t could be because I was born in the Year of the Ox, but I just can’t get enough of oxtail — oxtail soup, oxtail stew, oxtail saimin, you name it, I’m all over it. As a local culinary standby, oxtail is adored by generations. Usually served in a soup or stew, oxtail is the perfect pick-me-up when you’re feeling under the weather or ready to welcome the cooler nights that come with the fall and winter seasons. Oxtail soup, stew, etc., are made with beef tails, and actually the use of the word “ox” in this context is considered to be a legacy of nomenclature. To dispel the belief, no specialized stock of beef animals is used. A beloved dish in many cultures, oxtail is a must-have ingredient found in many dishes, and warms the heart and soul no matter where you are. So, this week we’re warming things up with meal after meal of piping hot oxtail specialties at the following Ono, You Know establishments. So, don’t be stubborn, get ready to eat!

Then you’ll love Kit n Kitchen’s Red Wine Oxtail Stew ($13.95), which presents morsels of oxtail simmered in a red wine sauce with hints of shoyu, celery, onions and carrots served with your choice of jasmine rice or spaghetti. Kit describes it as a tender yet powerful taste that you won’t soon forget. “We soak the oxtail in Burgundy wine overnight, and then it’s slow cooked for half a day. Our oxtail stew is cooked in a French style, which I learned from a chef in Macau,” says Kit of this popular dish, which has been on the menu since the restaurant’s inception. The beef is melt-in-your-mouth tender and the enthralling flavors of the stew will engulf your taste buds with every bite, resulting in an extraordinary meal that will leave you satisfied for days. T

he countdown is on: three days to Halloween, 25 days to Thanksgiving and one patisserie to sweeten up the holiday season. Enter Patisserie La Palme D’or. Owner Hiromi Tanaka brought this Japanese pastry concept from Mie, Japan, to Ala Moana Center six years ago, and since then has been ushering in droves of patrons who have a soft spot for cakes, pastries, croissants, sandwiches and drinks, all of which emphasize a decadent blend of French flavor and Japanese craftsmanship.

Akiko Kimura 2 serves as head chef at Patisserie La Palme D’or, and with more than 14 years of experience, Kimura has perfected the art of baking, oftentimes utilizing her own personal recipes to create exquisite masterpieces, which are a feast for the eyes and the palate. “I’m always thinking of new ideas all the time, and I am inspired by so many things. It’s fun to create new flavors and play up the presentation,” she says. For Kimura, the premise of her creations is based on quality as she only brings the best ingredients to the forefront. In fact, she imports green tea and flour directly from Japan to

maintain continuity in her desserts, which live up to the highest of standards. “I choose not to use a lot of butter, cream and sugar. My desserts are on the lighter side,” Kimura says,

noting that she likes to incorporate fresh fruit (local when possible), a healthy alternative that brings a naturally sweet flavor and pop of color to her edible works of art. With more than 30 sweet treats to tempt you, Kimura says signature items include Strawberry Shortcake, Framboise Fromage, Jelly Au Lait, Plantation Tea Jelly Drink and Baked Cheesecake, to name a few. Priced at $4.50 per slice and $27 for the entire cake, Baked Cheesecake is a customer favorite featuring rich and soft baked cheesecake atop a cranberry and hazelnut crust, finished off with a dab of whipped cream. “I had taken Baked

Cheesecake off the menu for a bit, but customers asked for it again and again, so I decided to bring it back for fall,” Kimura states. “It’s a lighter item on our menu that isn’t too rich. We’ve been selling a lot.” And while many retail shops are already in the spirit of Christmas, Patisserie La Palme D’or is falling in love with fall as it’s currently highlighting this season’s must-haves. Pumpkin Cheesecake ($30 whole cake, $4.80 per slice) is captivating in every sense of the word, as La Palme’s famous cheesecake is kicked up a notch and blended with the most extravagant pumpkin puree 3

and spices paired with an almond and hazelnut cookie crust. Lastly, it’s adorned with a cinnamon honey creme to accentuate the flavor. If you purchase Pumpkin Cheesecake Oct. 30 and 31 it will be hauntingly beautified with Halloween decorations. Thanksgiving decorations will soon follow, as you are able to pick up this sweet ending to your Thanksgiving feast Nov. 20 and 21 (Patisserie La Palme D’or will be closed Thanksgiving Day). “Our Pumpkin Tarte ($20) also is available for pick up Nov. 20 and 21, and as with the Thanksgiving Pumpkin Cheesecake, we advise

people to place their order for Pumpkin Tarte beforehand. We’re very busy during the days leading up to Thanksgiving,” Tanaka says, noting that this dessert made especially for Thanksgiving features creamy pumpkin custard with coffee creme baked in a homemade flaky tarte. Delicious! Now, if you’re in pursuit of yet another of Kimura’s holiday specialties, Pumpkin Pudding ($3.70) is the perfect choice. Get ready to devour spoonfuls of pumpkin custard pudding, topped with original whipped cream, a hint of caramel and pumpkin seeds. And nothing says

