key characteristic of a restaurant’s staying power is its ability to adapt to the needs of its customers. Yoshi Japanese Dining & Bar revamped its menu a few months ago, and its patrons are toasting the changes, which have resulted in more variety and plentiful portions. The restaurant used to be known as Yakitori Yoshi, and previously specialized in skewered cooking methods. But after a change in philosophy, Yoshi reopened in March to the tune of an expanded Japanese menu coupled with a versatile full bar. “We no longer serve yakitori; now, we serve sushi, sashimi and teppanyaki,” says president and owner Akinori Hirose. “On the teppan grill, customers may choose from steak, chicken, garlic shrimp and many other favorites.” Hirose says that the changes at his 1427 Makaloa St. eatery came about after customers clamored for more choices. “The local customers wanted sushi and sashimi, and while the yakitori was popular, it wasn’t as popular as our selections now,” he says. “Now, they have more choices, and the local people definitely appre-

ciate the larger portions!” One of Yoshi’s top sellers is Assorted Sushi ($20), which incorporates recommendations from the chef on a daily basis. Some of the possible choices include ahi, hamachi (yellowtail), red snapper, shrimp and salmon sushi rolls arranged on a platter. Hirose also is proud of another new menu item — Two Choice Set Menu ($25). With this selection, customers can pick from two entrees, including Rib Eye Steak, Grilled Chicken, Assorted Sushi and Sashimi, Pork Cutlet and Garlic Shrimp. Additionally, the set includes salad, miso soup and rice. “The portions are really big, so I’m sure the customers will enjoy them,” says Hirose. As a starter, Hirose suggests Yoshi Salad ($6), which is composed of mixed greens, cherry tomatoes and is topped with a creamy homemade orange dressing that includes carrots in the secret mixture. Tempura Ice Cream ($5) is a must-have dessert following one’s meal at Yoshi. The creamy dessert is wrapped in pound cake, deep fried, covered in honey and served on a bed of salt and rum that is ignited as it’s brought to the table. “People love the presentation!” Hirose says. For those looking to supplement their meal with a selection or two from the bar, Hirose suggests Takesake ($8), a special house sake served from bamboo. The sake is smooth and easy to drink, and its unique presentation completes the experience. Yoshi also features popular Happy Hour specials when, between 5:30 and 7 p.m. and again from 10 p.m. to close, customers may enjoy $2 Kirin on draft and $8 pitchers of the beer, in addition to $2 Bud Light bottles. There also is a Ladies Hour special menu available from 9 p.m. to closing time, and includes $4 drink specials on the Takesake, various wine selections, Shochu and Chuhai. Just in time for Father’s Day, Dining Out readers who bring in the coupon from this issue can receive Tempura Ice Cream for just $1 with the purchase of $25 or more from the regular menu. ggs ‘n Things has hatched a new Eggs ‘n Things Cafe and Hua Market retail store located at its 343 Saratoga Road flagship eatery. The cafe can be found downstairs in the busy Waikiki restaurant and serves acai fruit smoothies and bowls, espresso smoothies, fruit juices, iced tea, espresso and top-quality coffee. Coffee choices include the Drip Brewed Waialua House Blend, as well as a variety of premium hand-dripped and cloth-filtered coffee in mild or strong. According to supervisor Yasumitsu Otsuka, who has about 20 years of experience in the coffee business, the cloth drip (versus paper) gives the coffee more flavor. There also is a special Water Drip Iced Kona Blend that takes eight hours to make, and only 30 servings available daily. The espresso — Cafe Latte, Cafe Mocha, Soy Latte, Cappuccino or Americano, can be made with or without sugar.
And the acai has a unique blend, such as the Diamond Head Eruption, which consists of acai, strawberry, banana, protein, yogurt and guava. Customers dining at the restaurant also can order from the cafe menu. Known for its irresistible pancakes, omelets and crepes, Eggs ‘n Things has been a favorite of locals and visitors for the past 38 years. Its famous Buttermilk Pancake Mix ($6) and tasty syrups ($6) have been popular

