appy New Year, foodies! I can’t believe 2011 is already upon us. But I guess when much of your time is spent happily feasting in pure bliss, you don’t realize just how quickly time flies, right? The new year is an opportunity to start fresh, with new resolutions and a clean palate. If you recall, in last week’s column I mentioned taking this new year as an opportunity to submerge yourselves into a new world of culinary delight — sampling unique and different foods you’ve never before tasted. So without further ado, enter into the world of banchan — small dishes of authentic and

contemporary Korean cuisine served with steaming hot rice. There’s a wide variety of banchan to sample, from the everpopular kim chee, kim chee cucumber and namul to the acquired raw crab and spicy peppers. The great thing is that banchan is served in small portions, perfect for sharing and sampling a bite or two. I’m sure you’ll find the perfect Korean side dish for you, whatever it may be. Foodies, now’s the time to take this challenge. Join me in exploring culinary delights beyond your comfort zone at some of the best “Ono, You Know” Korean “hot spots” our Island has to offer.
Escape to Seoul, Korea, on any given day at Orine Sarang Chae. Located on Keeamoku Street (much closer to home than Seoul), diners can feast on a bubbling pot of kim chee soup, or my personal favorite spicy kalbi soup ($8.25) and kim chee Korean pancake ($2.50). Open daily from 10 a.m. till 2 a.m., Orine Sarang Chae’s comfortable outdoor seating provides adequate shade with its many colorful umbrella tables and trees with twinkling lights. It’s this relaxing atmosphere, similar to a peaceful garden setting, that really adds to the whole dining experience. Owner Irene Woo has been in the restaurant business for the past 35 years, previously having opened a restaurant in Los Angeles. It wasn’t until 2009 that Woo decided to open this Yakiniku-style eatery right here at home. Lunch specials run from 10 a.m. to 3 p.m. and offer affordable plate lunches such as Kalbi, barbecue chicken, barbecue beef, spicy pork, fried mondoo and more. Prices range from $5.99 to $12.95. Noodle dishes like the
Mandoo soup ($6.95) and the Seafood Kalguksu ($8.95) also are popular options. For dinner you can cook up enough meat to feed an army — OK, maybe four people — yakiniku-style for around $40. But really, expect to be served a lot of food and, for the price, you really can’t go wrong. But then again, it’s the banchan that takes your meal to a whole new level. Woo says five side dishes accompany any lunch option, while seven to eight banchan complement dinner. “Korean food is healthy,” she adds. “From long ago, Koreans have eaten many side dishes, main dishes and soup. It’s part of our culture. “In Korea, breakfast is usually the biggest meal of the day, while dinner is smaller. You don’t want to have a big meal before bed time.” Well then, if the dinners at Orine Sarang Chae are consid-
ered “small,” I’m anxious to see the size of a typical breakfast in the Woo household. It must truly be the definition of a feast! The banchan side dishes include your usual kim chee, bean sprouts, kim chee cucumber, soy bean sprouts and daikon, to name a few. And Woo works hard to prepare each and every side dish herself and makes them fresh every day.

Million Restaurant Upon opening the doors to Million Restaurant, a million if not more delicious and exotic aromas quickly intrigued my senses. With friendly staffers cooking up piping-hot meat on the grill, it wasn’t long before the intensified craving for authentic Korean food socked me right in the stomach. Owners Chang Hyun Park and Angela Park started this family business in 1989, and since then have been serving patrons a taste of Korea straight from the restaurant’s Sheridan Street location. Kalbi is one of the specialties here, along with the boiling hot stews that will definitely work up a sweat. Whether you prefer the chefs cooking up a kalbi order in the kitchen or cooking it yourself on the yakiniku grill, the choice is yours. And no matter what your preference is, the choice still equates to one mouth-watering meal. Since Korean favorites such as the popular bul go gi beef and chicken as well as the fish juhn plates are more than enough to appease any appetite, no highquality Korean meal is at all convincing without the many side dishes. “We have a round onion salad served with daikon wraps, potato salad, our homemade kim chee, steamed egg, daikon kim chee, bean sprouts with sesame seed oil, steamed green beans, raw crab, Korean style shredded pork and Taegu,” says Angela Park. With a diversity of banchan to choose from, any foodie will soon find a favorite. “Potato salad, steamed egg and taegu are recommended for first-timers who haven’t tried many Korean side dishes before,” she adds. As for those who are a bit more experienced and can take the heat when it comes to Korean cuisine, the kim chee and the daikon kim chee are absolute musthaves. Park also let me in on an inside secret that any kim chee lover will

