appy Sunday, Ono readers! What if I told you I was craving grass? You would think I’m crazy, right? Well, don’t be too quick to judge. Yes, I’m craving grass, but not just any type of grass. Enter lemongrass, also known as cymbopogon. Whole lemongrass is not easily chewable, so if you choose to consume raw lemongrass, it’s highly recommended to remove the stalk first. Yet, we don’t have to worry about that because we won’t be eating it raw this time around. Instead, this week, I ventured to a few of my favorite Ono, You Know establishments known for some irresistible dishes, which center around this edible grass. Perfect for the summer months, lemongrass enhances any dish by adding a strong citrus flavor, and it’s commonly

used in the preparation of poultry, seafood, beef and fish in many Asian cuisines — yum! So, without further ado, let's explore this realm of lemongrass and see if the grass really does grow greener on the other side.

Chai’s Island Bistro Celebrity chef Chai Chaowasaree captivates the appetites of diners with his alluring and contemporary Pacific Rim cuisine. As an award-winning chef, Chaowasaree draws in the dinner crowd from 4 to 10 p.m. with decadent offerings from his menu, in addition to live entertainment nightly.

Here at Chai’s Island Bistro, each entree is refreshing to the palate and filled with a plethora of flavors, including lemongrass. Lemongrass is an herb that can be dried and powdered, or used fresh. And according to Chaowasaree, this distinct flavor is featured in his Thai Style Oxtail Soup ($20 a la carte entree) with lemongrass, galangal and Hawaiian chili water with a hint of fresh lemon. “On Sunday, Monday and Tuesday nights I’m also offering this soup as part of a special five-course dinner,” Chaowasaree explains. This elaborate five-course menu ($40 per person for dinner and $15 per person for wines) boasts a spread of Gravlax Salmon Roulade with Cream Cheese and Crab Meat, Pork Tenderloin Sate’ with Thai Peanut Sauce and Cucumber Salad, and Poached Pear Salad with Rainbow Vegetables and Raspberry Vinaigrette. Then have your pick from three incredible entrees: Thai Style Spicy Lemongrass Oxtail Soup, Chicken Roulade with Roasted Leek Gravy and Mashed Potato, or Seafood Tortellini with Lobster Reduction. hings are heating up this summer at Moana Surfrider, A Westin Resort & Spa, as it’s ready to celebrate anything and everything mango! Come July 21, this world-class resort will partner with Makaha Mangoes to kick off its fourth annual Mangoes at the Moana event. This highly anticipated day is jam-packed with festivities from 10 a.m. to 5 p.m., in which kamaaina and visitors are invited to savor this worldrenowned tropical fruit.

“Mangoes are such a great summer fruit. We really wanted to do an event on property that featured something seasonal,” says Beachhouse at the Moana chef de cuisine William Chen. “Mangoes are summery, bright and tropical, and the name pairs well with the Moana Surfrider. “Mangoes also have great nutritional value. The Westin brand is really all about promoting super foods and wellness. Mango has a bunch of nutritional complements to it that pairs well with what the Westin brand stands for,” he adds. Indulge in a mango mecca and experience a variety of activities devoted to mango, including a mango food demonstration featuring guest speaker Hector Wong, who will showcase a Chocolate Mango Oblivion Cake and instruct you on how to decorate a cake with mango. Mango seminars also are

scheduled, and contests such as Best Mango Contest and Mango Recipe Contest will dish up some friendly competition. “As part of the Best Mango Contest, people can bring their own mango fruit to be judged to see who raised the best mango,” Chen states. “The Mango Recipe contest is always fun because people from the community submit their favorite mango recipes, and we’re still accepting applications for submissions. Some of the submissions we’ve received have been pretty wild — the contestants mix different ingredients and spices into their creations.” According to Chen, an event highlight also will be Mangoes at the Moana’s third annual Mango Throw Down featuring celebrity executive chefs Kevin Hanney from 12th Avenue Grill, Russell Siu from 3660 on the Rise, Jon

