orea’s pickled condiment kim chee is heating up here at home and across the globe. There’s just something about Korean fermented cabbage that hooks you at first bite, and believe me, it’s habitforming. Kim chee is a permanent item in my fridge, meaning there’s always a bottle on hand to satisfy those 2 a.m. persistent cravings. Now, kim chee goes with just about everything, but my ideal pairings include kim chee with a bowl of hot, steamed rice and egg. It also goes perfectly with barbecue meat and a bowl of ramen, not to mention fried rice. OK, I digress, but you get the point. However, in Korea, kim chee is a national obsession, and it was on my trip to Seoul a few years back when I fell even deeper in love with this delicious dish. In fact, in Seoul you’ll even find a museum dedicated to this hot stuff. So, without further ado, let’s explore the realms of kim chee at a few Ono, You Know hot spots around town where I’m sure you and your appetite will experience a renewed zest for life.

First of all, it’s the place to go when you’re in the mood for traditional Korean fare and secondly, whether it’s the highest quality kal-bi, barbecue chicken, or the flavorful banchan (side dishes) that you’re after, Million
never disappoints. Owned and operated by sisters Cindy and Angela Park, Million is a family-run business that has welcomed patrons since 1989. Loyal diners love the fact that they can grill their own meats on the yakiniku tables or leave it up to the pros to cook up a fantastic meal. A standard here, and one that can’t go unnoticed, is Million’s famous homemade kim chee, which Million’s Diana Paik says is as authentic as you can get. “We serve cucumber kim chee, original kim chee and shredded daikon kim chee as part of our banchan offerings. It’s complimentary with any meal,” she adds. “A plate of daikon kim chee and won bok kim chee is available upon request, and the won bok kim chee can be cooked on the grill if you prefer.” Of course, red chili pepper is an essential ingredient, but to achieve the best kim chee, Paik shares that it all lies in Million’s secret sauce, which is kept highly underwraps. “Kim Chee Pancakes also are popular here, and we always make sure that our kim chee is always fresh,” she says. hanksgiving is just days away, and while some of you already have dived right in to your Turkey Day preparations, there’s a few who can’t even fathom the stress of putting together an elaborate feast. Well, fear no more, Zippy’s Restaurants once again has you covered with its trusty Thanksgiving Meals To Go Packages. Zippy’s has been a part of Hawaii’s dining culture since 1966 when founder Charlie Higa and his brother Francis opened the doors to the first McCully location, and today with 25 establishments statewide, Zippy’s Restaurants is deemed iconic — a true representation of our island lifestyle. Zippy’s Restaurants is busier than ever this time of year as it sells well more than 1,000 turkey meals each year, and Zippy’s loyal customers swear by it. In fact, Mamiya-Kalahiki often relies on Thanksgiving Meals To Go Packages for her own holiday spread. “These meals are easy to prepare and they are delicious. The fully cooked turkey just requires reheating, plus you have all the sides ready to go as well — all made from scratch,” she says. A Whole Turkey Package is priced at $79.95* plus tax and includes a 10- to 12-pound (cooked weight) refrigerated and fully cooked whole roast Butterball Turkey, four pounds Poultry Gravy, four pounds Real Mashed Potatoes, three pounds Stuffing, one pound Cranberry/Pineapple Relish and one dozen Sweet Dinner Rolls. “We start putting everything together a couple of days before Thanksgiving Eve and send the many packages to the stores on the Eve and Thanksgiving Day. s its name suggests, Karai Crab serves a great selection of tasty, spicy crab. But it also will satisfy any seafood craving, hot or not. Located to the right of its sister restaurant, The Willows in Moiliili, Karai Crab opened in September and allows guests to customize their meal by seafood, seasoning and spice level. Seafood choices are Shrimp (with or without shell), Crawfish, Live Clams, Live Mussels, Dungeness Crab Clusters, Snow Crab, King Crab and Dungeness Crab. For non-seafood eaters, fried tofu is available. Seasonings include Garlic Butter, Cajun, Karai Special (a combination of garlic butter and Cajun sauces), tropical Hawaiian (Karai flavors of Hawaii), Lemon Pepper and Court Bouillon. Kamei says they are creating new lunch-friendly entrees, such as pastas, salads and sandwiches with plans for an extended lunch menu in the near future. The casual, familyfriendly seafood restaurant also offers a keiki menu, and plate lunch-style takeout options. And in an effort to be eco-friendly, Karai Crab serves its food in bamboo reusable bowls and plates; and uses takeout containers, utensils, napkins and bags made of recycled and/or biodegradable materials. For those dining with someone who may not eat seafood, they may dine from the buffet at The Willows and bring their plate into Karai Crab. he volunteer food reviewers on 1 Yelp and Urbanspoon can’t seem to get enough of Ichiriki. To borrow a post, the Japanese nabe restaurant near Ala Moana (and Aiea) has; Tasty food, Great Price(s), (is) Fun and Interactive food making, Nice and clean, Family-style, (and) Great Service. That pretty much sums it up. Starting off with a fresh Tofu Salad ($4.95) is a good way to set the stage for either one of the restaurant’s hot pots, and its collection appetizers. You really can’t go wrong with either. The salad features red leaf lettuce, cherry tomatoes and soft tofu, and is topped with croutons, nori and a creamy sesame dressing. Just as you would expect, the dish is light, flavorful and 3 packed with natural flavors. Characterized as a “perfect combination” of pork and kim chee by photographer Lawrence Tabudlo, Pork Kim Chee ($9.95) is pickled without being too sour, and spicy without being freakishly hot. There is a slow burn common with such an appetizer, but it’s nothing you can’t handle and a wipe across the forehead fresh snap of the kim chee. is all it takes to maintain composure. Now for the fish. The textural mix is created by panAhi Poke ($5.95) can be found searing the pork until its crispy, but almost anywhere, but the kim chee still juicy, and combining it with the marinade Ichiriki uses to season the tender chunks of fish is unique and quite tasty. And while the kim chee sauce may give the appearance of excessive heat, especially for those of us who are heat wimps, have no fear, the coating is a flavor enhancer that is well balanced with the buttery ahi. Saving the best for last, Ahi Katsu ($6.95) is the same daily fresh ahi used in the poke, but deliciously different. Ahi Katsu is wrapped in a shiso leaf, then panko-coated and deep-fried served with a side of tonkastu sauce. The star in this simple collection is the shiso, which adds a mint flavor that works perfectly with the ahi. Crunchy on the outside, soft and tender inside, I’ll be back for more.