undoubtedly relish. While most foods are best when served fresh, she says kim chee tastes the finest when served at least one day old. “Yet our Korean customers can’t get enough of the raw crab,” Park says. And while it may be considered an acquired taste for some, it’s quite alluring to the eye, as it’s seasoned with just the right amount of shoyu and chili pepper. A total of six side dishes come with any meal when ordering from the kitchen or a barbecue plate. If you choose to go yakiniku style, however, the fresh round onion salad also is included with the array of banchan. Here’s a tip: Banchan tastes best with lots of meat and plenty of rice, so work up a gigantic appetite and keep bowls of those fluffy carbs coming!
Frog House Restaurant
By now you must know that it’s a tried and true Korean custom to have banchan with every meal, so it’s no surprise that Frog House Restaurant on Kalakaua Avenue serves up some stiff competition in regard to some of the best Korean side dishes in town. Owner Jeannie Bae took over the Frog House last year and says customers love ordering the delicious kalbi plate and cooking up their meals fresh atop the yakiniku grill — and while all of that is grand, I couldn’t resist the urge to marvel in the banchan before me. “The lunch plate comes with six different side dishes, while dinner comes with seven,” Bae explains, noting that rice also is included with every meal. For starters, the eggplant banchan is irresistible to the palate. Seasoned with Million Restaurant sesame oil, a dash of salt and onions, the 626 Sheridan St. side dish is a top choice among Koreans, 596.0799 according to Bae. And surprisingly, it’s
not very spicy. Many locals, however, gravitate toward the fishcake, which is smooth in texture and sweeter in flavor — a great choice when choosing to play it safe in the world of spicy, hot Korean cuisine. However, if you can handle the heat, opt for the radish, cucumber and jalapeño peppers. Now, this will most certainly awaken all your senses. “It’s flavored with vinegar and shoyu; it’s really spicy,” Bae states. With that, I took her word for it and decided I needed to work my way up to that ultimate level of fiery hotness. Not quite there yet, I was quite satisfied with the cucumber kim chee and tasty choy sum, expertly seasoned with sesame seed oil, salt and sesame seeds.

t Aloha Tower Marketplace, Chai’s Island Bistro has been home to top Hawaiian entertainers through good times and bad, booming economy and recession alike. For the past 12 years, the sounds of The Brothers Cazimero, Sistah Robi, Willie K, Jerry Santos, Makaha Sons, Teresa Bright and many others have flowed from Chai Chaowaseree’s corner restaurant at the Tower. This month, ukulele phenomenon Jake Shimabukuro takes to the tiny stage inside the glittering restaurant for a private concert that includes a four-course dinner. I sat down with Chai to chat about Shimabukuro’s upcoming performance, and how live music is as much the soul of Chai’s as Hawaii regional cuisine.
Jo McGarry: You’ve had music here since you opened. But in 1998, live Hawaiian music didn’t really have a home in Honolulu. What was it that made you want to bring in such great performers?
Chai: I knew from having Singha Thai, where we have Thai dancers, that live entertainment works in a restaurant. And I wanted the music to reflect the food — the flavors of Hawaii regional cuisine. But I also knew I couldn’t afford to do it! Jo: That didn’t deter you, though.
Chai: No, I just kept asking people, “who’s the best, who would be good to play here?” So we asked Barry Flanagan of Hapa, and he said that he’d love to do it. You see, there wasn’t really any venues for live music then. A month later, I thought I’d ask The Brothers Cazimero, even though I knew we couldn’t afford them. Robert also said he’d love to help us. They’ve been playing every Wednesday ever since. And that’s been more than 10 years now. They are so incredibly professional. They are never late, and Robert understands the audience so well. If people are talking, he sings back from the mic and sings so quietly. If people want to listen, then he sings to them. Jo: It seems to me that each musician brings something different to the restaurant.

