reen Tea. Mention those two luxurious words and a certain peace comes over me. Sure, you must think I’m exaggerating, but this is no joke. Whether it’s served hot or cold, green tea is one of my all-time drinks of choice. Who can resist the many health benefits that come along with it, including the belief that many regular green tea drinkers have a lower risk of developing heart disease and certain types of cancer, not to mention its benefits as an antioxidant?! Hello to younger looking skin and good health! In my opinion, green tea just may be heaven sent. So, this week instead of brewing myself a pot of green tea, I decided to embrace my love for this tea leaf (green tea is made solely from the leaves of Camellia Sinensis) and search for some superlative green tea creations. And believe me when I say I found a few at the following Ono,

s liquid sunshine streams in through the clear glass windows at Wailana Coffee House, hungry diners from across the globe are making their way to their tables ready to tackle Wailana’s signature cuisine. Just look across the busy dining room and you’ll see friendly servers taking orders, quickly bussing tables, and presenting customers with plate upon plate of pancakes, waffles, eggs and bacon, burgers, sandwiches and more. “We’re pretty much always busy! Wailana Coffee House is a 24-hour establishment, we only close one night a week, which is Tuesday at midnight,” says general manager Kenton Tom. As a legendary landmark in Waikiki, Wailana Coffee House is located on the corner of Ala Moana Boulevard and Ena Road at what was once the original Kapiolani Drive Inn. “Kapiolani Drive Inn was founded by my father Francis Tom in the 1950s. Back then, of course, it was a drive-in, so you would drive up and it was JUNE 3-9, 2012

car hop service,” Kenton recalls. “At the time when Kapiolani Drive Inn was around, it was known for its local food that was very inexpensive, but very popular. During those days, hamburgers were around 20 cents. Kapiolani Drive Inn also was known for its fried chicken, chop steak and teriyaki rib steak,” he adds. Then in 1969, the Wailana condominium was built, paving the way for Wailana Coffee House, which soon took the place of Kapiolani Drive Inn. Kenton and his two siblings formally took over the restaurant and Kapiolani Drive Inn Inc. just last year upon the passing of their mother, Mary. “Since the beginning, Wailana Coffee House was always one of those places known to be open 24 hours,” Kenton says. “Looking back, there are some similarities with Kapiolani Drive Inn and Wailana Coffee House. There’s still a lot of local flavor in the food, it’s moderately priced and both establishments are based on good values.” Whether it’s local favorites or American classics,

Wailana Coffee House has it all, making it a popular hot spot among both kamaaina and tourists. Kenton reveals that even though the restaurant doesn’t have a national name like other places, it’s still been able to do well despite economic hardships. “Our food and good service have always been

consistent, and I think our new and loyal patrons are appreciative of that,” he says. And now with King Kamehameha Day (June 11) and Father’s Day (June 17) fast approaching, Wailana is ready to celebrate in style. In fact, two special holiday menus will soon be unveiled and available to diners. “We always celebrate big holidays with a nice holiday menu,” Kenton states with a smile. “As far

as determining what is featured on each holiday menu, we go by what the holiday is. For example, we don’t normally serve Hawaiian food, but with King Kamehameha Day coming up, we’ve added some great Hawaiian cuisine to the menu.” Yes, indeed. Diners can be on the lookout for three fantastic dinner options (served from 11 a.m. to midnight June 9), including Hawaiian Luau Dinner ($16.25), Teriyaki Rib Steak ($15.95) and Chicken Papaya ($13.50). According to Kenton, Hawaiian Luau Dinner has proven to be a bestseller and features kalua pig, lau lau, chicken with long rice, lomi salmon, your choice of poi or rice, and haupia pudding. Teriyaki Rib Steak also wows diners with an 8-ounce steak marinated in Hawaii’s popular sauce and garnished with fresh green onions. As for Chicken Papaya, this dish will make your mouth water as you are presented with half a seasoned chicken, roasted and glazed with a

