Hy’s specializes in USDA prime beef that is aged and trimmed on the premises, with the belief that this process retains the tenderness and taste of the meat while reducing the fat content. Chef Zach Inouye says the secret behind the beef ultimately lies in the kiawe wood, which cooks with such an intense heat that, as a result, highly complements the flavor of the beef. All entrees come with a choice of mashed potatoes, baked potatoes, French steak fries, white, brown or pilaf rice, but when sharing a meal, I highly recommend an accompaniment side dish of Garlic Fried Rice ($7.95). Inouye, who has been Hy’s executive chef for the past eight years, agreed. “It’s very popular, actually. People like to order it if they’re sharing a meal — the steaks here come out fairly large, so they just share steaks and the garlic fried rice,” he says.
“I didn’t start this item myself. It’s been around for quite a long time and it’s gotten real popular, so I can’t take it off the menu.” Nor would he want to. In all honesty, the Garlic Fried Rice is literally to die for! As an all-time favorite of mine, I just can’t get myself to share it with

I have to admit, I will never tire of this dish, for miracles occur when the right ingredients are combined. Sam Choy’s Breakfast, Lunch & Crab World-renowned chef Sam Choy certainly knows how to cook up all your local favorites, and hungry diners can find all of his marvelous creations at his Nimitz eatery, which is known for much more than merely
breakfast, lunch and crab. You’ll always find the restaurant bustling with guests from near and far, all with a common goal in mind — to devour ono cuisine like Sam’s awardwinning poke and Sam’s Favorite Burger, to name a few. However, there’s one thing in particular that my tummy longs for most, and that’s his famous fried rice. Conveniently available for breakfast, lunch and dinner, early birds can start their day with Fried Rice Topped with Two Eggs ($7.50), or enjoy it as a side dish during lunch and dinner hours for $4.95. Dining room manager Gordon Medeiros says the fried rice is a hit among guests, and credits its intense flavor to a bounty of delicious ingredients. “We add Portuguese sausage, bacon, eggs, onion, green onion, soy sauce and pepper to our fried rice. Basically those are the main ingredients, but sometimes we’ll put in lap cheong too, if it’s available, and a little bit of oyster sauce,” Medeiros says. Then he shared the one special ingredient that takes this popular menu item to a whole new level. “When the fried rice is served at

your table, the one condiment that really draws out all the flavor after it’s been cooked is plain old black pepper. Most people wouldn’t believe it takes only a simple thing like that, but if you put it on liberally, the flavor really just comes out,” he attests. “I learned that trick when I was growing up in Japan. The Japanese always made their fried rice very, very light and let the ingredients take over the flavor, and that little dash of pepper finishes it off perfectly.” Any entree on the menu that contains rice can be substituted for fried rice at no extra charge. Now, if that isn’t music to your ears, I don’t know what is.

I
f the family that plays together stays together, then what does the family that works together do? Well, if it’s the Wongs, who own and operate On On at McCully Chinese Restaurant — the answer is they ultimately succeed together.

Cowan, 77, and Faith Wong, 65, with the help of son Norman and daughter Julia, have been devoting endless amounts of time and energy to this family restaurant for more than 31 years. On On first opened its doors in Kapahulu in 1980 before relocating to the current location in McCully in 2000. “Being that this is a family business, I think it’s helped with the success of the restaurant because everyone is helping each other out and everyone more or less gets along,” says Norman, who serves as manager of On On at McCully. Julia, however, will soon manage Duck Yun Chinese Restaurant, another family eatery in Aina Haina Shopping Center, which is currently undergoing renovations and will reopen in February. “If you work, you might as well work for a family business; make the money for the family,” she explains. “My father thought of all the menu items at both restaurants, and it’s great to focus our time around our business but still be with family every day.” Cowan is originally from Guangzhou, while Faith was born in Hawaii, but later moved to Hong Kong. Together they’ve always had a passion for food and the drive to succeed, and three children later (Norman, Julia and Cynthia), they took it upon themselves to invest in a “fourth child” — and from there On On was born. “Our parents, they’re very hard-working and have been working since they were teenagers. They’re very dedicated to what they do and it’s what they live for,” says Norman, who has been