autumn more than chestnuts, thus making Mont Blanc ($5) a most-desired delight. It consists of smooth, rich chestnut cream with a hint of rum piped over a dollop of fresh whipped cream and almond cake, baked with chunks of chestnuts and tart cassis (gooseberry). Patisserie La Palme D’or also hosts an array of desserts that are either low in gluten or gluten-free. Low-gluten creations are Palme Chocolat and Cheese D’or, while glutenfree desserts include Pave Chocolate and Rocky Chocolate. “Rocky Chocolate ($4.60) is popular at the moment,” Kimura says of

this chocolate lover’s fantasy complete with chocolate sponge cake double layered with milk chocolate cream, and finally topped with hazelnut chocolate-coated hazel nuts and macadamia nuts. According to Tanaka, a great product, not to mention unbeatable customer service and an undeniable passion for the craft, are the prime ingredients for success. And here at Patisserie La Palme D’or, nothing is sweeter than this!

The holidays are here at Auntie Pasto’s

eady or not, 1 here the holidays come. One way to get in the holiday spirit is to visit Auntie Pasto’s Kunia for its special holiday menu launching Nov. 1 and available through the end of the year. On the menu is a Winter Caprese Salad ($6.95), a perfect starter to enjoy yourself or to share, consisting of roasted tomatoes, fresh basil and fresh mozzarella with a savory pesto sauce. “The reason it’s called a winter caprese is because tomatoes are out of season during the winter, so it’s tomatoes that have been slow-roasted to bring out natural sugars and concentrated delicious flavors,” explains assistant manager David Kauka. There also is a Crab Piccata ($25) featuring steamed crab made with Auntie Pasto’s tasty lemon piccata sauce along with

pan-sauteed tomatoes, onions and capers, and served with a side Caesar Salad. And for dessert, Pumpkin Tiramisu ($7.50) has become a holiday favorite. There’s a graham cracker crust on the bottom, a thick layer of pumpkin filling and Lady Fingers on top. “People ask for it throughout the year,” says Kauka. “We’ve been offering it for the past five years. It’s not your traditional tiramisu, and

with just enough pumpkin flavor to bring out the holidays.” Of course, Auntie Pasto’s regular menu will still be offered, including its signature seafood pasta, shrimp scampi and aged ribeye steaks. Auntie Pasto’s Kunia opened six years ago by local restaurateur Ed Wary, who is the original owner of Auntie Pasto’s on Beretania Street but no longer owns that location. However, he notes that the Kunia eatery serves the original recipes from when the original restaurant first opened, is built on the original

concept and continues to carry its reputation of good food, generous portions, great prices and friendly service. Wary also owns Dixie Grill in Aiea, and coming soon is Whiskey Dix, an environmentally-friendly bar to be located upstairs of Dixie Grill. The Auntie Pasto’s Kunia lunch menu ends at 4 p.m., and the dinner menu is available all day. There also are weekly promotions: Monday is Military Mozzarella (purchase two entrees and present a military ID, and receive a free mozzarella marinara appetizer), Tuesdays and Wednesdays are Kids Eat Free (children age 12 and under eat free with the purchase of an adult entree, one kid’s meal per adult meal), and Thursday is Half Off Wine. Weekly promotions are available after 4 p.m., and cannot be combined with other offers, such as coupons. There also is a gift card promotion from Nov. 7 through Jan. 1. or the past 11 years, Happy Day Chinese Restaurant co-owners Yung Sang Chan and Lisa Lum have been putting smiles on countless faces with a mixture of Hong Kong-style cuisine and friendly customer service. The story of their cheery eatery begins decades earlier, though, when Chan opened a Chinatown dining spot called Sea Fortune in 1979. After successfully running it for 22 years, the owner relocated his restaurant —

with help from longtime employee Lum — to Kaimuki in 2001. While the newer location sports an updated name, the same great eats that forged a base of loyal customers in Chinatown can still be gobbled up at Happy Day. According to Lum, Honey Walnut Shrimp ($13.95) has always been a favorite among regulars. The traditional recipe features battered shrimp coated in a creamy sauce and sprinkled with candied walnuts. Another best-seller is Barbecue Pork ($9.95), or Char Siu, which Lum describes as

having a touch of sweetness from the honey that is drizzled on top of the pork. “This one’s very popular, so we make it fresh three times a day.” If you are looking for something a little lighter, try Choy Sum with Sea Bass ($11.95), which presents the tenderest of filets served with a heap of vegetables such as carrots, green onion and a generous portion of choy sum. “The sea bass is very soft and it’s a healthy option,” says Lum. “We stir fry it in a garlic ginger sauce.” Perhaps the main type of cuisine Happy Day is known for is its classic dim sum ($2.68 per plate) 2

selection. Every day from 8 a.m. to 3 p.m., a slew of regulars fill the establishment’s spacious dining room, gathering around large round tables soon to be filled with steaming dumpling delights that have been served fresh from dim sum carts. Ask any of the eatery’s smiling servers and they will advise you to try small plates of Shu Mai and Half Moons, as well as Spinach Gao or a crispy bite of Fried Taro. Lum also suggests biting into golden

