urkey, stuffing, cornbread, cranberry sauce, pumpkin pie, sweet potatoes with marshmallow topping ... Wow, flashbacks of your Thanksgiving feast, right? Are you full yet? Because I sure am! Since when has Thanksgiving gone from being a day when we give thanks for all that we have to a day when we eat everything in sight? And I mean everything! In fact, studies have shown that people can consume anywhere from 3,000 to 4,500 calories on Thanksgiving Day alone. And while I’m all for pigging out on Thanksgiving, now that it’s three days after the fact, I suggest that we forgo the leftovers for a bit and live off of ... liver. Why, of course! OK, so it might not be the most appetizing for many, and while I know you’d much rather reach for another slice of pumpkin pie, liver can be very onolicious and somewhat low in calories with healthy amounts of protein and fat. Liver can be baked, boiled, broiled, fried and stir-fried, and well-known examples include liver pate, foie gras and chopped liver, to name a few. Yet, this week, I decided to go beyond the norm and liven things up with alluring liver creations at the following Ono, You Know establishments. Believe me, give it a try — there’s so much to “liver” for!

Located in Westridge Shopping Center in Aiea, this Japanese seafood restaurant offers up a superlative spread of more than 100 mouth-watering items on its impressive all-you-can-eat buffet, and better yet, in the spirit of the season, Makino Chaya also has lowered its prices. The lunch buffet is available weekdays from 11:45 a.m. to 1:30 p.m. now priced at only $10.98 per person, and weekends from 11:30 a.m. to 2 p.m. at $18.98 per person. The dinner buffet is offered Monday through Thursday from 6:30 to 8:30 p.m.

for $24.98 per person, Fridays from 6 to 9 p.m. at $24.98 per person, and weekends from 5:30 to 9 p.m. at $26.98 per person. “We’ve lowered our prices a bit, so our buffet is a lot more affordable for locals,” says Makino Chaya president Jo Makino. “What we’re selling is value. We always have the same good, high-quality food, but now it’s at a better price. People usually come here to celebrate a special occasion, and these days it can be hard to pay a lot of money for good food. We’re a local restaurant and we cater to a lot of local people, so we don’t want to charge them an arm and a leg for their meals. Plus, people are spending a lot of money on Christmas gifts this time of year, too.” According to general manager of operations, Chris Mitchell, seafood is the establishment’s specialty. “Snow crab, lobster, miso butterfish — they’re all a big hit, although the higher-quality items really stand out during dinnertime.” If you’re a newcomer to the eatery, must-have items from the buffet line also include lobster and steak from the teppan grill, shrimp tempura, furikake-crusted ahi, vegetable tempura, Seafood Dynamite, an assortment of handrolled sushi, an extravagant dessert bar and chocolate fountain, and more. “Locals seem to love Seafood Dynamite, which features a mixture

