hile I completely adore all types of cuisine from across the world, there’s one food item that I absolutely cannot and will not live with out. Drum roll, please. I am a complete sucker for tofu! You may be surprised to hear such a thing, as tofu may be categorized as the simplest of foods. But there’s something about it that is so fresh and pure, like an empty canvas waiting to be created into a masterpiece. This week, I took it upon myself to see what some of our Island’s best chefs, aka artists, are creating with tofu. All were works of culinary art in their own right — some simple and classic, while others remarkably eclectic. So get your appetites ready, readers, because there’s more to tofu than meets the eye.

The freshest of catches are found at Azure Restaurant, a specialty island seafood restaurant led by chef de cuisine Jon Matsubara. Located at The Royal Hawaiian a Luxury Collection Resort, Azure offers a menu, hand-crafted by Matsubara, that pays homage to succulent island fish and fruits de mer. Fresh fish are selected each morning from the Hawaii fish auction, so patrons know they’re receiving only the best from Hawaii’s waters. Knowing that tofu was what I was after this week, Matsubara had a few exquisite tofu dishes up his sleeve that were both uniquely appealing and utterly onolicious. “We have vegetarians who come in all the time and we highly recommend the Blackened Tofu appetizer ($25),” Matsubara says. “One of the ideas was to take a piece of tofu, roast and butcher it like a piece of fish. So we cut it to look like

ture on it, roast it and serve it with a vinaigrette and vegetables. “We took a very classical blackening spice (Cajun style) and added a bit of Indian spice, along with the traditional Japanese flavors of furikake,” he adds. “It works really well together.” And I have to say, this is one of the most tantalizing tofu dishes I have ever come by, second only to Matsubara’s Whole Fish Preparation (market price). The latter dish features a dramatic presentation of a whole deboned fish, such as a snapper, perfectly fileted and deep fried to a crisp,

L

ove is always in the air at Kit n Kitchen, where the aroma of attraction tugs on the heartstrings of diners, wooing them to partake in culinary goodness. And when guests finally dig in at this eclectic eatery on University Avenue, they indubitably end up falling for its dishes — and hard. You can credit Kit and May Yiu — an inseparable husband-and-wife team since the restaurant first opened its doors a decade ago — for that chemical reaction. The couple’s love of food, and for each other, is readily apparent in the care and ingenuity they bring to a menu replete with Eurasian delights. Dining Out recently caught up with the Yius who, even after 11 years of marriage, are still firm believers in the mantra, “Love is food for the soul.” DO: It’s always great when people are able to do what they love, and it’s evident that both of you possess a love of food. May: We really love food and we like to try different kinds of food. I grew up in Hong Kong, but spent some time during my high school years living in Quebec. It was there that I was introduced to a lot of French-style cuisine that’s often blended with a Canadian-style cuisine. Kit: I was born and raised in Hong Kong, and later moved to Hawaii and graduated from Moanalua High School, and I’ve always loved food. I’ve been in the restaurant industry for more than 20 years and had many opportunities to travel, having worked in Japan for a bit. It was there that I was greatly influenced by the Japanese-European mix, as well as Italian. A lot of Asian and European twists also can be found in Hong Kong, and I grew up accustomed to that kind of flavor and cuisine.

DO: Diners can find many of these Eurasian influences in your cuisine. Could you name a few that they must absolutely try? Kit: Our risottos have always been popular, and by popular demand we’ve added additional risotto variations to the menu. For example, the Lamb Risotto Rosemary ($13.95) features tender roast lamb seasoned with rosemary atop a Burgundy tomato sauce risotto with fresh onion, celery, tomato and a touch of Parmesan cheese. The Red Duck Pesto Risotto ($13.95) is unique with roasted duck atop a refreshing tomato pesto sauce risotto with a pinch of Parmesan cheese. The broth that we simmer with the risotto is really special. May: Kit serves as executive chef here and we have many Chef’s Specials like Pepper Lamb (two pieces, $14.95; three pieces, $16.95; four pieces, $20.95), a rack of lamb grilled with herbs, black pepper sauce and a mix of vegetables. It comes with your choice of rice or spaghetti. The Red Wine Ox Tail Stew ($13.95) is also one that you’ll never forget. Served with jasmine rice, the ox tail simmers in a red wine sauce that gives off a tender yet powerful taste. The Osso Bucco Milanese ($16.95) is another favorite. This dish consists of beef osso bucco braised in an aromatic sauce with fresh Roma tomato, fresh vegetables and herbs. If looking for an appetizer, I recommend Kit’s Sampler ($9.95)

