ll right, who doesn’t love a good sandwich? The food item has been an all-American classic for centuries, and it always brings back fond memories — whether it be enjoying a peanut butter sandwich that my mom would cut into triangles and wrap ever so perfectly in Saran wrap for field trips to the zoo during my elementary days, or partaking in unforgettable grilled cheese sandwich parties with my friends. Today, the days of those grilled cheese sandwich parties and triangle peanut butter and jelly sandwiches (without crust, of course) are long gone. However, the occasional cravings for an onolicious sandwich are still very much alive. That’s why this week I searched high and low for the ultimate sandwich creations and, voila! — my mission was a success! So join me, and set your sights and taste

Sure, we all know Fendu Boulangerie for its heavenly creations, including fresh baked bread, tantalizing pizzas, sandwiches and melt-in-yourmouth pastries. However, owner and chef Niel Koep is always one step ahead of the game, and just when you thought he’s reached the pinnacle of his culinary talents, he surprises you once again with a whole new lineup of Rustic Gourmet Sandwiches. Beginning today, Koep presents hungry patrons with a Ground Wagyu Beef Sandwich ($9.25), featuring one-third pound of ground Wagyu beef pan seared, then served with tomato, sweet onions, pickles, mayonnaise and fresh farm greens on a rustic bun. “What makes this meat special is that the cows are fed all-natural ingredients, so the meat has a very nice marbling and has a really, really nice flavor to it,” Koep says. “I believe this Ground Wagyu Beef
Sandwich, along with our Chicken Cordon Blue Panini, will become two of our most popular items,” he adds. Straight from the Panini grill are a handful of items to entice the palate. The Chicken Cordon Blue Panini ($8.50) consists of a tenderloin chicken sandwich, grilled with Black Forest ham, sweet onions, Gruyere and Swiss cheese, fresh sage and tomatoes. Delicious! Koep’s Basil Pesto Chicken Panini ($8) lures diners in with hearty chicken tenderloins sautéed with Hawaiian salt and black pepper. Grilled on a rustic bread bun with bacon, mayonnaise, fresh tomatoes and goat cheese, I promise that sharing this amazing creation will not be an option! For those with simple appetites, opt for the Gourmet Grilled Cheese Panini ($7). Any cheese connoisseur will be ecstatic with the array before him — Mozzarella, gruyere, Vermont Cheddar and Parmesan Reggiano cheeses all marvelously grilled on Fendu’s famous French sandwich bread. And veggie lovers themselves will delight in the Vegetarian Special Panini

T
he saying that “a single grain of rice can tip the scale” still holds true at Hinone Mizunone, where loyal patrons flock to feast on sweet rice cooked to absolute perfection. How does the Japanese eatery do it? Turns out the secret behind the highly coveted item lies in the restaurant’s name.
“The name Hinone Mizunone has real significance to us,” operations manager Eiki Tamaki explains. “Hinone means sound of fire and Mizunone means sound of water, so when you cook your rice in an old-fashioned pot, as we do, that’s all you can hear — the fire and the water.” But while the rice is ichiban on Hinone Mizunone’s menu,
other favorites such as teishoku lunches, Japanese curry, udon and sushi have quickly gained the attention of patrons since the family-friendly restaurant — owned by Japanese restaurant giant Fujio Food Systems — first opened its doors on South King Street three years ago. Dining Out recently stopped by this ever-bustling eatery, where Tamaki and head chef
Teruo Aonuma discussed, among other things, the restaurant’s fave dishes and the perfect harmony between fire and water that exists at Hinone Mizunone.

location? Tamaki: Yes, it is. The Fujio clan loved Hawaii and would come two to three times per year, and Mr. Fujio wanted to open up a restaurant here. DO: Hinone Mizunone opened its doors for business in 2008, and since then has gained quite a number of loyal customers. For diners who may have not yet had the opportunity to experience Hinone Mizunone, what can they expect? Tamaki: People can expect home-style Japanese cooking. It’s really about comfort food here. Our regular customers come to eat here up to four times a week.
DO: This eatery features something for every appetite, whether it is udon, teishoku sets, a la carte options such as Broiled Salmon ($6.50), Ebi Fry ($5) and Tonkatsu with homemade sauce ($6.50) and more. Any other must-have items we’re missing from this list? Tamaki: Our daily lunch and dinner specials are really popular here. Also on our regular menu, frequently requested items are Butterfish, Tempura and Sashimi, to name a few. However, the No. 1 item for lunch is the Chicken “Ama-kara Age” ($11). This is crispy fried chicken seasoned with grated daikon and y topped with a sweet ginger
sauce. This teishoku entrée is something pretty unique to us, and it’s also served with rice, miso soup, two side dishes and tsukemono. DO: Chef Aonuma, you’ve been in the culinary industry for the past 43 years and have been showcasing your skills at Hinone Mizunone for a year and a half. Share with us some of your famed specialty items. Aonuma: We have the Salmon Avocado Roll ($7.25) and the Ribeye Oroshi Ponzu Steak (ala carte $16, teishoku $20.50). This steak is so tender and features grated daikon. Both the salmon rolls and the steak are available for dinner only. Tamaki: Our Japanese curry