lending a hand at the family restaurant since his high school days. “My parents have always been active in the food and beverage industry,” he adds. “My mother was a waitress when she was 15 at McCully Chop Sui, and then she worked her way up the ranks before working at China House. It just seemed like a natural progression because my mother had a lot of restaurant experience. My father worked for a noodle factory and can cook really well.” Cowan worked as head chef of On On for years before relinquishing the wok and tongs to executive chef Min Hong Lee. And with more than 200 items on the menu, Lee is busier than ever. “We infuse a local flair to Chinese food,” Norman states, adding that the restaurant caters to mostly locals who particularly love kao yok and char siu. Customers also gravitate toward the Peking Duck with Steamed Buns ($18, half; $35, whole); House Special Noodle ($9.95), a crispy noodle with seafood, chicken and assorted vegetables; and Shrimp with Pepper Salt ($11.95), which consists of lightly fried shrimp sauteed with scallions, chopped red pepper and other savory spices. “It’s a bit spicy, but you can eat the whole thing — the tail, the shell, everything — the shell has the most flavor,” Norman attests. “We serve everything family-style, from Cantonese to some Northern Chinese cuisine, and other signature dishes are the Beef Broccoli ($9.95), Shrimp Canton ($11.95) and Ginger

Chicken ($9.95).” Julia adds, “People love the ginger chicken, and the cake noodle is also very good and you can have it with a variety of toppings. Sometimes I do beef tomato on top of cake noodles.” And for the dim sum diner in you, a handful of these a la carte options can be ordered off the menu as well, including manapua, jin dui, egg tarts and shumai. “Jin dui and gau are perfect for the Chinese New Year celebration,” Julia says, also noting the special dinner menus are now available in honor of Chinese New Year, which kicks off Feb. 3. “Especially important for Chinese New Year are the deepfried oysters and the jai (monk’s food),” Norman explains. “The steamed sea bass is also very popular here, and it’s always good to have some fish for the Chinese New Year.” And in honor of the restaurant’s 31st anniversary, On On also will be giving away one bottle of oyster sauce with each purchase of $20 or more off the regular menu while supplies last. The Wongs graciously acknowledge the fact that On On has been able to withstand the rise and fall of the economy throughout the years, and are quick to credit the infinite support of their loyal customers. “We’re still here and thriving, and it’s because we have such a great following — people want us to stay around,” Norman says. “We’re very lucky, business has been good. “It’s true, we have the same people coming back every week,” Julia chimes. “My mother is friends with everyone — she always runs into people she knows. She remembers customers who used to dine at the Kapahulu On On as little kids and now they’re all grown up, but still frequent the McCully restaurant.” Feeding generations of families, On On is open daily from 10:30 a.m. to 9:30 p.m. and can seat up to 200 hungry diners at a time. Julia and Norman both hope to keep On On and Duck Yun in the family for as long as possible, and with 20 people on staff they are able to give their guests only the best. However, at the end of the day it all comes back to the family. “I think it’s always been in my blood to want to be part of the restaurant industry,” Julia recalls, adding that her children, Santino, 19 and Jewelle, 15, also will be offering their services to Duck Yun when time permits. “The greatest satisfaction is that all our hard work is benefiting the family,” says Norman with a smile.
2 “You also meet all kinds of people and in a way they become a part of our ‘extended family,’ so that’s definitely a reward in itself,” Julia adds. “On On has been in the family for such a long time and it’s been successful, so it’s only right to keep it going.”

