ow that we’re fullswing into summer, it’s time to really get into the spirit of the season. Welcome sunny days, bikinis, sand and surf, barbecues — and lychee! I'm loving all of the above, but most especially lychee. This ever-so juicy, rosy-skinned fruit with translucent white flesh is a rarity in some parts of the Mainland, but here in Hawaii it's abundant. Lucky we live Hawaii, huh? I remember picking lychee from my grandparents’ tree in the back yard as a child and eating it fresh. The sweet floral aroma of the fruit alone was captivating, but once you get beyond the rind and into the meaty layer, that’s when you’re exposed to lychee at its finest. And from then on, it’s just one after the other into your mouth. And taking it to the next level are the following Ono, You Know establishments that will make any lychee lover proud with its signature creations that magnify this luscious fruit. So, for your next picnic, you can check desserts off the list and cool off with a smoothie.

Fendu Boulangerie I consider myself blessed to have grown up in Manoa. It’s in close proximity to town, but it’s also its own peaceful oasis
when you want to drown out the crowd. The lush valley is absolutely gorgeous and the cascading waterfalls are heaven sent. What’s even better is that I never had to leave the valley to experience some of the best restaurants and eateries. One of my favorites? Fendu Boulangerie, of course. Conveniently situated in Manoa Marketplace, this quaint bake shop is owned and operated by chef Niel Koep, who you’ll find in the kitchen fulfilling his passion and baking up a storm. The aroma of fresh breads and pastries engulf my senses, and Koep’s indulgent masterpieces are worth the extra calories. My top picks are constantly changing, but currently, Lychee Danish ($2.25 each) and Lychee Caramel Flan are near and dear to my heart. “I just love lychee. It’s perfect for anytime,” Koep says. “I use seedless lychee in my pastries.” Knowing that Chef and I share a common love for this sweet fruit, I was eager to

apan’s diverse sushi culture has taken over the world, and Genki Sushi has been rolling out the best in kaiten-style sushi for more than two decades. Now, after three months of renovation, Genki Sushi’s Ala Moana establishment recently unveiled its first touch-screen order double-rail delivery system.

This popular concept originated in Japan, and Hawaii is the first state in the nation to introduce this revolutionary technology to its customers, which makes ordering from the menu a breeze. “Genki Sushi USA Inc. is honored to bring our innovative technological sushi double rail system to the
U.S. at our beautiful newly renovated Ala Moana Center restaurant,” says Yasumasa Sudo, president of Genki Sushi USA Inc. and senior managing director of Genki Sushi Co. Ltd. “Our customers now instantly can order their favorite sushi on a wireless touch-screen panel and quickly enjoy their order

with our speedy Bullet Express delivery system.” Genki Ala Moana patrons will continue to be presented with tried-andtrue sushi creations, which total to around 60 sushi classics, including nigiri style, gukan style and the traditional sushi roll. Once patrons are seated by Genki’s friendly staff, a touch-screen panel before them will allow the opportunity to scroll through the vast menu from the convenience of their seats and select up to four orders at a time. “Once guests place their order it should take less than a minute for their order to arrive via a bullet train, F-1 race car, surf board, space shuttle or kayiki fish on the revolving conveyor belt.” says director of purchasing David Moon, who previously travelled to Genki’s Japan