She has a lot of friends who come to see her, a lot of old timers in the entertainment industry, so there are many people who come and sing with her, play music and dance. and watch the hula dancers. On Wednesdays, we have Sistah Robi, On Fridays, Makaha Sons, and Saturdays it’s Danny Couch. Sometimes Willie K comes.
Chai: Yes, we do a set menu for the evening. It’s $69 for a four-course meal that includes sautéed Kona baby abalone, blackened ahi heart of palm salad or our signature combination platter of crab cakes, fresh ahi katsu and jumbo black tiger prawns. Then there’s soup or salad, and the entrees include steamed fresh onaga, or our lobster and scallop pot pie, deconstructed beef tenderloin or Mongolian-style lamb chops. And, of course, dessert. Jo: What’s Jake like when he performs at such an intimate venue?
Jo: Willie K is a mesmerizing performer. I just saw him recently and was astounded by his talent.
Chai: He’s very personable. He always comes in early and goes around every single table and says Chai: Yes, he is incredible. He is a truly a one- hello and thank you. Chai: You know, we are very blessed here with the musicians. So many people want to come and play and help us. Even Na Leo has been so supportive. One time they just came and played for 30 minutes in exchange for dinner. And Kealii Reichel, too. The thing is, you never know who might come in to sing and play. I think it’s because after all these years we’re like family to each other .
Jo: I think it might also be that they love you, and the fact that you give back and support our community so much. Chai: (Laughs). Yes, but they have to pay their bills. They can only love so much! And without the music, Chai’s would not be the same. The music is the soul of my restaurant. The food is good, but we are not Chai’s Island Bistro without the music.
Jo: And they get dinner, too.

n a former garage on Nuuanu Avenue, Patrick Ching draws crowds of enthusiastic diners to his humble storefront for some of the city’s favorite Thai food. We stopped by and asked regular diners Bruce Nakaoka and Eric Martinson what they’d recommend from the menu.
Eric Martinson: “I come here about once a month or so for lunch. Today I’m having a favorite — the basil chicken — which is nice and spicy. I love it! It’s good food and it’s conven-
ient to town. I almost always order the basil chicken, or the basil shrimp. Today we’re having summer rolls, too. Ever ything I’ve tried here has been good; I’d recommend it, especially for the atmosphere, which is pretty eclectic and cool.” Bruce Nakaoka: “I live in the neighborhood, and we’d actually come by more often, but it’s always crowded! We come to Sam’s Deli right next door a lot and that’s how we discovered Bangkok Chef. We’re always looking for good, hole-in-the-wall places, and this one really quali-
fies. Today I’m having the eggplant chicken, which is very good. The prices are great and it’s pretty healthy food for the most part. I like the pad Thai noodles, and the curries are always good, too. There a lot to recommend.”

No one at Sekiya’s is really sure what makes the soup so popular. “We don’t know,” laughs Morihara, who admits that while the recipe is a closely guarded secret, it’s not one that the loyal customers request much. “We don’t really get people asking for the secret because I don’t think people have the time to make it. The oxtail is so tender and the soup is very flavorful, but people just don’t have the time to make these kinds of dishes at home. That’s why they come here.” Customers make the drive in from Waimanalo and Mililani, and some of them come every day. “We see the same people ordering the same food every day,” says Morihara, who admits that, at the deli counter, dozens of customers don’t even need to order. “The staff just asks them if they want the same as usual, and they say yes.” A Combination Special ($14.95) that features a choice of two entrees including ahi tempura, mahimahi, beef teriyaki, fried ahi, yakitori chicken, fried oysters, marinated fried chicken, netsuke butterfish and tonkatsu — each plate comes with rice, miso soup, tsukemono and tea — offers an easy way to order if you’re going for the first time.

