So, come along with me, this week, I say, bring it on! Let’s submerge ourselves in a world of unique and outlandish fare at the following Ono, You Know establishments. Andrew Zimmern, I hope I made you proud!

I

’m always up for a challenge, and this week the challenge was handed over to me big time! In fact, I had to dig deep and bring forth my inner Andrew Zimmern of Travel Channel’s Bizarre Foods America. I’m no wimp when it comes to trying new and exotic cuisines, so this week, I welcomed the bizarre foods and cultures found right here at home. Hawaii is a melting pot of diverse cultures, which makes it the perfect place to tackle gizzards served Portuguese style, dive into pig’s stomach and enjoy the flavors of beef tongue! While I must admit that I did indeed need to summon up a bit of courage to eat these uniquely edible creations, I’m glad I did. I quickly discovered that what may be one man’s trash is another man’s treasure — yes, even when it comes to food.

Adega Portuguesa Restaurant & Bar Celebrating Portuguese and Brazilian cuisine, Adega Portuguesa Restaurant & Bar in Chinatown takes pride in its many authentic dishes, and restaurant owner

Trigo da Silva is one who embodies his Portuguese culture and heritage with such vigor. Wanting to embrace signature Portuguese classics as well, I took it upon myself to try a well-known appetizer here. Enter Moela a Adega ($11), otherwise known as stewed gizzards, which are commonly eaten as a snack in Portugal. For those unfamiliar with the gizzard, it’s an organ found in the digestive tract of some animals, including birds. This specialized stomach constructed of thick, muscular walls is used for grinding up food. Nowadays, poultry gizzards are a beloved dish throughout the world, and when prepared correctly can be a feast. “In my country gizzards are very popular, everyone eats gizzards,” da Silva says. “We're raised on it — it’s the best! “A lot of people here in Hawaii haven’t tried it, but once they do they really like it, and order it again and again.” Moela a Adega features sauteed gizzards doused in a tomato-based sauce, and additionally seasoned with diced onions, peppers and olives, which makes for one surprisingly delicious meal. It’s a bit spicy and in all honesty tastes like chicken. The seasoning is perfect, allowing your palate to be hit with an abundance of delectable flavors. Pair this dish with a glass of red wine, and I’m sure you'll be quite impressed. You’ll even receive 15 percent off this dish through Aug. 5 when you present this Ono, You Know feature. My word of advice: go beyond your comfort zone/the “norm.” There’s a world of cuisines out there that are just waiting to work up and inspire your appetite.

My bizarre food journey continued on to Lung Fung Chinese Restaurant in Niu Valley Shopping Center, where restaurant manager Eddie Ma was eagerly waiting to intrigue my palate with a unique and authentic Chinese specialty. eep in the heart of lush Manoa valley, which is known for its cascading waterfalls, beautiful rainbows and early morning mist, is Fendu boulangerie. as the sun rises above the peaks of the valley, so does the aroma of fresh breads, homemade pastries and more, which permeate through the quaint establishment located in Manoa Marketplace. Since opening the doors to Fendu boulangerie in March 2009, owner and chef niel Koep never ceases to amaze his patrons with the highest-quality creations. Dining Out recently caught up with Koep to get a sneak peek behind the many changes that are coming. We soon learned that part of that much-awaited lineup includes a new sous chef, extended hours of operation and the addition of tantalizing treats to the ever-expanding menu. DO: With three successful years of business to its name, Fendu Boulangerie is stepping up its game with the recent addition of a new sous chef to the team. Chef Niel, tell us what you hope chef Leanel Vidad will bring to Fendu Boulangerie. Koep: Chef Leanel’s skills are phenomenal — he can make anything that I can make and more. I worked with him for 15 years on Lanai, and we have big things in store for him. He will help us improve our menus, and help us keep our current menu items always in stock. For example, our Lemon Meringue Pies are usually gone in a day, and it’s hard for us to keep up with that, so that’s where chef

Leanel comes in — he will enhance all areas of production here. Our first goal is to make sure we have all of our favorites available every day for everyone to enjoy. It’s a team effort here at Fendu. DO: Wonderful! Chef Leanel, what are your thoughts embarking on this new endeavor? Vidad: I’m very excited to be working with Niel at Fendu Boulangerie. I was born and raised in the Philippines and worked for Four Seasons on Lanai for 15 years as a pastry chef. Recently, my whole family moved to Oahu. Now that I’m working at Fendu Boulangerie, I can’t wait to bring some new items to the eatery. My specialties are breads and French pastries. DO: Chef Niel, you’ve been in the culinary field for a while now and received your training from The New York Restaurant School in Manhattan and received a grand diploma from the International Pastry Arts Center in Elmsford, New York. How does it feel to have your own establishment? Koep: It’s great, but it also comes with a lot of hard work. Since our first year in business in March 2009, we’ve been able to double our sales. Currently, it’s very important that we continue to provide the best quality product and always come up with new items so that our customers don’t get bored. DO: Fendu Boulangerie has expanded its repertoire over the years, offering up a plethora of tasty creations. What are some mainstay items on the menu that loyal