Many locals rarely venture to the heart of Waikiki, but Dining Out was fortunate to catch up with Babette Black and Dana Oshiro who were celebrating a special occassion — Babette’s birthday! “I would suggest to my friends to come out to Waikiki and check this place out. Waikiki is different, it’s changed a lot, and a lot of people can afford it,” Black says. Dana Oshiro: “I had the RibEye Steak ($45). Actually, I liked everything. Everything was great, and the service is awesome. The environment is really nice. It was Babette’s birthday, and I wanted to do
something special.”
Babette Black: “I had the Lobster (seasonal price). It wasn’t the little-bitty lobster, it was a big lobster. It was very tender and had a lot of juice. The flavor, the sauce — excellent. The potatoes were creamy, and our waiter helped us with great choices.”

side dishes, which may include chow mein, fried rice, steamed rice, brown rice or vegetables. “A lot of time people don’t want all starch, so we added on steamed vegetables, too,” says Leung, the former owner of Panda Cusine near Ala Moana Center. Asian Mix likes to keep its menu fresh, so many of its entrée options, especially the Chinese specialties, will rotate on a weekly basis. Asian Mix also offers a number of bento plates for quick and easy takeout. Asian Mix has been open for six months and is located at the Safeway shopping center on Beretania Street.

Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience. This week, Dining Out gets the inside scoops from Il Lupino’s chef Lawrence Nakamoto, who gives us a little taste of Il Lupino and shares just what fuels his culinary drive.
E
What is your favorite dish on the menu? Why? Bucatini all’Amatriciana. I love the pancetta — it’s the finest quality, and the flavor combined with tomato sauce and garlic is awesome. Even the aroma while cooking is like a slice of heaven. I could eat it every day! What is your favorite ingredient to work with? Why? Fresh fish. I grew up eating a lot of sashimi, and still love it, but I also like cooking fresh fish, being able to enhance the flavor without overpowering the fish. It’s a delicate balance.
Is there a dish that you create that’s not on your menu, but available upon request? We can customize menu items such as our pizzas and pastas to our patrons’ tastes. For example, we can add meat to a vegetarian dish, or do a vegetarian version of our dishes with meat. We also feature five to seven specials every night for dinner, and offer items such as Braised Short Ribs or Pork Belly glazed with Quince to provide our guests with a delicious selection. And we just introduced our own version of the Loco Moco ($15) — made with our veal, pork and beef meatball patty and a marsala mushroom gravy — molto delizioso! You may order a mini version that is currently not on the menu for only $10.