“It’s good when people can’t decide what to eat,” Morihara says. At the entrance to the restaurant, a busy deli counter offers dishes that are found in only a handful of Japanese-style delis scattered around the islands: potato mac salad, fried chicken, sushi selections, char sui, chow funn, hot dogs, nishime, butterfish belly, namasu, gobo and fried noodles are just a few of the dozens of deli selections. Cone sushi and hash tempura may be two of the bestselling items served from 8 a.m. to 4:30 p.m. daily. In a city where mom-and-pop restaurants are disappearing as fast as chain restaurants are spreading, the family-owned operation known as Sekiya’s remains. So what makes the restaurant have such long-lasting power? “It’s some luck, some good food,” Morihara explains, “and a lot of very loyal customers for whom we are very grateful.”

raditionally, all of the restaurants in the Ruth’s Chris Steak House chain use local ingredients whenever possible. In its Hawaii locations, Ruth’s Chris continues the tradition by using the freshest available island ingredients, including Hamakua and Kamuela tomatoes, Kahuku sweet corn, Hawaiian salt, and opakapaka and ahi caught locally. “Regionally, the chain tries to use local products whenever it can,” says Emi Chang Espinda, director of sales and marketing for Ruth’s Chris in Hawaii. “We want to be able to support our local farmers and community.” The 45-year-old prime steakhouse franchise, with locations in 34 states and 15 international cities, opened its first restaurant in Hawaii in 1989. It now has five locations here: at Oahu’s Restaurant Row and Waikiki Beach Walk, at Kohala’s Mauna Lani resort on the Big Island, and in Lahaina Center and The Shops at Wailea on Maui. “The great thing is that you can go to a Ruth’s Chris in Hawaii, or one in Beverly Hills, Atlanta or Toronto, and you know your expectations will be met,” says Espinda. Known for exceptional quality, the restaurant was founded in 1965 by Ruth Fertel, a single moth-

er who spent her life savings to purchase Chris Steak House, a New Orleans eatery. All of the beef at Ruth’s Chris is USDA prime, selected from the top 2 percent in the country. “What sets us apart is that our steaks are served hot,” Espinda explains. “We broil them in a special 1,800-degree oven and serve them on 500-degree plates. When they come out of the kitchen, they come out sizzling.” That’s a popular word at Ruth’s Chris. The restaurant’s Sizzlin’ Prime Time Menu, a special threecourse meal which includes soup or salad, side dish, entrée and dessert, is available from 5 to 6 p.m. daily. For $39.95, diners may choose an entrée from a list that includes an 8-ounce Petite Filet, Stuffed Chicken Breast, Barbecued Shrimp, and the Chef’s Fresh Island Fish Selection. For $49.95, entrée choices include an 11-ounce Filet with Grilled Shrimp a broiled Veal Chop served with hot and sweet peppers, or a 16ounce Rib-eye. The selection of side dishes includes Mashed Potatoes, Creamed Spinach, Broccoli, Sautéed Mushrooms, or Local Broiled Tomatoes. Dessert is a choice among ice cream, sorbet or Bread Pudding with Whiskey Sauce. Diners may add entrée complements to their meals as