headquarters to learn about the double-rail sushi delivery system. “As customers are waiting for their food, they can play a quick game on the touch panel.” Of course, Genki’s servers will be on hand to assist gladly if needed, and also will deliver personally all soups and other delicate dishes to the table. “The new system will improve the speed of service and delivery to our customers,” Moon says. “It’s proven to be very successful in Japan, so it should be no different here in Hawaii.” “It’s exciting! This new
concept will make it easier for people to order their own food and there shouldn’t be any mistakes,” adds Genki Ala Moana manager Jeremiah Gualdarama. Whether patrons choose to dine-in or takeout, Genki Sushi centers around family, immediate service, ultimate satisfaction and affordable prices. All plates are colored with a ring around them and priced accordingly — yellow ($1.65), green ($2.35), red ($2.95), silver ($3.95) and black ($4.95). And although kaitenstyle sushi can be deemed a “fast-food” sushi of sorts,
Genki Sushi’s fare is of the highest quality, as the restaurant employs chefs who go through up to a year of extensive training. According to Moon, sushi featuring the standard ahi or salmon are top picks among patrons, including Spicy Tempura Roll ($4.95), a shrimp tempura roll topped with spicy tuna; Fried Spicy Roll ($3.95), a deep-fried spicy tuna roll drizzled with unagi sauce and spicy sauce; Ahi Salmon Nigiri ($2.95); Salmon Nigiri ($2.95); and Maguro Nigiri ($3.95). Other customer favorites are Calamari, Soy Beans, Teriyaki Bowl and Rainbow Roll, which consists of crab mayo, maguro, salmon and morsels of avocado. “Although sushi is what we’re best known for, Genki does offer other items as well,” he adds. “We have a few dessert selections that we’ve added to our repertoire, such as Teriyaki Ice Cream, which is vanilla ice cream with an
azuki bean filling and waffle cone exterior.” Genki Sushi is one of the fastest growing sushi empires in Asia and the Pacific. Currently, there are more than 140 Genki Sushi stores in Japan, and 71 spread throughout China, Indonesia, Kuwait, Hong Kong and Taiwan. Here at home, Genki Sushi USA Inc. operates 13 restaurants in the Islands, with nine locations on Oahu, two on Maui, one in Kona and one in Kukui Grove. Other U.S. establishments include three restaurants in Washington State and one in California. Keeping up with the times and technological advances, Genki Ala Moana is optimistically eager about what its newand-improved ordering system will bring. “The touch-screen delivery system adds a nice flair to the kaiten sushi market. It’s an innovative concept that we hope to bring to the other Genki restaurants on Oahu in the near future,” Moon says.

“But, it’s very popular.” For all of these sweets, call ahead because Larry’s tends to sell out fast. If you’re in need of a fix, you also can find Larry’s Bakery at Pearl City Momilani Rec Center from 3:30 to 6:30 p.m. Fridays. The farmers market also has a bingo night the first Friday of each month. Larry’s donates its Butter Logs and Jelly Rolls for prizes. It only takes one bite to understand perfectly.

he truest forms of decadence are best savored on days you need it the most. Enter Larry’s Bakery. With items such as Long Johns topped with powdered sugar or chocolate ($1.30), Butter Logs ($5 each) and Jelly Rolls ($5 each), the only problem you’ll have is making

a decision. You could start with coowner Iris Yafuso-Toguchi’s favorite. “(My favorite is) the Butter Log,” she says. “It’s just one of those, you know, when you have a bad day and you just need a fix.” It’s not just the baked goods that will keep you coming back. Speak with any of the staff and you’ll
feel instantly at home, which makes sense for this family-run business. Larry’s Bakery began with Iris’ father, Larry. Now, she and her brother, Lance, continue to share Larry’s classics along with new favorites. The Butter Log is one of them. “We go to the farmers market on Friday in Pearl City at Momilani Rec Center, and we actually started to sell there,” she says. Butter Logs and Jelly Rolls share a similar light cake. Strawberry jelly and coconut complete the Jelly Roll, while the Butter Log entices with its buttery frosting before it is rolled in more sugar. “It’s one of those you can’t stop cutting and eating,” says Yafuso-Toguchi. If you’re looking for one of Larry’s originals, indulge in a Long John. The recipe is the same as it was since its inception, and it’s filled with homemade custard. Choose between one topped with powdered sugar, or the bakery’s homemade chocolate fudge frosting — or get both. “Calorie-wise, off the charts probably,” says Yafuso-Toguchi.