The first of many love notes, if you will, can be found on Makino Chaya’s ever-expanding menu. Back in October, the four-year-old restaurant added Miso Butterfish, Smoked Salmon, Calamari Steak and baked Indonesian Blue Soft Shell Crab to its dinner menu. The additions were such a hit that Chris Mitchell, general manager of operations, reeled in even more offerings from the deep, turning the dinner menu into a literal “crab fest.” “I try to keep with the locals first,” says Mitchell.
“Tourists come and go, but the locals keep the business going.” The crustacean love fest includes Snow Crab, Dungeness Crab with a black bean sauce, Soft-Shell Crab, Blue Crab Cakes, 6-ounce Lobster Tails, Grilled Salmon, Uni (sea urchin) and Garlic Shrimp. The lunch menu has expanded since last fall. Now customers can order Snow Crab, Calamari Steak, Grilled Salmon and shrimps prepared in three ways — tempura-style, and in lemon and garlic sauces — for

2 their mid-day meal. “There’s still well over 75 different items (on the menus), but these are a lot of things that people ask for, so that’s what I bring in,” says Mitchell. The deals keep on flowing with the continuation of Makino Chaya’s bento specials. The Tokyo Chicken Bento ($2.97) comes with rice, yakisoba, crab shumai, broccoli, tomato, gyoza and tamago, while the Garlic Ahi, Chicken Katsu and Crab Meat Omelette bentos ($3.97 each) include the same plus mac salad, seaweed salad and a piece of crispy fried chicken. Same goes for the Crab Meat Salad Bento ($3.97), which also includes four California rolls and inari sushi, and the Barbeque Pork Ribs, Grilled Salmon and Miso Butterfish bentos ($4.97 each), which pile shrimp, tomato and two shrimp
tempura on to the box. Makino Chaya is giving a $5 gift card with the purchase of a $4.97 bento and a $4 gift card with $3.97 bento plates that are good through the end of February. Mitchell says you must call at least one day in advance for bento orders, and that the gift certificates are not valid with any other discounts or promotions, like the Birthday Special that gives the birthday child a free meal on his or her special day, or the Kamaaina Special good for 10 percent off lunch and 20 percent off dinner. (See coupon offers in this week’s issue for full details.) One discount not to pass up next month is the Valentine’s Day lunch and dinner specials. On Feb. 14, Makino Chaya’s all-you-can-eat lunch buffet costs $13.98, and dinner is $29.98.
4 And, in addition to the restaurant’s beloved bounty of creatures from both land and sea, folks can dine on Washington-Fresh Half-Shell Oysters to their hearts’ content. Oysters come prepared both raw or cooked and are available only during dinner Valentine’s weekend (Feb. 12, 13 and 14) while supplies last. Finish the experience with one of the 30-plus varieties of desserts, including crepes and miniature cakes. “Locals don’t care too much for the desserts,” Mitchell laughs. “They care more for the crab, the steak, the chicken. Dessert’s like, eh, if I have room!”

Tanaka Saimin burst onto the restaurant scene last fall in a spacious spot at 888 N. Nimitz Hwy. The luck doesn’t end at these auspicious numbers, however, as owners Joan and Paul Watanabe have decided to offer three of their most-popular dishes as weekend specials starting today. This Sunday and every Sunday thereafter, Chef Sing Lee will be whipping up pot after pot of his delicious Oxtail Soup. Prepared with Chinese five star, orange peel, red dates and a blend of the chef’s secret spices, the soup is sure to warm you from the inside out. The soup costs $12.95 and comes with rice, Chinese parsley and a ginger dipping sauce. The chef likens this soup to another Tanaka Saimin favorite — the Beef Shortrib Soup ($12.50). A savory blend of tender shortribs, vegetables and clear broth, the generous bowl of soup is served with a side of rice, kabocha, pickled cabbage, takuan and Lee’s special dipping sauce. Another regular menu item to try to keep you satisfied during the week is the Combo Mix Plate, which gives customers the choice of two proteins and side salad. Options include teri beef, teri pork, hamburger patty, fish tempura, yakitori chicken or the two mostrequested combos, shrimp omelette and teri beef tempura. Enjoy these duos with fried saimin, macpotato salad or fresh tossed greens.

