The Golden L Age of French fries

ike yin and yang, and ice cream and cake, there are just some things that are meant to be together. The same holds true when it comes to a good old juicy burger and steamy hot French fries. And we finally think it’s time the French fry deserves to shine in a golden glory all its own. The culinar y origin of the French fry began in European countries, including Belgium, France and Spain as early as the 1700s. Commonly referred to as fried potatoes at the time, it was the United States that popularized the thin style of fries we now see in many restaurants today. We scouted the Windward side of the island for the most fiendishly fantastic, “ono, you know” fries, and came across several so mouth-watering tasty, we didn’t mind putting in an extra hour on the treadmill. So, the next time someone asks you, “Would you like fries with that?” at the following establishments, the answer should be a definitive and resounding, “YES!”

Teddy’s Bigger Burgers

shakes has undoubtedly made a name for itself when it comes to quality food and customer service. All items are prepared to order, and Ted Tsakiris, co-owner of the diner-like eatery, says its fries are some of the best by far. “People think of French fries kind of like a side thought or afterthought because it’s usually a side dish, but for us it’s a big thing. Many people will say our fries rock and they won’t even mention our burgers — and we’re known for our burgers!” On the menu is a vast selection of “Fries-n-Sides,” including Teddy’s Extra Crispy Fries ($1.99 small; $2.79 large), Spicy, Garlic or Cheese Fries ($2.49 small; $3.29 large), Tots ($2.49 small; $3.29 large) and Onion Rings ($3.29). Our favorite is the Spicy Fries — a n d you better

believe it, these fries are sizzling — dare I say, caliente! — in a smoking hot way! The seasoning consists of TBB’s special mix of Cajun red-eye seasoning, blackened seasoning and cayenne pepper. Yet, what makes these fries extra special is the sweet and tangy sauce that perfectly accompanies it. “You have the heat from the Cajun, and then you have this sweet sauce that kind of smooths it out,” Tsakiris explains. It’s nothing but the real deal at Teddy’s. Come in with a hearty appetite because the portions are generous. “We make sure the fr y bags are stuffed because they’re so great!”

The Show Must Go On at Don Ho’s By Jo McGarry

A

t Don Ho’s Island Grill, you might expect to hear the strains of ‘Tiny Bubbles’ drifting through the restaurant as tourists come in search of memories of the late, muchloved entertainer. But the musical legend also is honored in a living, breathing and highly energetic way each week as a talent search for Hawaii’s most-gifted entertainers takes place at the restaurant that bears his name. Al Waterson, the multi-talented singer, actor, humorist and professional emcee hosts Sunday night talent searches and Thursday night reviews, along with his wife and longtime entertainment manager, Nancy Bernal. I met them at Don Ho’s to check out the menu (try the calamari and chef Robert

Dennis’ Hawaiian plate when you go), and to chat about “Al Waterson and You.” JM: I know that you’ve been here at Don Ho’s for more than nine years, but when did “Al Waterson and You” begin? AW: Oh, way back. We’ve been doing this in one form or another for 28 years. We started with lyric sheets and an 8-Track. And Don Ho and I go way back, too, so long that I can’t even remember (laughs). Don used to stop by the shows here, and the winners would join him on stage at his show in Waikiki. JM: So you showcase talent as well as search for talent? NB: Yes. Primarily, it’s a singing competition where we are looking for talent, but

at the same time we’re providing a showcase for new talent. We have a lot of people from the industry — agents, promoters, and all types of people who come each week. This is one of the rare places where all ages are encouraged to participate and perform. JM: And you have some pretty big stars that have walked across the stage. AW: Nancy has been working with young talent for such a long time; she does an amazing job. And Don Ho’s is a great environment for people to come. They can relax, enjoy the food, the entertainment. mote a sense of camaraderie and family fun here and it’s a very pleasurable experience. And for the performers it’s an opportunity to be judged by professionals. Our panel of judges is always made up of industry professionals. JM: You have to be at least 6 years old to enter competition and there’s no upper age limit. Do you think that children are more precocious now than ever before? NB: I think that the children are getting better each year and they just want to be seen and heard. The talent is getting so much stronger — when they come in they are already prepared and mostly they go on and have a really good time. Sometimes people who don’t win will still get noticed and be given opportunities. one. And it’s not just about singing. Casting directors often come to our shows and request performers audition for movies, commercials, etc. JM: It seems fitting that a talent search for entertainers is being held at Don Ho’s. AW: Yes. It’s like we’re continuing Don’s legacy … it’s a good feeling here. What’s so great about the evenings is that they are for anybody and everybody — all types of music, all kinds of people. You never know who you’re going to meet or hear.

