andtrue eatery shows no signs of slowing down.

My tofu frenzy continued at On On at McCully Chinese Restaurant. Delicious! I’d also highly recommend Unagi Shiitake Tofu Tama ($12.95 a la carte, $18.95 with sashimi, $24.95 with sashimi and tempura), an exotic entree simmered with morsels of tofu, egg, morsels of unagi and green onion. Finally, opt for Hifumi's Chiri Nabe ($10.45 a la carte, $16.45 with sashimi, $22.45 with sashimi and tempura), similar to Sukiyaki,

but simmered in a clear vegetable broth rather than a soy-based broth. All of Hifumi's traditional meals are served with rice, tofu miso soup and tsukemono. What’s wonderful about this restaurant is the high quality and large quantity of food (sans MSG) offered at a reasonable price. Tempura enthusiasts also would be pleased to know that shrimp and vegetable tempura are made fresh every day, and tofu addicts should note that Hifumi only uses locally made tofu in its dishes.

A

t 808 Yong’s BBQ, one can expect great customer service, a friendly atmosphere and homemade dishes. The eatery — under the new management of Yong and Bennett Tom — opened last December and has been serving up Korean local favorites ever since, ranging from meat jun and fried mandoo to kalbi and barbecue beef. The eatery, located in Waipahu, has already attracted a mixture of local customers, many of which frequent the restaurant. “Everything is homemade and I try to be friends with our customers,” says owner and cook Yong Tom, when asked what makes her restaurant different from others. “(Our) prices are cheaper than other places; the average price per customer is $7.95.” 808 Yong’s BBQ serves a variety of regular plate lunches (comes with two scoops of rice and four side dishes), mini plates (comes with one scoop of rice and two side dishes) and combination plates (comes with two scoops of rice and four side dishes), as well as noodles and soup. Regular plate lunches feature a variety of entrées — such as Shrimp Tempura Plate ($8.95), Spicy Chicken Wings ($7.95) and Korean Fried Chicken ($8.25) — while

the mini plates offer customers a smaller portion of local favorites, including Kalbi ($7.95), Meat Jun ($6.55) and BBQ Chicken ($6.55). For combination plates ($8.75 each), customers can choose any two from a selection of meats, including barbecue chicken, barbecue beef, garlic chicken and meat jun. The restaurant also features unique dishes under its “new items” section, such as Kimchee Fried Rice ($7.50) and Miso Butterfish ($8.25). The eatery’s signature item, 808 Special ($10.99), is frequently ordered because of the variety of meats that come with it — kalbi, barbecue beef, barbecue chicken and meat jun. Another popular dish is Kalbi Boneless ($9.95). “The Kalbi Chicken is popular ($9.95), but the Boneless Kalbi ($9.95) is also (popular),” Yong says. Many customers order Mini Family Pack ($22.99, feeds two-three people) or the Regular Family Pack ($40.99, feeds four-six people) at the eatery, according to Yong, who states that the meals are a good deal. Mini Family Pack comes with three pieces of kalbi, barbecue chicken and barbecue beef; five pieces of fried mandoo and meat jun; four vegetable sides and rice. Regular Family Pack comes with six pieces of kalbi, barbecue chicken and barbecue beef; 10 pieces of fried mandoo; 12 pieces of meat jun; four vegetable sides

and 10 scoops of rice. “The Regular Family Pack is very popular; you can see it includes a lot of portions,” says Yong. 808 Yong’s BBQ offers takeout and catering menus as well. Catering is done for parties of 10 people or more, and the catering menu offers customer favorites such as chicken katsu and barbecue beef. Catering menus are available for $9.50 per person — featuring dishes such as Jap Chae (long rice), fried mandoo and barbecue chicken — and $12 808 Special ($10.99) with Kalbi, BBQ Chicken, two piece Mandoo, per person, including squash Meat Jun, and four sides.