Baked Manapua buns, as they are filled with the restaurant’s delectable char siu and chicken. When asked what it is about about Happy Day that makes Lum and her business partner so, well, happy, she enthusiastically replies, “Because we see the customers happy. A lot of customers followed us here from our restaurant in Chinatown, and we love to see them come eat lunch and dinner together with their families time and time again.”

Go appetizer crazy

A

ny day is a good day for pupus at Anytime Cafe. OK, I admit that’s a rather cliché opening, but the fact remains that the diverse menu at the Market City Shopping Center restaurant makes it a great place for just about anything your taste buds desire. On the appetizer side, it’s hard to beat Thai Style Pork Cheek ($6.95). Tender pieces of pork cheek are marinated, fried till crispy and finished in the oven, and served with a spicy 1 dipping sauce made with

fresh garlic, lemongrass and chili sauce. The pork is sweet, juicy and a bit smoky, and the dipping sauce gives the tender pieces of pork an extra bit of kick that you’ll enjoy.

Somewhat new to the menu is Eggplant Parmesan ($6.95). Large slices of eggplant are fried and topped with tomato sauce, fresh mozzarella and Parmesan cheeses. The combo is outstanding. The tomato sauce is fresh and light without overpowering the subtle eggplant and the cheeses have a bit of sharpness that help to complete the flavor profile. Manilla clams are a restaurant favorite due to their availability and natural sweetness. Anytime Cafe uses the tasty sea critters in its Steamed Clams ($7.95), which, with its white wine sauce, is easy to recommend. However, clams do get

lonely and the ample amount of wine sauce just screams for the fresh garlic bread. What’s great about appetizers is that you can experience a wide range of flavors without limits. Sweet, fruity, smoky, whatever you hunger for — it’s just a few bucks away. And if you crave heat, and I mean HEAT, try Baked Garlic Chili Wings ($5.50) and make sure to ask for extra slices of chilies on top. make sure that our food and products are consistent, and at the same time, we’re constantly thinking of new items to feature.” With its central location in Ala Moana Center and plentiful parking available, Panya offers a calm, relaxing environment in which diners can enjoy pau hana pupus and drinks, or a full meal initiated by one, or perhaps a few, delectable appetizers. Panya Grilled Chuck Steak with Ginger Green Onion Sauce ($15.95) is a new appetizer taking the spotlight on the restaurant’s updated menu. can be found with Laksa Rice Soup ($15.95). Instead of noodles, the hearty broth is served with white rice and includes shrimp, fish cake, Chinese cabbage, corn and hard-boiled eggs. As Huang explains, the added starch of the rice helps to soak up all the flavors of the dish. “Whenever we’re here for a meal, we constantly think of new ways to bring something new, even ideas from our own home kitchens,” Huang says. “The rice soup will be popular because people always ask for Laksa, and they really enjoy the rich broth.” On the lighter side, Mixed Green Salad with Deep Fried Fish Fillet ($16.95) serves up light and moist sea bass with a choice of dressing. As with most menu items available at Panya, the salad can be customized for vegetarian diners with extra vegetables in place of the fish. For those craving noodles, Panya serves up hot and fresh selections including Char Siu Ramen ($12.95) with bean sprouts, and Shanghai Style Fried Udon ($13.95) with chicken and Chinese cabbage. “We’ve been able to grow over the years thanks in part to the word-of-mouth referrals from our customers,” Huang says. “People who might have known Panya in the beginning as just a bakery

