suspect many of you foodies are already contemplating Valentine’s Day dinner ideas. And if you’re one step ahead of the rest, the reservations have already been made and the flowers have already been ordered. Good for you! But while most women adore roses, I am not one of them. I mean, don’t get me wrong — they’re beautiful and all, but they die in the end. Then what? Instead, the way to my heart is through magnificent cuisine — more specifically, chocolate-covered strawberries and succulent slices of prime rib (not paired together, of course). I can’t even begin to explain how much I love this “carnivore-licious” dish. Whether it’s paired with creamy horse-

It’s a great quality of meat.” Personally, I prefer my prime rib with a helping of au jus sauce and creamy horseradish, so when Demaya revealed to me the secret behind its au jus sauce, it was music to my ears. “Our au jus sauce is a little darker. We simmer the bones for a long period of time so it adds a really nice flavor to the prime rib,” he explains. And, boy, was it melt-in-your-mouth delicious! Each slice is ultimate perfection and, better yet, you can always go back for more. “Our main focus here at Kai Market is bringing the idea of the melting pot of the plantation days to our table today,” Demaya explains. “We’ve been greatly influenced by many cultures like Chinese, Filipino, Japanese, Portuguese, etc. We feature a wide variety of dishes from those plantation days, and it’s a wide spread of

on Ho may be gone, but the images of this Hawaii-born icon live on in the minds of millions everywhere — from the effortless way he’d strum the ukulele, to the colorful lei and aloha shirts he would often, er, don, during his shows. Nearly four years after his passing at age 76, “Uncle Don,” as he was affectionately called, remains Hawaii’s “goodwill ambassador” and arguably its greatest export. Today, his unmistakable sleepy voice and local-boy charm are not only found in his hit song Tiny Bubbles, but also in Don Ho’s Island Grill, located at Aloha Tower Marketplace. The restaurant, which first opened its doors in December 1998, offers affordable, family-friendly cuisine and showcases live Hawaiian music, while also featuring the largest selection of Don Ho memorabilia anywhere. Dining Out recently caught up with general manager/partner Michael Maielua and executive chef Robert Denis at the grill where, believe it or not, just about everything under the sun can be found.

A Loco Moco with a twist

T

ired of the same loco moco that everyone seems to serve, Kapolanialaimaka Kealoha, chef and owner of 4Kings Kitchen on South King Street, decided to add a new version of the local favorite to his menu. The Not Your Normal Loco ($11) is a combination of all things the chef/owner claims he enjoys about traditional loco mocos — but with a twist. “I wanted to create a healthier and unique version of the loco moco that locals as well as visitors could enjoy,” Kealoha says. Here’s how the loco is done at 4Kings: First, the

hamburger patty is replaced with a fresh ground mahimahi burger that includes kim chee, Portuguese sausage, caramelized onions, chives and oyster sauce; and second, the gravy is made with shiitake mushrooms, shallots, garlic and white wine. Of course, the meal also comes with the traditional two eggs, choice of white or brown rice, and choice of housemade kim chee or Ma‘o Farms’ sassy mix salad with Hawaiian ogo vinaigrette. “The dish is wonderful,” Kealoha says. And that makes the Not Your Normal Loco a musttry in the coming days for Hawaii’s hungry.

e all have our cravings, and as savvy Dining Out readers know, just because you don’t eat meat doesn’t mean you have to miss out on the myriad of flavorrich ethnic foods found here on Oahu. And when it comes to flavor, in my book Indian food is at the top of the list. The fragrant, savory cuisine combines a variety of exotic spices to enhance its dishes, such as all those mouthwatering curries for which it’s known. If Indian food is what you crave, look no further than Monsoon India, conveniently located in Discovery Bay Center in Waikiki. Bring along your family and friends, as there are plenty of options for everyone on the extensive menu of authentic recipes. And for those who choose not to eat meat, an entire section of the menu is devoted to vegetarian fare. “We have a large selection and good variety,” says owner Imran Khan, who recommends the meat- and dairy-free Baingan Bartha ($15.95), fire-roasted egg- 1

plant simmered with tomatoes, onions and those wonderful exotic spices. It’s not spicy hot, but if you’re in the mood for more heat, just ask when you place your order. Chef Kishore Sharma, who has extensive experience in preparing traditional tandoor cuisine, is more than happy to accommodate you. “If someone wants it spicy, we’ll make it spicy,” assures Kahn. Back to those mouthwatering curries, another option is the ever-popular Vegetable Masala ($16), fresh vegetables in a tomato and cream-based sauce with just the right blend of herbs and spices — just one of the tantalizing meat-free curries listed on the menu. To complete your meal, there’s a variety of breads baked fresh in the tandoor oven, from onion or garlic naan to one that caught my eye (and my appetite), Aloo Paratha, an unleavened whole wheat bread stuffed with potatoes, green peas and spices ($3.95), perfect for soaking up all that goodness.

