eef, it’s what’s for dinner! Yet, a carnivore’s biggest let down is a deceiving slab of onolicious meat that is, oh, so ... tough. We’re talking a degree of toughness where your knife can’t even cut through it, and you practically have to saw your way through your entire meal. What a disappointment — and then you lose your appetite. Let’s just end this nightmare now, shall we? Instead let’s pay homage to three glorious words, “Braised Short Ribs” to put us at ease. Braised Short Ribs are an absolutely succulent meat that is usually foolproof and delicious. It provides a strong underlying foundation for a great meal, all you really need to do is jazz it up a bit with spices, sauces and seasonings of your choice. But instead of doing the dirty work myself, this week, I came across three Ono, You Know restaurants that cook up a braised short rib that is out-of-this-world. Be ready for a major kanak attack, as each and every one of these creations are extra hearty and stand in a class all their own. Are you smiling yet? I know I am.

and fresh, and better yet, at affordable prices. The average price for any meal ranges from $6.99 to $17.99. “We are an exceptionally unique casual restaurant featuring fine dining quality without the fine dining prices,” says director of restaurant operations Patrick Comer. “Everything is delicious here, but a top seller is our Braised Boneless Short Ribs,” adds Good to Grill owner Jason Kim. Believe me, this was music to my ears, and I just couldn’t wait to get a glimpse of this mouth-watering dish. And lucky for me the restaurant’s open kitchen allowed me to experience the excitement of the food production here. Priced at $9.99 for lunch and $10.99 for dinner, Braised Boneless Short Ribs features tearapart chunks of beef which have been slow braised for several hours and seasoned with a secret proprietary braising sauce that Comer says is similar to a teriyaki sauce. “We start with only the best meat that is tender and moist, and the sauce brings a sweet and spicy flavor to it — the perfect blend. aving emerged from its Southern California roots in Laguna Beach, Zpizza made Hawaii its home nearly four years ago. The first location made a name for itself at Ward Centers in 2008 with a second location popping up in Kailua (151 Hekili St.) in 2010. Known as the purest breed of pizzas, Zpizza is not your typical pie as it’s geared toward the health conscious, with its premier quality and use of the freshest ingredients. Hawaii owner Cesar Llarenas truly believes in guilt-free Italian cuisine. “Zpizza was always something that I was very passionate about. By opening a Zpizza franchise, I was able to give back to the community by promoting a healthy type of food,” he says. “At Zpizza, making pizza is a culinary art. Not only do the fusion of creative flavors taste great, but it is a healthier option for a healthier lifestyle.” Zpizza stands by its 100 percent certi-

fied organic wheat flour and tomato sauce, and its fresh, all-natural toppings, such as bell peppers, shiitake, cremini and button mushrooms, zucchini, artichokes, eggplant, capers, basil, Greek olives, truffle oil, feta, ricotta and gorgonzola cheese. No MSG, nitrates or additives are added to the fare, and many of the ingredients are free of antibiotics and growth hormones as well. “There have been a lot more requests for gluten-free items and vegan pizza. Also, our vegetarian options are very popular,” Llarenas says, adding that a gluten-free option is available for the small and large size pizzas. Calorie counting? Zpizza offers calorie counts on its menu, but Llarenas assures that Zpizza’s caloric, fat, sodium and carbohydrate content is never alarming. For instance, Napoli Pizza ($13.25 small, $24.50 large, $27.75 extra-large) has 150-340 calories per slice and features a pizza pie topped with homemade roasted garlic sauce, mozzarella, fresh rounds of tomatoes, Parmesan cheese and fresh