ocated in Westridge Shopping Center in Aiea, Pho My Lien is a must-try for Vietnamese eats. The restaurant serves up authentic, traditional Vietnamese food. Owned by husband-and-wife team Tommy and Lien Dang, who both are originally from Vietnam, the restaurant combines authentic know-how with the tasty ingredients that Hawaii has to offer. “A lot of these are family recipes that Lien learned and has kind of tweaked over the years,” says Walter James, a longtime friend of the couple who serves as the restaurant’s financial adviser and marketing planner. “It is excellent, excellent food. Good-quality food.” Pho My Lien’s menu is very extensive. The restaurant features an array of soups, salads, stir-fry dishes — and, of course, pho. ho My Lien has been sharing authentic Vietnamese treats with the Islands for the past 12 years — two of those being in Aiea. Before moving to its new home in the Westridge Shopping Center, it was in Waikiki for about a decade. When that area of Waikiki started renovations a couple of years ago, Pho My Lien opted to start anew in Aiea rather than temporarily close its doors — a decision that the restaurant’s regular customers have been very happy about. For many who used to frequent the restaurant in Waikiki, no drive is too far. “We have a very good repeat clientele,” says Pho My Lien financial adviser and marketing planner Walter James. “We try to take care of our loyal customers and treat them well.” Pho My Lien features the fantastic home cooking of head chef Lien Dang, who co-owns the restaurant with her husband, Tommy. Prior to opening Pho My Lien, Lien had been working as a cook at Shirokiya, and Tommy worked as a server at a variety of restaurants. The restaurant gets its name from one its dishes, pho, and the two owner’s names (Tommy’s first name in Vietnamese is My). “Lien is an excellent Vietnamese cook,” James says. “For many years, they wanted to open up a restaurant. They asked me about it, and I said it sounded like a good idea because their food is excellent food. “They work at the restaurant seven days a week,” James says. “They are in the kitchen all the time.” Despite those long hours, for Tommy and Lien, opening the restaurant has been a dream come true — and the same could be said for Pho My Lien’s customers. “We like to keep a good quality and a good atmosphere at the restaurant,” James shares. “We have fast and friendly service. If you want to go in there for a quick lunch, have a bowl of the pho, it’s quick and at a reasonable price. It’s in a convenient location with plenty of parking.”

Owned and operated by Sheng Zhu, this most sought-after eatery opened its doors seven years ago, offering its patrons large portions at affordable values. “We have a breakfast menu and many plate lunch items to choose from,” says Zhu, who highly recommends Loco Moco Drive Inn’s Loco Moco ($7.95), as the beef patties and gravy are homemade.

yu-Kaku Japanese BBQ provides diners with the ultimate eating experience, from the friendly, welcoming atmosphere to delicious food cooked fresh at the table, the total package is served up at the Windward Mall eatery. Regular and first-time patrons routinely flock to the Kaneohe location to experience the thrill of yakiniku cooking — the process of grilling meat and vegetables over hot coals or a burner. “The yakiniku culture is such an innovative, social way to dine, and bringing something like this to a country town such as Kaneohe was a great addition,” says general manager Sean Santiago. “We localized the menu and made it affordable, and we actually structured our pricing so you can come here two or three times a week rather than saving a huge portion of your paycheck every month to take your family out to dinner.” From couples enjoying a relaxing evening out to large birthday parties and business gatherings, GyuKaku blends aspects of traditional Japanese cooking and cuisine with local tastes and flavors. “Our restaurant is nice and comfortable, very spacious, so families can come and enjoy the social atmos-

phere,” Santiago says. “All the dishes are portioned so diners can share everything. You get to cook the items how you want them, and enjoy every bite hot off the grill. When you order a steak somewhere else, you eat it how they prepare it, but here, you control that.” Gyu-Kaku offers a wide variety of poplar lunch sets, including Toro Beef ($6.95), which features thinly sliced “beef bacon” that comes with a choice of marinades. Diners can choose from Shio White Soy, Tare Sweet Soy, Miso, Yuzu Kosho, Garlic and Basil marinades to give their beef that distinctive flavor and aroma. Pork Lover’s Set ($13.95) is a new addition to the lunch menu, and serves up Smoked Pork Belly, Kurobuta Pork Steak and Kurobuta Sausage. All lunch sets also include miso soup, salad, rice and a soft drink to complete the meal. “We try to take the pain out of ordering,” says Santiago. “We have some larger sets such as the Pork Lover’s that serves as Yakiniku 101: You get to enjoy the best of everything we have in

that genre of food, and it’s the easiest way to go. We designed the menu so you don’t have to think about it.” Garlic Shrimp Tatsuta-Age ($7.95, $6.95 at happy hour) serves as a popular a la carte item, as the shrimp is battered and flash-fried, and served with lemon and a zesty chili mayo. Kobe New York ($13.95) offers diners Kobe Steak with Japanese sea salt, and as Santiago explains, the restaurant went through so much of the choice beef after it was offered on the menu that the exceptional cut is now prepared by the distributor exclusively for Gyu-Kaku — the only location internationally at which one can find this specific cut of beef. Diners can take advantage of happy hour specials available all day Sunday and Monday, as well as from 11 a.m. to 6 p.m. and again from 9 p.m. to closing Tuesday through Saturday. Additionally, Gyu-Kaku features “Super Happy Hour” deals from 9 p.m. to closing Sunday through Thursday — the perfect value to satisfy those latenight cravings.