EVEN AFTER 46 YEARS, TOP OF WAIKIKI CONTINUES TO TURN OUT GREAT FOOD AND SPECTACULAR VISTAS ON A NIGHTLY BASIS

F

or those of us who live here, it can be all too easy to take Oahu’s charms for granted. Many of us establish routines and familiar paths, and then forget the simple joy of deviating from them to reclaim the island’s treasures. Top of Waikiki is a perfect example of an Oahu treasure whose charms are being rediscovered by locals. “I meet people and talk to them about the restaurant, and it’s not unusual for them to say, ‘I was there 20 years ago, and I haven’t been back since,’” says Craig Bunkley, general manager of the 46-year-old Waikiki restaurant. “It’s changed so

much. The food is probably better than it’s ever been before. The service is great. And of course, every table has a view.” That’s putting it mildly. Top of Waikiki is a revolving restaurant on the top floor of the Waikiki Business Plaza, and the view from any table is spectacular. Looking a bit like a three-tiered wedding cake, the restaurant was built in 1965 by local businessman William K.H. Mau and designed by architect John Graham Jr. (known also for projects like the Seattle Space Needle). A single row of tables on each tier ensures a fantastic view for every guest. The entire circular restaurant sits on a huge platform turned by a pair of 1.5 hp electric motors and 18 stainless steel wheels. Under the direction of executive chef John Neff, the restaurant’s Pacific fusion cuisine features strong local flavors with European flair. Grilled Atlantic Salmon ($35), with tempura shrimp and scallop soufflé, is served with a miso consommé.

Surf & Turf ($33) consists of curried seafood paella with Portuguese sausage, kalbi short ribs and kim chee. The Tea Smoked Duck Duo ($33) includes duck breast with li hing orange ginger sauce, accompanied by moo shu duck confit spring rolls. And the Spicy Tuna “Tartare” Caesar Salad ($12) actually induced Bunkley to accept the job as GM. The restaurant also boasts an impressive wine list. “You don’t see many wine lists with Viognier on them,” Bunkley observes, referring to vintages made with rare white grapes from the Rhône regions of France. Other eclectic bottles include a 2005 Neal Cabernet from California, the 2004 Cliff Lede “Poetry,” and the 2004 Sassicaia, a Super Tuscan

described by Wine Enthusiast as “the best Sassicaia of the last 10 years.” Wines are priced from $7-$15 by the glass (all entrées on the menu have suggested pairings); bottles start at around $25. For the past year or two, the restaurant has boasted two nightly Happy Hours. From 5 to 7 p.m. and again from 9 to 11 p.m., guests may enjoy $4 martini and cocktail specials with vodkas from Skyy and Kai, and draft beer and house wine by the glass for the same price. The $7 pupu menu includes selections like BBQ

Pork Sliders, a California Roll Tower and Spicy Ahi Poke. “Every night during Happy Hour, we have a great crowd with a lot of good energy,” Bunkley notes. “When we saw how successful it was, we thought maybe there was an opportunity for a late-night event.” Promoted through Facebook, the Saturday Night Special event happens just once a month — traditionally on the third Saturday, though it may vary — and features the same drink and pupu specials offered during Happy Hour, plus occasional live

entertainment. “We want to keep it special for people who take interest in the restaurant,” says Bunkley. “It’s our way of thanking them.” The restaurant is now taking reservations for its Mother’s Day Buffet Brunch on Sunday, May 8, between 10 a.m. and 2 p.m. “I don’t think you can find a better venue!” says Bunkley. The buffet, priced at $39.95 for adults and $19.95 for children aged 3 to 10, will feature treats such as prime rib, grilled swordfish with pesto cream sauce, country-fried chicken with sausage gravy, and eggs Benedict

We have validated parking, so you can see the sunset, have dinner and experience Waikiki until midnight, when our garage closes. And during our late-night events, we extend the parking hours. People need to know how easy it is to come down here and enjoy this restaurant — and Waikiki, a part of Hawaii we sometimes forget.”