JM: You’ve probably tried everything on the menu here. What’s your favorite dish? AW: The Surfboard Pizza and the sweet chili sauce chicken wings. Can’t get enough of those. I’m a chicken wing man. NB: Oh, there’s so many, but if I had to choose one, it would be the Surfboard Pizza. Not only does it taste great, the presentation is delightful. They place two big cans of pineapple on your table and it’s used to elevate a mini surfboard. The pizza rests on that and everyone loves it because no one does pizza like that. Don Ho’s is perfect for parties, fundraisers, and they even have weddings here. It’s a friendly atmosphere and it won’t break the bank.

Ruth’s Chris Turns the Big 4-5 Steak house celebrating anniversary with special menu, trip giveaway By Jo McGarry

ith just two weeks left in July, there’s still time to head over to Ruth’s Chris Steak House for a special menu, and the chance to win a winefriendly trip to San Francisco. The popular steak house is celebrating its 45th anniversary nationwide (it’s the 20th anniversary of the original restaurant opening in Hawaii) with a $45 complete menu and a trip to San Francisco as part of the summer celebration. The $45 menu continues a Ruth’s Chris Hawaii tradition that began a year ago when each of the steak houses offered reducedprice, fixed-price meals. The “prime time” meals soon became so popular that the specials now run throughout the evening. On the menu until July 31, you’ll find Louisiana Gumbo or Steak House Salad, Steak and Cajun Shrimp, Rib-eye, Veal Chop or Stuffed Chicken Breast served with a selection of the steak house famous side dishes, including potatoes and creamed spinach. Dessert is the utterly addictive and artfully presented Bread Pudding. For those with simpler and less calorific tastes, ice cream or sorbet is also offered.

The restaurant has partnered with Guenoc Winery to bring Hawaii residents an exciting contest and the opportunity to try some of Guenoc’s best wines. Featured selections include Langtry Guenoc Valley 2006 Chardonnay for just $10 a glass ($40 bottle), and Langtr y Napa Valley 2005 Cabernet Sauvignon for $11.25 a glass ($45 a bottle). “We’ve had a long relationship with Guenoc since the days when Orville Magoon owned the winery,” says Ruth’s Chris owner and CEO of Desert Island Restaurants, Randy Schoch. “The Hawaii connection at the winery remains a strong one.” The San Francisco Trip includes roundtrip airfare for two, with two nights VIP accommodation at the beautiful Langtry Estate, where actress and estate owner Lillie Langtry lived. The prize also includes a VIP dinner and tour of the winery. Hiroshi’s Locally Grown Menu

very Sunday and Monday, Hiroshi Fukui, the executive chef of Hiroshi’s at Restaurant Row, prepares a menu using the best locally grown produce. Seasonal, sensational, and generally a showcase for completely new dishes, the four-course meal offers guests the opportunity to try new foods and find out what island farmers are growing. On the menu this month, you’ll find a tender sous vide of lobster tail. “We cook the lobster tail at about 140 degrees in a cryovac (vacuum) bag and then sear it and serve it with squid ink pasta and Brussels sprouts,” explains Fukui. The colorful plate is artfully presented — with the shiny black pasta strands and bright green sprout leaves garnishing the plate. “People either love or hate sprouts,” says Fukui. “But they are a great vegetable, and they add color and texture to the dish.” While the aim of the locally grown menu series is to support local farmers and to in-

Schoch, “but we have been able to support local agriculture by including as much local produce as possible on our menus.” That means ripe tomatoes from Kamuela, sweet onions from Kula and a farmto-table commitment to support local agriculture. And while the well-established steak house is something of a tradition in Hawaii, Schoch is not about to rest on his laurels. Staying on top, he says, is all about changing with the times while keeping core values steady. “You know, we believe in the things that we have always done,” he says. “We believe in providing a great product, with good servers, in a great atmosphere. The profile of the supermarket deli has morphed from cold cuts, cheeses, and party platters to fabulous ready-to-eat entrees, side dishes, and everything in between. We marvel at the variety of meals and take-out specialty items now being offered at the grocery store. Time-pressed society seems to be leaving the cooking to chefs, opting for more store-totable meals. Offering bentos to gourmet fare, here are our top picks for supermarket dining.

