Kahala Hotel & Resort? Here, the stars shine nightly amid an elegant and dynamic setting, and Hoku’s chefs prepare award-winning cuisine, which spotlights exotic Asian, Hawaiian and European flavors. And yes, here at Hoku’s, you can have your cake and eat it too! Executive pastry chef Michael Moorhouse is the mastermind behind all of Hoku’s sinful delicacies, and adds his own unique touch to your typical panna cotta dessert. Priced at $12, Thai Basil Panna Cotta has been on the dessert menu for less than a year, but proves to be a favorite among guests. Moorhouse describes it as a classic cream and milk panna cotta set with gelatin and infused with Thai basil leaves, finally topped with an Italian granita and coconut sorbet. “Our panna cotta is unique because we use an herb (Thai basil) to flavor it, which really isn’t a common thing to do,” Moorhouse says. “Panna cotta is a great go-to dessert because it’s extremely versatile. You can flavor it with whatever you want and you may serve it however you wish — spices, chocolate, fruit, anything,” he adds. The word panna cotta means “cooked cream” in Italian, and when you ask an Italian girl, like myself, to dig in deep into a rich and savory dessert like this one, it really doesn’t get much better than that. Tough assignment, I know. So, this week, I spoiled myself silly with magnificent panna cotta masterpieces at the following Ono, You Know establishments. Imagine simmering together cream, milk and sugar and then mixing this with gelatin, letting it set and finally topping it off with fresh fruits, herbs, chocolate, caramel, what have you. In fact, you can personalize the topping exactly how you wish — almost anything goes! Served chilled, panna cotta is painstakingly amazing and perfect for the holidays with a bounty of sweetness to bring out the merriment in everyone.

s 2012 comes to a close, so does the run of Chai’s Island Bistro at Aloha Tower Marketplace. Famed for its Pacific Rim cuisine and live entertainment, Chai’s Island Bistro has been enthralling guests from across the globe night after night, and celebrity chef and owner Chai Chaowasaree is nostalgic to see this chapter come to an end. The restaurant is set to officially close its doors Dec. 31. “We decided to close Chai’s Island Bistro because our lease is up and Aloha Tower Marketplace will be going through some major renovations,” Chaowasaree says. “After almost 15 years at this location, this place is full of memories. I would be lying if I said I’m not sad. I’ve met so many wonderful people, many of whom have become my friends and a part of my family.” Yet, the news of the closing doesn’t completely damper Chaowasaree’s spirit. He plans to continue serving up his award-winning cuisine through year’s end, including a slew of appetizers such as Fresh Ahi Katsu with Wasabi Curry in a Chinese Spoon, Gravlax Salmon Roulade with Cream Cheese and Crab Meat, Roasted Butternut Squash and Lobster Bisque Shooter, Alaskan King Crab with Roasted Garlic Aioli, and Kataifi and Macadamia Nut Encrusted Jumbo Black Tiger Prawns. Entrees that will be forever etched into the minds of Chai’s Island Bistro’s loyal patrons also include Grilled Beef Tenderloin Wellington

with Mashed Hawaiian Taro and Merlot Demi ($40) and Grilled Fresh Mahi Mahi with Thai Red Curry Sauce, Steamed Rice and Stir-Fried Sugar Snap Peas ($35). Then to end your meal on a sweet note, delight in Heart Shaped White Chocolate Gelato with Fresh Raspberry Guava Puree ($9) and Chocolate Crunch Bar with Fresh Exotic Fruit ($10). “If you order family-style with the Special Group Dinner Menu: ThreeCourse Dinner ($55 per person), you’ll have the chance to sample a little bit of everything,” Chaowasaree shares, noting that the special menu showcases the temptingly delicious aforementioned items. An award-winning chef who initially learned the art of cooking from his parents in Bangkok,


Thailand, Chaowasaree has much to be proud of. “Chai’s Island Bistro has won so many awards throughout the years, appeared on many national TV shows and in national magazines. I also was selected as a chef for Hawaiian Airlines and I wrote a cookbook,” he says. “But the best reward is when my customers leave happy and satisfied. Often times they will tell me,

