op aboard the Pineapple Express, Ono readers, it's time to get your fruit on! This week, I’m featuring my favorite fruit of all time. Let’s give three cheers for pineapple! Regarded as a tropical plant, it’s no surprise that pineapple is a beloved fruit of our island home; however, Southeast Asia actually dominates world production with Thailand and the Philippines leading the pack. Pineapple may be consumed fresh, canned or juiced and is spotlighted in a wide variety of cuisine. Its refreshingly sweet and tangy taste is like no other, and the mere thought of it makes my mouth water. So instead of fantasizing about this “perfect” fruit, in my opinion, why not pick up where we left off and devour a plethora of pineapple delights at the following Ono, You Know establishments.
JJ Bistro & French Pastry My pineapple craze kicked off at JJ Bistro & French Pastry, where executive chef and owner JJ Luangkhot’s outstanding creations define decadence. Here at this Waialae Avenue eatery, you’ll almost think your taste buds transcended to Paris where Luangkhot’s sweet Euro-Asian fare

Take, for example, Chocolate Banana Confit, the famous Chocolate Pyramid, and, of course, since we’re on the Pineapple Express, Luangkhot’s Pineapple Margarita Cake is a staple. Priced at $4.75, Pineapple Margarita Cake features a strong foundation with coconut cake as the bottom layer, topped with an extravagant blend of pineapple and haupia mousse filling. SPAN TOKYO’S BUSTLING LANDSCAPE, and coffeehouse chains such as Starbucks appear at every turn, yet the traditional kissaten or Japanese-style coffeehouse is still alive and well, and hold its own as the legitimate coffee connoisseur’s hot spot. Venture more than 3,000 miles from Tokyo to Hawaii, and you’ll also find that the same holds true a world away. Here in the Islands, Kissaten Coffee Bar stands in a league of its own since its inception in December 2010 on Piikoi Street. Enter this invitingly modern 24-hour establishment with statement lighting, eclectic artwork by up-and-coming local artists and vibrant orange hues, and you won’t be bombarded by a mob of insomniac zombies. Instead, you’ll find patrons at ease as Kissaten offers an escape for those taking a breather from their hectic, on-the-go lifestyles. Kissaten Coffee Bar is owned and operated by senior partners Neysa Taba, Jon Ishimi and Sean Ishizaki, distant cousins who were inspired to open a topnotch eatery that kept up with their nightowl ways. “Jon, Sean and I were night owls before we founded Kissaten, and we’d always be out late at night and had crazy schedules,”

Taba recalls. “We wanted a place where we could go to get coffee or food — we’d always run on coffee and a 24-hour lifestyle — and there’s many people like us who want coffee or crave a certain food at 2 a.m. “Kissaten is a night-to-day concept as well,” she adds. “It’s a coffee shop during the day and it turns into a hangout at night. We cater to every craving at any time of the day. We have a good business professional following, and it’s a great place for families and seniors.” With a fusion of cuisine sprawled out on its ever-expanding menu, Kissaten offers comfort food with a gourmet twist, encompassing Japanese, Italian and French culinary influences derived from the creative mind of Ishimi. Depending on the time of day, Kissaten features breakfast (6-11 a.m.), lunch (11 a.m.-9 p.m.), dinner (11 a.m.-9 p.m.) and late-night (9 p.m.-6 a.m.) menu options to satisfy a grumbling stomach. “We come up with new items every month or two. We usually start off with specials and if they do well, then we add them on to our regular menus,” Taba explains. “Heading into summer, we’re coming up with a lot more specials. Salmon ($9) has been doing very well.” The eatery’s early morning crowd also has exhibited an affinity for Kissaten’s Frittata ($7) — an open-faced omelette comprised of egg whites, fresh cherry tomatoes, spinach and goat cheese garnished with organic mesculin and Parmesan cheese — and Homemade Granola with Berries ($5, $4 without berries) — served with a glass of milk. Of course, you would lack the complete Kissaten experience without sampling a few of the restaurant’s best coffee and tea concoctions. No refrigerated mocha frappuccinos here — everything is made fresh to order, including Matcha Tea Latte and Caramella ($3.50 small, $4 medium, $4.50 large, served either hot or iced). “We go through a local vendor for our coffee and we offer a full menu of coffees — anything you would typically find at your usual coffee shop,” Taba says, adding, “We offer coffee specials as well. Currently, we're working on a bacon-flavored coffee and a new signature latte.” Always on the edge of innovation, Taba says, Kissaten is the premier choice for diners who wish to attain a quick power lunch, complete with free Wi-Fi with purchase. Wasting no time, the restaurant’s diligent staff can whip up lunchtime favorites, such as Southwest Chicken Salad ($8), which features a brilliant medley of romaine lettuce, diced red onions, corn, cherry tomatoes and baked chicken breast, drizzled with ranch dressing and barbecue sauce, and finished off with a sprinkle of crushed corn chips. “This is one of our most popular salads,” Taba states. “It started off as a special and then it gained quite a following, so we decided to add it to the regular menu, and it’s actually overtaking some of our older items.” Then make yourself at home on Kissaten’s comfy couch and cozy up to Tomato Bisque in a Bread Bowl ($7). The eatery’s most famous soup is available
during lunch and dinner, and boasts extravagant flavors derived from a tomato onion garlic bisque topped with fresh chives, Parmesan cheese and Brazil oil. The exemplary cuisine continues on into the night as the restaurant picks up with its late-night crowd. As the rest of the world sleeps, some patrons are instead gravitating toward best-selling options from Kissaten’s late-night menu. “Our Pho Noodle Soup ($7) is only offered on our late-night menu, and it’s