Then we invite our guests who come to the property to taste the dishes, and then they actually get to vote and participate in selecting who’s the winner,” Chen explains, adding that sampling is priced at $75 for adults (includes two drinks at the Southern Wine & Spirits booth); $45 for children (ages 5-12); $6 per script for one plate at each booth; pre-sale tickets cost $65 for adults and $35 for children, and are available for purchase through July 20. (A portion of the proceeds will benefit Leeward Community College’s Culinary Arts Program.) Mangoes at the Moana has become a staple at the resort, and the event is growing in popularity each year. Passionate about mango, the Moana is adding a new component to its mango repertoire this time around as it introduces its Mango Cocktail Mixdown. This fun-spirited competition will bring together local mixologists who will utilize mango and Kettle One Vodka as main ingredients in a mixed drink. Guests will be able to taste the entries of the three finalists competing for the top prize along with other selections at the Southern Wine & Spirits booth. “Mango Cocktail Mixdown is perfect for sunset, pau hana and Happy Hour,” Chen says. “All the mangoes that we currently use are all locally sourced — we work with our local produce purveyors and source the

mangoes from the islands.” Mango lovers may assume that one day isn’t enough to relish in the essence of mango. Therefore, Beachhouse at Moana Surfrider is offering an assortment of mango com-

ponents on its menu. “For the month of July, in honor of Mangoes at the Moana, we like to build the hype throughout the property,” Chen says, noting, “During each meal period we try to utilize the fruit

($6) available during lunchtime and afternoon tea as well. For dinner we’re showcasing a Kurobuta Pork Chop ($46) finished with a chili mango gastrique — comparable to a sweet and sour sauce — and served with fried

onion rings and dressed watercress. “I personally love pork, I think it’s just fantastic. The Kurobuta pork chop is something that we used to do, and the guests have been asking for it back, so we kind of modified it a bit,” he adds. “We brine it for about 36 hours with some spices and citrus. Pork pairs well with the sweetness of mango, so it’s a very nice combination.” Local crafters and vendors also will be on hand, and live entertainment will be provided throughout the day by local musicians Puuhonua Trio, Kamaka Fernandez Trio, Taimane Gardner Trio and Olomana. The Moana Lani Spa Table will have luscious and refreshing Sir Aubrey White Lion mango iced tea with a fragrance and flavor of fresh white mango available for purchase. “Mangoes at the Moana will broaden your horizons as to what you can do with the fruit. It’s all about celebrating mango,” Chen says.

And in an effort to keep things fun and exciting, sous chef James Drewery has added some new dishes, which will be available starting today. Kenny’s popular taco salad is usually made with ground beef, but can now be ordered with grilled chicken. Kenny’s Taco Salad with Grilled Chicken ($14.95) is served in an oversized taco bowl with a generous amount of iceberg lettuce, grilled chicken, refried beans, black beans, diced tomato, green onion, Cheddar cheese, corn, and drizzled with ranch dressing and topped with salsa, sour cream and jalapenos. Also new is Tempura Swai with sweet potato fries ($14.99, add $2.09 for a side of cornbread). The fish has a salt and pepper taste, wrapped inside just the perfect amount of tempura batter, and is served with tartar sauce. Then, for dessert, Drewery has two new creations that are just perfect for summer and available for a limited time. The Deconstructed Fruit Pie ($10.99) features seasonal fruit in between layers of a pillowy, puff pastry and chocolate syrup at the bottom. There also is the irresistable Fried Ice Cream ($9.99) with a scoop of vanilla ice cream inside a crispy Corn Flake crust. Often described as a place like home, old-timers don’t need to worry: The longtime customer favorites will continue to be offered at this timeless eatery. These are just some new options for those who may want to try something different and refreshing.

Since 1976, Kozo Sushi has been serving up delicious sushi at reasonable prices, and the establishment prides itself on providing sushi that can’t be found anywhere else. Kozo’s Ahi Tar Tare Maki ($6.25) is a texture explosion in your mouth as it combines tuna tartare, mini bits of tempura chips, green onions and a special barbecue sauce on a California maki (made with crab, cucumber, avocado, mayonnaise and sesame seeds). Hurricane Maki ($7.25) is a true whirlwind of ingredients that tastes so delicious, you might even feel the urge to meander up to the counter to order another. It bands together pieces of fried breaded shrimp, salmon, lettuce, green onions, sweet ‘n’ chili sauce, teriyaki sauce, wasabi mayo and barbecue potato chips into a flavorful

Beyond the fabulous price, the first thing you’ll notice when you sit down is that the Japanese attention to aesthetics is prominent even when it comes to fast food. nderstanding my own limitations when it comes to dissecting the subtle flavors of Japanese cuisine, I turn to my not-so-secret in-house expert. tain yam, natto, green onion, sea urchin and salmon roe to create a taste pattern that is sweet, savory and salty. Noting the ingredients, the life expectancy of the dish was destined to be short. It didn’t stand a chance. Within two minutes it was on to the next dish. Garlic Toast with Spicy Tuna ($8) provided a nice counterbalance of flavor and texture. Spicy raw tuna is topped with sesame seeds, and gently placed on toasted French bread. Garlic, Parmesan cheese and mixed greens complete the crunchy, spicy stack of goodness. The tuna is spicy, and if you’re a fan of spicy ahi poke, you’ll be a fan of this dish as well. How does Mozzarella Tomato ($8) salad fit onto a Japanese menu? Quite nicely, thank you. Locally grown tomatoes are sliced and alternated with portions of fresh mozzarella. The cleanly pre-