hen a restaurant manages to stick around for 20 years, it’s no coincidence. Only an agile mix of excellent customer service and a consistently mouth-watering menu could make an eatery last throughout the years. 3660 On the Rise, located at the foot of Wilhelmina Rise, has not only done just that — becoming an integral part of the community with its sweet blend of friendliness and outstanding Pacific Fusion cuisine — but also has managed to earn the trust of its loyal customers, who have embraced the restaurant’s ever-changing menu since 1992. or the pupu lover, no style of cuisine offers more promise than Chinese, especially if dim sum is on the menu! That’s the case with The Mandalay. The Alakea Street restaurant boasts a menu chockfull of finger-friendly items to share or hoard for your own personal pleasure. For those interested in making or keeping friends, the Deep Fried Combination Platter ($13.95) is a good way to go. Packed high with deep-fried butterfly shrimp, spring rolls and
crispy gau gee, it’s an easy way to maintain relationships. The dipping sauce that comes with the platter is a combination of sweet, sour and savory flavors, and makes a nice accompaniment for other appetizer items. Particularly interesting is Barbecue Pork Pastry ($3.50). Tender pork is added to a light pastry that is rolled out and folded several times to ensure a light, crispy coating. After baking, the pastries are coated with honey and then broiled, which caramelizes the sugar in the
honey and creates a nice golden brown crust. Another nicely presented dish is Deep Fried Taro Puff ($3.50). Pork, vegetables and dried shrimp are stir-fried and mixed with gravy before they are placed into a pocket of steamed taro. The end product is a crispy appetizer that is flavorful without being heavy. Want something local with your Chinese? Not a problem. Baked Barbecue Pork Bun ($3.50) is a small and soft golden-baked manapua filled with

tender pork and a tangy sauce that really rounds out the flavor. One last recommendation: Make sure to say hello to Oi Ling the next time you’re at The Mandalay. Ling is a sweet and attentive server who appears to find great joy in serving the eatery’s guests. She also is quick with the fist bump, so be prepared.

This week, Dining Out dropped in on Zpizza owner Cesar Llarenas, who gave us a little taste of why his restaurants remain so popular among pizza lovers.

Who or what inspires you as an owner? Sid Fanarof, founder of Zpizza International, is a great inspiration. He has put a lot of love and passion into creating tastier pizza and salad at Zpizza. He takes good care of the people who work for him. He created a concept and a product that seemed to me to be ahead of its time, in offering healthy pizzas with natural and organic ingredients. That was why we wanted to bring Zpizza to Hawaii. The ingredients are fresh and the combinations we have are very different.

When people say we have “the best gluten-free pizza,” that is a huge compliment because we want it to taste great and be good for you, too. What is your favorite dish on the menu? Mexican Pizza, because it has a unique taste that combines salsa, spicy lime chicken, mozzarella, red onions and is topped with green onions, fresh avocado, sour cream and cilantro. It creates a taste that is somewhat spicy but cool and fresh to your palate. My favorite salad is the Pear Gorgonzola salad, which consists of fresh Waipouli lettuce, gorgonzola cheese and d’Anjou pear. It’s served with a balsamic dressing, and the thing that makes it really special is the housemade candied walnuts on top. It’s a gourmet-style salad that you can get in a casual, quick atmosphere and at a very affordable price!

The Tuscan, our mushroom pizza that we are promoting this month, has the roasted garlic sauce as its base, crimini, shiitake and button mushrooms, caramelized onions, feta and a touch of thyme. What is your favorite ingredient to work with? Our fresh Roasted Garlic Sauce. It’s homemade; you put it in almost any type of food and it enhances the flavor and aroma. f you’re searching to munch on something healthy and savory, look no further than Pho My Lien at Westridge Shopping Center in Aiea. It serves up a mean pho and other Vietnamese favorites — and just in time for Father’s Day. The establishment has been open for 12 years, but has been at the Aiea location for about 18 months. Not only is the new location convenient for those who come from all edges of the island, but there’s also a lot of free parking available. Tommy Dang and wife Lien Bui (whom the restaurant is named after) make customers feel at home with their friendly demeanor, and after taking
your first sip (or slurp) of pho you’ll feel right at home, too. According to Dang, Crispy Spring Rolls ($7.50, four pieces), Summer Rolls ($4.95, two pieces) and Green Papaya Salad ($7.50) are among the dishes most preferred by customers. The Crispy Spring Rolls are stuffed with pork, chicken, shrimp, carrots, long rice and mushrooms, and each roll comes golden brown with the perfect amount of crisp every time you take a bite. And the tangy dipping sauce is a must-have. In fact, it’s so good, double-dipping is understandable. In the spirit of the season, the Summer Rolls are a refreshing appetizer that