Curry Chicken Salad Sandwich ($7.25)

Ground Wagyu Beef Sandwich ($9.50) has been on the menu for eight months and is one of our newest sandwich options. It’s been doing very well and we get a lot of compliments on it. This is a sandwich that you really don’t want to have cooked well-done. Instead, you want to order it medium or medium rare because the meat has a lot of fat and flavor, and you want to keep those flavors saturated in the meat. It’s served on our rustic bun with mayonnaise, fresh field greens, fresh farm tomatoes, sauteed Vegetarian Pizza ($16.25)

patrons can’t live without? Also, what are some new items on the menu that are gaining popularity? Koep: Our signature items include Petit Fuji Apple Pie, Lemon Meringue Pie, Pear Tarte, Teramisu and Macaroons, to name a few. Also, our Vegetarian Pizza ($16.25) and Curry Chicken Salad Sandwich are extremely popular. Vegetarian Pizza has always been on the menu. This pizza does have cheese on it, but it also features a nice tomato sauce, Japanese eggplant from a local farm, zucchini, sauteed sweet onions, a mixture of bell peppers and fresh tomatoes. If you’re looking for something that’s a bit healthier, then this is a good choice. Our Curry Chicken Salad Sandwich is priced at $7.25, and we take whole chickens and we roast them, add mayonnaise and a little sour cream. Then we add curry spice that is an all-natural blend of spices. We put fresh cilantro in there, along with some carrots and raisins. It’s served on our sweet onion “naan” bread. We sell more of that than any other type of sandwich.

sweet onions and classic pickles. DO: Fendu Boulangerie has an array of delectable creations on its menu that are bound to satisfy anyone’s sweet tooth. What has been flying off the menu? Koep: Our Chocolate Croissant ($2.25 each) has always been a signature item here, and we sell about 200 per day in the shop and another 75 to 100 wholesale. We use French chocolate (cocoberry) and in the croissant dough we use a European-style butter, which gives it a very nice flavor. Pear Almond Tarte ($2.80 each) is a great dessert if you don’t want to fill yourself up. We start with an almond sugar dough, which is similar to an almond cookie and we bake that all the way through first. Then we add almond and pastry cream, and top it with slices of poached Bartlett pears. It’s very delicious! One of Fendu’s newest desserts is Valrhona Milk Chocolate Mousse with Earl Grey Jelly ($5.50). The foundation of this dessert is a jelly diffused with Earl Grey tea, which has a very subtle flavor. Then it’s topped with mousse made especially from Valrhona milk chocolate, which also has a very nice texture and mild flavor. Finally, it’s finished off with Earl Grey jelly and garnished with a piece of milk chocolate. The Earl Grey and the milk chocolate blend very nicely together. DO: What are some changes that patrons can look forward to in the near future? Koep: First of all, starting July 30, we will be open on Mondays from 7:30 a.m. to 7 p.m. — we will now be open daily. Since we’ve opened people have wanted us to be open on Monday, and Monday is a very busy business day and a lot of people want pastries for their meetings or they want to come by for lunch. Many of our customers have been asking for them, and the breakfast sandwiches will be available from 7:30 to 11 a.m. In addition, our lunch sandwiches also will be available earlier on in the day starting at around 9:30 a.m. We want to let our patrons know that we plan to add more desserts and cakes to the menu as well.