tropical papaya-orange sauce and served with Wailana’s famous macadamia nut stuffing. All entrees include all-you-can-eat salad bar, and your choice of coffee, tea or soft drink. “On King Kamehameha Day, we also will have a breakfast special of Portuguese Sweet Bread, which will be available from 6 a.m. to midnight,” Kenton shares. This breakfast of champions, priced at $9.50, showcases thick wedges of Portuguese sweet bread filled with a pocket of marmalade and finally dipped in egg batter. This hearty breakfast comes complete with two eggs, two strips of crispy bacon and coffee or tea. Then come Father’s Day, spoil that special man in your life and treat him to a meal worth remembering. Dad will surely find something he’ll love on Wailana’s Father's Day Menu (available June 17). “With the Father’s Day Menu we wanted to offer something a little more heavy for the fathers — something a bit richer from what’s on the average Wailana menu,” Kenton explains. Take advantage of Eggs Benedict Royal ($10.50), a breakfast special served from 6 a.m. to midnight, which features toasted English muffin halves with smoked ham, turkey breast, and poached eggs smothered with Wailana’s hollandaise sauce, and served with crispy hash browns and glazed peach slices. Then starting at 11 a.m., feast on complete dinners of New York Steak with Onion Rings ($16.95), king of steaks served with beer-battered onion rings and fresh mushrooms; Seafood Continental ($14.50), a trio of shrimps, scallops and mahi mahi gently simmered in a supreme sauce with fine herbs and wine; or Chicken Florentine ($13.50), tender breast of chicken on a bed of spinach and bacon, garnished with crab meat and topped with hollandaise sauce. All dinners include all-you-can-eat salad bar, baked or mashed potato, french fries or steamed rice, corn on the cob, bread pudding, and coffee, tea or soft drink. Also, toast Dad with a glass of Burgundy, Rose or Chablis for $3.25. Chef Peter Cheng is the man responsible for whipping up these alluring holiday specials, but Kenton is quick to credit his close to 100 employees who have helped to make Wailana Coffee House a household name. “Wailana has garnered a good reputation throughout the years. I’m very lucky that I have great employees, wait staff and back of the house staff who make my job a lot easier.”

rom the moment you walk in to Buffet Camellia on McCully Street, there’s no escaping that mouth-watering yakiniku aroma as guests cook their food themselves at their table. The restaurant celebrates its 27th anniversary this year, with a growing following of loyal customers who continue to return for its tasty allyou-can-eat yakiniku-style food. The buffet line offers a great selection of meats (kalbi, and barbecue beef, chicken and pork) and vegetables. There also are some local favorites, such as kim chee fried rice, macaroni salad, fried mandoo, orange chicken, kim chee, taegu and kim chee cucumber. Also available are traditional Korean dishes, including

Korean pancake, Korean sweet tea and jab-chae (long rice noodles with onion, green onion and carrots). To complete the meal, there’s seaweed soup and miso soup, fruits and Jell-O, as well as rice and sweet rice with red bean. And for dinner, shrimp, sirloin steak and frozen yogurt are added to the menu. But what sets Buffet Camellia apart from other yakiniku restaurants is its secret sauce used for all its meat dishes, which gives a flavor that is irresistible. Open seven days a week, lunch is $17.95, and $13 for children age 4 to 8. Dinner is $25.95, and $15 for children age 4 to 8. A private room for up to 30 people also is available inside the restaurant.

Chillin’ at Il Lupino A lthough summer doesn’t officially begin until June 20, those sunny, sultry days are already here, and what could be better for lunch than a cool, fresh salad while relaxing in a casual, yet sophisticated ambience inside, or al fresco dining on the charming garden terrace. Il Lupino Trattoria and Wine Bar offers a selection of fresh salads at lunchtime, but don’t go expecting the same old boring lettuce and tomato fare. They do it Italianstyle here, and they do it with Island flair. Although many of Il Lupino’s salads do contain fish and/or cheese, general manager Adriana Nickerson turned us on to her favorite on the Il Lupino lunch menu: Insalata Farfalla ($14). It’s a mouthwatering medley of fresh Island papaya, avocado, marinated shiitake mushrooms and chopped tomatoes tossed in a truffle vinaigrette, garnished with cured red onion and topped with black truffle sauce. Mmmm. The papaya and avocado give it a tropical touch, while the rest is reminiscent of sunny Italy — a match made in heaven (or, better yet, paradise). Il Lupino means "the lit-