Kenny’s kicks it up C hange is inevitable, especially when the next generation shares fresh, new ideas and concepts. It can open up a whole new world — or in this case, menu. Kenny’s Restaurant owner John Fujieki knows this firsthand, and when Dining Out inquired whether he has anything on his menu that doesn’t include meat or fish, he replied with a chuckle, “Yes. My daughter is a vegetarian.” Well, there you go. But the eatery isn’t just coming up with vegetarian options. The whole operation is undergoing a bit of a transformation, although loyal customers need not worry. The
eatery knows where its roots are, and won’t stop offering its local-style faves. “I’m taking local favorites and kicking it up a notch,” says sous chef James Drewery. “I want to put Kenny’s on the map.” Recently, for Mother’s Day, Drewery cooked up a special penne pasta with sundried tomatoes and grilled chicken that went over quite well with customers. So he adapted the recipe to appeal to those who choose not to eat meat. The dish — Sundried Tomato, Basil Pesto Linguine ($14.99), in which the chef replaces the penne with linguine, features a

Exploring a new world of flavors

hinji Yamamoto, owner and head chef of Shochan Hiroshimayaki, is excited to introduce traditional Hiroshimastyle okonomiyaki (Japanese savory pancake) to Hawaii’s diners. His cozy eatery, which first opened on University Avenue in 2007, recently relocated to a new-andimproved Kapahulu locale where diners can watch Yamamoto masterfully prepare his hometown dish on an impressive tableside flat top grill. “This is our specialty,” says Yamamoto, who moved to Hawaii five years ago and insists he is the first to authentically introduce Hiroshima Style Okonomiyaki ($8) to the Islands. The intricately prepared dish begins with a crepe-like batter that is spread over the grill in a typical pancake circle. Then, all familiarily is blown to the wind as customers enter a new world of flavors.

Shredded cabbage, sprinkles of tenkasu (tempura crumbs), bean sprouts and slices of pork pile up on the pancake. While the vegetables cook down, Yamamoto skillfully fries up a batch of yakisoba noodles on one side of the grill and an egg on the other. All the magic happens when he artfully uses his kote, a utensil made especially for preparing and eating okonomiyaki, to maneuver the pancake pile and batch of noodles onto the egg. With one swift flip and an easy landing, the okonomiyaki is ready for its blanket of special sauce, which is comparable to katsu sauce, but contains its own unique sweetness. A few sprinkles of nori and your sizzling pancake is ready to be devoured. For a complete bite, Yamamoto suggests using a kote to scoop out each glorious layer of this one-of-a-kind, Japanese gem.

Savory ‘Street Food’ Brings the World of Bangkok to the Islands

“Our food is like the food you find there. We keep it very simple,” Chang continues. “Simple and delicious — that’s our motto.” His wife, Sansane Pornchairattanakun, is the head chef, and brings a lifetime of experience in Thailand to the position. Her family owns a restaurant in Thailand,

and she grew up helping out in the kitchen and honing her culinary skills. Diners can start off their meal with savory appetizers that include Spring Rolls (six pieces for $6.90) or Summer Rolls (two pieces for $4.50). Entrees include options such as Cashew Nut Chicken ($6.65, add $2 for Fish; $2.55 for Shrimp) and Panang Pork Curry ($6.65, add $2 for Fish; $2.55 for Shrimp). “Our Pad Thai ($6.65, add $2 for Fish; $2.55 for Shrimp) is always No. 1. We sell a lot of Pad Thai,” Chang says. “It’s really good! You know, I just finished eating our Pad Thai myself.” The dish consists of rice noodles fried with egg, chicken, tofu, bean sprouts and chives, with crushed peanuts on top — all bathed in a sweet, tangy sauce. Chang says the sauce, which is made in-house, is one thing that makes the dish so good. Other customer favorites include the restaurant’s wide array of tasty curry dishes, such as Thai Green Curry ($6.65, add $2 for Fish; $2.55 for Shrimp). The dish is a creamy medley of eggplant, bamboo shoots, chicken breast, peas, lime leaf and coconut milk served with jasmine rice. One dish that really showcases the restaurant’s street vendor influences is Tom Yum Goong ($8.90). “If you go to Thailand, everywhere you go, there is Tom Yum soup,” Chang explains. Bangkok Chef offers a worthy rendition of the popular Thai dish, which is com-

ome foodies might be skeptical when Patrick Chang, owner of Bangkok Chef, describes his restaurant's cuisine as Thai “street food.” But Chang explains that the restaurant derives its inspiration from Bangkok’s vibrant world of food vendors found in the streets of the country’s capital. “In Thailand, almost everywhere you go, there is food all over,” says Chang. “Food is a big event in Thailand. They eat all the time, and you can find food at any corner in Thailand … If you go to Bangkok, at almost every street corner on almost any stretch of street, you see vendors selling all kinds of food.”