Spicy Tuna still rules at G Sushi T

here’s a buzz going around town as sushi fanatics have been raving about G Sushi at Market City Shopping Center. A kaiten-style sushi establishment (“kaiten” is defined as sushi served on a revolving conveyor belt), G Sushi has kicked it up a notch by offering sushi on floating boats as they pass by diners’ tables. But aside from the cool delivery service, customers love the fact that they are guaranteed quality sushi at reasonable prices. Although there is a plethora of sushi to choose from, owner Lisa Yuan says the Spicy Tuna sushi ($2.39) is undoubtedly the top seller of the bunch. Handcrafted with Maguro, rice, mayo and hot spices, the ahi is minced, thus adding to the smooth and rich taste of the fish. Yuan also highly recommends the eatery’s specialty rolls, including the Spider Roll ($5.99) and the Dino Roll ($2.89). The Spider Roll showcases a bite-size array of soft-shell crab, avocado, mayo, cucumber, radish, sprouts and masago. The Dino Roll, accepted by

many spicy tuna enthusiasts, consists of spicy tuna, avocado, cucumber, crab meat, mayo and green onion. In the mood for fresh sashimi? The Hamachi (yellow tail) Sashimi ($3.99) and Maguro ($3.99) also are among the most highly requested items. Yet sushi isn’t the only thing on the menu that works up an appetite. The Ebi Tempura Udon, Donburi, Spring Rolls, Edamame and more are readily available to cure any cravings. Don’t forget the bento options for $5.99 as well. The Combination Bento is a popular choice as well, offering pieces of savory chicken yakitori and ebi tempura. All bentos are served with rice, furikake, deep-fried gyoza, fishcake and takuan. And save some room for dessert, as the Peanut Butter Mochi with Kinako ($2.39) is worth every bite. Lastly, if you fail to see exactly what you want on the boats, you can order straight off the menu and the chefs will be more than happy to prepare your meal to order.

Among the plate lunch specials being offered at Kahai Street Kitchen this coming week are two treasures pulled from the deep. The first is a Two-Degree Ahi Roll, a combination fish dish overflowing with fresh island ahi, wrapped in nori and shiso, and a smoked tuna salad dusted with panko and deep fried to a golden medium-rare. The chef finishes this masterpiece with just a drizzle of tobiko aioli and a side serving of ponzu sauce. Second on the list of must-try delights is the Shrimp Stuffed Fresh Ahi Roll. Located in industrial Kalihi makai of Nimitz Highway, Kahai Street Kitchen has been serving loyal customers an ever-changing menu of local delicacies for nearly five years. “We keep customers’ interest and have them returning each day with our variety of plate lunch specials,” says Nao Iwata, who opened the plate lunch and catering company in 2006 with Bruce Watanabe. Together the two have more than 25 years of experience in the food and beverage industry, and both believe in offering goodquality food at affordable prices. “Everything is centered around this idea,” Iwata says of passing savings on to their customers. Need further proof? Just scan the elaborate menu at Kahai Street Kitchen and you’ll rarely, if ever, find an item costing more than $10. What you will find, however, is a mixed plate of homemade specialties that include Beef Wellington baked in Puff Pastry Shell, Macadamia NutCrusted Soft Shell Crab with White Wine Cream Sauce over Linguine, Roast Prime Rib of Beef with Au Jus and Creamy Horseradish, and Sauteed Opakapaka with Lemon Butter Caper Sauce. “Many customers don’t realize that we’re also a catering company,” Iwata adds. la carte, dim sum and party trays.” Like the daily buffet, the sit-down menu is a literal smorgasbord of Ho Ho’s most-loved specialties: crispy gau gee, Chinese chicken salad, pot stickers, abalone soup, minute chicken, char siu and roasted pork, steamed basa fish fillet with green onion and soy sauce, sweet-and-sour shrimp, eggplant with garlic Szechwan sauce, deep-fried tofu and more than 20 noodle and rice dishes, all less than $10. In fact, the most expensive item on the menu is the Peking duck, which is still a steal at $14.95 for half and $28 for the whole bird. “And we also make three types of pie,” adds Chan when asked about desserts, which sell for $9.95 each on the dim sum menu. “It’s all homemade and sometimes we serve in the buffet line on the weekends. It is highly recommended to call in advance to beat the last-minute rush. Party-goers can load their plates with beef broccoli, orange chicken, kao yuk, sweet-and-sour spareribs, salt-and-pepper shrimp, choice of steamed fish and fried chicken wings from the buffet spread. “We also have the two kinds of crab at dinner time: Steamed slow crab with butter on the side, and fried Dungeness crab with salt-and-pepper garlic,” Chan adds. “Since we started offering the salt-andpepper garlic crab, we’ve gotten very busy.” Parties of 200 or more people will receive a free 40-pound roast pig, which Chan says will be left intact on the buffet line until it’s time to eat. “We will leave it for the host or the guests to take a picture, and then after that we will slice and chop for the customer,” she says, adding that the free pig is only available at dinner. But if something on the menu does not suit your specific taste, Ho Ho’s staff will help lay out a party menu to satisfy even the pickiest eater. “For private parties we let the customer make their menu,” Chan explains. “We keep the seafood the same, but, for example, right now we have the beef