serve all of our rice in an ohitsu instead of a rice bowl — that equates to more than two bowls of rice!
DO: There has been much talk about the incredible rice here. What makes the rice at Hinone Mizunone so special? Tamaki: We cook all of our rice in an old-fashioned pot. We have a rice warmer, but we don’t have a rice cooker. We set the rice on high heat for 10 minutes, low heat for five minutes and let it sit for 20 seconds. We have to constantly keep an eye on it, or else it’s just going to burn. Our customers love our rice. The taste is definitely sweeter and the rice is a lot fluffier. We also
DO: Chef Aonuma, you were trained in Japan, but knowing that the majority of your clientele is local, did that force you to make some changes to your culinary styling? Aonuma: A bit. Yes, most of our customers are local, so the food that I serve here isn’t exactly what you would find in Japan. Instead, I mix the flavors of authentic Japanese cuisine with local flavors and concepts. I always use local ingredients as much as I can. DO: How exactly do you
incorporate local flavor into authentic Japanese cuisine? Aonuma: I do so with decoration, and the taste of the food is a little sweeter. Tamaki: You’ll especially find local flavorings in particular dishes like the butterfish, sukiyaki, and in our California Rolls and Spicy Tuna Rolls.
DO: What’s most rewarding about serving as head chef at Hinone Mizunone? Aonuma: The people, of course. The staff is very friendly and we have very loyal customers. Tamaki: We do our best with trying to be very consistent and serving consistently good food.

wning a restaurant with a name as unique as Lung Fung Chinese Restaurant, one is bound to receive questions about the name’s meaning. Such questions are typical, according to restaurant manager Eddie Ma. “People are always asking me about (the restaurant’s name, Lung Fung),” Ma says. “From the old times, lots of people use that name for ‘good luck’ and ‘good fortune.’ ‘Lung’ is ‘dragon’ and ‘fung’ is ‘phoenix’ in Chinese. If you come in the restaurant, you can see the pictures in the back, the gate and the ceiling panels … it’s all dragon and phoenix.” The restaurant’s décor is just one of many changes Ma made ever since he became the restaurant’s manager in 2002. “I did a lot of renovation and updated all the cooking styles,” Ma says. “Lung Fung not only has a chop suey restaurant style; we also have a lot of seafood items.” Lung Fung first opened in Kalihi 30 years ago and has since moved to its current location in Niu Valley Shopping Center. Due to its location, Ma acknowledges that many of the restaurant’s customers are locals from neighboring communities. “More people from the East Oahu side come (here),” he says. “I would say ‘thank you’ for all their support, but I’d like to welcome people not only from East Oahu to taste the food at Lung Fung.” Lung Fung offers an expansive menu filled with many options for customers. Popular favorites include the Crispy Garlic Shrimp ($13.95) — consisting of big shrimp mixed with fried, crispy garlic — and the Spicy Won Ton ($8.95). Other menu favorites are dishes such as crab and pork chop that include the restaurant’s garlic and chili, according to Ma. The restaurant not only prides itself on its food’s flavor, but on its reasonable prices and product presentation as well, Ma says. “I have 22 years of experience in Chinese restaurants in Oahu and fine dining experience,” he explains. “People are interested in the look (of our food), so I want to make sure it’s decorated. I want people to feel like they are getting quality food at a low price. The average price range (per customer) is about $10.”

While he has already made many changes to the menu, Ma says he constantly looks for inspiration for new entrees when he visits Hong Kong and China. “Every month, we put some new items (on our menu),” he says. “Anytime I travel around China and Hong Kong, I see what’s the most popular dish and try to bring it back to Hawaii. Lunch specials, offered from 11 a.m. to 3 p.m., are $7.95 and include entrees such as the Minute Chicken Fried Noodle and Beef Brisket Noodle. “We also recently started a kids’ menu,” Ma says. “For $3.99, you can get orange chicken/beef broccoli, a scoop of rice and two pieces of gau gee; or a bowl of saimin.” In addition to these promotions, Lung Fung also offers a banquet menu, which is popular among locals for planning parties or events. “We put a lot of seafood items in the banquet menu and make it very reasonable,” Ma says. “It’s (Lung Fung) good for holding a party because there’s a lot of parking and it’s very private. They (customers) don’t have to share the area and spend a lot of money.”

atisserie La Palme D’Or prides itself on quality delivered through both its delicately prepared desserts and stellar customer service. As its name (translated to mean “Golden Palm,” and also the symbol gracing the trophy bestowed upon the top film at France’s Cannes Film Festival) suggests, customers are in for the cream of the crop when experiencing what La Palme D’Or has to offer.

