So it comes as no surprise that for the second straight year, this premier hotel and resort will be hosting “A Weekend of Sustainability” March 11-13 — an event held in conjunction with its luxury and lifestyle series, Halekulani Living, and in partnership with the nation’s leading architecture magazine, Architectural Digest.

As expected, the food will be plentiful! Guests will delight in An Evening of Sustainable Cuisine this Friday from 6:30 to 8:30 p.m. at Halekulani’s Garden Terrace, where fresh dishes showcasing the best local products will be prepared by celebrity chefs Vikram Garg of Halekulani, Roy Yamaguchi of Roy’s Restaurants, and Ed Kenney of town and Downtown restaurants. In addition, master mixologist Julie Reiner will prepare cocktails for the evening. Proceeds will benefit Kapiolani Community College’s culinary students. As for the rest of the weekend, guests will participate in various interactive events featuring leaders in environmentally conscious design, such as renowned landscape architect Andie Cockran and internationally acclaimed interior designer Martyn Lawrence Bullard. The weekend will wrap up on Sunday with the Architectural Digest Green Gala event from 6 to 9 p.m. in Halekulani’s Ballroom. The gala will celebrate sustainable design with a focus on classic Hawaiian architecture and will provide a glimpse into the future of Hawaii architecture. Guests also will enjoy Hawaii’s first non-GMO (genetically modified organisms) cuisine graciously prepared by chef Garg and his culinary

team. Proceeds will benefit University of Hawaii’s School of Architecture. Events are offered on an a la cartebasis with prices ranging from $50 to $225 per person. Advance reservations are required. Dining Out recently caught up with chef Garg — who oversees all culinary operations at Halekulani, including those at Orchids, La Mer, House Without a Key and Lewers Lounge — to discuss the upcoming event and learn more about culinary sustainability. DO: Why did Halekulani partner up with Architectural Digest for this year’s event? Garg: Halekulani proudly partnered with the nation’s leading architecture magazine to produce an event themed around a core issue relevant to today’s mindset: environmental sus1 tainability. We intend for our partnership to last beyond the event and into the coming years. DO: What is your specific role in the event? Garg: I am creating a menu comprised of sustainable foods, and I am coordinating with guest chefs Roy Yamaguchi and Ed Kenney to represent sustainable and local ingredients from Hawaii. DO: Do you think architectural sustainability and culinary sustainability go
hand-in-hand? Garg: Indeed, they do. Sustainability as a principle encompasses resources that are produced in an environmentally friendly method, that results in the least negative impact on the planet. Whether
you’re talking about sourcing wood for a house or food for a table, the method that produces the fewest negative externalities is the one considered most sustainable. It is our responsibility to walk gently on this earth. DO: Why is sustainability so important when it comes to food? Garg: In the culinary world, we’re striving not only to meet current food needs, but also to maintain healthy