1 Foodland Farms The Foodland Farms concept was a response to the farm-fresh, locavore trend among foodies. Trend schmend, we just love the expansive deli section that takes up the entire makai portion of the store. It’s a wonderland of the best-prepared foods in town, including Boar’s Head premium deli meats and cheeses on heaping sandwiches ($5.99). Sushi; deli sandwiches; Italian panini; freshly-made soups; breakfast, lunch and dinner buffets; and a chiller full of international cheeses will dazzle you. Nestled within Kaneohe is this small local eatery known for its low prices and huge quantities of food, made with a simple zest of local flair. t Hokulani Bake Shop, there are 16 different flavors of cupcakes and over 650 different sugar cookie shapes. Made using fresh local eggs, real butter, sugar and flour, the tiny packages of sweet perfection are without ugly ingredients like corn syrup or hydrogenated oils. Hokulani Bake Shop owners Tushar and Ana Dubey have recently opened a “satellite store” via a Cupcake Mobile on the North Shore. We stopped by the Restaurant Row location and asked Malia Gurnay and Nedine Davenport what they’d recommend

from the cupcake menu. Malia Gurnay: “We come here as much as we can! Whenever we’re in the area we stop by, as long as there’s no line outside. “The presentation is really nice, and ever ything about the cupcakes they make here is perfect. “The way they look, the recipes, the taste, the variety of flavors. I think my favorite flavor is definitely the red velvet cake … but they’re all so good.”

The birthday is a good excuse, but we really like to come whenever we can. Red velvet is definitely my favorite flavor, too. But I’d recommend the guava and the lilikoi … or almost any of the other flavors.”

Tempura Batter

Ingredients: • 2 blocks fresh ahi (about 1 1/2-2 lbs.). Cut into inch tube about 6 to 8 inches long • 4 sheets nori (Japanese seaweed) • 1 cup Tempura Batter • 1 cup panko breadcrumbs • Vegetable oil, enough to fill a frying pan or minimum of 1-inch deep

Ingredients: • 3 cups all-purpose flour • 1/4 cup cornstarch • 1 egg, beaten • 1/2 cup water • Salt and pepper, to taste

Preparation: • Wrap each piece of ahi with two sheets of fresh nori, then dip them into tempura batter and coat with panko breadcrumbs. • In a wok or a deep fryer, preheat the oil to 375°F. Fry fish until golden brown (about 30 to 45 seconds) and cut into 8 to 10 1/4-inch-thick pieces.

Thai Yellow Curry Sauce

Fresh Ahi Katsu with Yellow Curry Sauce & Fresh Mango-Tomato Salsa Serves 4

Ingredients: • 1/2 tbsp. Thai yellow curry paste • 2 cups coconut milk • 1 tbsp. fish sauce or Aloha Shoyu • 1/2 tbsp. curry powder • 1/2 tbsp. sugar Preparation: • In a saucepan with medium heat, combine all the ingredients and bring to a boil. Then simmer with low heat for 10 minutes or until the sauce thickens to the consistency of mustard.

Preparation: • In a small bowl, combine all ingredients until the batter has no lumps. Set aside.

Mango-Tomato Salsa Ingredients: • 2 tbsps. ripe mango, diced • 2 tbsps. tomato, diced • 1/2 tbsp. Chinese parsley, chopped • 1/2 tbsp. onion, chopped • 1/2 tbsp. bell pepper, chopped • 1/4 tbsp. lemon juice • 1/4 tbsp. balsamic vinegar • 1/4 tbsp. sugar • Pinch of salt, to taste • Dash of Tabasco, to taste Preparation: • In a small bowl, combine all ingredients. Presentation: Place the katsu slices on one side of the plate and the Mango-Tomato Salsa on the other. Serve with Thai Yellow Curry Sauce.