basil. ZBQ Pizza ($13.25 small, $24.50 large, $27.75 extra-large) has 160-350 calories per slice and makes mouths water with its savory barbecue sauce, mozzarella, morsels of barbecue chicken, roasted peppers, red onions, fresh tomatoes, cilantro and sweet corn. Other Zpizza classic creations include Santa Fe Pizza $13.25 small, $24.50 large, $27.75 extra-large), which presents you with robust flavors of chipotle pesto, mozzarella, chicken sausage, red onions, corn, Serrano chilies, tomatoes and cilantro, and Casablanca Pizza ($13.25 small, $24.50 large, $27.75 extra-large) with a luscious blend of roasted garlic sauce, mozzarella, ricotta, mushrooms, artichoke hearts and Parmesan. For a crispier, crunchier crust move on to the rustica pizzas portion of the menu and select from a slew of choices. Available with a regular or wheat crust, all rustica pizzas serve one to two individuals, and Llarenas highly recommends Moroccan Pizza ($13.25), an intriguing option, which consists of

basil pesto, mozzarella, roasted eggplant, feta cheese, caramelized onions and a touch of pine nuts. Of course, you can always take the classic approach and opt for cheese, pepperoni, and ham and pineapple pizza, but it’s the eclectic variety of toppings that makes Zpizza fare so invigorating and stimulating to the palate. “People are growing accustomed to what Zpizza has to offer. We’re a healthier option and that’s why people come to us — when trying to eat healthy, we are hassle-free,” Llarenas states. “And what a lot of people don’t realize is that we provide our customers with a complimentary delivery service. We deliver to all of Kailua and within a one-mile radius of our Ward restaurant. Zpizza will offer $2 off a small pizza, $3 off a large pizza and $4 off an extra-large pizza all day (no coupons are required). “I’d like to thank all of our customers for their patronage and loyalty all these years. Without them we wouldn’t be here. “So, if you’re busy preparing for Thanksgiving, order lunch or dinner at Zpizza and we’ll do the clean up,” Llarenas says with a laugh. A half-and-half option on large and extra-large pizzas is heaven sent for indecisive patrons, and pizza by the slice ($3.50 each) and combo meal deals are perfect for the individual diner. A combo meal with two slices of pizza and a drink costs $8.25 and a meal featuring one slice of pizza, one side salad (caesar or mixed greens) and

a drink is priced at $8.95. “Just because we use the best ingredients doesn’t mean that we’re not affordable. We have some customers who dine with us every day, in fact,” Llarenas states. Although the restaurant’s pizza is first on patrons’ minds, Zpizza also is renowned for its salads, sandwiches and pastas. Llarenas says Chicken Penne Pesto ($9.25) is a must-try, in addition to Apple Fresco Salad. Priced at $8.50 for a small size and $10.90 for a large, this rejuvenating salad is available for a limited time only, and is a mix of savory and sweet. It’s made with Waiopouli lettuce, dried cranberries, Gala apples, goat cheese, toasted almonds and splashed with a balsamic vinaigrette. And on a sweeter note, Zpizza has

now added Italian-style gelato and sorbetto to its menu. Select among decadent gellato flavors, such as chocolate, Kona coffee and macadamia nut, and fresh sorbetto flavors such as lychee. “Zpizza constantly proves that eating healthy can be filling and taste good — food has to taste good to be successful. “There have been many challenges along the way, but I believe our customers really get what we stand for,” Llarenas says. “The health conscious are very loyal to us. These are the people who we like to attract, and it’s important to us that we always give you a healthier choice,” he adds.

f you didn’t already know, Korean Hibiscus BBQ has reopened at Kaimuki Shopping Center (located on the lower level, to the right of Times Super Market) offering the same tasty menu many of its regular customers dubbed their “Korean comfort food.” The popular Korean food takeout restaurant was originally located in Aina Haina Shopping 2 Center, where it opened in 1997. After their lease was not renewed in 2010, owners Raymond and Shirley Kodani decided to take a break and spend more time with their three grandchildren, including a newborn granddaughter. Then, they were given an opportunity to open in Kaimuki and decided it was time to be back in business. Doors opened in January 2012, and word seems to have gotten around pretty quickly with a steady crowd finding their way to the little restaurant hidden on the lower level of the shopping center. Named after South Korea’s national flower, the rose of Sharon or mugunghwa in Korean (a species of Hibiscus), Korean Hibiscus BBQ features fresh, mildlyseasoned Korean-style vegetables.