3 ecosystems so that the generations to come will still have access to the same resources. DO: You’ll be kicking off the weekend with “An Evening of Sustainable Cuisine,” along with other renowned chefs. What can guests expect during the three-day event? Garg: Friday, we offer the finest of foods and entertainment from three of Hawaii’s top chefs and the farmers, who provide them with local and sustainable ingredients. We also feature cocktails created by award-winning mixologist Julie Reiner. On Saturday, guests will be inspired by lectures from two of America’s bestregarded industry leaders and a fourcourse, GMO-free menu crafted specifically for the gala night, again, keeping sustainability in mind. DO: What will you personally be cooking up in honor of the event and what will the other chefs be preparing? Garg: Of course, I will be cooking both nights. I am a cook first, then a chef! I’ll be preparing an Ahi Crudo
featuring roasted Kahuku corn chaat with dry mango powder and an avocado vinaigrette; Big Island Abalone Fritter, consisting of Nalo Greens and turmeric ginger dressing; and Chilled Kona Lobster with Sumida Farm watercress and Fenugreek butter. Chef Ed Kenney, owner of town and Downtown restaurants, will prepare a menu of Shinsato Coppa di Testa, a blend of MA‘O Farm beets and pickled mustard seeds; Shinsato Pork Belly with braised MA‘O Farms Savory Cabbage; and lastly, Shinsato Chipolatas, featuring Grilled MA‘O Farms radicchio and saba. Last but not least, Chef Roy Yamaguchi, owner of Roy’s Restaurants, will serve up a Hamakua Mushroom Soup and Sandwich, featuring ham hock and Pioppini mushroom “head cheese” with fresh wasabi, and a mushroom bisque and truffle foam; Hawaiian Ono Sashimi, complete with Hawaiian vanilla vinaigrette, Big Island heart of palm and Kahuku sea asparagus; and a Red Veal Tartare, offering diners a taste of Vietnamesestyle cold pho noodles, basil lime aioli and a quail egg. DO: Is there a big emphasis on sustainable cuisine at the Halekulani itself? Garg: Yes, and a typical example is the Hawaii-centric menu at Orchids (see photos). Most of our menu items are first sourced locally before we tap into the outside market, keeping in mind, of course, that supply and demand is sometimes a challenge.
DO: What local products/produce will you be using in your cuisine? ustainability has become a buzzword for businesses looking to leave a smaller, friendly footprint on the earth, and Zippy’s Restaurants is no exception.
Zippy’s Fast Food Counters. And how can you talk Zippy’s without mentioning its spaghetti? This signature noodle dish is topped with choice of meat sauce or Zippy’s chili and comes with two pieces of garlic bread on the side. 3 ing in our restaurants with LED fixtures, solar fans, energy-efficient air-conditioning systems and more fuel-efficient delivery vehicles.” Last year the company kicked off these upgrades by retrofitting many of its restaurants with new lighting, air-conditioning units and energy-efficient kitchen equipment. “We are constantly investigating smarter ways to be more energy-efficient through facility design and daily operational practices,” Yokota says. “We learn more with each project that we’ll build on for future work.” Yokota adds that the Zippy’s team would like to pass on this knowledge to its valued customers through its Sustainability Begins at Home Giveaway. for our guests’ support and participation, and we’ve found that they take pride in a local company doing things for our local communities,” says Yokota, who tries to do his own part by recycling plastics, glass and aluminum containers from home. “While some forms of this sustainability appear new, the philosophy really is based on the principles of our founders, Francis and Charlie Higa, and that is to take the long-term view and make good decisions today that will have positive outcomes
into the future.” Another initiative Zippy’s is implementing to benefit those in the community is its Hearts for HUGS fundraising campaign. From March 7 to 27, Zippy’s will be selling hearts for $1 or $5 to raise funds for the nonprofit group HUGS (Help, Understanding, Group Support), which is dedicated to improving the quality of life for families facing the emotional and financial hardships of caring for a seriously ill child. Customers also can donate to
in-house collection boxes now through April 30. “We’re extremely fortunate to have dedicated and loyal customers who take great interest in the initiatives we’ve undertaken,” Yokota says. “Admittedly, there is much more for us to learn about and to institute. As with most everyone we’re far from perfect, but we’re working hard every day to improve ourselves.”

Savoring Saimin and more
T
anaka Saimin is the place to be when the first pangs of hunger for local favorites hit you. And although the saimin is second to none at this North Nimitz Highway establishment, chef Sing Lee brings all this and more to the table. “We use no MSG in our saimin broth,” says Lee, a 45-year veteran in the culinary industry. “It’s one ethnic food that mostly everyone seems to like.” Owners Joan and Paul Watanabe couldn’t agree more, and have been working diligently since the restaurant first opened last October to get the recipe down pat. Yet it’s dishes like Oxtail Soup ($12.95), Baked Miso Butterfish ($11.95) and Steamed Basa Fish ($12.95) that give the restaurant’s famous saimin some steep competition. “We cook the oxtail soup for almost two-and-a-half hours and the meat is very tender,” says Lee, adding the dish is served fresh daily without exception. He wouldn’t reveal a few secret ingredients in the broth, but will share with din-
ers that the soup also is rich with peanuts, shiitake mushrooms, long rice, mustard cabbage and garnished with Chinese parsley. And the proof is in the numbers, as Lee says, because the restaurant sells about 35 to 50 bowls of soup per night. Served at anytime of the day, the Baked Miso Butterfish has been a local favorite since earning a place on the menu. Diners relish that the savory miso sauce is homemade as well, and something you can’t find anywhere else. Finally, it’s the Steamed Basa Fish that has indeed reeled in the appetites of many. Cooked oriental-style, the Basa fish is served with lap cheong, shiitake mushroom, green onion, preserved cabbage and topped with a special shoyu sauce. Paired with rice and choy sum, guests are quite happy with this meal of choice. “Oriental-style steamed Basa is a very delicious white fish,” Lee attests. “This fish is very tender and firm, and a lot of people really like that — the texture is similar to that of a sole filet.”