‘This is the best meal I’ve had in a long time.’ The thing I am most proud of is having earned the trust and support of my customers.” It’s Chaowasaree’s undeniable talent and humility that has earned him the respect of top local entertainers as well. Headlining acts such as Willie K., Danny Couch, Jerry Santos, The Cazimero Brothers, Melveen Leed and more draw

in tears when we have to say goodbye,” he says. “Once we announced the closing of the restaurant, many of the entertainers called, and we made sure to let them know that they can perform here one last time.” Hapa’s Barry Flanagan was among the first to call Chaowasaree and offer his support. “Hapa was the first group to

perform at Chai’s when we first opened,” Chaowasaree recalls. “And there’s no better way than to have them perform for our closing.” Chaowasaree encourages everyone to enjoy a last hurrah at the establishment and capture the inviting melodies of Jerry Santos on Thursdays, The Brothers Cazimero on Fridays and Danny Couch on Saturdays. In addition to these class acts, Bruce Shimabukuro will perform Dec. 3, kumu hula Manu Boyd Dec. 4, Melveen Leed Dec. 5, Teresa Bright Dec. 7, Willie K. Dec. 10, Makana Dec. 11, Jake Shimabukuro Dec. 18 and Hapa Dec. 30. All performances start at 7 p.m. “This is your last opportunity to be up-close-and-personal with these entertainers. You are just a few feet away from them. Normally when you go to their concerts, you would be several hundred feet away,” Chaowasaree adds. As one door closes, another one opens, and the closing of Chai’s Island Bistro is in fact a turning point to new beginnings for Chaowasaree. Come next February, Chaowasaree is scheduled to open a new restaurant called Chef Chai at Honolulu Pacifica building on Kapiolani Boulevard. “The new restaurant will be smaller, but more intimate,” Chaowasaree explains with a smile. “The décor and food will be more modern. You’ll just have to wait and see, but I personally guarantee that you will love our new restaurant.” And in the spirit of giving, Chai is presenting his patrons with much more than impeccable song and cuisine. For one time only through the end of the month, you can purchase a $50 gift certificate for the price of $25 redeemable at Chef Chai in the coming months. “Also, if you come for dinner this month, we will give you a Chef Chai gift certificate worth $20. Don’t miss it,” Chaowasaree says.

here’s a little sweet tooth in all of us, and 3660 on the Rise has the perfect sweet ending to any meal, whether you’re a bread pudding purist or an ice cream fanatic. Chef de cuisine Lydell Leong shares three signature desserts that have been on the menu since the restaurant’s inception. “These are our favorites, and I think if we took any of them off the menu, there

creation, which is finished off with a dome of vanilla ice cream, and topped with a macadamia nut brittle, caramel sauce and crushed up candied sugar. Chefs at 3660 on the Rise put their own special spin on the ordinary bread pudding, and there’s nothing that goes unplanned when it comes to the establishment’s Pudding on a Whim ($8.50). “Basically on any given night our pastry chef makes different flavors, and we toy around with different ingredi-

ents such as fruits and nuts,” Leong explains (Pudding on a Whim pictured above has Oreos and strawberries). Layers of warm, vanillamarinated French bread create that familiar bread pudding flavor and texture, but with a twist. There’s no doubt that each sweet creation at 3660 on the Rise is made with excellence and presented with an air of elegance. While each dish might look almost too beautiful to eat, feel free to admire … and then dig in!

Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience. This week, Dining Out gets the inside scoops from The Mandalay owner Linda Chan, who gives us a little taste of The Mandalay and shares just what fuels her culinary drive.

Who or what inspires you as a chef/manager/owner? My family has worked in the restaurant business in various capacities. So when we moved to Hawaii, we decided to start our own business so that we could all work together. What is your favorite dish on the menu? Why? I have a couple of favorite dishes! Over the years, my tastes have become more localized. So now, one of my favorite dishes is our Chicken Stuffed with White

What is your favorite ingredient to work with? Why? Chinese wine. We have a dish called Stir Fried Fish Fillet with Wine Sauce. The wine causes a flame when cooking the fish in the wok and it gives it a special, unique flavor. It’s delicious!

Fungus Soup. It’s a very unique dish that needs to be ordered one day ahead of time, but you will get a pot of soup with a whole chicken! The pot costs $80 and can feed up to 10 people. First we de-bone the chicken, stuff it with white fungus, then steam it for four hours. You won’t find this dish just anywhere! My other favorite dish is our Peking Duck. First we serve the skin with buns, then you can have the duck meat either chopped up and served, or minced with mixed vegetables

