Paesano Ristorante Italiano Located within Waimalu Plaza Shopping Center lies an upscale, top-notch Italian Restaurant, and it’s none other than Paesano Ristorante Italiano. I’ve been a fan of Paesano for years, but having always dined at the Manoa location, this was my very first time setting foot here. Owner Billy Rattanasamay and wife Nila opened the Waimalu location in 2008 and serve all things Italiano — from Gnocchi to Chicken Putanesca and lots and lots of pasta. In fact, Billy says they have 80 types of pasta dishes, to be exact! “Paesano is the perfect place to celebrate a birthday or an anniversary,” Billy says, taking pride in the pristine restaurant and the fact that all the décor was handpicked straight from Bali. Excited to bare witness to marvelous pasta, I quickly dove into a pair of executive chef Gerry Quach’s pasta recommendations: the Fettuccine Tutta Dal Mare ($28.90) and the Chicken Portabella ($17.90 small portion; $20.90 regular portion). The Fettucinni Tutta Dal Mare is a chef’s special and offers a generous portion of fettucinni with sauteed mixed seafood, including Alaskan king crab, island fish, jumbo shrimp, fresh clams and scallops, with a confetti of onion, bell peppers and basil, simmered to perfection in a white wine homemade lobster sauce. The Chicken Portabella comes straight from the coop and offers boneless, tender chicken sauteed with portabella mushrooms, asparagus, onion, sundried tomato, fresh spinach and garlic paired with just the right amount of garlic sauce and olive oil. It really doesn’t get much better than this when you’re looking for something just as healthy as it is delicious. “Customers can choose from linguine, fettuccini, rigatoni and angel hair — all our pastas are imported straight from Italy and our sauces are made fresh every day,” Billy says, noting that everything is made to order. Greens, mandarin orange wedges, toasted-sliced almonds, dried cranberries, and a salad vinaigrette dressing for $6.50 at the dine-in restaurant only. “One of the favorites at our restaurants is our spaghetti and our chicken, so we have a special mixed plate that includes spaghetti with your choice of either meat sauce or chili, which you can have in the variations of vegetarian, Paul Yokota beanless or our regular chili,” explains Jay Crisologo, creative specialist for Zippy’s marketing department. The plate ($5.49 fast food counter; $6.49 dine-in restaurant) also includes garlic bread, a piece of the restaurant’s renowned fried chicken and macaroni salad. Of course, there are more menu items to feast on. “If you like oxtail soup, you’ll love the turkey neck soup as they have similar tastes,” adds Yokota. “It’s basically taking the oxtail soup (which is a local flavor) and replacing the oxtail with turkey neck. This adds a new combination of flavors and is a lot leaner, and perfect for cold weather and for those looking for a value ($4.99 fast food counter; $5.99 dine-in restaurant). As for the Spam or Portuguese Sausage Omelette Plate ($4.99 fast food counter; $5.99 dine-in restaurant), this breakfast favorite is available at all times

According to Yokota, each Zippy’s location takes on the appropriate feel of the community while also supporting community organizations like HUGS, Laulima and the Shane Victorino Foundation, to name a few. “If you go to the Waipahu location, the look of that building is different from what you’ll see if you go to the Waiau location,” Yokota says. “Waiau is a building that we just renovated, and it’s sitting in an area which was once a plantation field. Waiau itself means ‘rushing waters,’ so at that location we actually have a fountain made out of a well spigot that exemplifies what some of the history of the area used to be,” he continued. “Also, if you look at the architectural design on the outside, you can see that it’s well-lit — serving as a ‘beacon’ for those coming down Kamehameha Highway at night.” Yes, Yokota describes it perfectly. And you’ll see that change not only in our entree containers, but also in our Zip Pac containers later on in the year.” Although times have changed since Zippy’s first opened its doors, one thing remains constant for Yokota and his dedicated team — Zippy’s Restaurants is built upon the perfect blend of delicious cuisine and local values, and that, Yokota hopes, will remain for generations to come.

n a small room near the front of Hinone Mizunone, an employee is stacking bento boxes in anticipation of the lunchtime rush. “We make anywhere from 40 to 50 bentos each day,” says Eiki Tamaki, operation manager of the South King Street restaurant. “As soon as we open, they’re ready!” The little boxes contain some of the most popular items on the menu at Hinone Mizunone. “We have six or seven types, and we also have minipaks of fried chicken with omelette,” Tamaki says, adding that with a couple days’ notice, the restaurant will happily prepare bentos for group events like office parties and meetings. “We did 350 bentos for one event,” he remembers, chuckling. “That was crazy!” Varieties include a Mixed Bento with