Chai’s Island Bistro: Lending A Helping Hand To Japan orld-renowned chef Chai Chaowasaree of Chai’s Island Bistro is teaming up with some of Hawaii’s most celebrated chefs, including Roy Yamaguchi, Alan Wong, George Mavrothalassitis and D.K. Kodama, to support Hawaiian Airlines “Lei Day for Japan,” a special fundraising effort to help in the country’s recovery efforts following last month’s devastating earthquake and tsunami. What treats await in La Palme’s Easter basket scape to the sweetest fantasies at of Patisserie La Palme D’or at Ala Moana Center. Owner Hiromi Tanaka and her dedicated staff, including head chef Akiko Kimura and store manager Hiromi Okura, produce only the finest Japanese pastries, drinks, desserts and more. So what’s the secret behind La Palme D’or’s divine creations? It all lies in the highest quality of products, as Kimura only utilizes the best available ingredients — a select few of which are imported straight from Japan. “Chef Akiko came up with a cute dessert for this Easter,” says Okura of the patisserie’s Chick Cake. This Easter special is priced at $30 and presents those with a sweet tooth with La Palme D’or’s signature strawberry shortcake that features a special custard filling. “It’s a delicious cake with soft, moist vanilla sponge cake, fresh, sliced strawberries and whipped cream,” Okura adds. “Our dessert cups are also a hit and Chef recently

came out with two new flavors to add to the bunch, including Panna Cotta ($3.65) and Pina Colada ($3.65).” The Panna Cotta dessert cup is served with a light vanilla milk pudding topped with a flavorful mango jelly, while the Pina Colada features three layers of irresistible goodness. The bottom layer consists of lightly sauteed pineapple, with coconut mousse nestled between the pineapple and a pineapple jelly. “The Pina Colada dessert cup has a real Hawaiian twist to it that we think customers will enjoy,” Kimura says. “However, the Berry Cup ($3.70) has always been our most popular.” The Berry Cup entices

Treasure Waikiki’s Hidden

F

or those looking to catch a movie at the old Waikiki 3 Theater, unfortunately, the curtain has remain closed since the iconic building shut its doors in 2002. However, head down to the 2284 Kalakaua Ave. today and one may, instead, catch some of Waikiki’s freshest seafood at Atlantis Seafood & Steak. As its name suggests, Atlantis is a hidden treasure nestled in the heart of Waikiki, surrounded by numerous retail establishments that help make the trip into Waikiki worth the while. According to the restaurant’s executive general manager Steven Matsuno, “Waikiki is still Waikiki. It’s right in our front yard, and it’s an awesome place. Come check it out!” The crown jewel of Atlantis’ bountiful menu also happens to be one of the better deals around town — both above and below the sea. Atlantis offers up its Seafood Lovers Special ($59.95) that includes a green salad, Pacific Sampler (complete with jumbo oysters, tiger shrimp cocktail and ahi poke), Vegetable du Jour, dinner rolls, rice or potato, coffee or tea, dessert and — best of all — a one-pound Maine Lobster fresh from the tank, where customers are able to select the crustacean of their choice. The Seafood Lovers package is one of the restaurant’s most popular dishes and, according to Matsuno, many of his guests order the decadent spread along with one of Atlantis’ signature steaks — including the Atlantis Garlic Rib Eye ($28.95) —

and share the meal among small parties. In addition to the juicy and tender steaks on the menu, Matsuno also recommends the Atlantis Lamb Chop ($28.95). The four chops 1 come seasoned with a bold Kona coffee rub and finished with a rich demiglace. The Slow Roasted Prime Rib accompanied by creamy horseradish and au jus also is a popular choice among diners who can choose from the eight-, 12- or 16-ounce portions ($22.95, $27.95 or $36.95). Matsuno also takes pride in Atlantis’ pasta dishes, which, as one might expect, come chock full of delicious seafood and other fresh ingredients. The Ocean Seafood Pasta ($24.95) offers diners a mountain of premium pasta smothered in a rich tomato cream sauce and brimming with fresh island fish pieces, Manila clams, tiger shrimp and leeks. The Shrimp & Sausage Pasta ($22.95) also is in high demand as diners have taken a liking to the dish’s combination of Italian sausage, fresh shrimp and mushrooms all over a heaping portion of pasta. Atlantis also offers Early Bird Special items priced at $12.95 and are available for kamaaina all day and night — the dishes are discounted for nonresidents from 11 a.m. through 7 p.m. The Early Bird dishes include the Sautéed Mahi with Lobster Sauce, Steak and Shrimp, and Chicken Alfredo Pasta. Each entrée also comes