ucked away in the heart of downtown’s art district is Brasserie Du Vin, a charming cafe that caused my French dining partner to gaze nostalgically at her surroundings and exclaim, “Wow, this really feels like I’m in France.” The brick-layered ground and walls in the outdoor seating area give the place a quaint old-world feel, and the hanging plants and climbing vines make you take a deeper breath and settle into your chair as you wait for your Season Vegetarian Risotto. At $13 for lunch, $16 for dinner, it’s one of the more affordable entrees on the menu, notes the cafe’s friendly and welcoming chef, Marco Elder. “The Vegetarian Risotto switches up daily,” he adds. “We may do baby zucchini, baby summer squash with a little arugula. I’ve done a pumpkin risotto this season. It’s really whatever vegetables are in season, and I try to emphasize as much as possible the local ingredients.” Today, he brings me a steaming dish featuring chunks of cauliflower, Nalo cherry tomatoes and spinach. As I inhale,

you can almost see a cartoon whiff of garlic sauce rising from the dish, held by the broadly smiling Elder, and finding its way to my all too eager nose. The risotto, made from traditional Arborio rice, steers free of the clumpy, overly cheesy smothering that claims so many risotto dishes. This one is made with vegetable stock, and completed with a delicate touch of butter and Parmesan that allows each ingredient to retain its texture and individual flavor. Elder is as amenable to catering to vegans as he is to vegetarians. “I’ve cooked vegan risottos, they’re just not as creamy,” he says. “We get a lot of vegetarian and vegan requests. Some people don’t want the risotto, so I try to play with what I have in my coolers and give them

something that is not just a simple salad. Too many chefs cop out and just give vegetarians salads, but there’s a lot of fun dishes you can do like ratatouille, which I am going to be featuring on my next menu change.” Look for the new menu in midNovember, as Elder says he’ll be incorporating a selection of new veggie items. In addition, he features two daily blackboard specials, an appetizer and an entree, and he’ll be designating 2 Monday a “vegetarian special” day. “It’s to let vegetarians know that we do think

We had a lot of people that were meat-eaters and they really enjoyed themselves. We do these events once a month and I get a lot of people saying they wish they had gone, but that it’s all meat heavy. If they make their reservation letting me know they’re vegetarian, I can prepare a special fourcourse menu just for them that’s paired with the beers. I want to make sure people know that I am more than ready to accommodate vegetarians.”

The food, not us. Crème Caramel is incredibly light, and smeared through the gelato and strawberry. The flan-style dessert is immensely flavorful and a perfect palate cleanser should you decide to stick around and try other happy hour items.

s many loyal readers know, Dining Out absolutely loves exploring Chinese food restaurants. Lately, it’s fancied a particular spot in Niu Valley Center, where old favorites as well as innovative eats keep any generation of diners satisfied. While Lung Fung Chinese Restaurant offers an extensive menu of Cantonese cuisine — and has done so for more than 30 years — manager Eddie Ma is always on the lookout for ways to keep his menu current. “I like to do my research,” says Ma. “I try to find out what the cooking styles are in Hong Kong and around China. I get ideas from what’s popular in Asia.” One customer favorite that blossomed out of this approach — and happens to be perfect for the holiday season — is Seafood Pumpkin Casserole ($16.95). “Right now it’s popular to add some fusion,” says Ma when describing his idea to mix pumpkin, curry, vegetables, fresh basil and a seafood combination of shrimp, fish, scallop and clam into one dish. “It has become our specialty and it’s very unique.” More recently, Ma felt

inspired to create new dishes that feature the restaurant’s ever-popular garlic chili topping. “I don’t want my loyal customers to get tired of my food,” he explains. “They’ll always have something new to try here.” Patrons have embraced Deep Fried Whole Flounder with Garlic Chili ($15.95), which is lightly battered and flecked with crispy, golden speckles of garlic. Chili and green onion add a colorful burst of flavor. Garlicy goodness also can be found wrapped around a Fried Whole Egg with Garlic Chili ($8.95), which is skillfully fried whole before it is doused in the topping. “The garlic is