sented dish is topped with garlic, olive oil, soy, vinegar, lemon and a basil pesto. The key to such a salad is fresh

really get into. “It’s a barbecue summer,” says owner Cesar Llarenas, who is excited to highlight the ZBQ ZPizza Creation ($12.95, small; $23.95, large; $26.95, extra large). This pie features an exciting barbecue-sauce base topped with mozzarella, barbecue chicken, roasted peppers, red onions, fresh tomato rounds and sweet corn. “The combination of ingredients is fantastic,” says Llarenas. You can enjoy ZBQ by the slice on Fridays as well. One thing that makes this pizzeria stand out is the mound of fresh herbs that tops each slice. ZBQ really comes to life with the addition of fresh cilantro in every bite. If barbecue flavors are your thing, you also can try the ZBQ Salad ($8.50, small; $10.95, large), filled with mixed greens, barbecue chicken, roasted peppers, red onions, sweet corn and fresh cilantro in a chipotle ranch dressing. In search of more pizza, I decided to try something really unique. It was a risk that led to great reward, and I urge everyone to order Curry Chicken & Yam Rustica Pizza ($12.95). “The curry is really nice — it’s not too

spicy but it’s nice and potent. This is starting to be one of my favorites,” says Llarenas. The intensely fresh and flavorful curried chicken blends so well with the yams, raisins and mango chutney for a sublime sweet-andsavory combination. Mozzarella and fresh cilantro round out the toppings. And as any pizza-lover knows, only a stellar crust will do. You’ll love ZPizza’s Rustica crust because it is the restaurant’s thinnest variety — providing all the crunch you could want — yet it maintains an air of fluffiness and good chew. “It’s a little bit crispier and really holds the pizza well,” adds Llarenas. So the next time that pizza craving kicks in, head to ZPizza for an exciting slice.

Opulicious Serves Up Local Favorites and Family-Friendly Fun

I love food, and I love balloons,” says Opulicious Restaurant owner and chef Kelli Kay Chun. She has been a balloon artist for 12 years, working birthday parties and at various restaurants. Chun also has worked as a magician and a clown. It was twisting balloons tableside at another restaurant when she had the idea to start her own restaurant — one that combined the two things that she was most passionate about. “I thought, why not have a restaurant where I can do this every day?” While Chun admits that life in the restaurant industry can be extremely hectic, she says that it’s all worth it. “It is gratifying because you see the customer happy, you see kids who are happy. And when you’re happy, I’m happy. “Life is good because I found something that I really enjoy doing, and it is wonderful,” Chun says. “Every day, I wake up and it’s exciting because I am doing something that I love. Now it’s like every day is a birthday party for me because I get to twist balloons and I also get to cook.” Opulicious interior

t’s mid-afternoon at Opulicious Restaurant, and a family of three is enjoying their plate lunches when the owner and chef Kelli Kay Chun walks up and offers to make the little girl a balloon animal. The girl asks for a butterfly, and Chun quickly sets off to twist two long balloons into a large, colorful butterfly while the family continues to eat. It’s that kind of family fun that Chun hopes to achieve at Opulicious — a new Coolidge Street restaurant that serves what Chun refers to as “local to the max” food. “A lot of eateries are just places to eat,” Chun says. “But my concept is, hey, you know, let’s have fun. Here you can come to a place that not only has great food, but you can have fun, too.” But, Chun says, the crucial aspect to a successful restaurant is, of course, great food — and Opulicious has plenty of that. Like, for instance, the Auntie Tita Hawaiian Burger ($6.95), which comes

with two homemade hamburger patties, two strips of bacon and a pineapple slice, all drizzled in teriyaki sauce. For just one more dollar, you can upgrade to a combo meal that includes fries and a drink. And for $1 more, you can get Opulicious’ delectable sweet potato fries. Other popular local favorites include Shoyu Chicken ($7.85), Cold Ginger Chicken ($7.85) and Korean Garlic Chicken ($8.25). This month’s special is a new dish — Chicken Katsu Loco Moco ($6.95), a creative and tasty twist on the classic loco moco. Opulicious also serves up tasty breakfast treats such as Portuguese Sausage, Eggs and Rice ($7). And keeping in line with Opulicious’ family-friendly fun, the restaurant has a dessert designed specifically for keiki: Dirty Worms ($3.75), which is chocolate pudding, crumbled Oreo cookie bits and gummy worms.

