The teppanyaki station is a hit among many, and it’s the Slipper Lobster that I gravitated toward. Kitchen manager and executive chef Toshio says the lobster is very popular and always cooked to the customer’s liking. “We give the customer a choice when preparing the lobster, we have garlic salt, pepper and regular salt to choose from and it’s cooked with butter. We also serve it with steak, calamari and most recently abalone,” he says. Customers receive one piece of lobster for starters and they can always come back for more. With an already full stomach, I headed on over to Hy’s Steak House on Kuhio Avenue to spoil myself with more divine lobster luxury. As my favorite spot for celebrating momentous occasions, Hy’s Steak House has been serving customers the best in fine dining for the past 33 years. With its warm and inviting atmosphere, the restaurant provides a cozy feel, as if you’re by a fireside. Specializing in USDA prime beef that is aged and trimmed on the premises, Hy’s believes this process retains the tenderness and taste of the meat while reducing the fat content. Here, chefs also utilize Native Hawaiian Kiawe wood, as it cooks with an intense heat, thus complementing the flavor of the beef. All beef aside, if you’re a true lover of seafood, you mustn’t pass up the lobster, whatever you do. For starters, assistant manager Ernesto Mera presented me with exquisite dishes of Lobster Bisque, Hy’s Seafood Platter, Lobster Tail and the Steak and Lobster combo. I think I just died and went to heaven! “We get our lobster from a small Pacific island called the Tristan Island. The weather is very, very cold, which makes the lobster from here very succulent and sweet. That island specializes in lobster,” Mera explains. The Lobster Bisque ($8.95) is served as the soup du jour Friday to Sunday. However, Mera says it is sometimes served at the request of guests as well. As for the Seafood Platter ($37.95), this appetizer is so savory with an array of oyster, sashimi, crab legs, lobster and shrimp. It’s a taste of the sea right at your table. And when it comes to entrees, the Lobster Tail (market price) is absolutely amazing. It’s baked in the oven and flavored with Hy’s secret seasoning. It’s savory, succulent and utterly delicious. This culinary sensation is served with the vegetable of the day and your choice of baked potato, rice, rice pilaf or garlic mashed potato. It really is the tail of all tales, isn’t it?

The aim at The Willows, though, is to give people an experience where they feel that the food has been made just for them. To give people the experience of having individual portions being made to order is exactly what we’re aiming for. Jo: You’re probably best known for Hawaiian food, and for prime rib. Jay: Yeah, the Hawaiian food is what we’re really known for. People know that they’re always going to get their favorite Hawaiian foods here. Jo: There seems to be a brighter energy around the grounds, and around the food.
Jay: There’s always going to be prime rib and special dishes like braised roast pork, suckling pig, crab legs — even king crab legs in the mix, when we can get it — snow crab legs are always on the line at night. And as we mentioned, the Hawaiian plates are great. You can have ahi poke, the tako poke, lomi lomi salmon, poi, lau lau, kalua pig, chicken and karaage. Jo: All good, local food. Jay: The thing is that it would have been easy to make The Willows a place for tourists, but everyone has been careful to keep the local people first in mind. The food is for them. Jo: What’s up for Christmas Eve and Day?