of lobster and crab topped with cheese in a crab shell,” Mitchell explains. Makino Chaya already is preparing for the Christmas rush and will, in fact, be open Christmas Day from 11 a.m to 2 p.m. (lunch) and from 5:30 to 9 p.m. (dinner). Mitchell says reservations are an absolute must. “We’ve hosted quite a few company Christmas parties, and we recommend scheduling your party on a weekday because it’s always a mad-house on the weekends. You can book out the entire 320-seat restaurant if you want.” “On Christmas Day we also will be offering prime rib as part of our buffet, along with a much more varied seafood selection,” Makino adds. And we all know that a festive feast isn’t complete without the sweetest of endings. Makino Chaya has raised the bar once again and has now added the finest creations from JJ Bistro & French Pastry to its dessert selection. For those on-the-go, Dining Out suggests opting for one of Makino Chaya’s delicious bentos such as Miso Butterfish, Baked Salmon and Barbecue Chicken ($4.97 each) or Chicken Katsu, Garlic Ahi and Crab Meat Salad ($3.97 each). Mitchell says it’s common for the restaurant to sell 1,000 orders of Miso Butterfish bento per week. To pre-order your bento, call 486-5100. And as a way to give back to its loyal patrons, Makino Chaya is now showcasing a special promotion. For every $100 gift certificate that you purchase, you’ll receive a $20 restaurant voucher redeemable to April 30. “We always feature special promotions during the holiday season and always have discounts available for our kamaaina, military and seniors,” Mitchell says. “We have weekly specials in TGIF and Dining Out as well, which makes it more affordable — especially coming in to the holiday season when a lot of people have parties. “People are wanting more healthy food, and Greek food is known to be healthy and fresh,” says restaurant co-founder Francois Provenza. Originally from France, Provenza worked in the fashion industry in London before moving to Hawaii in the 1980s. He says he decided to go into the food business because he liked the challenge and noticed a market for Greek food in Hawaii. He spent three years researching Greek food, and partnered with son Oliver Bengough to become co-founders of The Fat Greek. Bengough also is an entrepreneur in the media, film, music and entertainment business, and recently launched Cinemoi, channel 259 on Direct TV. here seems to be a Renaissance happening in the world of food on Oahu these days — and it’s something that should make non meateaters … well, happy. More and more eateries these days are finding that their vegetarian dishes are becoming quite popular, as customers are choosing to forgo or cut down on eating meat in pursuit of a healthier diet. At Happy Day Chinese Restaurant, owner Lisa Lum admits to noticing the trend, and is more than happy to recommend two dishes to Dining Out
readers. Jai ($9.95), also known as monk’s food, which is typically eaten in observance of Chinese New Year, is delightfully satisfying any time of year. Completely vegetarian and chock-full of all those good-foryou vegetables, it’s a delicious concoction of long rice, bean curd, carrots, black and golden mushrooms, black fungus, Chinese peas, won bok, tofu skin and more. It’s so flavorful, there’s no need to wait for the new year to celebrate this traditional dish.

Who or what inspires you as a chef/manager/ owner? My dad inspires me. Both my parents used to work, but my dad was the first to come home, so he made dinner for the family every night. t’s hard to find a multiplecourse menu without dollar signs overshadowing the experience. But the husbandand-wife duo at Kit n Kitchen turn foodie fantasy into reality, and you’ll feel right at home. “We are like a family; I’m always here. It’s family dining,” shares owner and namesake Kit Yiu. The restaurant has been in business for 11 years, and Yiu continues to draw inspiration from his upbringing to create Eurasian dishes. Since he was born and raised in Hong Kong, where Chinese and British flavors meld together, and trained in Japan, his dishes reflect touches of both continents. The Four Course Menu ($20.95 per set) is a constant

The grass-fed beef from Maui is braised in Roma Tomato, fresh vegetables and herbs, and also is served over rice or spaghetti. And if you find yourself hungry late at night, but don’t want to have to resort to drive-thru, the restaurant is open until midnight seven days a week.

A sushi bar treats diners to beautiful and tasty creations from sushi chef Norimitsu Wada, and an elegant cold seafood display — that features hand-carved ice sculptures created at the resort by one of the skilled chefs — serves up local favorites such as Chilled Prawns, Crab Claws, Ahi and Salmon Sashimi and Ahi Poke. “As much as possible we use local produce and ingredients, such as greens from the Big Island, as well as local fish — it’s bringing that homestyle local flair, but taking it to the next level,” says sous chef Kevin Nakata. “We feature a lot of Asian influences as well, especially with the recent popularity of Asian street food, but we also include some classic Europeanstyle dishes, so we really run through a wide range of cooking styles. We elevate the presentation and quality to reflect the hotel itself.” In addition to a constantly changing assortment of entrees and offerings selected and created by Nakata and his highly skilled staff, the buffet also features regular favorites including pastries

