Sandwich is finger lickin’ good!
T
hick, juicy and undeniably filling, the Reuben sandwich holds its own as a top pick for the ravenously hungry. Packed within two slices of grilled rye bread lies a perfect combination of meat, cheese and sauerkraut, which slowly but surely lures in the heartiest of appetites. As a self-proclaimed fanatic of this particular patty melt, I am sending my gratitude to the genius creator of this sandwich (rumored to be either Reuben Kulakofsky, a Lithuanian-born grocer from Omaha, Neb., or Arnold Reuben, the German owner of the once-famous Reuben's Delicatessen in New York). Whoever it may be, thank you for shining light into the sandwich stratosphere. This week, forget the prim and proper when it comes to dining etiquette, because with the Reuben the messier the better! So, here we go! Let's get ready to get down and dirty as I take on the Reuben Sandwich at the following Ono, You Know establishments!

Kakaako Kitchen This local hot spot opened its doors for business in 1995 on Waimanu Street before moving to its current location in Ward Centre in March 2000. Twelve years later, Kakaako Kitchen continues to bloom with upscale cuisine at a reasonable price, while always incorporating fresh, local ingredients when available. Open for breakfast, lunch and dinner, Kakaako Kitchen keeps it real with its Kakaako Fried Rice, Chicken Katsu Curry, Grilled Honey-Shoyu Marinated Pork Chops, Mixed Island Barbecue and more. Believe me, my mouth is watering already. But on a mission to get messy, it was all about a deli counter favorite — move on over, ham and cheese sandwich, let's give a round of applause for the one and only Reuben Sandwich ($12.99), featuring thinly sliced and tender pastrami with melted Swiss cheese and sauerkraut mixed with a special Thousand Island sauce on grilled swirl rye bread. “We make our own Thousand Island sauce and mix our own sauerkraut, and maybe that’s why this particular sandwich has a lot of fans,” says general manager Billy Bal. “I know a lot of people who come back all the time to order this, so that says a lot about the sandwich.” Then have your choice of greens, fries or mac salad to complete your meal. “We

t’s a sweet family affair at Larry’s Bakery on Lawehana Street in Salt Lake, where this renowned establishment is consistently buzzing with loyal customers on a sugar high. Larry’s Bakery first opened its doors in the 1960s at its original location in Waimalu Shopping Center, then owned and operated by Larry Yafuso, who perfected the art of baking at Dunwoody baking school in Minnesota. Today, you’ll find his children Iris and Lance Yafuso spearheading the bakery, along with the rest of the Yafuso clan. “My dad passed away in 1979 from a massive brain aneurysm,” Iris says. “It was hard on the family, but we knew we had to keep the bakery going — my dad was always very hard-working, giving and courageous. He always said to keep up with the times and don’t stay stagnant or else you won’t get ahead.” And with those words and the memory of her father always in her heart, Iris keeps her father’s legacy alive by scratch-baking classic desserts and pastries, including apple and coconut sticks, cinnamon twists, and Chantilly and Dobash cakes, which the bakery is known for. “I’m happy that Larry’s Bakery has been able to grow and prosper. I’m very proud of my children for being able to keep up with something that their father started — in fact, doing more than what he did,” says Iris’ mother, Irene Yafuso. Irene will turn 80 years old in a couple of weeks, but remains forever young, spending countless hours at the bakery. “I come in at 3 every morning,” she states. “I man the oven, frost the cakes, cook the rice and bake the pastries in the morning. I’m at