made from our own recipe,” Taba says. The night gets even sweeter with Homemade Bread Pudding ($3) adorned with cranberries, raisins and a heavenly sugar glaze. Absolutely divine. “It’s crazy running a 24-hour business, but between Jon, Sean and myself we’ve figured out a good schedule. We hope to expand and continue to bring in new customers,” Taba says. If you want a quick bite, its Meat Jun or BBQ Chicken mini plates ($6.55 each) served with one scoop of rice and two side dishes are always an option. If a larger appetite is swirling in your stomach, you may want to go right for the regular combination plates. 808 Yong’s BBQ has a hearty Kalbi regular plate ($9.95), which is accompanied by two scoops of rice and your choice of four side dishes. For some quality time with the family, this Waipahu eatery has a
variety of family pack options including its Mini Family Pack ($22.99) for two to three people, or opt for its Regular Family Pack ($40.99), which feeds four to six people. Mini Family Pack includes three pieces of kalbi, chicken and barbecue beef, five pieces of fried mandoo, five pieces of meat jun, four vegetable sides and five scoops of rice. Not too shabby for a “mini” family meal. If you have to feed a hungry herd, the Family Pack should be able to do so. The newest toast of the ‘Thai Town’ By Ali Resich

umphai Denson, who opened Thai Town Cafe a month ago, is taking her lifetime of experience in the kitchen and putting it toward her very own authentic Thai restaurant. After moving to Hawaii in November of 1990, Denson worked in three other Thai establishments before opening her current Kalihi-based venture with the help of her son, Suriyon O’Neal. Together, the pair present dishes reminiscent of

Denson’s hometown: Phetchabun, a northern province of Thailand. It was there, at the tender age of 9, that Denson began to pick up her basic cooking skills. “I learned from my mom, she was a food vendor in Phetchabun,” says Denson. Ever since, she’s perfected the recipes that her mother originally taught her, such as Chuchee Pla ($8.75; $22, small whole fish; $25, medium whole fish). Denson’s take on deep-fried fish fillets generously covered in a traditional sweet chili sauce. “I know this recipe from

Shabu-shabu swish and slurp habu-shabu is a big hit, and for good reason. Besides the fact that it’s just so much fun to say, shabushabu, which translates to “swishswish” (more fun), also is enjoyable to eat, as you get to "swish" your food in a pot, cooking it right at the table. It’s similar to the Chinese hot pot, but according to Shabu Shabu House supervisor Grant Murata, they are definitely not the same. "I wish people wouldn’t call it ‘hot

pot,’” he says. “We have real Japanesestyle shabu-shabu." The difference? A hot pot is filled with broth, while Japanese shabushabu uses water with a bit of konbu (seaweed) for flavor, which helps bring out the clean, fresh flavors of the food. But if there’s one thing about shabushabu that non-meat eaters have a beef with, it’s exactly that — beef is usually the star, with vegetables taking on more of a supporting role.