Pupus that will put you on top of the world

A

room with a view is nice, but an entire eatery with a 360degree snapshot of the Pacific is even better. Add to that good service and some great pupus, and you’ve got a restaurant worth visiting again and again. Seared Scallops and Fois Gras ($19) is fancy food gone good, local style. this appetizer features li hing blackened scallops, seared Spam (yep, Spam), Hudson Valley Fois Gras and a pineapple gastrique. If you want to swap the Spam for braised pancetta, then Day Boat Scallops ($17) is the preferred way to go. The pan-seared scallops are served with an Ewa sweet corn pudding, braised pancetta, and a Kamuela tomato and Maui onion relish. Delicious. The pancetta is slight salty and provides a nice counter balance to the naturally sweet scallops. A swipe through the corn pudding completes the tour. Continuing with the mix of East meets West is Anise Braised Pork Belly ($14). Served with Fuji apple and parsnip puree, jalapeno cumquat chutney and topped with a balsamic sweet chili gastrique, the dish is a fine example of the eclectic, but approachable menu created by executive chef John Neff. 3 Not enough? Wayne Hirabayashi puts his spin on some of the recipes from Craggy Range Winery’s Terroir restaurant, such as Wagyu rump cap which is served with semi-dried tomato, Jerusalem artichoke and red wine jus; and the lamb rack with anchoide and tomato. Throughout the evening, Smith, who also is one of the founding directors of Craggy Range, will meet with guests and talk about the wines and wine pairings. “I was introduced to the (Craggy Range) wine a couple of years ago,” says Hoku’s maitre d’hotel Dante Camera. “We’ve been featuring their Sauvignon Blanc since January and our patrons have loved it. And now four different wines from Craggy Range will be added to our wine list. “(For the Craggy Range Wine Dinner) Chef Hirabayashi has paired their robust wines with cuisine to match their power and intensity. Make it a day at Max’s of Manila verywhere you look there are restaurants that reflect the Island’s long history of welcoming immigrants. There’s Chinese, Thai, Japanese and Korean eateries — ethnic cuisine that says “Hawaii” as much as rainbows and shave ice. It’s no surprise that the diversity of flavors would also include Filipino foods. Enter Max’s of Manila, which is all about family dining, and they even have a few veggie items. “Sizzling Tofu ($8.50) is our branch special,” says general manager Maly San Luis. “It’s cubed tofu, sauteed in chopped onions with red and green bell peppers. We glaze it with a very tasty sauce that our chefs put together and serve it on a sizzling plate.” There’s no animal product in the glaze, San Luis assures readers. “It’s mostly spices, and we top the dish with a little chili so it’s just

slightly spicy. It’s more of a topping, not really stirred in.” If spicy isn’t what your palate favors, you can request it without the chili, or order some rice to diffuse the minimal heat. Garlic Rice makes for a tasty companion dish. Max’s uses jasmine rice and fries it with chopped, toasted garlic. “It’s all family style,” notes San Luis as a reminder of portion size. “The small ($2.95) comes with three scoops and large ($3.95) is five scoops ... And they’re quite generous scoops,” she adds. For group dining and sharing, the Sizzling Tofu platter serves two to three people, but if you’re dining solo, the platter will be “more than enough,” says San Luis. You can always

pack the leftovers to go for one of our island’s customary rainy days, hopefully one brightened by a rainbow! Perhaps you’ll even decide to follow it up with some shave ice.

The warm items should be warm and the hot items should be hot,” says general manager Shin Yano, who also notes that part of Five Star’s ambiance starts in the open kitchen, where guests can see chefs and cooks preparing each item as they stroll through the buffet line. Since its opening this past December, Five Star has made an effort to offer more seafood items, and the restaurant definitely has plenty to choose from. The dinner buffet starts at $48, but kamaaina guests only pay $40.80, which means you can have as many servings of Five Star’s baked oysters, miso butterfish with daikon, garlic shrimp, seafood dynamite, nigiri sushi, snow crab legs or seared tuna with Korean style sauce for an exceptionally reasonable price. For those who may have left their seafood appetite elsewhere, do not fret, Five Star has plenty of other items from prime rib to specialty pasta options, salad bar and more than a dozen desserts to choose from.

olden Palace, located on North King Street, has served up great Chinese food to its customers for more than 10 years, and to this day it’s known for its more than 40 choices of dim sum (priced as one of the cheapest in town) and family-style accommodations. The establishment dishes out a great Free-Range Chicken ($11.95, half-order) that will leave you considering ordering more. According to manager Gary Lam, the chickens used for this dish aren’t cooped up in some cage, which means there also are no hormones used. In a day and age where many locals are striving to eat healthier, this is music to the ears. “It’s all organic,” he says with a smile. “It’s a very healthy option and that’s why we offer it.” This authentic eatery also offers its patrons favorites that are hard to find elsewhere. Garnished with salt and pepper, Egg Fish ($7.95) gives customers an extra treat. “The fish in this dish is known for having the egg sack still inside, and that’s what everyone likes about it,” Lam says. Another menu favorite is Salt and Pepper Shrimp ($8.95), served with shells and heads still in tact. Keeping the shell on during cooking keeps the meat tender and tasty, and because it’s coated with the salt and pepper, some choose to even eat