with a choice of vegetable as well as either mashed potatoes or rice, and makes for a perfect combination of quality and value. Atlantis is open daily from 11 a.m. to 10 p.m., and serves lunch from opening through 4 p.m. Some of the favorites off the lunch menu include the Pacific Rim Thai Curry ($9.95 for chicken, $11.95 for beef), Atlantis Fish & Chips ($10.95) and the Garlic Clams Pasta ($14.95), which includes Manila clams sautéed in a garlic butter broth and comes served atop a bed of pasta. While Atlantis has established a loyal following with tourists, Matsuno hopes kamaaina will make the trip into Waikiki to enjoy the ambience, the electricity emanating from a revitalized Kalakaua Avenue and, especially, some of the eatery’s surf ’n’ turf. “For local people, if you haven’t come down to Waikiki in a while, a lot has changed,” Matsuno says. “You can get a little bit of everything right here at Atlantis. While you can’t catch a movie here anymore, you can catch some excellent fresh seafood and steak.”

hen you’re hungry for a steaming bowl of freshly made ramen, you don’t have to look far. There’s really no shortage of eateries on the island that serve up the popular, slurpable noodles. But if you choose not to eat meat, there may be a bit of trepidation when ordering off a menu. he key to success for Paesano Ristorante Italiano is the eatery’s ability to infuse local, homegrown products with traditional Italian recipes. Much like its celebrity wall — that includes photos of stars who have dined at the restaurant, including action-film star Steven Seagal, NFL quarterback Boomer Esiason, and local actors Jason Scott Lee and Stacy Kamano — Paesano’s menu features a wide range of dishes geared toward pleasing multiple tastes. The appetizers at Paesano are hearty, and can serve as a quick meal, or the perfect segue to a multi-course dinner. The Kahuku Shrimp in Shell

($13.90) features large, juicy crustaceans from Oahu’s North Shore served with a spicy dipping sauce containing cayenne pepper, paprika and, of course, plenty of butter. Sticking with the fresh catch, Pupu Picks readers should ask for the Fresh Clams with Hamakua Mushrooms ($15.90). This dish is actually not listed on the menu, but the friendly staff at Paesano will be happy to make it for you as they do daily for regulars who demand the dish. The clams and Alii mushrooms — which are harvested from a farm in Hamakua on the Big Island — come in a white wine sauce that incorporates garlic and chili flakes. As the name of the special mushrooms suggests, it’s truly a dish fit for royalty.

Sikdorak keeps meat lovers satisfied By Chris Fleck

From the historical record, yakiniku cuisine is said to have originated from Korean immigrants living in Japan — specifically, Osaka — after the second world war. Regardless of whether the historical record is true or not, many will agree that Sikdorak Korean Restaurant, located in the Sam Sung plaza off Keeaumoku Street, is a great place to enjoy this culinary technique. For meat lovers of the pork or beef flavor, Sikdorak has a seat for you. One of the highlights on the menu is Spicy Pork, made from pork braut. It is lightly marinated in both an original ginger and soy sauce mix. “I worked in yakiniku restaurants for 10 years making new sauces. This is a different style than in Korea, but people from here seem to really like this one,” says restaurant owner Patrick Choi.