hat is now Bangkok Chef first began as a produce market in Nuuanu about 10 years ago, started by the husband-andwife team of Patrick Chang and Sansane Pornchairattanakun. “We sold fresh produce,” Chang Server Cindy says, adding that their goods came Prak with Spring from local farms. “In addition to the Roll ($6.90) and produce, we also sold things like Green Curry curry sauce, coconut milk and dried with chicken ($6.65) dishes goods to make Thai food.” About a year after opening the produce market, the couple decided to expand their venture. Drawing on Pornchairattanakun’s cooking skills — along with the produce that they readily had available in the store — it only made sense to open a restaurant. “We thought, ‘Why not put her skill to work?’ She is a good cook, and (since) everything was there already, we might as well make use of it,” says Chang, who also has years of experience in the restaurant industry. They started things off small — just a couple of chairs in the Nuuanu store. But soon, the eatery’s popularity grew and it became clear that they needed to expand. About four years ago, they opened a second location in Manoa, and just last year, they opened a third restaurant on Nimitz. Combining authentic Thai influences with fresh, local produce has proven to be an unbeatable combination — one that has earned the restaurant a steady following. “We have many regular customers, and they all have their favorite dish,” Chang says.

Owned and operated by Michael Shi, this most-frequented Moiliili restaurant offers a seemingly endless supply of hot pot options. In fact, with the many shabu shabu ingredients available at your convenience, it’s safe to say that you’ll never have the same meal twice. “We have so many items to choose from – meats, fresh vegetables, seafood,” Shi says. “There also are 15 broths, and a lot of customers really like the spicy broths.” Chicken, Miso and Shoyu are just some of the sensational soup options, while Mixed Mushroom, Curry and Kimchee top my list of favorites. Indecisive? No worries, as you also can mix two broths together for an even
price.) “Everything here is very fresh and healthy,” Shi says. “You just pick what you like and cook it on our ceramic hot plates at each table.” While every shabu shabu option is delightful, I can’t help but marvel at the tender pieces of salmon as they soak up the abundant flavors of the shabu shabu broth. ocated across McDonald’s on Keeaumoku Street lies Yakiniku LuluRaRa, an eatery that just opened May 19. Although the restaurant might be small in size, don’t let that fool you; it’s the location of great deals and big customer savings. The eatery, owned by husband-and-wife team Jack and Sandy Chang, specializes in yakiniku, but it takes a unique approach to the grilling style. The interior of Yakiniku LuluRaRa is different in itself — the majority of the restaurant has sit-down dining, while another section has a sports barlike atmosphere, where customers can enjoy their meals at the counter. Besides that, though, the entrées on the menu are simplistic but full of highquality flavors. “Other yakiniku restaurants have orders for $24 per person,” says Jack. “This place costs only $9.99 (per order) because there are no side dishes. (We serve)
only the meat with salad.” “With $24 per order, sometimes people don’t even eat the side dishes and that wastes money,” adds Sarah. “We give them (customers) salad and the main course. It’s cheap so people can enjoy yakiniku (style dining) in the cheapest way.” However, the Changs are quick to clarify that meals at reasonable prices do not compromise quality at Yakiniku LuluRaRa. “Some people think that, because it’s cheap, we use lowquality (products),” Sarah says, “but (on the contrary), we serve high-quality food.” “We use the same high-quality meat as other restaurants,” says Jack. “We give 6-ounce portions (of meat), whereas other places might only give 5.5 ounces.” The variety of meats on Yakiniku LuluRaRa’s menu include Seasoned Beef, Short Rib, Beef Tongue, Briskets,

Outside Skirts, Mountain Tripe, Seasoned Raw Beef and Pork Belly (all meats are $9.99). “Most people like the Seasoned Raw Beef, and the Seasoned Beef is really popular too,” says Sarah. “Customers (also) like the Short Rib and Outside Skirts,” adds Jack. The eatery’s reasonable prices and delicious meats are enough to make any customer happy and leave the restaurant in a good mood. This “happy time” symbolizes the essence of the eatery. “The (restaurant’s) name is a Korean name,” explains Sarah. “When Korean people have a happy time, they say, ‘LuluRaRa.’ It’s a saying when people are happy.” And patrons of Yakiniku LuluRaRa will be even happier in months to come. Even though the restaurant has only been open for a short while, the Changs have great vision and ideas for the eatery. New restaurant hours may be in store, they say, as well as an expanded menu. “We are going to try to add cold buckwheat noodles to the menu,” says Sarah of the simple yet delicious dish. “It’s good for your health. We are also looking to add shrimp (to the menu).” While these changes are still being planned, Jack confirms that the restaurant’s essence will remain. “We’re going to continue serving high-quality meat — 6 ounces per order — at reasonable prices,” he states. And that makes customers, like the restaurant’s name, very happy.