“It’s basically different 3 nigiri topped with red and white onions in a sesame seed oil dressing,” says director of purchasing David Moon. Kanikama Salad ($2.20), for example, features imitation crab topped with the refreshing onion medley. There’s also octopus-filled Tako Salad ($2.80) or Mushi Hotate ($3.80) made with boiled scallops that go well with the topping. Another item rolled out by Genki’s Japanese chefs is Garlic Ika ($2.20), which presents a creamy garlic mayo sauce that’s just as silky as the fresh squid itself. A touch of charred goodness from a blow-torch adds the perfect hint of smokiness as well. The eatery’s Japan-inspired dishes are part of its larger goal to ensure that customers always have something fresh — be it savory or sweet — to go fishing for on its river of eats. “We’re trying to do something new every six months or so to spice it up a little bit,” says Moon. ade Dynasty Seafood Restaurant makes it a priority to satisfy its growing customer base by constantly adding new menu items, many of which are influenced by the cuisine in both China and Hong Kong. The evolving menu keeps customers coming back to see what lies in store, and the restaurant was

recently rewarded for its culinary creativity. Jade Dynasty Seafood Restaurant, located at Hookipa Terrace on Ala Moana Center’s fourth floor, recently experienced the pride and acclaim that comes with earning a prestigious culinary award. The Escoffier Society’s Asia Pacific Region named the restaurant “Best Chinese Restaurant in Hawaii.” The Five-Star Diamond Award of Excellence was presented to Jade Dynasty in August, and comes from the prestigious culinary group that boasts a history dating back to 1936. “It’s a great honor for us,” says general manager Gary Chan of the award. “One of the gentlemen from the Escoffier Society flew here all the way from the Asia Pacific headquarters to test out our food.” Chan also is proud of yet another new dish to grace the Jade Dynasty menu in Deep Fried Golden Rolls ($4.50 for two). The item was introduced last month, and its popularity has grown so quickly that the tasty appetizer will soon find a permanent home on the menu. The pupu-
style dish features taro, Chinese bacon and sausage wrapped in special spring roll wrappers that are shipped to the restaurant from China. The tasty starter features a light and flaky outer layer that provides a crispy crunch without weighing diners down. “We try to add new items every couple of weeks, so you will constantly see something new on the menu,” Chan says of the eatery that is capable of hosting up to 300 people, and he encourages customers to celebrate birthdays and special events in either the main dining room or one of the private dining areas. Jade Dynasty recently added another new item that Dining Out readers now have an exclusive look at. Ask for Abalone Siu Mai ($4.50), and enjoy the juicy, openfaced dumpling that is topped with fresh abalone and served with a savory oyster sauce. After giving the dish a try, some diners deemed it “the best of the best.” A dish that is appeals to a host of diners’ senses can be found in Dynasty Tea-Smoked Jumbo Shrimp ($23.95). agoda Restaurant has been a go-to hot spot for local food for decades since it first opened in the 1960s. Executive chef and general manager Jason Takemura took the helm at the restaurant less than two years ago, and is already making some bold changes. Takemura grew up cooking at home, and his love for the restaurant industry was solidified during his first job in the kitchen. “I fell in love with working in a restaurant immediately — just working through the rush,” he explains. He worked his way up to kitchen manager before moving to another restaurant where he honed his sushi skills. “I finally decided that this is what I want to do for the rest of my career, and I decided to get up and move to the Mainland and go to culinary school,” Takemura says. Now at Pagoda, Takemura says it’s been “so far, so good.” “We are trying to make a lot of changes to bring Pagoda back to the status it once had. This used to be the place where all the locals came,” says Takemura, adding that he grew up visiting the restaurant. That, in part, is why Pagoda has decided to renovate — which Takemura says will add a modern feel. In addition to the renovations, Pagoda also recently started increasing its use of local products — a practice the Takemura has really tried to stress since taking over. Takemura and other Pagoda staffers go to the farmers market regularly to pick up the freshest fruits and vegetables. “The quality is better,” he says. “The local products are better, and it’s fresher. “Now we are using fresh, local fish and fresh, local vegetables. Some of our meats are Big Island beef,” Takemura says. “We are trying to tie in these things to have this be truly more of a local place.”