Lupino’s exquisite Italian cuisine, you’ll love the dessert selections and presentation. Budino di Pane ($12) features warm housemade brioche bread pudding paired with macerated raisins and vanilla gelato. Bread pudding sits amid crème anglaise and

fresh berries, and the top of the bread pudding is baked to perfection and adds a crunchy texture that goes well with the soft, smooth center. For those who crave fruit for dessert, Torta di Mele ($12) will be to your liking. (surrounded by seasonal berries) and crème anglaise. “It’s not too sweet, and there’s a perfect balance between the apple tart and the vanilla gelato,” explains general manager Heela Mottus. Panna Cotta al Cioccolato Bianco ($11) is one of Mottus’ favorites, and it isn’t hard to see why. The dessert showcases an amazing creamy Italian white chocolate pudding with compote flavored with cardamom, lavender, orange peel and Madeira wine. “The white chocolate panna cotta is very light, and very delicious,” Mottus adds. “It comes with berry relish, and I think it’s the perfect dessert for after dinner.” While Panna Cotta al Cioccolato Bianco is light, it still bursts with flavor. Add in the berry relish and you have the perfect combination of sweetness. Other desserts on the menu include the famous Tortino al Cioccolato ($12), a house-made chocolate cake with a soft center, and Tiramisu ($12) made with marscapone cheese, espresso and layered lady fingers. Il Lupino Trattoria and Wine Bar is known for its casual, yet sophisticated ambiance, and the indoor and outdoor seating options add to the amazing dining experience. Each dessert is designed to complement the expertly prepared meals, and are light enough to enjoy even after a big meal. If the Italian cuisine and hand-picked wine don’t draw you in, the desserts definitely will. As they say in Italy, “Andiamo a mangiare!” Let’s eat!

ou can’t put a price on comfort food, and Million Restaurant hits the spot with an authentic Korean meal. Open for dinner only, the Sheridan Street restaurant hosts a slew of options, including Bul Go Gi (yakiniku style) and Kal Bi (yakiniku style), as well as home-cooked mouthwatering dishes, such as Kal Bi, Beef Brisket Kimchee Stew. This spicy stew is a hot addition to any meal, and this month is the perfect time to slurp up this savory concoction. ollow the signs that point to Ige’s Restaurant & 19th Puka for a casual Friday lunch any day, except Monday, when the eatery is closed. The spacious, relaxed dining room is perfect for a party of one — sit in peace and get your TV fix, you can even request a channel change
— or a party of 100. For meetings or parties, call to reserve seats; there is even an option to have a buffet set up specifically for your group. There is no table service during lunch, and, as owner Ron Ige says, the concept is like a lunch wagon with a dining room. “There’s no tips involved,” he confirms. “It’s run
like a takeout window. The seating is all open seating.” Order from the friendly staff at the counter, and while you relax in the carefree atmosphere (sports are often playing on big screen TVs), your food is carefully prepared with you in mind; it’s made to order, but comes out quickly. If you are in a big hurry, order from the Express Menu, which features tasty, readyin-no-time items that rotate depending on the day. Items include Turkey a la King and Fresh Corned Beef Cabbage. Ige visits the Honolulu fish auction and picks the fresh catch to feature on his menu, such as opah, and chef Reggie Ramos knows exactly what to do with it. Currently, Ramos is seasoning the Opah ($11) with only salt and pepper, steaming it, then covering it in teriyaki oyster sauce and finishing it off with hot oil. The fish is placed on a bed of crunchy shredded cabbage, and topped with green onion and chopped cilantro. The shoyu-based sauce pairs well with the flaky white fish (so fresh there is no fishy taste whatsoever) and doesn’t overpower it, yet adds schools of flavor. The fresh herbs add a final hit of bright green taste. You get a choice of sides, but the brown rice and tossed salad combination ensures a delivery of whole-grain complex carbohydrates that will sustain you throughout your busy day and a portion of fresh greens. Those interested in eating locally will rejoice in this bounty from our near seas that’s rich in protein and healthy fish oils. Another protein-rich favorite is Teriyaki Flap Meat ($10), which is the most popular thing on the lunch menu, according to Ige. “It’s soaked in our original family-recipe teriyaki sauce.”
The marinated flap meat is tender, but still has a hardy chew, and will have you humming “mmmm” when sinking your teeth into the sweet, gingery morsels of teriyaki. Pair it with white rice and potato mac salad for some extra scoops of plate-lunch comfort. The tangy, creaminess of the mac salad blends perfectly with the teriyaki. (But you knew that!) If you’re craving a big refreshing, yet satisfying salad, aim for Barbeque Chicken Salad ($8.50). Ramos grills the chicken breast, then finishes it with his own western-style barbecue sauce that is tomato-based with a touch
of sweetness rather than tang. The chicken is served in bite-size pieces over a bed of crisp romaine and iceberg lettuce, along with shredded carrots. The dressing option is up to you: choose from Caesar, Oriental or ranch. A light and fluffy fresh-baked roll accompanies the salad. Add this restaurant to your weekly lunch rotation. ade Dynasty has been wooing customers with its own twist on traditional Chinese cuisine for the last two years. “A lot of our dishes are traditional, but then some have evolved,” explains general manager Gary Chan. “You want to evolve with people.” Today, Chan says, the average diner’s palate tends to be much more sophisticated. One way that Jade Dynasty gets its cutting-edge inspiration is with frequent trips to Hong Kong and China. Each year, the restaurant sends either its chef or its dim sum chef on a work trip. There, the chefs have the opportunity to work at Jade Dynasty’s sister restaurants and learn new recipes and techniques. “They see what dishes they think will do well here and they will have a chance to practice cooking it there,” Chan says. “By the time they come back, they have it all down. “They get a lot of inspiration from General Manager Gary Chan. these other restau- Leah Friel file photo rants. ade Dynasty Seafood Restaurant has made a name for itself with its ever-evolving menu, giving even the most dedicated regulars something new to look forward to. Most recently, Jade Dynasty has revamped its banquet menu to incorporate a number of new items. “This will include some banquet items that you normally can’t find in other restaurants,” says general manager Gary Chan. A new item that will be incorporated into the banquet menu is Lobster with Mochi Rice (market price), which also is available as an individual dish. A whole lobster is steamed in a lotus leaf on top of the mochi rice, which features preserved meat, including lap cheong. This dish also comes with the option of adding crab instead of lobster. “The mochi rice will absorb all of the juices from the crab or the lobster,” Chan says. Another new option is a plentiful appetizer filled with the seafood of your choice. Enter Oyster Boat, Crab Boat and Seafood Boat. For each option, the
seafood is rolled out on a hand-crafted boat-shaped platter. “It is very impressive,” Chan says of the boats, which were custom made in China. “It has lights on it