and other baked delights, a stunning island fruit selection, an omelet and egg station with all the toppings and fillings one could think of and, of course, a waffle station complete with all the fixings. For dessert, the hotel’s bake shop provides a swath of colorful, tasty treats including Pink Haupia Lollipops, Bread Pudding, Marshmallows and Fruit, and all sorts of cakes and pies. Handcrafted cocktails and refreshing drinks are available from the nearby Mai Tai Bar, including the flavorful Mai Tais made from freshly squeezed juices. “The desserts from our bake shop are done so well, they’re unbelievably delicious,” Hamasaki says. “And, add in this ocean view of Diamond Head and our available beachfront cabanas. What better place to have brunch?” To sweeten the deal even further, complimentary parking is available for up to four hours, both in the Sheraton Waikiki garage as well as with the resort’s valet parking service. “Everybody needs to try it, it’s a really well-rounded buffet,” says Hamasaki. “You can’t go wrong, and you definitely get your money’s worth. ne of the joys of following Hawaii’s food trends — besides eating, of course — is to “sea” new restaurant concepts wash ashore. The latest craze, which is sure to reel in the entire family, involves seafood, seafood and more seafood. In fact, according to Crab
City owner and chef JJ Luangkhot, it’s a picnic under the sea! Crab City opened in July just a few steps away from Luangkhot’s well-known eatery, JJ Bistro & French Pastry. The idea was to create a southern-style seafood boil restaurant reminiscent of the ones that have
popped up across the states. “I believe the original concept is from Louisiana,” he says. “So we tried to bring something new to the Islands. Since we are in Hawaii, we have a great atmosphere with the beach, so we should have more live seafood.” Patrons get ready to

embark on a delicious voyage as they enter the festive restaurant decked out in washed up fishing nets and surf boards. The real fun begins as they settle into tables set up with nothing but white disposable table cloths. That’s right — no plates, knives or forks. The only utensils required are hands and a seafood cracker, perfect for bringing beautiful crab meat out of its shell. Then diners sink deeper into a sea world of eats by selecting fresh seafood — Maine lobster, Dungeness crab, king crab and blue crab among others — as well as side dishes. The only thing left to do is dive in. What sets Crab City apart from other seafood boil spots is its sassy sauces, which explode with texture and flavor thanks to the loads of fresh herbs and spices that go into them.

ith its extensive, varied menu, Anytime Cafe really is a reliable place to dine anytime, no matter what you may be craving. With a range of influences spanning Italy and Hong Kong, the restaurant offers just the right dish for anybody, anytime. “Some customers come once or twice a week. And some come almost every day,” says Cindy Wong, who coowns the restaurant with husband Ken. “We have Italian food like risotto, spaghetti and pizza, as well as local favorites like the oxtail soup and the loco moco,” she says. One of the restaurant’s most popular dishes is Shrimp Wonton Noodle in Broth ($7.95), made with Hong Kong-style noodles and large shrimp wrapped in a thin wonton shell and all swimming in a special, house-made

broth. “Many customers say that our wonton noodles are the best they’ve had,” Wong adds. Since February 2007, this renowned restaurant on Ward Avenue has treated everyone like ohana and continues to do so thanks to its friendly and accommodating staff, along with its top-notch comfort food available for breakfast, lunch and dinner. Famous for its Oxtail Soup, Asahi Grill continues to serve up many favorites from Kapiolani Coffee Shop, where
many restaurant staff previously worked. According to manager Victoria Sayno, Asahi Grill has a diverse customer base that ranges from aunty and uncle who live down the street to visitors from Japan, Taiwan and the Mainland. “There’s something on the menu that appeals to just about everyone,” Sayno says. “Besides the Oxtail Soup, we have many customers who just love the Butterfish. It’s very popular.” Priced at $13.95 during lunch, this entree features butterfish (black cod) marinated in Asahi Grill’s very own miso sauce,
rice, miso soup, tsukemono and your choice of mac or tossed salad. Fried Rice can be requested for an additional $2, or opt for kim chee or lup cheong fried rice for $2.50 more. For dinner, Butterfish is served as a teishoku dinner set ($15.95), which presents patrons with a complete meal of two pieces of tender fish, tofu, tossed greens, tsukemono, fish soup and a bowl of rice. Another constant staple for lunch or dinner is Asahi Grill’s Shrimp Tempura Curry ($11.25), which showcases four pieces of shrimp tempura deep-fried to perfection and accented with a savory homemade curry sauce over a heaping portion of rice. All this also is accompanied by mac or tossed salad. So, the next time you are in dire need of local must-haves, make Asahi Grill your restaurant of choice — there is a lot to fill up on.