who would it be and why? What dish would you serve? Wow! I would have to say Kobe Bryant and Magic Johnson. Why? Kobe Bryant is very dedicated to what he does, and when he sets a goal he will do his best to get there. That’s my philosophy — never stop trying. As for Magic Johnson, he’s very humble and has a great smile, like me — plus, I’m a huge Laker fan. I would serve both of them our 34-ounce Prime Porterhouse Steak — a very huge steak. What is your favorite dish on the menu? Why? My favorite dish on the menu is our Rack of Lamb because we prepare it differently from other restaurants. Other restaurants usually serve their lamb rack crusted, but at Hy’s, we dry-marinate ours with herbs and spices and we cook it over kiawe wood. Our waiters carve your Rack of Lamb table side.

Who or what inspires you as a chef? I started as a dishwasher at a Waikiki restaurant back in the day and my chef then believed that I had the potential to be a leader. Under his wing he taught me to butcher and how to make sauces. After many years of training, I was promoted to sous chef, and sous chef was a stepping stone to executive chef. However, along with the stomach-stuffing food favorites and merriment delivered at Thanksgiving, the holiday also evokes moments of anxiety as celebration hosts consider the time and stress involved in creating and coordinating such a grand spread. s noon approaches at Camellia Buffet, it happens like clockwork: A large group of guests files into the restaurant. It’s a lively gettogether, with the friends chatting and laughing with one another as they are joined by 2

more. After finding their places at their table, they find their places in the buffet line, where they have their pick from a vast array of meat and vegetable selections, as well as a range of side dishes. Located on McCully Street,

Camellia Buffet serves up traditional, authentic Korean cuisine — and it has been a go-to spot for such fare for many years. Diners cook all the food themselves right at their table. Here’s how it works: You pick what you want from the buffet and cook it to your own taste. And the best part — it’s all-you-can-eat. At Camellia, the all-you-caneat concept is something of a challenge — the food is so good that you’re going to want to eat everything in sight. While that won’t be possible, with Camellia’s great prices, return visits certainly are. The lunch buffet is priced at $17.95 and the dinner buffet costs $25.95. The buffet includes a plentiful selection of just about anything you could want. According to restaurant manager and longtime employee Kelly Park, some of the restaurant’s most popular

hat is now touted as one of the best buffet deals in town almost never happened. “Originally, this was just a regular, tableservice restaurant,” manager Kelly Park explains. But in 1990, Camellia Buffet’s previous owner decided to try a buffet instead. And thank goodness they did. “When we opened a buffet, we found that people really liked it,” Park says. “We have been keeping the recipes the same as possible,” Park says. “We haven’t changed much. And we especially have made sure to keep the quality really high.” Another thing that the restaurant tries to keep relatively the same is the prices. “We like to keep the prices really reasonable,” Park says. “We want our customers to come and enjoy the food at affordable prices.”

Other meat entrees included in the buffet lineup are Pork Barbecue and Chicken Barbecue. Camellia also features tasty seafood such as its fresh Shrimp (served with the dinner buffet only), which is another customer favorite. Once you’ve picked out your favorite meat and seafood dishes, Camellia also provides an array of side dishes that will complement your food perfectly. Vegetables include mushrooms and bell peppers. Other side dishes include mac salad and soy beans. “We make our own sauces,” Park adds, explaining that the sauces include spicy shoyu and bean paste. If you’re bringing kids along, Camellia has them covered as well. With dishes that keiki love such as Orange Chicken and