If you think vegetables deserve the spotlight and meat should exit the stage altogether, at Shabu Shabu House you can immerse yourself (and an assortment of veggies) in shabu-shabu with the Vegetable Shabu Shabu set ($11.95 for lunch, $15.95 for dinner). It’s a rainbow of fresh vegetables — onions, peppers, cauliflower, broccoli, sweet potato, kabocha squash and more, depending on the season — as well as udon, tofu and rice. he venue recently celebrated its “first birthday” in April, and it’s making strides to revamp the landscaping in the front area to reflect an atmosphere with an Asian influence. According to assistant manager Elvin Man, the restaurant seats up to 130 people, which makes for a great venue for a gettogether of any kind. “The Chinese customers who come in say that we have the best Cantonese food around,” Man says. Canton Seafood Restaurant also has preprepared menus that feed 10 to 12 people starting at $188, which includes Seafood with Fish Maw Soup, a whole Peking
Duck, two Live Lobsters with Ginger and Onion, Shrimp Walnuts with Mayonnaise, Tenderloin Steak with Spring Beans, a whole Crispy Garlic Chicken, Chinese Broccoli with Dried Fish, Young Chow Fried Rice and the dessert of the day. Other party menus that feed 10 to 12 are priced at $238, $288 and $388. If your gathering is a tad bit smaller, there also is a menu that fits your needs. Canton Seafood is all about providing customers with the best deals and food possible. “The Deep-Fried Flounder with Seasoning and Herbs ($9.99) is a favorite,” Man explains of the dish, which is regularly priced at $15.99. And, it wouldn’t be a seafood restaurant without Live Lobster ($12.99 each). Regularly priced at $18.99, this dish is truly a steal. ukuya Delicatessen & Catering is a familyrun business that was started in 1939 by Jihei and Tsuya Takayama. Today, Fukuya is run by the founders’ great-grandson, Arrison Iwahiro, who spent much of his youth learning the trade from his parents Owner and grandparents. Arrison “I just hung around (the restaurant) Iwahiro when my grandparents were running the place,” he says. “And then when my parents were doing it, I was around more often. “It was just a two-person operation when (my great-grandparents) started,” Iwahiro says. “At first it was basically just to serve the nearby workers, but then as it went on, the restaurant got a little busier, and we went into catering.” Fukuya began its catering operations by mainly providing food to wedding parties, expanding over time to include a wide range of events. Just as it has beefed up its catering repertoire over the years, the menu has expanded as well. “We realized that we do have to move with the times, so we have added more modern-day type of things as well,” Iwahiro says. He explains that some of these more modern-style dishes include Garlic Chicken ($2.20), Mochiko Chicken ($2) and Ahi Burgers ($1.90). But longtime regulars have no need to worry — the longtime favorite dishes are still around, too. “Some of the things have changed a little, but in general, we try to keep it kind of that more old-fashioned style,” says Iwahiro.

Who or what inspires you as owner of Ert’s Grill? I really like to cook. Getting compliments from people and my customers is what really pushes me forward and inspires me. My brother Robert, “Ert,” who I named the restaurant after, was my biggest fan and told me early on that I was a great cook.
Is there a dish that you create that’s not on your menu, but available upon request? We have a special sauce that some people know about. It’s like a tartar sauce with an Oriental flavor. We serve it on our Pulehu Chicken Sandwich and Shrimp and Chips. People also request it to put on our cheeseburgers, steak, fries and anything you can think of! What are your culinary goals? What do you hope to improve on? I hope to improve on everything that I do. My goal is to always learn and get better. I enjoy experimenting with ingredients to make my own sauces or add different tastes to certain dishes.
What is your favorite dish on the menu? Why? My favorite dish is definitely Smoked Meat. It takes a lot of time and effort to make it well, I have to hone it. The end result is a perfect balance of a little sweet, a little salty and a smoky flavor. What is your favorite ingredient to work with? Why? Garlic. It’s the natural flavor that spices up all dishes in many different ways. It enhances and brings out flavors in most dishes.