any are shouting praises for Wahoo’s Fish Taco, a California-based chain that first opened its doors at Ward Gateway Center and more recently at Kahala Corner. Sisters and co-owners Stephanie Gambetta and Noel Pietsch, who oversee both locations, make it a point to serve diners only the best in “CaliforniaMex” cuisine. Dining Out recently paid a visit to the Kahala location to see what was making a splash in the stomachs of hungry diners. There, we bumped into
loyal customer Kelly Stern, who revealed exactly what it is about Wahoo’s Fish Taco that has her coming back for more. Kelly Stern: “I ordered the Garden Salad ($4.49) with fish (add $1.50) and shrimp (add $2.50), then topped it with salsa. It’s super fresh and the grilled fish is so onolicious. The prices here are really reasonable. I come here every single day for lunch, Monday through Friday, just about, and sometimes I come here after work. When I come here after
work, I like to bring friends. My friends absolutely love the burritos — and we like to enjoy the drinks. The margaritas are really good! “I love the atmosphere here, I like the surf videos that they usually play on the TVs, and I really like the ambiance and the music. The people who work here are absolutely great, they’re always accommodating, always helpful and they even make my salsa spicy. It’s awesome! I like to support local businesses and eat fresh food, so Wahoo’s is really great.”

That’s what makes Happy Days different from other Chinese restaurants, Lum claims. “When our customers come here, it’s like coming home,” she says. “They’re very comfortable and happy!” Customers can definitely find happiness in Happy Days’ dim sum. Between 8 and 11:30 a.m. each day, take-out dim sum orders are discounted 25 percent. For those who prefer to dine in, the carts make their rounds every day until 3 p.m. “We have about 30 different kinds of dum sum,” says Lum. Most cost $2.68 per plate or basket, including popular selections Siu Mai, Baked Char Siu Bao, Har Gau, Half Moons filled with shrimp and spinach, and creamy Egg Tarts. Plain, Beef and Barbecue Pork Look Fun is available for $2.85, or with Shrimp or Scallops for $3.25. At $3.50 each, the Joong is also a favorite; customers love the sticky rice wrapped in bamboo leaves, and buy it from a tray on a table that also contains almond cookies. “A lot of regulars like our sweet and sour Pig’s Feet Casserole ($9.95), which is pretty unusual,” says Lum. She also recommends the Roast Duck ($11.95 for a half-duck), Minute Chicken with Cake Noodles ($8.95), and Seafood Casserole ($11.95). “And almost every table orders our Honey Walnut Shrimp ($11.95)!” she adds. Happy Days offers set dinners for four people for $63, or six for $84. There’s a full bar, and a private room in the front of the restaurant can hold parties of up to 40 guests.

Those in search of affordable, fresh sushi need look no further than G Sushi. For the past three years, this tiny Market City Shopping Center eatery has been winning over local foodies big-time with its evolving menu of both traditional and imaginative sushi creations. Among the most popular items is the Ebi Katsu ($2.89). One bite of this nigiri, which is an assemblage of deep-fried shrimp, green onions and rice, and it’s little wonder why it’s always one of the first plates snatched up from the conveyer-belt-style wooden boats. “We also put a special sauce on that makes it really good,” says co-owner Lisa Yuan, who prepares many of the dishes herself in the back kitchen. Sushi fans don’t have to imagine this magical world where plates of freshly made nigiri, donburi, noodles and makimono come floating to their fingertips down a never-ending line of wooden boats. It exists at G Sushi, located conveniently in Market City Shopping Center in Kapahulu. Formerly Catch of the Day, G Sushi debuted on the local restaurant scene three years ago under the ownership of Billy and Lisa Yuan. Together the husband-wife team manage the quant sushi shop that allows customers to select their own meal from an endless array of food options that literally float around the restaurant on tiny, color-coded plates. “The color means different prices,” explains Lisa. For example, sushi on the green plates, like the popular Spicy Tuna Temaki, cost $2.39, while delectable bites resting on pink plates, like the Dragon Roll, cost $2.89. Now through spring, all items atop a yellow plate cost just 99 cents each, including G Sushi’s popular Mini Spam Musubi, Tamago, Inari, Hiyayakko, Miso Soup, Chi Chi Mochi, Tuna Salad, Massago, Kappa Maki, Natto Maki, California Maki and Charlie’s Special. “We have 20 items on the yellow plates,” Lisa reports. Other everyday deals abounding within G Sushi’s glass doors include Chicken Katsu Don ($3.59), Teri Beef Yakitori ($2.89), Uni ($5.99) and Shrimp Purse ($5.99), as well as a full menu of new items like Seared Ebi, Seared Aji Hotate, Ebi Tempura Roll, Sweet Potato Croquette and Vegetarian Tempura. If customers can’t find anything that floats their boat, simply order off the extensive menu of ready-to-make orders. “We also have three udon sets. They are very popular,” Lisa adds of the Ebi Tempura, Nigiri and Spicy Tuna udon bowls ($6.79 each, available for dine-in orders only). Also available are take-out platters that range from $15.95 for 22 pieces of Futomaki Inari or California Inari, to $38.95 for the 40piece Deluxe Nigiri platter.