Golden Palace’s Seafood Taro Basket ($9.95) is probably one of the most impressive things on the menu and comes with seafood favorites such as shrimp, squid and scallops. But not to worry — there are cooked veggies in this dish, too. The snow peas and carrots are mixed in with the seafood, and the broccoli serves as a colorful (and edible) border. The unique thing about this dish is definitely the edible house-made taro bowl that holds the seafood concoction. “The taro for the basket is hand shredded, and each basket is individually made by our chef,” Lam says. Clams served with black bean sauce is a common dish at many restaurants, but Golden Palace does its customers one better by offering

a new item for families to share — Mussels with Black Bean Sauce ($9.95) in a half-shell beautifully arranged and served with shredded parsley, green onions, chili peppers and minced garlic. This is a great option for those who still want seafood, but with a bit of spice. Besides these delectable dishes, Golden Palace also serves up Dim Sum ($1.98 per order) from 7 a.m. to around 2:30 p.m. daily. Catering and take-out also are available, which is perfect for those who work in town and need a tasty lunch on the go. Unbeknownst to many, the restaurant houses a banquet hall upstairs that seats up to 600 people for any occasion. And what’s even better is that you don’t need to worry about the menu. Golden Palace will work with customers to create personalized menus that are both affordable and incredibly delicious.

t is lunch time on a recent weekday, and a woman sits at the counter at Shabu Shabu House enjoying her meal. “This is my favorite place,” the customer says. “I drive all the way out here from Kaneohe all the time just to eat here.” It may seem a little extreme, but one taste of the food at Shabu Shabu House and you will understand that kind of loyalty. The Kapiolani restaurant serves up original shabu shabu cuisine, as well as other tasty options. “Shabu Shabu House features the original Japanese style of doing shabu shabu,” restaurant supervisor Grant Murata explains. “You cook every-

thing in water, and kelp is added to season the water. And then you take whatever you want cook and add it in the pot.” And because everything is cooked in water — rather than a broth with other additives — shabu shabu is a healthy dining option. “It’s all very natural,” restaurant manager Kazuyo Makita says. Popular shabu shabu dishes include the Beef Shabu Shabu Set ($11.95 for lunch and $15.95 for dinner), which Makita says is the No. 1 seller, and the Seafood Shabu Shabu Set ($21.75). habu Shabu House hit the Honolulu dining scene in 2004, before shabu shabu had become the popular craze it is now. “At that time, shabu shabu was something that was offered on the menu at some Japanese restaurants,” restaurant supervisor Grant Murata says, adding that hot pot meals were becoming increasingly popular in Japan at the time. “The idea was to bring this hot pot meal to Hawaii, and I think this was one of the first places here that served shabu shabu like this.” For those who Supervisor Grant Murata aren’t familiar with shabu shabu, here is a breakdown of what to expect when you dine at Shabu Shabu House. “Your server will start cooking the water for you,” Murata explains. “And then usually, you put the kelp in first.” While it is up to each individual customer, Murata explains that adding the kelp first is the traditional way to prepare shabu shabu. “The kelp is what gives it a nice flavor.” The next step is to add the vegetables. Whether it’s onions, carrots or mushrooms, add the vegetables to the pot so that they have time to cook. “You want to put in the stuff that takes the longest to cook first,” Murata says. “And then, the meat goes in the pot last,” Murata says. Finally, for a little extra flavor, Shabu Shabu House offers as few different sauces that can be added as you enjoy your meal. These include ginger, sesame and ponzu sauces. Restaurant manager Kazuyo Makita explains that some customers like mixing all three together or adding sriracha sauce. “You just make your own sauce,” she says. “Whatever you like.”

Another dish that is quickly becoming a customer favorite is the new menu item Kobe Curry ($7.95), which is served for take-out Monday – Friday during lunch hours only. It includes Kobe beef, fresh mushrooms, carrots and daikon and is served with rice. Makita was inspired to introduce the curry —which is a personal secret recipe — to the menu after her friends kept raving about it. The dish was designed as a quick, convenient lunch for the downtown working crowd. hen eating at Il Lupino, you can’t help but feel that the beauty of food — both in taste and presentation — is captured. Under the direction of Executive Chef Nick Sayada, a talented team of culinarians bring forth resonating flavors in gorgeous dishes. If you’ve never taken an Italian holiday to the Royal Hawaiian Center eatery, sous chef Eistir McShane suggests starting with a few great dishes. Il Lupino’s Caprese Salad ($14, dinner), for example, is a dressed up version of the classic. All the flavors are there — tomatoes, mozzarella, basil — but they are presented magnificently. The tomatoes are heirloom and locally sourced, giving each plate a unique and fresh selection. The basil is of the Opal