Wednesdays, the restaurant offers 25 percent off any bottle of wine on its extensive list, which boasts more than 250 domestic and international labels. “That’s been very popular with our guests, as we have a lot of wonderful wines you can’t get in stores,” says Espinda. Recommendations from the restaurant’s extensive selection include Joseph Phelps Cabernet, Silver Oak Alexander Valley Cabernet, and BV Tapestry from Beaulieu Vineyards, a blend of five
Bordeaux varietals. Ruth’s Chris also hosts visiting winemakers at tasting dinners and educational sessions. Each of the restaurant’s five Hawaii locations features separate rooms for groups and parties of 10-50 people, and a special Private Dining Menu for their events. “The rooms are perfect for celebrations and business dinners,” notes Espinda. Like many restaurants, Ruth’s Chris has a website (www.ruthschris.com); a special site is in development for the Hawaii locations. well: bleu cheese crust, au poivre sauce and sweet and hot peppers are all available for $3.95 per selection. “We’ve noticed that both locals and visitors are taking advantage of this special,” Espinda reports. “We also have Happy Hour from 5 to 7 p.m. daily in our lounge, with appetizer and drink specials (may vary from restaurant to restaurant).” A favorite signature drink is the Ruth’s Chris Sizzlin’ Cosmo ($12.50), made with cranberry juice, Absolut Mandarin, Grand Marnier and sweet and sour, dramatically served in a martini glass and a cloud of smoke. Choices abound at Golden Duck

hoices are fairly simple when it comes to lunch or dinner at Golden Duck Chinese restaurant on South King Street, as those who have trouble deciding are helped considerably by signs throughout the restaurant suggesting daily specials and house signature dishes. With more than 200 items on the menu, the specials, house sugges-

tions, and lunch and dinner plate options help even the most indecisive diner. Lunch plates of Sweet Sour Spare Ribs, Pot Roast Pork, Pork Chop Suey and Crispy Won Ton, for example, are just $7, and a dinner plate of Sweet and Sour Spare Ribs, Cold Ginger Onion Chicken, Beef Broccoli, Crispy Won Ton and rice costs just 75 cents more.
“On any day when we feature the specials, we always sell plenty,” says owner Aaron Fong. House specialties include Lamb Stew, Orange Pork Chops, Seafood with Fish Maw Soup, and daily specials include Duck Noodle Soup, Chicken Chow Funn, Roast Duck Wo Mein, Roast Duck and Ginger on Rice, and Chicken with Oyster Sauce Noodle. Go any rainy Monday and you’ll find almost every table with at least one order of Boneless Minute Chicken Cake Noodle ($7.50). “It’s very popular on Mondays,” says Fong of the dish that comes with a choice of noodles. “Customers can choose the boneless chicken with Hong Kong-style, saimin or regular chow mein-style noodles.” Open for more than 50 years, Golden Duck now has a new location in Kahala ( on the site formerly occupied by Tony Roma’s). Similar specials and an equally diverse menu of Chinese favorites are available daily.

Crazy for Wahoo’s in Kahala

ans of the casual Wahoo’s Fish Taco on Ward Avenue will be happy to hear that at the newest location in Kahala there seems to be even more fun on the menu. Live music and a full bar that’s open until midnight on weeknights and 2 a.m. Friday and Saturday gives the Kahala restaurant a more vibrant appeal than ever. “We make everything from scratch at our bar, and we’re really proud to say our margaritas are made with fresh-squeezed ingredients,” says Kahala store manager Randall Transfiguracion. “We even make our own sweet and sour inhouse.” With pupu served until midnight from Sunday to Thursday, and until 2 a.m. Friday and Saturday there’s even more reason to drop by the newest Wahoo’s, especially after seeing a movie at nearby Kahala Mall. At Kahala, you’ll find the same fresh, fun food on a menu that includes soft tacos, soups, salads, sandwiches and specialty Wahoo’s Bowls (meats, fish or veggie entrees served over rice and black or spicy Cajun white beans). If you’re trying Wahoo’s for the first time, you may want to go for its No. 2 Combo — tacos or enchiladas filled with anything from blackened or flame-broiled fish to sautéed teriyaki vegetables, grilled chicken, sautéed shrimp, marinated steak or pot-braised pork. The combo plate comes with ahee rice (Wahoo’s signature rice) and a choice of black beans or spicy Cajun-style white beans. If you’re a healthier eater, then