“What does Patisserie La Palme D’or offer when it comes to green tea?” I ask. Of course, I know it has to be good! “We have Green Tea Roll Cake and La Macha ($4.45 each),” says Tanaka. “Both are made with green tea powder, which we get from Shizuoka, Japan, which is famous for its green tea farms.” Green Tea Roll Cake ($4 per slice, $18 whole cake) features a green tea cream rolled in a light and fluffy green tea sponge cake. La Macha ($4.45 each) presents you with a layer of fine chocolate sponge cake topped with chocolate mousse, chocolate sponge cake, and finally completed with a layer of flavorful

green tea mousse. Chef Akiko then garnishes it with cocoa powder and a morsel of decadent chocolate. “Both desserts are well-liked by our customers,” Tanaka says. “Green tea is bitter, but in our desserts the green tea is not overpowering.” Gift sets also are available for purchase and specialty cakes can be made to order. Being the insomniac that I am, this 24hour establishment is just what I need to satisfy my hunger at 4 a.m. Located on Piikoi Street and open daily, Kissaten Coffee Bar offers menus abundant with a fusion of cuisine that reflects your favorite comfort food with a gourmet twist. And when it comes to green tea options, a visit to this renowned coffee bar wouldn't be complete without a sip of Matcha Tea Latte ($3.50 small, $4 medium, $4.50 large). “We start with the matcha (green tea) powder, which is a very concentrated flavor, and we mix it with milk and vanilla. It’s very natural,” says senior partner Neysa Taba. “Actually, Matcha Tea Latte is one of our most popular drinks, and perfect if you don’t want a lot of caffeine.”

You can opt to have your drink served hot or iced, and with summer just around the corner, I definitely recommend Kissaten’s Matcha Freeze ($4.25 small, $4.75 medium, $5.25 large), which is similar to Matcha Tea Latte, only blended. Being that my body doesn't always take well to tons of caffeine, these drinks are right up my alley. They’re a must-have for any green tea fanatic! Kissaten is always adding new specials to its ever-expanding menu as well, so be on the lookout for that!

It’s filling and prepared very quickly,” explains general manager Hiro Takei. ince opening its doors in October of last year, Japengo has established itself as one of Hawaii’s hotbeds for Pacific Rim cuisine. However, do not be mistaken. This is not “fusion” cooking where multiple styles and influences are swirled together. Japengo’s innovative cocktails, superb sushi and an assortment of exotic flavors from around the Pacific Rim and Southeast Asia make the restaurant a cornerstone of culinary excellence within the Hyatt Regency Waikiki Beach Resort and Spa. “For us it’s very important that we don’t call it fusion cuisine — fusion, for me, I always call it confusion,” says Japengo’s executive chef Sven Ullrich. “Fusion cuisine is mixing a lot of different Asian styles and techniques together on one plate. Pacific Rim cuisine stays true to the flavors of certain regions, and keeps it authentic. “The hair on my neck stands up when I hear the word fusion because we’re often misinterpreted and people say, ‘Oh, it’s just another fusion restaurant,’ and that just drives me up the wall,” Ullrich adds. “It is not, and we really tried very hard. We’re getting feedback from customers, such as those saying that our sushi is better than some you find in Japan, and that just gets us going.” Upon entering Japengo,

Another example of Japengo’s exemplary attention to detail can be found in the establishment’s effort to perfect its Japengo Fried Rice ($18), a combination of char siu pork, prawns, chicken and vegetables. “We actually flew in the chef from a restaurant in Beijing, China, to train our wok chef on the fried rice,” says Ullrich. “It sounds so simple, fried rice, but it’s really not that simple, let me tell you. It took us three weeks and trying about 50

sustainable food and beverage options for its patrons. The mantra is simple: thoughtfully sourced and carefully served. However, as Ullrich explains, implementing the strategy is a long, steady journey. “It’s a big task, and I have to admit we’re not even close to where we want to be in the next several years,” Ullrich says. “I use the example of ’Nalo Farms. We’re getting local produce from them including the Thai basil and the mixed greens — we order them in the afternoon, and they cut it fresh for us. That’s just the beginning. We’re taking baby steps in the right direction.” The baby greens from ’Nalo Farms are incorporated in one of Japengo’s


efavorite starters, Japengo Salad ($15). The dish also ,incorporates sushi grade rahi and a homemade garlic, ginger vinaigrette, which also includes hints of dlemongrass and sesame oil.