That is something hard to do at home, but it’s such a great seasonal, celebrational dish. include a new “six pack” of Konbu Maki ($6.95). The Japanese New Year favorite, made with pork, carrot and gobo wrapped in soft konbu and kanpyo, should be one of Zippy’s holiday hits. “The konbu maki is a new item for us,”
says Jay Crisologo, creative specialist at Zippys. “We think it will do well with our local customers.” And Zippy’s is holiday central when it comes to the kind of dishes that are a big hit at office parties of family gatherings. New
sushi platters also are available from now through Christmas and New Year’s Day. “The platters and sushi platters are really useful for people who’re heading out to parties,” says Kehoe. “As long as people remember to preorder everything, we’ll have it ready to go.” Make sure to call your orders in at least two days in advance to ensure availability of most dishes. With 48 hours’ advance notice, you can pick up a sushi platter — 40 pieces of maki sushi, 12 pieces of cucumber, 12 takuan, and 10 pieces of inari sushi — for $25.50 (Oahu only). is bustling at Zippys. “It’s one of the busiest days of the year for us,” says Kehoe. “We serve the regular menu plus we have our daily specials like our roast turkey plate and, of course, our prime rib plate, which is really popular.” And there’s something new on the menu on Christmas Day: Stuffed Opakapaka ($14.95), a dish that debuted last month as the Thanksgiving special. “It’s a new menu item for us,” says Kehoe, “and it’s been doing very well.” Only available as a “dine-in” option, the fresh opakapaka highlights Zippy’s flexibility. “The fish dishes at Zippy’s are
always popular, and this is a twist on a new recipe where the opakapaka is stuffed with shrimp and imitation crab and topped with a dill mustard sauce,” Kehoe says. Look for more Zippy’s locations to open up this New Year’s due to popular demand. “We tested out opening on New Year’s Day last year, and it had a good response,” Crisologo says. Kahala Sushi is also open on New Year’s Day, and gives customers yet another option for sushi platters. There’s more variety at the sushi bar, and while preordering specialty sushi items still requires 48 hours’
notice, guests can enjoy the sushi bar during Christmas and New Year’s days. “Christmas at Zippy’s is so convenient for people,” says Kehoe. “They can pick up food at most of our locations, they can eat in, and we make the kind of food that would take people hours to make at home. That’s one of the reasons we help make their holidays easier. By essence, it’s local food, but we try to be innovative and bring in new, exotic items whenever we can, and keep it at blue-collarlevel pricing.” Even now, the Gulick team is refining new dishes — Loco Moco with fresh salmon, Okinawan sweet potato and haupia tarts — for possible menu addition. Just about every craving, large or small, can be accommodated here. Trays of food, clearly labeled with content and cost, are displayed in the gleaming deli cases. Servers with takeout boxes stand by patiently, waiting for diners to design their feasts. Menu boards list standards like saimin ($4.50), won ton mein ($5) and mini bentos ($4.25) with rice, fried or shoyu chicken, teri beef and Spam. Three large bento offerings add chow mein and a choice of shrimp tempura ($7.50), mahi-mahi ($7.75), or vegetable or potato tempura ($7.25).
Mom’s Footsteps By Caroline Wright
A
lmost 35 years ago, when Lee Takara was just a toddler, his mother opened a tiny takeout place on Gulick Avenue in Kalihi. From the beginning, customers who came into Gulick Delicatessen were mostly laborers looking for familiar, inexpensive meals. “Businesses like ours were for blue collar people on their way to work who wanted food like Mom’s cooking,” Takara recalls. Takara would spend much of his childhood at Gulick Deli watching his mother, Mary Makishi, build a successful and popular enterprise that now includes a second location in Moiliili on South King Street.
“My brother and I grew up with the business, and over the years, we picked up the nuances,” says Takara. “By the time we stepped in, we were ready to do everything.” Takara and his brother, Cory Makishi, now run the show, and Mrs. Makishi, who once worked as a cook in her native Japan, is retired. (Her husband Roy, a Gulick co-owner, passed away in 2009.) But Mom hasn’t gone far. “We still look to her,” Takara says. “She’s the R&D Department.” In that capacity, he says, Mary Makishi has always stressed the importance of responsiveness to the market. “As time went by, she consistently added items (to the menu).

onsoon India opened on Aug. 16 of this year in the space formerly occupied by Bombay Indian Restaurant in the Discovery Bay Center. While the name and ownership may have changed, owner Imran Khan assures that fans of the old restaurant can count on finding many of the same traditional Indian flavors at Monsoon. “We have had some amazing reviews and compliments on the food from people who have traveled and tasted Indian food from all over the world,� says Khan. “They say it is some of the best and more authentic-tasting Indian food they have had.� One of the reasons for Monsoon's success is Chef Keshore Sharma, who had worked at Bombay up until a year ago. “He has been (cooking) in Indian restaurants for 25 years, and also he has worked in one of the best Indian restaurants in Washington, D.C.,� Khan says, referring to the famous Bombay Palace. “Twenty-five years of experience brings a lot of value to the restaurant and the food that he makes. And now that he's back, the quality of the food is better than it was before.� And now that Sharma is back in the kitchen, Khan expects to start introducing a few new dishes to the Monsoon menu in the New Year, like the Boti Lamb Masala ($18.95). Khan says the chef takes chunks of lamb and first char-broils the meat in the tandoor before adding some spices and cooking it further with onions and bell peppers in a tomato-and-onion sauce. It pairs well with wine as well as the many different types of Naan available any time of day. Khan also suggest trying the Baingan Bartha ($15.95) — fireroasted eggplant cooked and mashed with tomatoes and onions — for those seeking a vegetarian option. Ingredients: • 1 cup dried scallops • 3 tablespoons vegetable oil • 1/2 cup pancetta or ham, diced • 1/2 tablespoon chopped garlic • 2 egg whites • 4 cups cooked rice • 1/2 tablespoon sugar • 2 tablespoons Chinese Thin Soy sauce or Aloha Shoyu • Large pinch ground black or white pepper • 2 tablespoons chopped green onions
Preparation: • Soak dry scallops in warm water for an hour or until softened. Shred into small pieces and set aside.
• In a wok or a non-stick pan, add vegetable oil and cook pancetta for a couple of minutes on medium to

low heat, or until all the fat melts off the pancetta. • Add scallop and garlic, and cook for 15 seconds. Add egg white and stir until it’s cooked. Turn heat to high, add rice, sugar, Aloha Shoyu, pepper and cook for a few minutes, until the outside is toasted. Make sure the rice is not lumpy.