T Weekend specials kick off at Tanaka

he man behind Tanaka Saimin’s long and varied list of menu items is Chef Sing Lee. The talented chef started as a cook in Hawaii’s hotel industry 45 years ago. After 20 years of preparing “mostly American and Chinese food,” Lee found his true calling as a restaurant chef. “I love to eat,” he laughs, “then I make things my own way to make my own recipes for the public.” His love of food is evident in the way he describes each dish and ingredient. It’s also clear by tasting the many menu items — all MSG-free! — he makes from scratch each day. Some standouts are the Tanaka Special Saimin ($8.45), Cone Sushi ($1.50) and the trio of desserts Lee hand-prepares daily: Lilikoi Chiffon Pie, made with fresh-squeezed lilikoi juice; Okinawan Sweet Potato-Haupia Pie on a shortbread-mac-nut crust; and the light-as-air Bread Pudding filled with a mixture of nuts and dried fruit. All desserts cost $3.25 and sell out fast, so much so that owners Joan and Paul Watanabe say some folks order dessert first just to save themselves a slice! “The pies got real popular — almost more than saimin!” Joan laughs. The popularity of Lee’s pies shows that Tanaka Saimin is more than just a saimin shop, which may be an indication of the route Tanaka Saimin may take when its menu changes in about a month. “The saimin, we don’t want to change too much, but more in the breakfast, lunch and dinner menus,” Lee says, explaining that he’d like to expand these options so there will be plenty of food ready at all hours of the day or night. “(Joan and Paul) are my friends,” he adds, “so I’m trying to help them with this brand-new, beautiful restaurant that they just started.”

Located at The Marketplace at Kapolei, this popular Chinese eatery welcomes diners to take part in its allyou-can-eat evening buffet, served Monday through Thursday for $14.95 per person and Friday through Sunday for $17.95. Lunch buffet costs $8.95, Monday through Friday and $10.95 Saturday and Sunday. “The buffet is one of the main attractions here,” says manager Crystal Chan. “More people tend to eat from the buffet than off the menu.” As part of the dinner buffet, customers will find Steamed Snow Crab legs with a side of melted butter in addition to Salt and Pepper Dungeness Crab, to name a f e w delectable
seafood dishes. With more than 50 buffet items featured daily, Chan advises diners to come with a hearty appetite. “Everything is homemade and cooked fresh. Ingredients: • 1 whole red snapper, about 1.5-2 pounds • 1 tablespoon vegetable oil • 0.5 tablespoon sesame oil • 1 tablespoon oyster sauce • 1 tablespoon whiskey • ground black pepper, to taste • 2 strips bacon, cut to 1/2-inch wide • 2 stems leeks, white part cut to 1.5 inches long • 1 cup bamboo shoots • 2 cups chicken stock • ground black pepper, to taste • 1 tablespoon cornstarch combined with 2 tablespoons water • parsley, for garnish

Preparation: • Pre-heat steamer at a high heat. • On a steamable plate, pour vegetable oil into plate, then lay fish down (this will prevent fish from sticking to plate after it’s been steamed). • Add oyster sauce, sesame oil and whiskey, then steam for about 15 minutes or until fish is cooked, depending on temperature of steamer. • In a sauté pan, cook bacon with vegetable oil and until it turns a light-brown color. (You do not need a lot of oil because the bacon
will release oil by itself.) Add leeks and cook for a minute or two or until leeks turn light brown. Add chicken stock and bamboo shoots and cook for 2 more minutes or until leeks are soft and tender. • Remove fish from steamer and combine liquid from fish to saucepan. The flavors of the liquid will make sauce richer and more flavorful. Keep fish on the side. • Bring sauce to a boil, then thicken with cornstarch and pour on top of fish.