variety, presenting an unexpected pop of purple on your plate, and chef Nick’s pink citrus-cured onions give a refreshing burst of acidity. And then there’s the balsamic vinegar like you’ve never had it before. “These little caviar-looking dealies are balsamic caviars, actually, and thats one of Chef Nick’s unique little touches to the dish,” explains McShane. “It’s probably my favorite thing about the salad because you don’t know what you’re going to get … you eat them and you’re like, ‘oh my gosh, it’s balsamic vinegar!’” With creamy mozzarella and a smooth drizzle of basilinfused olive oil, taste perfection is reached. For the main course, McShane recommends Linguine alle Vongole ($19, din-

ner). “The vongole, which is ‘clam’ in Italian, is definitely our most popular pasta dish,” she says. Littleneck clams combine with linguine in your choice of a rosse (red) or bianco (white) sauce, both of which feature minced garlic, chili flake, local Italian flatleaf parsley, white wine and a touch of butter. The rosse — McShane’s choice — gets its red hue from the hint of pomodoro added to the sauce. “It’s winey, clamy, tomatoey, garlicy and a little bit of spicy. I don’t think I could explain it other than that because you definitely get all of those things in each bite,” she says. It’s most certainly time to take your taste buds on an Italian vacation to Il Lupino.

and to be honest, my own stomach was a bit queasy at the thought. Yet, I summoned up the courage from within, grabbed a pair of chopsticks and dug right in. My motto: The weirder the better! “We clean the pig’s stomach with salt and then boil it for one or two hours. It’s a laborious process,” Ma says. The dish is then stir-fried with ginger and green onion, and then doused with just the right amount of shoyu and oyster sauce. “Pig’s stomach is an acquired taste,” Ma declares. “Chinese people really love it, and people come to the restaurant just to order it.” Keep in mind, I had never before tried pig’s stomach. At first bite my initial reaction was, “Wow, it tastes just like beef with a bit more fat to it.” You could say it has a tinge of gaminess to it, but I figure that’s to be expected, right? Yet, the burst of flavors

derived from the ginger and green onion combined with the blend of sauces make for quite an appealing feast. “It’s always good to take the risk and try new things. You’d be surprised, but Pig’s Stomach with Ginger and Green Onion is very good,” Ma says with a smile. Yakiniku Million My final destination in search of outlandish foods led me to Yakiniku Million on Sheridan Street. Known for its scrumptious Korean cuisine with some of the best kal-bi, barbecue chicken, banchan (side dishes) and more, it’s no wonder this establishment is always jam-packed with loyal patrons.

For a one-in-a-million experience, this time around I decided to veer away from my usual order of kal-bi and expand my horizons with none other than beef tongue cooked yakinikustyle. Yes, for those wondering, beef tongue is the tongue of a cow, and believe it or not, very tasty. Beef tongue is high in fat — in fact, it’s said that almost 75 percent of its calories are derived from fat alone — making it oh, so tender! I’ve tasted beef tongue many times before as my grandmother often prepares this dish, so it wasn’t that bizarre, in my opinion. Priced at $22.95 (with a two-order minimum), beef tongue is served raw, allowing you to cook it on your personal yakiniku grill to your liking. It’s then served with lettuce leaves for wrapping and two homemade sauces for dipping the meat in for additional taste. My personal

favorite is the sauce comprised of salt, pepper and a dash of oil. Don’t forget the plethora of banchan and rice that accompanies the dish. For the meat eater, this meal is divine. They say, don’t judge a book by its cover, and I say, don’t judge a food by its name.

Elder emphasizes that Brasserie Du Vin is not only a great place for lunch and dinner, but for parties as well. “We have a back room, which is a great location for parties,” he says. “We can accommodate up to 30 people in the room. We usually require reservations for a party that big, and a lot of times, we will direct customers toward a special event menu that we do provide.” Currently, Brasserie Du Vin is featuring Trois Fromage et Deux Vin ($20) — three cheeses and two glasses of wine — in honor of Tour de France. This Tour de France special started about two weeks ago and will continue until the Tour de France ends around July 28, according to Elder. “The cheeses are all from France and they are all located on the route the Tour de France runs on,” he says. “The first cheese is Camembert, a rich, creamy cheese; that’s followed by Comte — it’s from the Alps region, so it’s a harder cheese, similar to Gruyere except with a more caramelized nuttiness to it — and the last one is Roquefort, a traditional cheese from southern France. We might extend this special through the summer because people have been enjoying the cheese selections.”