the bakery every day of the week — I have nothing else to do,” Irene says with a laugh, although she admits that working at the bakery keeps her going strong. “This is my family, and I really enjoy working with them. It’s nice to see my grandchildren helping out too,” she says. “I know Larry is smiling down on us. I
DINING OUT//COVER STORY LARRY’S BAKERY just want him to know that we’re doing our best.” Larry’s Bakery initially began as a retail bakery, prior to transforming into a wholesale bakery for 10 years. Most recently, the establishment reverted back to retail, and business is doing better than ever. “We are fully stocked with pastries every morning; we’re running out of space,” Iris explains. “But we can’t complain. Starting tomorrow (Monday), we’ll also be adding a handful of items to the menu.” These items that she speaks of are actually made with Larry’s original recipes from the early 1950s, which, according to Iris, are all transcribed in perfect script in his many handmade cookbooks. So, be ready to satisfy your sweet tooth with Pineapple Boat ($1.65), Peach Cream Cake ($8.50$89.95 depending on size), Bear Claws ($1.20) and Jelly Doughnuts ($1.50). “We’ve gained so many new customers and have reconnected with loyal customers throughout the years, and a lot of them remember my dad’s old recipes, so we’ve decided to bring them back,” Iris explains. Pineapple Boat features a flaky turnover with a jellyfilled crushed pineapple center, brushed gently with a sugar glaze. Iris describes this tempting Larry’s Bakery classic as something you won’t find anywhere else. Peach Cream Cake is another dessert that many customers have been begging for. It features a fluffy white chiffon cake and a decadent custard cream frosting intertwined with the sweetest bits of peaches. Bear Claws are the epitome of must-have bakery delights — a Danish dough filled with almond paste and sprinkled with roasted almonds. Lastly, Jelly Doughnuts are irresistible to all palates as they feature a signature doughnut oozing with strawberry jelly and topped off with a dash of powdered sugar. “We always listen to our customers, and they wanted these classics back, so here they are,” Iris says with a smile. “I don’t think anything has totally changed — per-

haps a tweak here and there, but everything is from my dad’s original recipes. My hope is to stick with his old recipes and give them a bit of modern flair. To keep up with the times, we’ve taken old recipes and have turned them into something new.” Enter Larry’s Bakery’s parfaits, which also will hit the menu tomorrow. Parfaits are priced at $1.95 each and are available in alluring flavors of red velvet, chocolate fudge, peach cream, haupia, chantilly, white chantilly, dream cake and haupia dobash. “What we’ve done is we’ve taken all the flavors of our cakes and turned them into parfaits. Now you can have your own mini cake in a cute little cup and not feel so guilty — they’re perfect for parties,” Iris states, noting that you must special order the parfaits a few days in advance. And breaking the “cookie-cutter mold,” Larry’s Bakery breathes new life on your typical cookie ($1-$6 each) with a plethora of hand-decorated designs and custommade photo cookies. “We have been selling cookies for a while, but we’ve really started to offer a lot more variety and styles to go with every occasion,” says Iris. As the years go on, blood, sweat and tears have been poured into Larry’s Bakery, and for the Yafusos, manning the bakery is a simple way of honoring the man who had given them so much. “Knowing that I’m working to help keep my dad’s legacy alive really helps me wake up early every morning and keeps me motivated,” Iris says. “It’s exciting. A few weeks ago we also started selling our products at Momilani Farmers Market at Momilani Community Center in Pearl City on Fridays from 3 to 7 p.m. “My father has had a great impact on my life and the lives of many others. I just hope he’s happy.” Yes, once everything is said and done, the sweetest blessing of all is a father’s legacy that will live on forever.

Perched next to Sheraton Waikiki Hotel’s Infinity edge pool, this signature pool bar was inspired by Waikiki’s A-listers of yesteryear. Shiro Matsuo, who was a cook 3 for Gov. John Burns, was inducted into the Hawaii Restaurant Association Hall of Fame in 2008. At the time, Gov. Linda Lingle designated Matsuo Hawaii’s Statesman of Honor. Sadly, Matsuo isn’t with us any more. He passed away in May at the age of 93 and was fit enough to drive until February of this year. Next to those are the collection “best of” winners plaques and the inspirational messages that remind us we won’t be here forever, so we might as well enjoy some saimin while we still have time. Filling stomachs for more than 40 years, Shiro’s has a menu for everyone, which includes 64 types of saimin, plate lunches, sandwiches, burgers, bentos, deserts — and yes — pupus. uffets are the perfect places to try new foods without spending tons of money on an entree, and Five Star International Buffet, founded in Japan in 2003 by Noriyuki Kato, is the perfect place for anyone who wants five-star Japanese, Hawaiian and Western food in a comfortable atmosphere in the heart of Waikiki. Conveniently located in Royal Hawaiian Center on the third level of Building C, Five Star International Buffet also has friendly service and reasonable prices. The lunch buffet for adults is priced at $19 and $12 for children 5-12 years old. Dinner costs $48 for adults and $24 for children 5-12. (Lunch and dinner are free for children 4 and under.) There’s no doubt that happy hour specials are a favorite on Oahu, and a la carte items are available here during happy