It doesn’t seem like it should work, but it does. “This recipe comes from my girlfriend who is from Thailand, and she taught me how to make it,” Wong explains. “It’s really good, and very flavorful. Once you try it, you will love it.” And Osso Bucco ($15.95) is another special item not to be missed. The dish features a braised veal shank bathed in a red wine and tomato sauce and served over pasta. Wong says that customers should also stay tuned for a forthcoming list of Christmas and New Years specials. To gather ideas for menu additions, the Wongs occasionally venture to Hong Kong for some culinary inspiration. “I went back to Hong Kong in March and came back with more ideas and ingredients,” Wong says. Within the next few months, Anytime Cafe also is looking to start a promotion called Green Monday — which will provide customers with a discount on vegetarian dishes on Monday — a concept that is popular in Hong Kong. Yes, Shiro’s is the place to get your liver fix, as this dish presents a nice slab of beef liver coated with flour and grilled, finally topped with strips of bacon and onions. Two scoops of rice and a medley of mixed vegetables accompany the dish. hen Yoshi Hashigami opened Chinpei Ramen nearly five years ago, the menu was simple and offered a mere 10 items.

After fielding multiple requests from his growing customer base over the years, the owner and chef of the eatery, located conveniently on South King Street, has expanded the menu, which now features more than 80 Japanese-inspired dishes. Chinpei Ramen offers a host of items made from scratch daily, and features all-natural soups and broths in its ramen selections. The restaurant also has multiple vegetarian options, and its dishes are free of MSG. Hashigami was influenced by his father, who operated a restaurant in Japan for 55 years, and after it closed, Hashigami took over the operation, moving it to Hawaii and renaming the eatery to forge his own identity. He spent 15 years working at the restaurant in Japan, learning a wide range of cooking and preparation techniques that are behind the quality offerings on Chinpei Ramen’s everexpanding and affordable menu. One of the dishes that Hashigami chose for the menu because of its popularity in Japan is Nira and Liver ($10.25 with rice, $12.75 with
Teishoku, $8.25 for side order). The chives and liver are stir-fried with bean sprouts to incorporate all the flavors of the colorful dish that also can be ordered as an appetizer. For first-time customers, Hashigami recommends Spicy Char Siu Ramen ($10.60 small, $11.40 medium, $12.60 large), which features large pieces of sweet, moist pork in a hearty, flavorful broth. Vegetable-Yasai Ramen ($9.80 small, $10.60 medium, $11.80 large) is chock full of fresh seasonal vegetables, including shiitake mushrooms, carrots, corn, Chinese cabbage, bok choy, bean sprouts and green onion. “The miso is strong and spicy,” he says, “and a lot of people order the gyoza, too.” Gyoza ($1 per piece) is available in multiple quantities, and the freshly made pot stickers are delivered piping hot to the table. Vegetable Gyoza ($1.10 per piece) also is available in multiple quantities, and provides a healthier alternative to its meat-filled counterpart. Another popular pupu item is Shu Mai ($1.20 per piece),

and like Gyoza, the pork hash is available in an array of quantities to satiate any appetite. Hashigami recommends his homemade sesame oil and chili pepper dipping sauce, which adds a flavorful kick to the meal. Chinpei Ramen also offers a host of side dishes, including Fried Rice with Shrimp ($7) and Spicy Shoyu Pickled Cucumber ($2.20). The aforementioned items pair well with the eatery’s large selection of domestic and imported beer, sake and shochu. Happy hour specials are available from 5 to 7 p.m. on weekdays and 4 to 7 p.m. Saturdays and Sundays. The restaurant is open daily, and serves both lunch and dinner every day except Monday, when it opens for dinner at 5 p.m. Upon visiting, diners are encouraged to offer up ideas for new menu items, and one should not be surprised if Hashigami ends up adding the dishes to his collection so that others may enjoy them, too.