broccoli, but if you don’t like the beef broccoli, change to Mongolian beef is OK.” Certain restrictions do apply. For example, Chan says they cannot offer allyou-can-eat portions of Peking duck, but will work with customers to arrive at the best compromise possible. “And because right now the economy, you know, some people right now cannot afford the private party, instead they can do take-out for the party tray or the Meal for 10 menu,” Chan adds. There are four different Menu for 10 options ranging from $118 to $228 in price and offering items such as egg blossom soup, char siu egg fu yung, sweet-andsour fish fillet, shrimp canton, roast duck, kau yuk, salt-and-pepper crab legs and gon lo mein, depending of menu choice. Party trays come in small (which can feed eight to 10 people) to jumbo (50-75) sizes and must bes ordered two days in advance. Cost depends on size and number of orders, but folks in the Kapolei area will receive free delivery service on orders of at least $100. For orders of $400 or more, Ho Ho’s will deliver to Ewa Beach, Kunia, Waipahu, Mililani, Wahiawa, Pearl City and Aiea free of charge as well. “In Honolulu side, probably need more than $400. Go too far,” Chan says with a laugh. But making the trip to Oahu’s “Second City” for Ho Ho’s Chinese cuisine is well worth it.

few years ago, Cindy Wong took her young son to visit family in Hong Kong. The boy slept for the entire duration of the flight, and when the plane landed at about 11 p.m., he woke up hungry.

“By the time we got our luggage and checked into the hotel, it was almost 2 in the morning,” Wong remembers. “We went downstairs and looked around, and they had café-style restaurants, open 24 hours! There are many 24-hour cafés in Hong Kong; you can come in at any time.” And that’s how Wong and her husband, Ken, were inspired to open the Anytime Café. Tucked into a corner of Market City Shopping Center, this bright, friendly little restaurant offers a diverse menu of Asian, Italian and local favorites designed to please anyone, anytime. Open Monday through Friday from 10 a.m. till midnight, Saturdays from 8 a.m. till midnight and Sundays from 8 a.m. till 10 p.m., Anytime Cafe is becoming increasingly popular with Honolulu’s late-night diners, who come for the food, the friendliness and the easy latenight parking. The owners hope this trend will continue.

“We’ve only been open a year, but we plan to be open till 2 a.m. or later on weekends,” Wong says. The little eatery’s menu is eclectic and intriguing. Entrées are gently priced; none costs more than $11.95. And each item on the menu is available — you guessed it — at any time. Risotto for breakfast, lunch or dinner? Why not? There are six different kinds here, including Vegetable ($9.50), Pork Chop ($11.95) and Shrimp ($11.95). Pasta dishes include Chicken & Mushrooms Alfredo ($8.95), Shrimp Scampi Spaghetti ($9.95), Chicken Parmesan ($9.50) and Baked Vegetable Cannelloni ($9.50). Or you can build your own pizza ($10.95), with your choice of 10 different toppings. From the other side of the globe, Hainan Chicken ($11.95), often associated with Singaporean cuisine, consists of a quarter chicken cooked in sauce, served at room