Is there a dish that you create that’s not on your menu, but available upon request? Mandalay Delight Salad. It’s a fruit salad with honeydew, cantaloupe, apple, cucumber, and finely shredded chicken and duck. It is served with a special sauce, which includes peanut butter. This dish requires a two hour advance notice. What do you hope to improve on? After more than 20 years in business, we’re always trying to improve on our food and service. an Punch, general manager at M Nightlclub, wants people to know that the bright and modern night spot serves food as good as its martinis. If diners don’t know it yet, they will. The food, produced by executive chef Kawika Cahill, head chef Cary Bostick and chef Phil Cater, is worthy of any white tablecloth eatery, and the pupus are an extension of that careful food preparation. As a proud carnivore — OK, technically an omnivore — I felt compelled to stalk and devour Grilled Sliced Garlic Ribeye Steak (market price). Good choice. The tender ribeye is served on a sizzling platter of sauteed onions and is topped with garlic butter and a kabiyaki sauce. The 2 result is a succulent serving of beef that is made to order and crazy juicy. It’s even slightly sweet, a benefit from the kabiyaki sauce and onion. The second stop on the meat lover’s tour through the appetizer menu is Char Broiled Kalbi Short Ribs (market price). Immediately unfriend anyone who says there is no need to double up on the protein. The short ribs are as different from the ribeye as you can imagine. They share similarities in that both are tender, juicy and will have you licking your fingers like a child, but the ribs are tangy and smoky. Much of the flavor comes from the two-day marinade

that each piece goes through before being grilled. Served with balls of white rice and kimchee, you don’t need anything else — except for maybe Seared Togarashi Ahi Tacos ($10, $5 happy hour). Carnivores are fish lovers, too. Sashimi-grade ahi is grilled quick to maintain its buttery interior, sliced thin and served in a fried wonton shell. Topped with a wasabi aioli, white sesame seeds, a drizzle of sweet shoyu and sprouts, the mini tacos are crunchy, sweet, minty, spicy and just plain delicious. One final dish worth ordering four or five times is Blue Crabcakes ($12). The fresh crab is rolled in panko, deep fried and served with every crab’s best friend, a lobster sauce made from tomato, white wine, ginger, black sesame seeds and coconut milk. Topped with tiny, thin curls of daikon and carrots, and the dish looks as good as it tastes. Just as any crabcake should be, the golden brown patties are crispy and juicy without being oily. And the sauce? Well, that’s just another layer of goodness that has to be tried to be appreciated.

As of last week, 29,933 runners have signed up for this year’s Honolulu Marathon Dec. 9. ew things in life are as comforting as the foods you grew up with. For the past 20 years, generations of locals have adored MitsuKen Okazu & Catering. Neither the tiny hole-in-thewall size of the eatery, nor the sometimes challenging quest to find parking near School Street have deterred patrons from making it a mainstay on the island. “It’s just local food,” says owner Brad Kaneshiro modestly, “and homestyle cooking.” “There’s a variety,” adds catering consultant and bookkeeper Sherri Kaneshiro. “We have Filipino food, Hawaiian food, Korean … We have a little of everything to try to meet everyone’s needs.” It’ll be hard to find anyone whose needs haven’t been met, and the second you try this food, you’ll understand why. If there’s one thing Mitsu-

Ken is known for, it’s the amazing, crispy, sweet-andsavory fried goodness that is Garlic Chicken. need to go to,” explains Sherri. Platter “B” ($16) is more like a tribute to Hawaii’s favorite snack — musubi! Eight pieces of spam musubi are mixed in with 10 pieces of the hot dog variety, satisfying every musubi craving imaginable. If you’re as crazy about these joyful gems as Ali Carte is, you could probably enjoy a whole platter to yourself — but Sherri says it usually serves 10 people or so, depending on the appetites involved. Mitsu-Ken also will take care of your plate lunch needs, and the popular Kalbi Plate

kalbi that are perfectly charred around the edges. “There’s something in there that is a secret that I’ve never heard of anyone putting in kalbi before,” explains Sherri. Whatever it is, it’s addicting. All of the eatery’s plate lunches come with two scoops of rice and macaroni/potato salad, or tossed green salad for 45 cents extra. At first glance, it may be hard to believe that the caterer everyone goes to for potlucks still operates out of the same little takeout window that originally opened 20 years ago. the restaurant. “You can throw your fork and hit the ocean from the dining room.” Just in time for the holidays, Bali Steak & Seafood is offering a special Christmas Eve and Day Four-Course Dinner available on Dec. 24 and 25 from 5:30 to 9 p.m. The special menu starts off with a choice of Kahuku Sweet Corn and Crab Chowder or Seared Diver Scallops, which are served with cauliflower puree, Hamakua mushroom soy bean succotash and white balsamic foam. Next, diners can select either Hirabara Spinach Salad, which features Shinsato Farms crispy “bacon bits,” figs, Surfing Goat Dairy feta cheese and a warm caramelized Maui onion dressing,