hour from 3 to 5 p.m. Some of the standout drinks available at the establishment are Mojito and Blue Hawaii — both priced at $8. Japanese cuisine ranges from Tempura to Braised Pork Soybean and Steamed Pumpkin, while Western influences are evident in Smoked Salmon, Pizza and Steak. For those wishing to experience the Hawaiian cuisine of the Islands, Five Star International Buffet also offers Grilled Fish, Seafood Salad and Poke. And it wouldn’t reflect Hawaii’s melting-pot reputation without dishes from India, Korea and Vietnam. Chef Yasushi Kawai and staff prepare excellent dishes for all to enjoy — about 30 dishes during lunch and 50 to 60 items during dinner. With all these choices, it can be hard to decide what you want on your plate, but that’s where we come in, Dining Out readers.
No good buffet is complete without Prime Rib, and Five Star International Buffet does it right. The meat is tender and juicy, and sliced up for individual servings. There also is a great selection of seafood dishes such as Baked Oysters served with a creamy mushroom sauce; Miso Butterfish marinated for one day in a mirin and soy sauce mixture before baking (the top sauce is tamamiso made with miso paste and egg); Seared Ahi with a spicy homemade gochujang (Korean-style hot sauce); and Seafood Dynamite that houses scallops inside of a crab, imitation crab and cheese mixture. Lucky we live Hawaii! And that means fresh fruit is in abundance. The establishment capitalizes on this good fortune by offering fresh, sweet fruit for all to enjoy. It’s a great ending to a special dinner and a fresh pick-me-up during the warm lunch hours. Often at buffet establishments, desserts
are overlooked because of the abundance of great main dish options, but the dessert selection at Five Star International Buffet is not only delicious, it’s pleasing to the eyes as well. Customers can choose from Fruit Tart, Chocolate Mousse Cake, French-style Vanilla Cheesecake, Blueberry Cheesecake and Coconut Cream Cake. And each dessert is the perfect size, so you can try them all! The restaurant in Hawaii is the first location outside of Hokkaido, Japan, for Five Star International Buffet, which has acclaimed success at four locations in the Land of the Rising Sun. According to the staff, the Hawaii eatery differs from those in Japan by featuring as much locally grown and raised meats, produce and seafood as possible every day. It’s rare to find gourmet items in a buffet, but here customers are treated to an international gourmet assortment of good eats.

ven though I don’t live in Aiea, I’ll take a drive from East Oahu to Westridge Shopping Center any day of the week to get my fill of Pho My Lien’s irresistible Vietnamese flavors. From the freshness of ingredients that burst out of every plate to the unbelievably affordable prices, it doesn’t get any better than owner and chef Lien Bui’s homemade cooking. “The food is so fresh,” agrees longtime friend and business partner Walter James. “She makes it all right in front of you.” Bui and husband Tommy Dang have been on the restaurant scene for 10 years now, and have gained patrons from every corner of the Island along the way. When their eatery moved from Waikiki to Aiea in 2010, devotees didn’t hesitate to follow the aroma of fresh pho all the way to Kaonohi Street. And hungry diners everywhere — including James and I — will frequent the restaurant more than usual next month to indulge in all of its September specials. Once you’ve found the cozy spot, you have permission to get lost in the Vermicelli Special for September ($7.99), which features a bottomless bowl of vermicelli noodles topped with fresh cucumber, mint, sliced carrot,

bean sprouts and a choice of pork, beef or chicken. Rounding out the deal are two spring rolls that present an addicting crisp and golden shell. “That’s a lot of good food,” says James. Shrimp Papaya Salad with Summer Roll ($7.99) is another September feature that presents a healthy dose of shredded green papaya salad — so crisp and

refreshing — as well as a summer roll filled with veggies, shrimp and noodles. A sprinkling of peanuts tops off the flavors. Both the Vermicelli Special and Shrimp Papaya Salad are taken over the edge when enjoyed with Bui’s delicious house sauce. Fried Rice with Shrimp ($9.99) also will heat up next month’s specials menu with a mix of peas, carrots, egg, shrimp
and Jasmine rice that wonderfully combine with soy sauce, salt, garlic and a touch of sweetness for that fried-rice flavor you know and love. “Yea, the shrimp is my favorite. t Shabu Shabu House, customers take their meals seriously, and it’s no wonder why. From the curry to the shabu shabu, this establishment does everything right. For David Toguchi and Iris Yafuso Toguchi, they normally snag a counter seat at Shabu Shabu House, conveniently located on Kapiolani Boulevard. Why, you may ask? “That way we don’t have to share a pot,” says Yafuso Toguchi with a smile. “And he
won’t eat all my vegetables.” Dining Out was lucky to catch these regulars for lunch one day, and Yafuso Toguchi says if it was up to her, she’d be here at least once a week ... at least. “The atmosphere is nice, and everyone walks out full and satisfied,” she adds. David Toguchi: “I rarely eat vegetables, but here I eat all of them. It’s because of the ponzu sauce. I usually get the Shabu Shabu House Special Set ($11.95 lunch; $15.95 dinner). You