temperature with herbed rice. “Asians love this dish very much!” says Wong. Offerings from the café’s Noodle Bar include Shrimp Wonton, Beef Brisket and Tendon Noodles, and Pig Feet, all with broth. Thin or wide noodles are $7.50; add 40 cents for shrimp noodles or $1.50 for lo mein. The Baked Pork Chop with Fried Rice ($11.95), a dish from Hong Kong, is made with rice, chops, tomato sauce and cheese, all baked together. If you prefer a slightly more traditional morning meal, you could order from Anytime’s diverse breakfast menu. Depending on your tradition, you might consider the French Toast with Peanut Filling, Hong Kong Style ($6.25); the Salmon Set, Japanese Style ($8.95); or even the Rice Soup & Dim Sum, Chinese Style ($7.95), which comes with rice soup with black egg and pork. Local palates love the Loco Moco Eggs Benedict ($9.50; made with Angus beef and Hollandaise) and the Steak and Eggs ($8.95). Those who order traditional breakfasts may choose from several different sides (the sweet potato fries are spectacular). Want soup? If you’re looking for traditional Americanstyle potage, you can get Cream of Corn or Minestrone ($3.50 each), but if you’re 3 craving congee, the restaurant has that, too: a half-

Traditional coffees and teas are available, but the Wongs also offer Thai Iced Tea ($3.50), Hong Kong Style Milk Tea ($2.95-$3.50) and Iced Vietnamese Coffee ($3.50), made with condensed milk and chicory coffee in little cup-top filters. Those who still have room for dessert after a meal here might be tempted by Tiramisu or Mango Pudding ($3.95 each), but many opt for the Anytime Café’s famed Snow Ice (available with mango, green tea, strawberry or fresh fruit,

Unlike shave ice, which gets its flavor from the syrups that are poured over it, snow ice is actually flavored before it’s frozen; the shaved ice is topped with fruit, jellies and juicefilled pearls. The restaurant’s special Valentine’s Day menu, at $19.95 per person, will include Fried Dumpling Salad, Shrimp Bisque Soup and a choice of Osso Buco or Seafood Pasta, with Crème Brulee for dessert. Thanks to the diverse flavors on its menu, Anytime Café is a great place for family dining and parties. Even kids love it. Wong’s son, who recently turned 10, polled his friends to see where they wanted to celebrate his birthday. “He came home from school,” reports Wong, “and said, ‘Mom, they all want to go to Anytime Café.’”

Savoring the flavor found at Kai’s ‘dinner table’

‘Fat’ keeps it healthy hy is it that eating healthy can seem like such a chore at times? Well, there’s nothing routine about the menu at The Fat Greek, located at the corner of Waialae Avenue and St. Louis Drive in Kaimuki, which has made healthy eating not only simple, but enjoyable, too. Francois Provenza opened this 100-seat establishment in 2007. Together with business partner and adviser George Stephanos, Provenza has perfected the art of Mediterranean cuisine and transformed The Fat Greek into a trusted dine-in and take-out business. Recently, the pair opened the doors to another restaurant in Waikiki and already it has proven to be a favorite neighborhood eatery. In addition, Provenza’s son, Darien, runs The Fat Greek kiosk at Ala Moana Center Food Court. Currently, the Waikiki location is taking reservations for Valentine’s Day dinner, and each lady who dines there will receive a complimentary rose while supplies last. “We really give diners a

taste of the Mediterranean Sea,” Stephanos says. “Francois trained all the chefs here and we serve healthy food — fresh and flavored with Mediterranean spices like cumin and cayenne pepper.” A few specialty items that have had patrons for-