INSIDER ver wonder what goes on behind the scenes at your favorite restaurant? Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience. This week, Dining Out gets the inside scoops from Japanese Restaurant Aki’s executive chef Shoichi Kosaka, who gives us a little taste of Japanese Restaurant Aki and shares just what fuels his culinary drive.

The Crab Boat features a whole crab, while the Seafood Boat features shrimp, abalone and clams. Diners also can substitute items in the boats for other seafood options. To order these separately from the banquet menu, they are priced at $55 per boat and can serve about five people. Another new selection is Braised Pork Ribs, which features tender, melt-in-your-mouth ribs that are bathed in a sweet sauce (Jade Dynasty’s secret recipe). Diners also can order buns to go along with the ribs. “We braise it for a long time, so it just falls off the bone,” Chan says. The dish also appears on the regular menu for $18.95. There’s an additional cost of $2 for four
buns. All of these new banquet items are available today. The restaurant can seat close to 330 guests for a banquet party. For smaller parties, parts of the restaurant can be sectioned off. The restaurant also has a stage, and is set up for audio and video presentations. Plus, Jade Dynasty offers a good deal: The managers will take care of basic video needs to eliminate the cost of hiring help. For more complicated audio/visual needs, Jade Dynasty has reasonable referrals. The banquet menu starts at $238. Guests also can substitute other items to create their ideal feast. “You can have a lot of choices. There is a big range for people to choose from,” Chan says. What inspired you to pursue a career in the culinary world? I knew I wanted to be a chef at a very young age. I have loved cooking since the first time I tried it, and have been inspired by my dream to be an executive chef ever since. As soon as I graduated from high school, I started chasing my dream and got a job at one of the best finedining restaurants in Kyoto that specialized in very traditional-style Japanese food. It was there that I received my first culinary training and learned about the restaurant business. My inspiration since then has always been to keep learning and improving, and to give diners the best experience. What’s your most popular dish? The most popular item I create is sushi. We recently started offering a special sushi menu at Japanese Restaurant Aki because customers were requesting it so often. I take pride in the quality of the sushi that I make, and try to keep the sushi we serve as traditional as