Although the restaurant opened just last year, Chun has been cultivating her culinary craft since she was a kid helping out in her mother’s kitchen. In college, she went on to study culinary arts and nutrition. “I love to eat and I love cooking,” Chun says. “A lot of our recipes here are inspired from my mother, who is from Kauai. chiriki owner Issei Kazama travels far and wide, seeking a plethora of ingredients to use in the restaurant’s many unique nabe, or Japanese-style hot pot dishes. A unique aspect of the nabe experience at Ichiriki is that instead of a metal pot, Ichiriki’s broths are boiled in a paper pot, which absorbs excess grease and oil from the cooking meat selections. “We go to Japan, to a small town to get these paper pots. No one else serves it like that, it is unique to us,” says general manager Min Kim. A growing nabe favorite is Ichiriki’s Miso Chanko Nabe ($11.95 for lunch, $21.95 for dinner and $13.95 after 9:30 p.m). A miso-based broth is the focal point with this dish, and it includes 16 different vegetable and meat items including cabbage, bok choy, shiitake mushrooms, tofu, gobo, Berkshire pork, scallops, salmon and Ichiriki’s homemade Tsukune Meatballs. “Here we have freshly made meatballs, which we make from scratch with pork, chicken, tofu and ginger,” adds Kim, who personally loves the rich flavor that Miso Chanko Nabe delivers. “We go to Japan to harvest a lot of our ingredients because

espite its name, New Violet’s Grill is far from being the “new kid on the block.” Currently located in Kapalama Shopping Center, the eatery has been in existence for more than 60 years and is now under new management, according to owner Cindy Suehisa. “It’s been under new management since May 1,” she confirms. When asked why the restaurant name is “New Violet’s Grill,” Suehisa mentions that additions to the menu played a role in the name change. “Our family — with my auntie — took over the restaurant (from the previous owners) in 1998,” Suehisa explains. “When my brother took over the restaurant around 2001, we changed some of the food on the menu. Now there’s more Okinawan food on the menu than there was before.” New Violet’s Grill — which is usually most crowded during weekends — is known for its homey, family-oriented atmosphere. “The environment is relaxing; it’s a place where everything is homecooked,” Suehisa states. “Everything is made from scratch.”

The eatery provides customers with both Japanese and Okinawan menus, and takeout options are available. Some of the restaurant’s most popular dishes come off of the Okinawan menu, according to Suehisa. Items are sold either a la carte or in complete meals. Complete meals include the entrée; rice and tsukemono; a choice of miso soup or tossed green salad; coffee, tea (hot or iced), Green River or fruit punch; and dessert. “The Oxtail Soup ($10.95 a la carte; $14.95 complete meal), Pig Feet Soup ($10.95 a la carte; $14.95 complete meal) and the Chanpuru (Stir Fry) dishes are popular,” she says. “The Oxtail Soup is our signature dish, but we also have local favorites — Hamburger Steak with Fried Onions and Brown Gravy ($9.95 a la carte; $14.95 complete meal) and Loco Moco ($9.95 a la carte; $14.95 complete meal) also are really popular.” A customer favorite at New Violet’s Grill is Violet’s Special ($18.95) — sashimi with a choice of two entrées, such as Teriyaki Chicken, Ahi Katsu, Kalbi, Shrimp Tempura and Shoyu Pork. “We’re going to change Violet’s Special to have three choices instead of two choices,” Suehisa adds. Besides the change to Violet’s Special,

there will be further changes to the menu that customers can look forward to. “We’re going to try to have a daily special every day,” Suehisa explains. “(Examples of current daily specials include) Ahi Bone ($13.95), Steamed Opaka ($11.95 a la carte; $15.95 complete meal), Grilled Opaka ($10.95 a la carte; $14.95 complete meal) and Garlic Ahi ($14.95). We also have Breakfast Specials, including a Waffle Special with Meat ‘n Egg ($6.85), a Spam Omelet with Starch ($5.75) and a Vegetable Omelet with Starch ($6.25). We have these specials on an everyday basis. With our new menu that we’re making, we took some things out and we’re going to put in some other things — we are going to put in the dishes we make every day and make other specials.” New Violet’s Grill also is looking to expand its promotions, in an effort to

increase awareness and attract younger generations to the restaurant, according to Suehisa. “(Right now), from Monday thru Wednesday, we have a 15 percent off discount for senior citizens,” she says. “The discount is available all day for seniors age 60 and older. We’re also going to start getting a kids’ menu going, and we’re going to have kids eat free with one adult entrée on Mondays. Currently, individuals from the older generation frequent our restaurant, but we’re trying to get the younger ones to come in.”