The Ala Moana Center eatery’s flagship items are its pastries, made daily from scratch to ensure freshness. Its recipes are crafted to make the desserts sweet enough to enjoy without being overwhelmed with too much sugar. The treats incorporate not only flavors from various ingredients gathered from Hawaii, Japan and around the world, but also showcase the artistry of the chefs that incorporate various textures and design to complete the presentation. Executive chef Akiko Kimura brings a wealth of experience from her training at the Osaka Abeno Tsuji School of Culinary Arts to La Palme D’Or, where she’s worked for nearly two years. Kimura’s tutelage fuels the patisserie’s fusion of traditional French pastry-making with techniques from Japan. The combination has produced a wide array of confections, from the simple and classic to the exotic
and flashy. The Gateau Au Fraise ($4.80) is La Palme D’Or’s signature strawberry shortcake and although light and fluffy, the layers of moist sponge cake sandwiched with whipped cream and sliced strawberries pack a flavorful punch. According to Kimura, the strawberry shortcake is modeled after the popular style found in Japan. The Vanilla Roll Cake ($3.40) incorporates a similar soft sponge cake rolled up along with whipped cream and vanilla custard. The Mont Blanc ($4.99) provides customers with the royal treatment — the pastry was presented to the Emperor of Japan during his visit in 2009. The dessert includes a base of almond cake baked with chunks of chestnuts and gooseberry that is covered with fresh whipped cream and an intricate piping of smooth, rich chestnut cream containing a hint of rum. The dish truly resembles the “white mountain”

A rainbow of flavors for the local palate
t the end of every rainbow there lies a pot of gold, and at Rainbow Drive-In in Kapahulu lies mouthwatering local grinds that both locals and tourists can’t resist. This iconic, local landmark was founded by Sejiu and Ayako Ifuku, and opened its doors in October 1961. Today the Ifuku’s son-in-law, Jim Gusukuma, serves as vice president for Rainbow Drive-In and says that while much time has passed the food has remained the same. “We’re a nostalgic, iconic plate lunch place and one of the things we try to do is stick to the original recipes,” Gusukuma says. “We’ve added a few things to the menu over the years, but generally speaking, our menu is the original plate lunch menu that my father-in-law started. “His philosophy was to give good food at a reasonable price, with quick service and that’s what we try to do.” With varied local favorites gracing the menu, the Loco Moco Plate ($6.75), Chili Dog Plate ($6.20) and the Mixed Plate ($7.25) are indeed top sellers of the bunch. “The Loco Moco Plate is extremely popular especially with the Japanese market,” Gusukuma explains, noting that Rainbow Drive-In was one of the

uring the constant rush of the week, sometimes dinner gets put on the backburner of things to do, leaving most folks scrambling when hungry cries of “What’s to eat?” fill the kitchen air. To the rescue is 3660 on the Rise. Since April, the award-winning restaurant has been offering a threecourse menu of monthly specials to alleviate the stress of last-minute dinner preparation. “We decided to start these specials to give our customers a great excuse to eat out on the weekdays,” says banquet catering manager Cheryl Leong. “They have been well-received from the beginning.” According to Leong, Chef Lydell Leong invents the menus based on guests’ requests, crafting new dishes each month for foodies looking for a tasty and affordable dinner out during the week. Served for breakfast, lunch or dinner, pho dishes have an inviting allure to them as the flavors of each ingredient merge together, rising from each steaming bowl. Pho is essentially Vietnamese, but the cultural influence France had on Vietnam also is a factor in the development of this noodle soup. Yet, another hit among customers when it comes to sandwiches is the Country Club Sandwich ($8.75 whole, $6.75 half). “This sandwich consists of fresh roast turkey, bacon, ham, Swiss cheese and your veggies,” Visitacion explains, adding that you may pick from whole wheat or white bread made fresh at the establishment. “Many people take advantage of our catering options as well, we have many sandwich platters available.” With the first bite of any sandwich here, you too will soon be falling in love with I Love Country Café. Fresh Manila Clams with Black Bean Sauce By Chef Chai Chaowasaree | Serves 2
Ingredients: • 1.5 pounds fresh Manila clams • 2 tablespoons vegetable oil • 1 tablespoon chopped garlic • 2 tablespoons diced onion • 1 tablespoon red jalapeno pepper • 1 tablespoon salted Chinese black beans • 2 tablespoons oyster sauce • 1.5 cups chicken stock • 1/2 tablespoon cornstarch mix with 2 tablespoons water • 1 tablespoon chopped green onion • Salt and pepper, to taste (Some black beans are very salty, so salt may not be necessary.)
Preparation: • Clean the clams by rinsing in water until all mud and sand are removed. • In a sauté pan on medium heat, add vegetable oil, onions and garlic. Sauté for a few seconds, add clams, cook for a minute then add chicken stock, chili pepper, black beans and oyster sauce. • Keep cooking until all the clams are open. Stir in cornstarch mixture and bring to a boil. Finish by adding the green onion and season with salt and pepper, if needed. Turn off heat.