Made in the style of “kamadaki gohan” — a traditional method that requires large cooking pots and plenty of commitment — the rice at Hinone Mizunone is the centerpiece of many meals here. Rice is cooked in two huge metal pots in a room just off the kitchen, a small room with a big win-

dow through which guests can observe the process. It might be a bit less dramatic than watching a pizza maker flip dough or a candy maker pull taffy, but the results are nonetheless delicious. With such elaborate preparation, one might assume that the restaurant gets its rice directly from Niigata, Japan’s famed rice-growing district. But the rice at Hinone Mizunone comes from California, Tamaki says, and favorite brands include Tamaki Classic and California Koshihikari. “Our cooking method is supposed to bring out the sweetness in rice,” he explains. “Of course, any rice is good when you first cook it, but you can really taste the difference when our rice is cold.” He displays a black enamel bowl, much larger than single-serving size. “We serve it in one of these,

almost full. The majority of people can’t finish; they take it home and warm it up.” Owned by Japanese restaurant giant Fujio Food Systems, Hinone Mizunone opened in April 2008 as the company’s first American location. The 700-plus restaurants in the Fujio group offer about 20 different culinary styles, most focusing on Japanese home-style cuisine. And that’s the focus at Hinone Mizunone, too. “We try to keep it simple,” says Tamaki. “Family dining is our concept; it’s simple food you’d serve at home. That’s how we want to keep it.” He mentions The Wisteria, Honolulu’s long-lived, much-loved Japanese restaurant that closed a few years ago. “Many of our regulars feel the same concept here,” he adds. Keeping regular customers happy is important, as they represent about 80 percent of Hinone Mizunone’s business. “Especially lunch. We have customers

who come three or four times a week,” Tamaki says proudly. Regulars return for the Ahi Sashimi Teishoku ($14) and the Chicken “Ama-Kara Age” ($10.50), Hinone Mizunone’s famous crispy fried chicken with grated daikon and sweet ginger sauce. They come for the Japanese Hamburger with Demi-Glaze Sauce ($12/combo; $7.75/a la carte), a cross between a hamburger and a slice of meatloaf. Fish lovers often order the Butterfish Misoyaki ($12/combo) and broiled salmon ($10/combo; $6.50/a la carte). Daily specials (all are $8.50) change each month, and recently included Salmon Tempura Teishoku, Pork Curry Udon, and Ozouni, the special New Year’s mochi soup. Four types of sake are available ($8-$20) and three types of sho-chu: barley, potato and rice (all $4.75). And there’s Sapporo on tap for $3.50 per glass, $12 per pitcher.

Located in a building that once housed a Taco Bell, the restaurant’s red tile roof has been painted black, and its white stucco exterior has been replaced with warm wood for a traditional Japanese look. Inside, the décor is bright and contemporary. One of the most charming decorative elements consists of several thin wood wheels hanging from the ceiling, from which tiny red paper figures dangle, shimmying and dancing at the slightest breeze. “Those are like dream catchers,” says Tamaki. “They’re supposed to bring in the customers.”

J2 differ from JJ’s? JJ: J2 Asian Fusion focuses more on Asian-style cuisine, while JJ’s Bistro & French Pastry focuses more on French and Laotian culinary practices. However, J2 will continue to put great emphasis on the French style of presentation. Presentation is very important — there has to be that “wow” factor. AF: Being that you’re originally from Laos, did you bring some of your cultural influences to J2? JJ: Yes, the first influential thing that I bring to J2 is the flavor and the taste of the food, and the presentation of the French culture. AF: French-style presentation is so important to you when it comes to your culinary creations. Why is that? JJ: Laos used to be a part of the French colonies, so we are greatly influenced by French stylings — and, for the French, the culinary presentation is more like artwork. So

JJ: Well, seeing that I travel overseas a lot and that I love to eat, I often go to restaurants when I travel but can’t finish the entire meal because the portions are so big. So I wanted to give people the opportunity to try different Southeast Asian dishes in smaller portions. That way, the customer can get a great taste of the cuisine. AF: Sounds like you’re on to something. What are your hopes for J2? JJ: That everyone will enjoy it and appreciate what we have here. Southeast Asian cuisine has so much to offer and is so tasty. AF: In terms of your culinary background, how did you get started? JJ: I started cooking with my mom in Laos and then found myself in New York City working at a French restaurant in 1987. I worked under a pastry chef named Jean Marc Burillier; he was my mentor and was considered one of the