n Japan, nabe is said to bring people together through the joyous act of sharing a hot pot of sizzling broth simmering away with flavorful vegetables, meats and seafood. Naturally, Hawaii’s patrons have fallen in love with the unique family-style dining experience, and the best place to find it is at Ichiriki in town or in Aiea. Both locations offer sharable hot pots (kami nabe, serves two), or you can enjoy a pot to yourself. One of the most popular menu items is Mushroom Nabe ($24.95 per person; $51.95, kami nabe) featuring an abundance of seasonal mushrooms to cook up in a shoyu broth with a hint of citrus. Like all the restaurant’s nabe options, a varying assortment of sensational items add flavor and diversity to each meal. Mushroom Nabe includes won bok cabbage, bok choy, chives, abura age, gobo, tofu, kuzukiri noo-
dles, chicken, pork, sausage and tsukune meatballs. Munch on rice throughout the meal, then finish off your soup with ramen. As Aiea general manager Masaki Sasada describes, the broth’s flavor intensifies with each savory addition to the pot. “The more the soup boils, it perfects itself. The longer the better — more flavor absorbs from the soup.” Sasada suggests trying

Brought in daily, fresh ahi is wrapped in shiso leaf, panko-crusted and drizzled with katsu sauce to make Ahi Katsu ($5.95), one of the most popular appetizers. The establishment has some wonderful specials to take advantage of, such as its early-bird special from 6 to 8 p.m. every Monday through Thursday at both locations. Customers will enjoy 25 percent off hotpot entrees. Now, more than 50 years later, long lunch lines and numerous takeout orders are a continued sign of customer satisfaction. “Our peak times are from 11 a.m. to 1 p.m. (for lunch), and at night, it’s from 5 to 7:30 p.m.,” says executive general manager Lance Shimabuku. While Rainbow Drive-In has been more popular among locals in previous years — and continues to draw a large local clientele — Shimabuku says that more customers from the Mainland have visited the eatery since last year. “We have a lot of surfers and locals, but after we did a segment on Diners, Drive-Ins and Dives last year on Food Network, we’ve been having a lot of Mainland visitors,” he confirms. Rainbow Drive-In is well known for its good food, friendly service and reasonable prices, according to Shimabuku. Indeed, plate lunches range from $6 to $8.25, including Mahi Mahi with tartar sauce ($8.25), BBQ Steak ($7.25), Beef or Pork Cutlet with Gravy ($7.25) and Chili Dog Plate ($6.75). Items on the breakfast menu — such as Sweet Bread French Toast ($5.50) and Corned Beef Hash with Gravy and Egg ($5.50) — are priced at $5.50 or less. Besides the entrée, all plate lunches come with two scoops of rice and one scoop of macaroni salad or coleslaw. When it comes to Rainbow Drive-In’s signature dishes, Shimabuku is quick to name Loco Moco Plate ($7), Mix Plate ($7.75) — comprising

Barbecue Steak, Mahi and Boneless Chicken — and Boneless Chicken with Gravy ($7). However, many of the other menu items are customer favorites, such as the renowned Chili, which is sold by bucket ($18.50) or is available in Chili Rice or Chili Cracker Bowl ($3) options. “Our Bento ($7.50) — which consists of our Boneless Chicken, BBQ Steak, Spam and rice with furikake — is popular,” Shimabuku says. “So is our
Chili Dog Boat ($4.25) — it’s a hot dog with our famous chili on it. Our Loco Moco Bowl ($3.95) — which consists of one scoop of rice, one hamburger, one egg and gravy — also is popular. It’s a mini version of our Loco Moco Plate ($7); the egg is cooked any way you decide.” With summer just around the corner, Shimabuku anticipates numerous orders of the eatery’s popular Slush drinks (regular $1.75, large $1.85). “Summer’s going to be really hot and it’s such a refreshing drink; it’s a sure way to beat the tropical heat!” In addition to the plate lunches on its daily menu, Rainbow Drive-In also offers customers a variety of specials that are only served on certain days. For example, Roast Pork with Gravy ($7) is only served Sundays, Wednesdays and Fridays, while Shoyu Chicken ($6.50) is served Mondays, Wednesdays, Fridays and Saturdays. Other specials include Pork Long Rice ($6.25) — served on Mondays and Fridays — and Spaghetti with Weiner ($6.25) and Chopped Steak with Vegetables ($6.75), both of which are served Tuesdays and Thursdays. The end of June marks a oneweekend-only special at Rainbow Drive-In, according to owner Jim Gusukuma. “We’re teaming up with 50th State Poultry on the last weekend of June — June 30-July 1,” he states. “(We’ll be serving) a rotisserie, huli huli-style chicken only for that weekend. We’re going to sell plates for $7 and we’ll be selling the chicken (itself) for $5.”