possible to bring the best of Japan to Honolulu. I also have seen the increase in popularity for Nimono, or traditional Japanese simmered side dish, which customers always praise. Is there a dish that you create that’s not on your menu, but available upon request? Our new sushi menu was, in fact, created because so many of our customers asked their server if sushi could be

made for them by special request. As a result, we now have a nightly sushi menu that features clean and simple favorites, as well as items that are constantly changing. What is the biggest compliment you’ve ever received as a chef? Working in Japan, I never had the opportunity to interact with customers at the restaurant. Now, working at Japanese Restaurant Aki, I am behind the sushi bar, in and out of the kitchen and interacting with customers throughout the evening. It is such an honor to hear compli-
ments of any kind from them while I work, and it’s a completely new experience for me. I can’t say that any compliment has felt better than the other. It’s always such an incredible feeling.
If you could serve food to a celebrity, who would it be and why? What dish would you serve? I would love the chance to serve President Obama here in Hawaii on one of his trips. I would definitely want to make him his own Obama sushi roll. I’ll have to start thinking about what would be in one of those!

executive chef at Hy’s Steak House for nearly 30 years, corporate chef at Good to Grill and Burgers on the Edge, and co-owner of Formaggio, describes the food at Cafe Julia as a flair of Mediterranean with an infusion of Pacific Rim and Eurasia. It’s also fresh and wholesome, with the use of the freshest ingredients from the Islands as much as possible. “Even before chef Arcano came, we’ve always been fresh, wholesome,” says owner/president Emerson Ribao. “For example, with the fruits and vegetables we use. Also, we use Shizuoka wagyu beef air flown direct from Japan.”

The atmosphere is open, light and calming, but don’t let the casualness of it or even the word ‘cafe’ fool you — it’s fine dining, as is the service. The lunch menu features a great assortment of salads, sandwiches and entrees, including Chicken Marsala, Loco Moco, Shrimp Linguini, Garlic Ahi, Furikake Salmon and New York Steak & Fries. Among the favorites is “The Emerson” Salad ($13) with spring greens, fresh island corn, balsamic vinegar topped with potato chips, grilled rosemary chicken and garnished with carrots. For dinner, the menu
turns up a notch with gourmet items, such as Smoked Salmon Canapes, Oyster Rockefeller, Escargot and Seafood Crepes for starters; Table Side Salads; and tempting New York Steak, Filet Mignon, Slow Roasted Prime Rib, Osso Buco, Rack of Lamb, Chateaubriand for Two, seafood and more. The dynamic duo recently opened King’s Shabu Shabu on the corner of McCully and Young Streets, and offer customers a vast array of fresh seafood selections, tantalizing shabu shabu options and Cajun-style combos that take one’s dinner experience to the next level. The restaurant features a bright and inviting dining area with tables suited for
groups of all sizes, all of which include built-in shabu shabu hot plates. King’s Shabu Shabu offers an assortment of fresh meats, including traditional favorites such as beef, pork, chicken and lamb, as well as exotic options including pig liver, frog, cuttlefish and conch. understand exactly how he incorporates lychee into both of these decadent treats. Lychee Danish begins with basic Danish dough composed of legit European-style butter. It’s then filled with a blend of pastry cream and almond cream, and finally topped off with lychee and a drizzle of streusel. Sushi YuZu Sushi YuZu breathes new life into West Oahu, as this restaurant specializing in innovative, izakaya-style sushi now calls Ko Olina home. Husband-and-wife team Isamu and Moco Kubato head the operations here and present their diners with only the best of bold flavors that bring a contemporary flair to traditional Japanese cuisine. While the restaurant’s sushi standards of Omakase Hawaii and Omakase Japan are definite crowd pleasers, appetizers such as Heart of Palm Tempura and Australian Wagyu Lemon Beef start any meal off right. Lucky for Hawaii diners, though, Mimasuya Italiano of Kyoto has figured out the perfect amount of Japanese spice to add to your favorite Italian dishes, making them soar to new culinary heights. “It’s traditional Italian with a Japanese flair to it,” says bar manager Michael Lopez. “Mostly the flair has to do with the presentation, and some of the dishes consist of Japanese ingredients, like with our appetizers and soups.” The elegant Kapiolani Boulevard eatery is the first of Japanese restau-
ranteur Masaki Hibi’s eight dining establishments to open outside of Kyoto, Japan. Since debuting in December of last year, Mi-
masuya Italiano has drawn in a growing number of diners seeking its unique style of fusion cuisine. Nothing gives patrons a