T Pho My Lien rolls in its under-$5 menu

ommy Dang and wife Lien Bui started Pho My Lien for one simple reason: “Lien loves to cook,” Dang says with a smile. With the help of business partner and close personal friend Walter James, the couple opened their Vietnamese restaurant 10 years ago on Ala Moana Boulevard. “When they said they wanted to open up a restaurant, I said great idea,” says James. “The prices are good, the food is good, and she loves to cook! They like business, and they work hard at the business.” Renovations at nearby Hilton Hawaiian Village led the husband-wife team to seek a new location for their popular eatery last year, which they found in Westridge Shopping Center. Located on the second floor of the Aiea shopping plaza, the new Pho My Lien is a bright, cheerful space. A glass entryway brings light and an open-air feel to the dining room, which is filled with soft music, dark-wood tables and Frenchand Asian-inspired artwork. Another improvement at this new location is the parking, something that was sorely lacking at the former Waikiki locale. “We’ve got great parking here,” James says. “And the nice thing about the parking is the turnover rate. You’ll find lots of parking here.” Despite a move halfway across the island, James says business has steadily been picking up since they reopened on Nov. 12 of last year. “Being relocated, you just have to build up the clientele,” he reports. “The nice thing is, we’re getting a lot of repeat business and some of the old customers from the old location have found us.” And in case you’re wondering how they came up with the name Pho My Lien ... “Tommy’s real name in Vietnamese is My, and so that’s how you get it,” James reveals, “the ‘Pho’, the ‘My’ and the ‘Lien’.”

We stumbled upon the father-daughter duo of Eric and Kelsy Padilla, 10, who were enjoying lunch at Kit n

Feasting on Chinese culinary favorites at Seafood Village

f you’re looking for upscale Chinese cuisine that falls into the category of “comfort food,” head to Seafood Village at the Hyatt Regency Waikiki. Appetizers, salads, soups, fish, a fresh seafood selection, stir-fry specialties, sizzling platters and more fill the menu. “We’ve been here for 15 years now, and here at Seafood Village it’s like having dinner in Hong Kong — but in Hawaii, at a place where friends gather,” says general manager Steven Matsuno. “Chinese food kind of lends itself well to help in bringing family and friends together for a good meal.” Three local favorites include the 1 1/2-pound Countr y-style Crab with Black Bean Sauce ($49.95), HoneyGlazed Walnut Shrimp ($22.95) and Spicy Mongolian Beef ($16.95). “There’s a universal appeal with these dishes that many people are accustomed to and may have had before, and they’re really good,” Matsuno explains. “We’ve taken some of these favorites and included them in some of

Bringing a taste of Vietnam to Hawaii

ho Kitchen, located in Market City Shopping Center, is always packed with loyal diners enjoying healthy and delicious options of Vietnamese food. Owners Sandy Lin and Alex Chong know most of their customers by name, and take pride in serving up a variety of pho and other popular dishes. The Won Ton Pho ($7.75), Tofu & Veggie Pho and Chicken Pho dishes rank among the top items on their menu. “We use a very skinny noodle and we cook our broths with natural ingredients and less MSG,” Lin says. “We also use actual chicken bone and beef bone to cook the broth.

The beef bone is cooked for 15 to 18 hours and the chicken bone is cooked for six hours. The broths are a good source of calcium.” Health enthusiasts and vegetarians will enjoy the Tofu and Veggie Pho, which consists of tofu and a wide array of fresh vegetables such as Chinese cabbage, lettuce, green onion, Chinese parsley and fried onion. “We usually use chicken broth for this particular pho, but for those who are strict vegetarians, we can also use a water broth instead,” Chong states. Bean sprouts and lemon are offered as additional garnishing with all pho dishes.

Appetizers such as Spring Rolls (two rolls for $4.75) and Summer Rolls (two rolls for $5.25) also can be a light meal for those who don’t have too much of an appetite. The summer roll’s chewy rice wrap is filled with an abundance of ingredients, such as lettuce, bean sprout, shrimp, basil and fried onion. t Frog House Restaurant on Kalakaua Avenue, you can find a vast array of authentic Korean cuisine, including anything from homemade kal-bi to many yakiniku-type specialties. Owner Jeannie Bae says customers frequent Frog House in hopes of savoring some of the best flavors in Korean delicacies. Yet, a dish diners cannot seem to get enough of is Bosam. Served as an appetizer usually during dinner hours, Bosam ($24.95) is virtually a “make-your-own” cabbage wrap that features steamed pork with oysters and half a head’s worth of cabbage. “You can add the pieces of pork and oysters and wrap it in a piece of cabbage,” Bae says. “It also includes a kimchee option to add to the cabbage wrap that consists of radish, pear and watercress in a hot and spicy

Ingredients • 2 6-ounce pieces marinated salmon fillet • 1/2 cup soy sauce • 2 teaspoons mirin • 2 teaspoons sake • 2 tablespoons sugar • salt and pepper, to taste • Combine all ingredients and marinate salmon fillet for at least 1 hour.

Wakame Salad • 1/4 cup wakame (soaked in warm water to rehydrate for 5 minutes and drained) • 1/2 cup rice wine vinegar • 1/2 cup sugar • salt and pepper, to taste • Combine all ingredients and let sit for 1-2 hours.

Preparation: • In a sauté pan on medium-high heat, add one tablespoon of oil and salmon fillet. • Cook each side of salmon for about 3 minutes. • Place salmon in the center of the plate and top with Wakame Salad.