mented by fresh salad. Also on the menu is the Fresh Fish Special, which features a tantalizing grilled salmon topped with Mediterranean salsa and served with basmati rice and salad. And as for the Giant Elephant Beans, this appetizer showcases flavorful fava beans garnished with cumin and onions and immersed in the perfect amount of zesty tomato sauce. “Much of our support comes from our loyal customers,” Stephanos explains. “The moussaka is a Friday special and we usually sell out within two hours, and the salmon is really popular.” Provenza and Stephanos say they are already planning to expand their busi3 ness in the near future. A peaceful dining experience awaits guests here at The Willows, so it’s no surprise why both tourists and locals alike frequent the restaurant to sample some of the finest in local cuisine, while taking a break from their increasingly hectic schedules. The dinner buffet is offered daily for $34.95 and the lunch buffet is open Monday-Friday for $19.95. Executive chef Jay Matsukawa prepares 40 to 50 items daily, including local favorites such as kalua pig, poi, island curry and more. Yet, whatever you do, don’t skip the carving station, which features Garlic & Hawaiian Salt-Crusted Prime Rib offered for both lunch and dinner. “It’s a garlic and rosemary-crusted prime rib that we actually season overnight, then we slow roast it for about two-and-a-half hours,” Matsukawa says. And, believe me, it’s worth the wait, as every morsel of meat is like pure gold! No joke! Matsukawa also recommends pairing the succulent prime rib with a blend of au jus sauce and creamy horseradish to boot. “The au jus sauce helps to bring out the taste and add moisture to the beef. We also do a creamy horseradish, which is a combination of sour cream and horseradish,” he says. “I like the horseradish because I like the bite it has to it.” I couldn’t agree more, the horseradish definitely brings a kick to this incredible dish.

Barbecue-grilled tuna, couscous salad, nori aioli

Ingredients for the Barbecue: • 12 large shrimp, shelled or deveined • 1 tablespoon kosher salt • 1 tablespoon brown sugar • 1 tablespoon cocoa butter • 1 tablespoon coriander • 1 tablespoon paprika • 1 tablespoon white pepper

Ingredients for the tuna: • 24 ounces ahi tuna loin • salt • white pepper • olive oil

Preparation: Toast the spices over medium-high heat in a pan to bring out the flavor. Place in a spice grinder and pulse to obtain a coarse powder. Then, mix all the spices together. For the shrimp, place 2 tablespoons of the spices (except the cocoa butter) in a Ziploc bag with the shrimp. Mix well and keep refrigerated for 1 hour. Remove from the fridge and leave at room temperature for 10 minutes. Grill each side over barbecue for about 2 minutes. Remove from grill, allow to cool for a minute or until you can hold and remove the shell. Serve with the orange lilikoi dipping sauce.

Ingredients for the Lilikoi orange dipping sauce: • 2 cups orange juice • 2 cups lilikoi juice • 1/2 cup shallots, chopped fine • 1 lemon grass stem, smashed • 1 teaspoon chili flakes • 1/2 cup light salt shoyu • 1/2 cup mirin • 1 small bunch Thai basil • 1 small bunch mint Preparation for the Lilikoi orange dipping sauce: In a stainless steel pot, add the orange and lilikoi juice, shallots, lemon grass, chili flakes, shoyu and mirin. Cook over medium heat to simmer. Do not let sauce boil hard. Cook for about 10 minutes or until sauce has been reduced to 1/3 of the pot. Bruise the mint and basil in the palm of your hand and add to the sauce. Allow to cool at room temperature. Strain and reserve for shrimp.

With a fork, fluff up couscous to allow all grains to loosen up. Add mac nuts, dry fruits, lemon juice, chopped chives and mac nut oil, and season with salt and white pepper. Reserve in the fridge until serving.

Preparation: Prepare grill with kiawe wood. Once the coals are red, place the tuna and grill on all sides for 30 seconds. Remove from grill and allow to rest for 1 minute prior to cutting medallions.

Ingredients for the nori aioli: • 1 cup mayonnaise • 1 tablespoon ground furikake • 1 lime juice • 1 garlic clove, chopped • 2 white anchovy filets, very finely chopped • salt, white pepper

Ingredients for the couscous salad: • 2 cups couscous • 2 cups boiling water • 1 tablespoon salt • 1 cup mixed dry fruit, fine diced • 1/2 cup toasted, chopped macadamias • Juice from 1 lemon • 4 tablespoons macadamia nut oil • 1/2 cup chopped chives Preparation: For the salad, place the couscous grain in shallow pan; add salt to the boiling water and pour over the couscous. Do not mix. Cover with plastic film and let stand at room temperature for 5 minutes.

Preparation: In a small bowl, mix the mayonnaise with all the ingredients thoroughly. Season properly; reserve for the tuna.

Plating: On a platter, display the couscous salad, slice the tuna into medallions, spoon some aioli on top of the tuna and serve.