Nightclub moves to its own beat as a multipurpose and versatile restaurant, nightclub and venue. Located at Waterfront Plaza on Ala Moana Boulevard, M Nightclub’s contemporary atmosphere welcomes a variety of guests who are encouraged to create their own memories here. According to general manager Dan Punch, the events and crowds change nightly, making for an eclectic experience. Yet, he also notes that M Nightclub is renowned for its handcrafted cuisine as well. Kawika Cahill serves as executive chef, and has been here since day one. He’s previously worked for Roy’s Michel’s and Sorento’s, to name a few. “We serve Pacific Rim upscale bar food at M, and you can’t beat our happy hour prices — they’re very reasonable,” he says. Happy hour runs from 4:30 to 8 p.m. Tuesday through Friday, and the menu is impressive, to say the least. Cahill shares with Dining Out two most prized items on the menu: Grilled Sliced Garlic Rib Eye Steak (market price) and Crab and Artichoke Dip ($12 regular price, $6 during happy hour). “With the steak you really get more bang for your buck,” Cahill says of this appetizer, which features an 8-ounce choice cut rib eye steak, thinly sliced and cooked to perfection. It’s accompanied by Bordello roasted mushrooms and sauteed Maui onions drizzled with a kabayaki sauce to bring forth a hint of sweetness. Crab and Artichoke Dip also is equally delicious, and presents diners with a rich dip showcasing a medley of blue crab, artichoke hearts and

ith a large brick oven stocked with kiawe wood and its resulting sweet, smoky aroma at its disposal, Inferno’s Wood Fire Pizza has ignited Hawaii’s hunger for quality pizza pies. Each pizza at Inferno’s is hand crafted and prepared with the finest, freshest ingredients, and baked to crispy perfection at 800 degrees in the distinctive dome-shaped oven. The business concept started as a mobile wood fire pizza operation, and the pizzas’ popularity led the company’s owners to open the Ward Center location. “The pizzas are really just based on what people like here, and feature local ingredients,” says Kyle Okumoto, who owns the eatery along with Jon Wong. “We make the dough fresh daily with flour from Italy. We use kiawe wood in the oven to create that flavor from the smoke, and the pizza cooks really fast so the crust is nice and crispy.” One of the distinctive pizzas offered up at Inferno’s is Guava Smoked Pork ($15.50), which features fresh mozzarella cheese, local Shinsato guava-smoked pork, fresh mushrooms, Maui onions and a locally crafted Kilauea barbecue sauce available in both spicy and mild. The sweet and savory pork coupled with the tangy barbecue sauce and crisp onions creates a must-try assortment of flavor. For those diners who prefer a hearty assortment of fresh vegetables, Inferno’s serves up a Veggie ($14.75) pizza, which includes fresh mozzarella, fresh mushrooms and Maui onions, local tomatoes and olives. Similarly, Spinach Garlic Tomato ($13.50) features plenty of flavorful garlic, fresh mozzarella, spinach and local Roma tomatoes. Diners craving an extra level of heat can reach for Chicken Ranch Jalapeno ($16) pizza, which features jalapenos, spinach, mushrooms, olives and roasted chicken. “It’s a way different pizza, a much better product than what you get at

other pizza establishments,” says Okumoto. “You’ve gotta try it. It’s an authentic, Neapolitan style pizza,” which is heralded for its hand-kneaded dough that bakes crispy on the outside while remaining tender and fragrant. The multiple pizza selections at Inferno’s pair perfectly with the seven locally brewed beers crafted and served at the eatery. Hawaiian Islands Brewing Company has partnered with Inferno’s, tapping into a host of local flavor profiles that come through in the freshly brewed beverages. Lei O’ Mano IPA, HI Brew, Diamond Head Gold and Kona Coffee Stout have drawn rave reviews from customers this far, the latter of which features hints of authentic Kona coffee that provides a bold, full-bodied flavor that truly embodies one of the state’s most popular exports. The ice cold brews are available from Inferno’s full bar, and diners can order them by the glass as the piping hot pizzas are brought to the table. For $5, customers receive a collectable pint glass full of their favorite creation that also includes $3 refills on the same day of purchase. The beer also is available to go in the form of 64-ounce growlers ($18), which can be refilled over and over for $12 — a delicious and cost-effective option for tailgating and large gatherings.