ver wonder what goes on behind the scenes at your favorite restaurant? Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience. This week, Dining Out got the inside scoops from Ruth’s Chris Steak House Waikiki executive chef Leighton Miyakawa, who gave us a little taste of Ruth’s Chris and shared just what fuels his culinary drive.
NAME: LEIGHTON MIYAKAWA TITLE: EXECUTIVE CHEF TRAINING/EDUCATION: • Food service management AOS degree, Kapiolani Community College • Culinary Arts AS degree, Culinary Institute of America, New York and char siu. I love the fat in these particular meats, and besides, pork is my wife’s favorite meat.
Who or what inspires you as a chef/manager/owner? Chef Walter Schiess and Chef Siegfried Wiegand from Kapiolani Community College have inspired me. As mentors, they’ve shown me the joy and the passion found in cooking.
Is there a dish that you create that’s not on your menu, but available upon request? Oxtail stew with pork lardon, red wine, and mirepoix. It is only served at my home upon request.
What is your favorite dish on the menu? Why? Bone-in Ribeye cooked medium rare is a favorite of mine. This dish showcases the flavor from the bone and the marbling is fantastic.
What are your culinary goals? What do you hope to improve on? My goals are to exceed the quality expectations of Ruth’s Chris Steak House, and keep getting better and better. I also hope to visit with our guests in the dining room to make their experience all the more special. I would love to see even more locals enjoy Waikiki Beachwalk.
What is your favorite ingredient to work with? Why? My favorite ingredients to utilize in my cooking are pork belly that is braised

There’s a bit of California and everything else at Yogurstory
W
hen Yogurstory hit the Honolulu dining scene in 2010, customers were immediately drawn to it ― and the restaurant created quite a buzz. In both its creative food that utilizes a variety of influences, and its classy and comfortable atmosphere, Yogurstory offered something truly different.

ogurstory has been around just less than two years, and in that short time, it has already managed to reinvent itself. What began as a small venture has expanded into a full-service, multi-purpose restaurant. “We started off a frozen yogurt cafe/brunch place,” executive chef Andy Dalan explains. “And it totally transformed into a breakfast, lunch, dinner, latenight and pupu bar restaurant.” “Because of our location and our atmosphere, we didn’t want to just do brunch,” he says. “We wanted to expand. “When we opened, our concept was trying to make it like an L.A. type of cafe,” he says. Before opening, Dalan took a trip to L.A. with the restaurant’s founder to check out restaurants and breakfast cafes. “It was just eating for two days,” he says of the trip. “We would go to about five restaurants in one day, and just check out the trends.” The group came back to the Islands with a range of unique flavors and inspiration to launch Yogurstory. Executive chef Andy Dalan The elegant, yet welcoming atmosphere at Yogurstory also boasts an L.A. chic, with high ceilings, stunning lighting, and wall art and décor scattered across the dining room. “We wanted to be different, and offer what Hawaii didn’t have,” he says. At the same time, Dalan, who was born and raised here in Hawaii, derives a lot of his culinary inspiration from island foods. “Local and Asian food — that’s what I cook,” he says. “I also keep up with various other trends. Korean cuisine is a trend right now.” Dalan adds that Keeaumoku, often dubbed “Koreamoku,” is the perfect place to cook up Korean-influenced dishes. He also experiments with Filipino, Japanese and Chinese flavors. Dalan has 20 years of experience in the restaurant industry, including working as a pastry chef at Roy’s Restaurant and a stint at Formaggio. Dalan draws on his experience as a pastry chef to create some of Yogurstory’s sweeter items including the ever-popular waffles.