Hanaki Shabu Shabu has two reasons to celebrate this month. In addition to being the start of a new year, January 2011 marks 15 years that the Manoa Marketplace restaurant has been in business. As a New Year’s gift to its loyal customers, Hanaki is offering a 10 percent discount on orders made during dinner hours Monday and Wednesday nights now through Jan. 31. “We really hope people try the shabu shabu,” says manager Mark Mitsuyoshi. “Right now, we have six soup flavors, but there are endless ways to combine the many food items and dipping sauces. You can create any type of thing you want.” From a light seaweed-based Konbu udon soup to the beef-based special Spicy recipe, the soup bases offer a wide range from which to start your meal. Each costs $5, and you can kick up the heat level and add extra spice for no extra charge. Vegetables, meats, seafood and noodles are arranged by color-coded bowls and plates, which range in price from $2.50 to $4.50 depending on the size and content of your selection. There also is a variety of Udon Bowls ($9.95 and $12.95) and Donburi ($11.95) from which to choose. One to try is the popular Nabeyaki Udon ($12.95), an assortment of shrimp tempura, chicken, egg and vegetables over fat, soft udon noodles. Ramen noodles may be substituted in any udon dish. ast year Hanaki Shabu Shabu transformed from an all-you-can-eat buffetstyle restaurant to one that is serving up the latest cooking craze, shabu shabu. To ensure that Hanaki would be on the razor’s edge of this latest cooking trend, longtime manager Mark Mitsuyoshi traveled to Japan to study up on what makes shabu shabu, well, shabu shabu. “We traveled to Taiwan to experience their wide variety of Asianstyle shabu shabu,” Mitsuyoshi says. He returned with a wealth of knowledge in the dish that allows customers to create their own meals at their table by using a hot pot of soups and sauces of their choosing. Mitsuyoshi suggests first-timers start with the medium-heat Sukiyaki base, a sweet and salty medley of sugar and shoyu, or the pleasingly creamy Curry. Add noodles, seafood, tofu, lamb, pork, chicken, vegetables or any of the other dozens of fresh, flavorful ingredients to concoct your very own soup. “But if you don’t want, we have added an a la carte menu with shrimp tempura, chicken kara age, fish katsu, tako yaki, shoyu chicken, shoyu tofu, homemade gyoza and deep-fried oysters,” he says. Combination Plates cost $9.95 for choice of two items, $12.95 choice of three, and each plate is served with rice and miso soup.

n America, turkey is to Thanksgiving as ozoni soup is to New Year’s Day in Japan. We have a tradition making ozoni soup on New Year’s morning. This is the first meal of the day. In Japan, eating this soup is an important tradition as a family. It symbolizes longevity, sticking together as a family, prosperity, and good health. Enjoy!

Ingredients • 4 quarts chicken stock • 6 ounces skinless chicken breasts • 4 pieces kombu (about 3 inches long)

3 tablespoons hon dashi 8 fresh shiitake mushrooms 8 Manila clams 8 pieces Satoimo (Baby Taro) 1 1/2 cups carrots, peeled and sliced into 2-inch strips 1 1/2 cups daikon, peeled and sliced into 2-inch strips 2 cups mizuna, cut about 4 inches in length 2 cups choi-sum, cut about 2 inches long 1 package red kamaboko (fish cake), thin slices 1 package mochi (pounded rice cake)
• 2 tablespoons Aloha shoyu
minutes or until items are cooked.
Directions • Combine chicken and chicken stock and bring to boil. Remove scum, simmer for 10 minutes, add dried scallops here, if you prefer, then lower heat and add kombu. Cook for about 30 minutes on low heat.
• Put a few mochi into toaster and toast until puffy.
• While stock is cooking, wash and drain all vegetables. • In a steamer, steam Satoimo, carrot, daikon and Manila clams for about 10