Onion Rings, the buffet is sure to be a hit with your kids. And for a refreshing bite after a tasty meal, the buffet also includes fruit such as watermelon and pineapple. To finish it all off, strawberry or orange Jell-O is served for dessert. For the dinner buffet, ice cream also is a dessert option. Tempting as it may be to grab all of the buffet’s goods at once, Park recommends that diners approach things with a little bit more finesse. “People should not take a whole bunch at one time,” Park says. “They should just take a little bit at a time and try it first. And then if they like it, they can go back for more of what they like.” That’s the beauty of an allyou-can-eat buffet — you can sample everything it has to offer and go back as many times as you’d like. “People should just come in and experience it,” Park says. A

fusion of French and Laotian cuisine is intertwined into succulent works of art at JJ Bistro & French Pastry in the heart of Kaimuki on Waialae Avenue. Owner and chef JJ Luangkhot first opened the restaurant in Aiea in 1995, before making the move to Waialae four years later. Luangkhot’s signature Chocolate Pyramid is a mainstay on the menu, and you’re depriving your sweet tooth if you haven’t yet had a bite. Yet, it’s also Luangkhot’s rich and flavorful entrees that captivate the crowd. “Signature Baked Rack of Lamb Wellington ($18.95) is our No. 1 seller,” Luangkhot says of this dish that’s available for lunch and dinner. Luangkhot’s masterpiece features two New Zealand lamb chops marinated with rosemary, and salt and pepper, and wrapped in a flaky puff pastry dough. It’s then finished off with a black pepper cream sauce garnished with sweet peas and red bell peppers.

or nearly 20 years, Mitsu-Ken Okazu & Catering has satisfied customers that flock from around the corner and around the island to enjoy the Kalihi eatery’s selection of bentos, combination plates and catering platters. From the ever-popular breakfast offerings that make for ideal grab-and-go meals, to its iconic Garlic Chicken, Mitsu-Ken continues to serve multiple generations of satisfied customers. “The Garlic Chicken and our breakfast special and combo are still our most popular dishes,” says owner Brad Kaneshiro. “We also do catering for parties and special events.” To start off the day, Mitsu-Ken features its Breakfast Special ($4), which includes two scoops of fried rice, two eggs cooked any style and two strips of bacon. The popular Breakfast Combo ($6) includes the aforementioned items contained in the Breakfast Special, in addition to three pieces of the savory garlic chicken. The eatery serves its breakfast offerings from 5 to 10:30 a.m. Regular and first-time customers rave about MitsuKen’s flavor-packed bento selections, which are available until the eatery closes at 1 p.m. The Mitsu-Ken Bento ($6.25) includes Garlic Chicken, Teri Beef, Spam, Hot Dog, Egg Omelet all served on a bed of rice topped with furikake. The Mini Bento ($4.25) includes Garlic Chicken, Hot Dog, Egg Omelet and rice, while the newly added Fried Saimin

Bento ($6) features a bed of fried saimin and rice topped with Garlic Chicken, Egg Omelet and Portuguese Sausage. Additionally, Mitsu-Ken offers an assortment of popular plate lunches, which include two scoops of rice and Macaroni/Potato salad (tossed green salad also is available for an additional 45 cents). Some of the popular plates include Garlic Chicken ($6.75), Hamburger Steak ($6.75) and Mixed Plate ($7.25), which includes Garlic Chicken, Meat Loaf and Hot Dog. Mitsu-Ken has customers covered when it comes to catering, and offers multiple-course menus as well as assorted Pupu Platters, which must be ordered at least two days in advance. Platter “A” ($30) serves a plentiful portion of Fried Saimin, 12 pieces of Portuguese Sausage and 16 individual Spam Musubi. Platter “B” ($16) features eight Spam Musubi and 10 Hot Dog Musubi — a perfect assortment for tailgating. Kaneshiro explains

pieces are available for $2. While Mitsu-Ken has limited parking at its current location, customers will be pleased to hear that the restaurant will move to a new, larger space early in 2013. The eatery will be located at 2300 N. King Street in a new structure located across from New City Nissan, and while customers can expect the same great food and customer service, there also will be some positive upgrades. “We’re going to be moving to our new King Street location sometime in January, so we’ll have more parking and a bigger kitchen, but it will still be takeout only,” Kaneshiro says. “We’re probably going to offer a wider selection of items as well, and we’re currently working on creating the new menu.”