You can enjoy the Spicy Pork by itself, but for $19.95 ($16.95 for children under 12) Sikdorak’s All-You-Can-Eat meal gives the meat lover in you a chance to engulf as much of the spicy pork desired, not to mention the plethora of other meat choices available. If there are two people who can validate the Spicy Pork, it would have to be Choi’s sons, Richard and Robert. “It is very delicious,” remarks Richard. “It is my favorite,” Robert adds. Due to the overwhelming popularity of last month's special offer on its Steamed Butterfish, Hifumi Restaurant has extended the value deal into this month. For $13.95, diners receive a 4- to 5-pound filet of fresh Alaskan butterfish that’s been marinated in a special homemade shoyu sauce, stir-fried in soybean oil and green onions, and steamed until fork-tender and oh-so flavorful. “We stir-fry first to make the taste (of the fish) come out,” says manager Elsie Chang. “It's different and popular with everyone.” The fish is topped with a mash of black beans and garlic and served with a side portion of soft tofu and steamed vegetables. But in an economy where you pay more for less, Hifumi Restaurant is actually offering more food choices for a smaller price tag. The 43-year-old Japanese restaurant recently began offering smaller versions of its already popular (and affordable) entrees. Included on the new mini menu are Chicken Teriyaki, Chicken Katsu, Chicken Karaage, Pork Teriyaki, Ton Katsu, Beef Teriyaki, Salmon, Ahi, Ahi Sashimi, Oyako Ni (chicken simmered in bamboo shoots, ground onions and topped with egg, green onions and nori), three pieces of Shrimp Tempura or eight pieces Vegetable Tempura, each priced at $5.95. Unagi, Unagi Shiitake Tofu Tama (unagi, shiitake mushrooms and tofu simmered in egg) and Katsu Tama (ton katsu simmered with bamboo shoots, egg, ground and green onions and topped with nori) also are available at smaller sizes for $6.95 each. “People now like smaller portions, but they want more choices,” explains manager Elsie Chang of the decision to downsize. “They can choose a small portion like shrimp, sashimi, chicken, pork, all together. We think this way is better so people can choose more of what they want.” Chang also says fewer people are ordering rice and are instead requesting noodles and salad as accompaniments to their main courses. To fill that need, udon or soba noodles can be added to entrees for an extra $2.50, salad or miso soup cost $1, and four pieces of gyoza also are available for $2. “Some people like some salad and some rice and some noodles, it's up to you. It's easy so people can order exactly what they want,” Chang says with a smile. “But the local people, our regular customers, they still like our traditional menu,” she quickly adds. “And the rice and the shrimp; that's why they come.”

decades. Owners Cowan and Faith Wong first opened the doors to On On in Kapahulu in 1980, before relocating to its current location 20 years later. And while the menu is vast here — more than 200 items, to be exact — truth be told, it’s quite easy for me to pick a premier entree of choice. The Mabo Tofu with Rice (imagine a large portion of rice served with house-made mabo tofu) has been a weakness of mine since childhood. “For those who aren’t too familiar with this Chinese dish, it’s chopped tofu with a delectable red sauce and ground pork,” says restaurant manager Norman Wong. “We sell order after order on a regular basis.” Mabo Tofu ($5.95) is proof that when you pair the simplest of foods such as tofu

After we cook the ramen, we top it off with the Mabo Tofu,” says Ken Wong, who owns the Market City Shopping Center location, along with his wife, Cindy. Dining enthusiasts like myself are

enthralled by the thrilling taste of this dish — the zesty spices and the smooth texture of the tofu is what it’s all about. However, if you’re not hot on spice, the chefs here are more than happy to prepare your order mild. Experiencing a gigantic appetite? Mami’s Roast Pork and Black Bean By Chef Chai Chaowasaree

You’ve seen The Pulse commercial on TV. View the TWO MINUTE extended play version on

Ingredients: • 5-, 6-pound pork loin roast • 6-8 large cloves of garlic • 1 teaspoon cumin seed (optional), to taste • 3 medium lemons • olive oil • salt and black pepper Preparation for “mojo” marinade: • Peel and mash garlic with cumin seed using mortar and pestle • Extract juice from lemons • Mix lemon juice with garlic/cumin-seed mixture • Add 1/8 cup of olive oil • Add black pepper and about 1 teaspoon salt • Cut all excess fat from pork and poke holes throughout (about 1-inch to 1 ½-inches deep) • Rub mojo over pork, making sure to have it penetrate all holes. Put in shallow roasting pan and pour any remaining mojo over pork. Liberally add salt and black pepper. Cover with aluminum foil and marinate in refrigerator overnight or at least 3-4 hours so that pork absorbs as much marinade as possible. This will tenderize the pork and blend all flavors. • Preheat oven to 350 degrees. • Roast covered pork for approximately 20 minutes per pound or until internal temperature reaches 165 degrees. (Remove foil for the last 30 minutes to brown.) Let stand 15 minutes before slicing. Black Bean • 1 16-ounce bag dry black beans • 1 medium bay leaf • ½ medium onion, finely chopped • ½ green bell pepper, finely chopped • 6 medium garlic cloves • ½ teaspoon cumin seed • olive oil • red wine vinegar • salt and black pepper

Preparation: • Sort beans, removing small rocks or clumps of dirt. Wash several times in cold water. Drain and soak overnight in cold water or boil briskly until beans have slightly softened. (If more water is needed during the boiling process, add hot water or the beans will not soften.)