or Waimea Mixed Greens. “We offer what I like to call a Chef’s Tasting Menu, but it’s elevated in the fact that you get your choices from appetizers to entrees,” says Alleshouse when describing the four-course Christmas meal. “It’s a holiday themed menu with a little of our Bali Steak & Seafood island flair infused into it. I also like to focus on the winter aspect, and what’s available seasonally. To complete the meal, diners are treated to Chocolate Peppermint Mousse Cake with spiked eggnog cream, Linzer candy cane cookie and raspberry coulis. “You’re going to get some great island seafood in the snapper, some great steak choices done Bali style, and we use those seasonal vegetables to tie in the holiday flavors,” Alleshouse says. “Our pastry chef also came up with a killer chocolate mousse cake that just screams Christmas, so it completes the experience.” Alleshouse introduced diners to a new Bali Steak & Seafood menu in early November with an emphasis on interactive dining with fresh, local produce and influences. Alleshouse and his team partnered with local vendors including Hirabara Farms, Hamakua Mushrooms, ‘Nalo Farms, Fresh Island Fish Co., Big Island Abalone and Kona Sea Salt. Prime Porterhouse ($95) offers diners a 32-ounce cut of succulent beef seasoned with a special house blend of Kona sea salt, local herbs and spices. The Porterhouse and other entrée selections can be paired with one of 12 homemade sauces, including Maui Onion, Malibu Black Rum BBQ and Tarragon Dijon Cream. Homemade butters also are available for $3 apiece, and include flavor profiles such as Gorgonzola & Kona Smoked Sea Salt and Roasted Garlic & Herbs that go perfectly with a moist, juicy steak. “We really take to heart the local ingredients that we have available here in the Islands, and we’ve transitioned that into what I like to call a ‘guest inter-

active menu,’” Alleshouse says. “You make the choices, you set the experience. Here are all these fresh, local ingredients, and now, lets have some fun.” Customers may enjoy a sampling of Alleshouse’s creations with the Chef’s Tasting menu ($68 per person), and are treated to Roasted Beet Salad, Sea Urchin Risotto, a choice of Miso

ocated in the heart of Chinatown, Golden Palace Seafood Restaurant serves traditional, authentic Hong Kong-style cuisine. Manager Gary Lam credits his father Howard Lam, owner and founder of Golden Palace, as the one who is behind much of the culinary direction at the restaurant. His father, he says, has a broad expertise in Chinese cuisine. That knowledge is evident in the impressive amount of dishes the restaurant offers — everything from noodles to sizzling platters to seafood entrees and dim sum.

“There are certain dishes where there are Southern Chinese influences, because that is where (Howard) was born and grew up,” Gary adds. “We are a very well-rounded restaurant, so a lot of our dishes are really popular,” he says. Gary says that his father often likes

“My dad has a pretty extensive history with cooking,” Gary says. “He started off in Hong Kong when he was about 17. He started off as a dim sum chef, and then he slowly moved into other Chinese cuisine. He is a pretty well-rounded Chinese chef.” When Howard was in his 20s, he was hired as a chef at a restaurant in Hawaii. “He has been in the restaurant industry ever since,” Gary says. In 2001, Howard founded Golden Palace, where Gary helped out frequently while growing up. As Gary got older, he realized that he had a passion for the restaurant industry and returned to Golden Palace. These days, Gary says, Howard still does a lot of the cooking. “He still experiments also,” he adds. “A lot of times he comes up with new dishes himself.”

Recently, Golden Palace rolled out a number of new items, including Sizzling Black Bean Sauce Pompano ($12.95), a tasty fish served up on a sizzling platter. Howard created another dish — Golden Pumpkin Braised with Spare Ribs ($9.95)— recently after talking with a few customers. “We have a lot of customers who are regulars who have become almost like family, and they wanted to try something special,” Gary explains. So Howard came up with this dish — much to the customers’ delight. The dish now joins the menu as a special that will be available through the end of the month. Another popular dish is Garlic Crispy Skin Chicken ($20 for whole chicken, as pictured, or $11 for half), a flavorful chicken with a baked-to-perfection shell. This dish is typically only offered as a full order for larger parties, but for the holidays, the dish also will be offered as a half order. For another sizzling delight, try Beef Tenderloin with Black Pepper Sauce ($8.95) “Since it’s Christmas, we have some red bell peppers and some green bell peppers,” Gary says. For those looking for a place to host holiday parties, Golden Palace holds up to 500 people in its banquet hall. Gary warns that December dates are starting to fill up quickly, so make reservations as soon as possible. Golden Palace offers party menus, one of which, for example, starts at $179 for 10 people. f there’s one thing that can send vegetarians into a tizzy when dining out, it’s a simple little condiment called oyster sauce. There’s a bit of confusion, and many people, even in restaurants, actually believe there are no oysters used in its preparation, so they may steer you toward a dish that they sincerely think is vegetarian. But there is oyster extract or essence in oyster sauce (although there is a vegetarian version made with mushrooms out there). So if you choose not to eat fish, that means asking questions, as oyster sauce is such a popular ingredient, adding that earthy umami taste to so many Chinese dishes. You shouldn’t have to worry whether or not the food meets your dietary needs and tastes when dining out (or stress over the fate of poor little oysters). So if you’re a vegetarian, there is