French, and in France you do not eat dinner without cheese on the table,” Provenza explains. “So that is part of why I included it.” And that is only the beginning, as the Mezze platter includes four lamb chops, eight garlic shrimp, hummus, papa wedge fries, fava beans, babaganoush, calamari, merguez sausage, kalamata olives and dolmades, which is rice wrapped in fresh grape leaves. “It is a lot of food, but it is really healthy because we only use olive oil and lemon juice in our marinades. We do not use any perservatives,” says chef Daryl Ghan-Pung Oppenheimer. The mezze platter also is served with two soft drinks and a slice of bakalava to top off this Mediterranean dish. “To be honest, I like everything on the plate. aybe customary, maybe coincidental, but like many Greek families, The Fat Greek’s new Mezze Platter is nothing short of boisterous and flavorful. Indeed, the Mezze Platter can be both a warming sight and intimidating at the same time. One of the specialities that brings this

mixed with crunchy yellow and green onions, all on top of sticky rice wrapped with nori. “The tuna is all fresh,” adds Yuan, smiling with pride. “Sometimes the customer comes inside and thinks it’s frozen because other places do that, but we get our tuna fresh every day from the fish market.” One of the more unique finds only at G Sushi is what is known as the Deluxe Ahi Roll ($2.89). “The customer named this dish,” Lisa says. “It’s a new item, so we just put it on the boats, and one of the customers just said, ‘That’s one deluxe ahi roll!’” With spicy ahi on the inside and a layer of raw ahi and avocado on the outside, this makimono truly lives up to its name. Liven up any meal with slices of pickled ginger, bright-green wasabi or shoyu, which are kept in constant supply at the dine-in counter.

Jumping for delicious Korean dishes

on’t let the name fool you: At Frog House Restaurant on Kalakaua Avenue, it’s the authentic Korean cuisine (not the frogs) that will you have you hopping for joy! Owner Jeannie Bae took over the Frog House Restaurant last year and, along with her husband, Jio Oh, has been cooking up an exotic array of Korean delicacies that leave patrons more than satisfied. Open daily for lunch and dinner, Frog House offers a plethora of delicious items to choose from. However, Bae highly recommends three dishes that have both locals and tourists coming back for more. The Stone Pot Bi Bim Bap ($10.95), Ginseng Chicken Soup ($16.95) and Steamed Kal-Bi ($22.95) are all hot items at Frog House. “Locals really like the Stone Pot Bi Bim Bap served with choy sum, cabbage, carrots, cucumber, barbecue beef and more. You mix it together with the rice and fresh egg in the stone pot and you have a filling meal,” Bae says, adding
that the vegetables vary from time to time. “On the other hand, Asians really like the Ginseng Chicken Soup,” she says. “Customers like to eat this soup with the change of the seasons, as it’s very healthy and cleansing.” This impressive dish showcases a whole chicken in a hot and flavorful broth of dates, garlic and mochi rice. And the Steamed Kal-Bi is mouthwatering in its own right. This tender, topgrade meat is steamed for two hours and then marinated in the perfect blend of shoyu, garlic, sesame seed oil and sugar. Then it’s topped with red and green bell peppers to accentuate the flavor. All entrees come complete with homemade banchan (Korean side dishes) and steamed rice. And while you’re at it, make it a point to spoil your taste buds with many other yakiniku-type specialties as well. Ingredients : List A • 10 ounces Alaskan king crab meat • 3 ounces ground pork • 1 tablespoon chopped celery • 1 tablespoon chopped bell pepper, assorted colors • 1 tablespoon chopped green onion • 1 tablespoon fresh corn • 2 tablespoons mayonnaise • 1 whole egg • ground pepper, to taste
List B • 1 cup tempura batter (3/4 cup all-purpose flour, 1/4 cup cornstarch, 1 whole egg and 1/2 cup of water, combined) • 1 cup bread crumbs • 2 cups vegetable oil for frying crab cakes • 2 cups Big Island baby greens or mesclun greens Preparation: • Combine ingredients from list A, divide to a 3ounce portion and form a
round pancake. • Dip crab cakes into tempura batter and coat with bread crumbs. • In a wok or deep fryer, pre-heat oil at 375 F, then fry crab cakes to golden brown and set aside. • On a plate, lay down salad as a bed then put down crab cake and top with fresh mango, tomato salsa.
Fresh Mango & Tomato Salsa Ingredients: • 1 tablespoon ripe mango, diced about 1/4 inch • 1 tablespoon tomato, diced about 1/4 inch • 1 teaspoon chopped onion • 1 teaspoon chopped Chinese parsley • 1/2 teaspoon lemon juice • 1/2 teaspoon balsamic