Unveiled earlier this month, the lavish dinner course is available Sunday through Thursday and highlights a glorious selection of starters and pastas. Executive chef Toshiya Umeda brings 20 years of experience to each carefully crafted plate as well. Before you dive into your set menu, you’ll enjoy the chef’s amuse-bouche, or tiny pupu served at the start of every meal, to get your mouth watering. When AliCarte stopped by, Umeda had prepared a refreshing cucumber with smoked salmon mascarpone cream cheese that set the tone for an exquisite meal. The set menu begins
with another dish crafted by Umeda, this time in the form of a Chef’s Choice Assorted Appetizer Plate, which changes daily. You can enjoy such fusion-filled bites as yellowfin tuna, mango wrapped in prosciutto, grilled scallop and roasted duck breast. Patrons also choose from soup or salad to complete the first portion of their meal. Fresh house salads are topped with either honey mustard dressing or Mimasuya’s Japanese dressing. Or go for one of the soups of the day, which feature such delicate flavor compilations as Kabocha Pumpkin Potage Cream Soup. For the entree, Mimasuya Dinner Set Menu focuses on the establishment’s signature items — pasta, pasta and more pasta! From Penne Arrabiata to Tagliatelle Bolognese, the restaurant’s traditional Italian dishes are al dente, and all fabulous. Diners may order any pasta dish as the main course of their set menu. General manager Shin Yano suggests Pescatore (additional $7 with set menu) prepared with spaghettini and fresh seafood — octopus, mussels, shrimp, scallops and Manila clams — in Mimasuya’s original tomato sauce, complete with a hint of spiciness. He recommends Parma ham “Peperoncino” if you’d like something on the lighter side. “There’s a lot of locally grown ’Nalo Farm arugula to go with the real Parma ham,” says Yano. This bowl of spaghettini is cooked with olive oil and garlic, then drizzled with more olive oil as a finishing touch. With a Mimasuya Set Menu, you’ll set yourself up for a divine evening of Italian and Japanese fare.

uring this unpredictable economy, some restaurants are being forced to sacrifice on portion size and quality of ingredients to stay afloat. Naturally then, it is no surprise why the abundant and flavor-packed cuisine at Fairwood Drive Inn and Diner has had hungry patrons returning for more than 18 years. Famous for its Chinese-style, comfort foods, the award-winning restaurant offers something for everybody. “There is such a huge variety of dishes that can be cooked any which way,” says Tiffany Ko, owner of Fairwood Drive Inn and Diner. “Our menu is still very much traditional Chinese cuisine with an added local flair.” After immigrating from Zhongshan, China, more than 23 years ago, Ko began to incorporate her cooking techniques and recipes she had learned since childhood into her cuisine. “Growing up, cooking was a part of daily life,” she explains. Diners at Fairwood can choose from a variety of plate lunches,

The restaurant’s signature Roasted Duck ($8.95) sits overnight coated in a thick glaze of Chinese spices, chopped garlic, and onions before it is cooked. “We marinate the duck and cook it in a way so the meat stays tender on the inside but crispy on the outside,” Ko states. “It’s the only way to truly bring out all the flavors.” Quality and consistency are paramount to Ko and her staff. “All of our dishes are cooked to order so you know it’s fresh, and I like to be generous with portion sizes,” she says. “After almost two decades of service, I aim to deliver the highest quality cuisine at the best possible value for the customer.” Additionally, Fairwood will be expanding its menu to include different types of cuisine, as well as a breakfast menu in the months ahead.