one thing you can do to ensure a satisfactory dining experience: Just say so. If you do, many eateries will want to make you happy. After all, good news travels fast, and if they treat you well, the coconut wireless will make sure your friends and family hear about it. Royal Garden Chinese Restaurant is a great example. Popular for its delectable dim sum, the kitchen also prepares a variety of traditional Cantonese dishes. And if you don’t eat meat or fish, general manager Ian Tam says that’s really not a problem. “Sometimes vegetarians come in and ask what we can offer,” he says, noting that if you don’t want oyster sauce, they’ll leave it out and/or substitute soy sauce.

But you have to speak up. And if you do, Tam recommends two meat- and fish-free dishes to Dining Out readers that are not on the Royal Garden menu. Vegetarian Lettuce Cup ($13.95) is a fun concept. Lettuce leaves, shaped like a cup, are accompanied by stir-fried diced mushrooms, bamboo shoots and water chestnuts. Just fill each lettuce cup with the vegetable mixture, roll it up and chow down. The combination of tender mushrooms and crisp vegetables gives the filling an appetizing texture, and it’s fun to eat.

It’s served with a special sauce on the side (but again, be sure to remind your server that vegetarians don’t eat oyster sauce). Another request-only dish, which Tam says is quite popular with vegetarians, is Braised Tofu with Mushrooms ($13.95). It combines whole black mushrooms, tofu, choi sum and fungus stir-fried in a light brown sauce. So there’s no need for stress when dining out, vegetarians — just say so, then relax, leave the oysters in their bed and enjoy the Royal treatment. ust like the traditional grass-roofed Korean house after which it’s named, Chogajib Korean Restaurant offers diners a friendly, clean atmosphere in which traditional Korean food reigns supreme. While the Keeaumoku Street location attracts a wide array of kamaaina and visitors, chef and owner Jeong Lim encourages local residents to try his restaurant and enjoy a menu full of traditional Korean food and local favorites. “Our restaurant is like your house, and we make traditional dishes for you,” says Lim, who brings 15 years of restaurant experience to the table. “I’ve run many restaurants, including some on the Mainland, but I came back here and brought back what I learned. Korean food is very popular.” In addition to serving local favorites such as Ox Tail Soup ($12.95) and Kalbi ($14.95), Chogajib also offers an assortment of soups, stews, noodle dishes and pancake (jun) selections that are more common in Korea. Soon Du Bu ($8.95) is a soft tofu Chogajib owner Jeong Lim soup, which also includes egg, jalapeno peppers and with Steamed Monkfish green onion, and can be enjoyed with a mild or spicy broth. er. As with many of the menu items at Chogajib, the soup dish can be spiced up with Korean hot sauce. The popularity of jun, also known as egg pancake or batter, shines through in Chogajib’s menu with an array of offerings including Seafood Jun ($14.95), an egg and flour pancake that envelopes shrimp and green onion. Chogajib also offers special items, including Spicy Chopped Chicken Stew ($29.95). Another special dish that has received a great response from diners is Steamed Monkfish ($29.95), which includes large morsels of moist fish atop a bed of soybean sprouts, fresh vegetables and stalked sea squirts. The dish is enveloped in a spicy red chili paste sauce that brings some heat and a boatload of flavor to every bite. “I usually make the dish mild, but if customers want, I can make it extra spicy for them,” Lim says of the seafood dish. The eatery is open until 4 a.m. daily, and while it does not yet have a liquor license (expected sometime in January), customers are allowed to bring in their own alcoholic beverages as a supplement to the multitude of menu options. Takeout orders also are encouraged, making it possible for customers to satisfy their Korean food cravings in the comfort of their own homes.