Although it first began as primarily a place for brunch and yogurt, there’s a lot more to Yogurstory these days. In fact, Yogurstory has got a little bit of everything ― breakfast, brunch, lunch, dinner and drinks. Executive chef Andy Dalan describes Yogurstory’s cuisine as “local style, with a little bit of California.”
Some of the most popular dishes include Prime Rib Loco Moco ($14.95) and Hurricane Rice Bowl ($13.95), which Dalan says is a twist on the popular Korean dish bibambap. It features kimchee and bacon fried rice, fresh vegetables, prime rib and a poached egg. Also try Ahi Dragon Style ($17.95), with avocado crab crust, a spicy sriracha sauce, tomato salad and furikake rice. Other tasty items include appetizers Ninja Nachos ($9.95), which has spicy grilled chicken, cabbage, edamame,
green onion, sweet potato and jalapeno, with a sriracha salsa on the side, and Spiked Cold Tofu ($7.95), which features fresh tofu with sea salad, green onion and tomato ― all drizzled with a jalapeno yuzu soy sauce. For many customers, Yogurstory’s selection of waffles ― all of which were created by Dalan ― is reason enough to visit the restaurant. “The waffles have just been a hit,” Dalan says, adding that they are great for either breakfast or dessert. “At night, we have people who come just for the

waffles,” he says. The Red Carpet ($9.95) waffles continue to be one of the most popular. But don’t miss out on Dolce De Leche ($9.95), a decadent joy that features pecan pretzel crunch, caramel, dolce sauce, caramelized banana and whipped cream. Not only has Yogurstory expanded its menu, but it also offers special events on the weekend. Every first Saturday, the restaurant transforms into a lounge at night, complete with a DJ, dancing and drink specials. Friday nights during dinner, the restaurant plays host to live entertainment. In the future, Yogurstory hopes to expand its entertainment ventures. Yogurstory also features special dishes on Friday and Saturday for dinner. “Right now, one of the dishes we are doing is chow fun, but our twist is to add other, different ingredients.” Recently, the restaurant created Bacon and Choi Sum Chow Fun ($8.95). “We kind of changed it up,” Dalan says of the dish. “Locals are familiar with that noodle, but they don’t usually have it with these ingredients.” Changing things up seems to be the r status quo for Dalan and Yogurstory. And luckily for customers, Dalan can’t seem to keep his creative energy still. He says that Yogurstory

will continue to offer different specials and introduce new menu items. In addition to these accomplishments, Aweau also is remembered for his role in the local music group Hapa. In 2005, Hapa released an album, Maui, which climbed up the Billboard Magazine’s World Music Chart and peaked at No. 7.

Hukilau My relentless search for another ah-mazing Reuben led me to Hukilau. Located right in downtown Honolulu in Executive Centre on Bishop Street, this upscale Hawaiian plate lunch-style eatery gives diners much more than your “typical” plate lunch. In fact, here you'll find — get this — a one-of-a-kind House Smoked Big Island Beef Pastrami Reuben ($12). At first glance it appears to be like any other Reuben, however, the secret to this one is all in the meat. According to executive chef Jason Takemura, Hukilau only utilizes its house-smoked pastrami. “We bring in Big Island beef briskets, brine it for 12 days and smoke it in-house,” Takemura says. “We infuse our own flavors through our own brine, and the smoke that we use is a mix of kiawe and apple wood chips.” If that alone doesn’t entice you, then I don’t know what will. Any fan of a Reuben will go crazy over this one. It’s served on
marble rye bread with a Russian dressing, sauerkraut and Swiss cheese. Takemura says Hukilau’s Reuben sandwich has only been on the menu for six months, but has already proven to be a hit with the lunchtime crowd. “We usually only prepare it during lunch, but if someone requests the sandwich for dinner, we can prepare it for them,” he adds, noting that the dish also comes with french fries, sweet potato fries or Nalo greens. Open at all hours of the day or night, Wailana Coffee House, located in the heart of Waikiki, is home to your American and local culinary favorites. And there are just some things that taste ridiculously ono in the wee hours of the morning: one of them being Wailana’s Corned Beef Sandwich. Priced at $9.35, server Sylvia Noneza says this American classic is extremely popular with patrons. Served hot, Corned Beef Sandwich defines comfort food, and is served with homemade corned beef, sauerkraut, melted Swiss cheese and Thousand Island dressing nestled within two pieces of toasted rye bread. A slice of pineapple, a pickle, tomato and lettuce are presented as additional garnish offerings, and a side of french fries completes the meal. “It’s our corned
beef that really stands out because it’s made fresh in the restaurant,” Noneza explains. And just when you thought that the flavors couldn’t get any better, they do when you capture the flavor of the Thousand Island dressing in every bite. The taste is a force to be reckoned with, making Wailana Coffee House an absolute winner in my book.