Sticking with starters, aScallop Butter Yaki ($18) is torched and glazed with Iroasted garlic, sweet gintger and chili, and braised eslightly. And with its elegant, tranquil ambiance and top-notch customer service, the Waikiki eatery ensures an all-around five-star experience. Customer favorites include “Hy’s Famous” Roast Rack Of Lamb ($63.95 for a full rack; $39.95 for a half rack), which is prepared with herbs and seared over hot kiawe charcoal, Caesar Salad ($14.95; prepared tableside for two or more) and Chicken Marsala or Piccatta ($27.95). “And, of course, our prime steaks are among the most popular items,” says Hy’s Steakhouse vice president and general manager Bob Panter. ow renowned as one of the Island’s best places to indulge in a steak, Hy’s Steakhouse was started in Calgary, Canada, in the 1950s by restauranteur Hy Aisenstat. The Chef Danny Florino grilling up delicious morsels of fine-dining venue’s popularity grew meat on the kiawe grill. quickly, and a string of Hy’s restaurants popped up around Canada. In 1976, Aisenstat, in collaboration with a local business partner, brought his restaurant to the Islands. Bob Panter joined the staff about a year later as an assistant busboy. Throughout the years, he steadily climbed through the ranks and now serves as Hy’s Steakhouse vice president and general manager. While Hy’s boasts an eclectic menu filled with decadent fusion flavors that include seafood, chicken and lamb in addition to beef, you don’t want to miss out on Hy’s steaks. For the uninitiated, here is a basic rundown of the different types of steak cuts that you can find at Hy’s Steakhouse. “The Filet Mignon is the leanest and most tender cut,” Panter explains. “The New York Strip has a firmer texture and a robust flavor. The Delmonico Steak is a boneless, highly marbled steak. The fat content in the meat gives a lot of flavor to it. For the T-Bone Steak, you have one side that is filet, and one side that is New York on either side of the bone … The Porterhouse Steak has an extended filet portion, and is very flavorful.”

The USDA prime beef that Hy’s so expertly cooks up is aged and trimmed on site to create a tender, flavorful steak. Another thing that sets Hy’s apart is its mixture of various influences. While the majority of the cuisine at Hy’s is AmericanEuropean fare, the restaurant also has creatively combined Hawaiian and Pacific influences. Take, for example, Steak Tataki Salad ($22.95). “This is kind of taken after the Japanese style of cooking to really sear the outside of the meat and keeping it rare inside,” Panter says of the dish. As pictured, the meat is peppered and the dish includes baby greens and ponzu vinaigrette dressing. Hy’s also has an extensive seafood menu, which includes dishes such as Alaskan King Crab Legs (market price), Angel Hair Pasta with Tomato, Basil and Scallops ($10.95) and Lobster Tail (mar-

ket price). And if you have any room left over for dessert, the flambés at Hy’s are not to be missed. In addition to tasty pupus, Wahoo’s adds value with its monthly food and drink specials. This month the cheese quesadillas are priced at $5.50 and the John Daly, organic Shangri La Ice Tea, lemonade and vodka, cost $5. Also, Tuesdays is Taco Tuesdays with $2 soft tacos and $2 Primo beer. Wednesday is keiki day with balloon animals and free food with the purchase of an adult meal. All that plus live music and the crispy Sweet Maui Onion Rings made with a beer batter for $4.69.

wner Stephanie Gambetta likes to say the food at Wahoo’s Fish Taco is fuel for your day. Unlike others offering somewhat similar menu options, Wahoo’s forgoes the heavy ingredients in favor of lighter options that leaves the diner satisfied without feeling the need to hibernate. A good example of this is 1 Wahoo’s Baja Rolls ($6.59). The rolls are made with minced chicken, spinach, cream cheese and salsa and rolled in a fresh flour tortilla, which is chilled then sliced. Served with Roasted Pepper Cilantro sauce, made with roasted Anaheim peppers and blended with secret ingredients, the dish, as Gambetta says, is light and flavorful, and no question, fresh. The sauce is one of three options at the Ward Centre and Kahala Mall eateries that includes Mr. Lee's Aioli, a sweet and spicy sauce, and a traditional ranch dressing. Another example of the ordinary made healthier is Nachos made

with Jack and Cheddar cheese, and black and spicy white beans. The beans are boiled for three hours with a mixture of herbs and spices and makes a nice alternative to traditional refried beans. You also can add fish, chicken, shrimp, grilled steak and kalua-style pork. Gambetta says you won’t find

better taquitos in town. I have to admit I haven’t, yet, tried every available option in town, but she's right in touting the tastiness of Wahoo’s Taquitos ($6.59). There are a lot of restaurants out there where the chef and front manager butt heads because one side feels the burden is being put on the other. At Hukilau, that is never the case because I represent all three sides. If I am putting some burden on the other side, it would be putting it on me, and I have no problem doing that because that is what’s best for the customer. Not too often will you ever hear me say “no” to a customer. By keeping the customers happy, they will remain loyal.

Our oxtail at Hukilau is very popular and I know that it would definitely put a smile on his face.
