BirthdayCakes rather they taste so darn good! Let’s see, vanilla, chocolate, red velvet, cheesecake, ice cream cake, Chantilly, the list goes on — and they're all so onolicious! This week, I couldn’t help but indulge in every cake that I set my sights on, and I was happy to see that the following “Ono, You Know” bakeries and patisseries love birthday cakes just as much as I do! So now that the candles have been blown out, the wishes have been made and some of the cake and ice cream have been devoured, I’m excited for this new year ahead of me. But, before I get too far ahead of myself, anyone care to join me for even more cake? Grab a fork, there’s plenty of birthday goodness left to go around!

ere in the islands, we all have that special uncle in our lives who lives for the ocean. That one uncle who would spend hours on the boat pursuing the perfect ahi, aku and bottom fish. Today, Uncle’s Fish Market & Grill, located at the Waterfront at Pier 38, honors those uncles by offering up the freshest of seafoods, sushi and more. This award-winning establishment opened in 2007, and manager Sean Simpson says customers can expect nothing but the highest quality products. In fact, Uncle’s Fish Market & Grill’s fishing boat “Sea Spray” is actually docked at Pier 38. “Fishing is an important part of Hawaii's culture and we really wanted to highlight this in our restaurant,” Simpson says. “We really want to bring

Hawaii's fishing community together and everyone who loves seafood.” Dining Out recently caught up with Simpson over plates and plates of fresh fish, shrimp, sashimi and poke at the eatery, where he shared exactly why Uncle’s Fish Market & Grill is the absolute mecca for all seafood fanatics. DO: Uncle’s Fish Market & Grill is a favorite among seafood lovers and everything is served fresh, correct? What is the concept behind the restaurant? Simpson: Uncle’s Fish Market & Grill was named as a tribute to all of the uncles in everyone’s lives who were always there for us. We want our customers to feel at home 2 here, and also bring back the feel of old Hawaii. People really enjoy the freshness of the seafood here, and we get our fish from the Honolulu fish auction six days a week. Some of our fish is from the Big Island as well, and even as far as Tahiti. DO: Do you have a special uncle in your life? Is it true that your uncle also owns the restaurant? Simpson: Yes, my uncle, Bruce Johnson, actually owns the restaurant and he has a great love for the ocean. If you look on the walls, you’ll find actual photos of him and friends of his when he was learning how to fish. Uncle’s Fish Market & Grill also is a subsidiary of Fresh Island Fish, which our family owns. Fresh Island Fish brings in an average of 20,000 pounds of fish per day. DO: The menu offers various selections of fish and chips, fish tacos, fish sandwiches, salads, fresh fish entrees

Simpson: Well, our Fresh Opakapaka ($25.95) is a signature item featuring sautéed opakapaka with fresh mushroom butter sauce, topped with king crab meat. It’s also served with your choice of rice or french fries with tossed salad. Uncle’s Signature Poke Tower ($15.95) is another favorite, with a tower of sashimi-grade poke layered with guacamole and ahi tartar, topped with tobiko on a bed of rice and nori, served with tortilla chips. We have fresh Mahi Mahi ($15.95) and Opakapaka ($17.95) battered in Uncle’s special seasonings and deep-fried in zero-trans fat oil. For something a bit different, we also serve Shrimp and Chips ($15.95) accompanied with french fries and homemade cole slaw. We have a bar as well, offering beer, wine and cocktails that go well with these dishes. DO: For those a bit more health conscious, what would you recommend? Simpson: Our Seared Sashimi Grade Ahi Salad ($17.95) is a top choice among our customers, as it consists of fresh slices of seared ahi on a bed of mixed greens with Oriental dressing. The Crab-NAvocado Salad ($15.95) is another healthy option with natural crab meat with romaine lettuce, fresh avocados, cucumbers and tomatoes. We offer sushi Thursday through Sunday nights, and all day on the weekends. Our sushi chef Ernie Gray creates special rolls, such as Hamachi Jalapeno ($19.95) and Poke on the Pier ($17.95). Hamachi Jalapeno presents diners with a roll filled with snow crab, asparagus and yama gobo topped with fresh hamachi, diced jalapeno, yuzu and chili oil. Poke on the Pier is a signature roll with snow crab, avocado and cucumber topped with sashimi grade maguro, fried ogo and kukui poke sauce. DO: Is there anything on the menu for those non-seafood eaters?
Simpson: Yes, we offer a U.S. Choice New York Cut Striploin ($19.95), sizzling with grilled onions, and our newest item, Uncle’s Backyard BBQ Chicken ($15.95): a broiled all-natural half-a-chicken marinated with fresh ginger, garlic and hoisin sauce, and served with sugar snap peas. DO: Who is your clientele here? Simpson: We have a nice combination of both locals and tourists. For the past couple of years it’s been mostly locals, but now many tourists in Waikiki have heard about us and have come to dine here. But we do have a great amount of loyal customers, who we are really grateful for. DO: What is something special about the restaurant that not many people would be aware of? Simpson: First off, all of our fish is fresh and my uncle’s company that owns the restaurant, Fresh Island Fish, is the largest seafood distributor in the Islands. I think what people might not be aware of is that whenever you’re getting fresh fish at many of the hotels, grocery stores and restaurants, a lot of times the fish has already come through this building. DO: How would you describe the atmosphere of the restaurant? Simpson: It’s definitely casual dining, but because the quality of our fish is high, you can come here and enjoy a really nice meal. We hope to open more locations in the future.

Slurping up oodles of tasty noodles By Alana Folen
he Old Samin House, where saimin and other local favorites rule the menu, is a nostalgic landmark for many locals who can’t resist the charm and tasty grinds offered here. Tomizo and Mitsue Ikei, whose parents emigrated from Okinawa, opened the doors to The Saimin House in 1962 on North King Street. Today, fourth generation family members operate this familyrun business, and although the name has changed to The Old Saimin House, the menu remains the same. “We specialize in old-fashioned saimin,” says manager Lois Ikei. “We follow the same tradition of the local, old-fashioned saimin, which a lot of people are familiar with — it’s not ramen — but just the curly

noodles with a bit of texture. “Our menu is very simple, we try to promote simple, comfort food, and we’ve added additional selections to the menu as well,” she explains. “The Old Saimin House is a family-friendly restaurant — everyone loves saimin!” In addition to the original saimin, diners can enjoy Wun Tun Min, Wun Tun, Udon, Wun Tun Udon, BBQ Sticks, Fried Saimin, Fried Udon, Fried Soba, Musubi and more. “Our customers say our wun tun is very exceptional, and we have a lot of loyal customers who frequent the restaurant,” Ikei says. “They (patrons) come back time and time again for our fried noodles and, of course, our saimin. “Our saimin broth is homemade and our noodles are brought in from Eagle Noodle Factory.”

etting down to the meat of the matter, you’ve got to admit that burgers are synonymous with the U.S. both here and abroad — whether we like it or not. Most of us grew up eating the great American burger, but if you’ve never eaten meat or have recently made the decision to eliminate it from your diet, then burgers just aren’t on the menu for you. Sure, there’s the ubiquitous “veggie burger,” but seldom do they meet expectations: Oftentimes they’re either too dry or rather mushy inside, or simply lacking in flavor. Well, read on, veggie lovers, and savor the ’shrooms. Panya Bistro in Ala Moana Center offers a handful of burger options on its menu, but one that stands out for non-meat-eaters is the Pesto Mushroom Burger ($10.95) — grilled portabello mushrooms, mozzarella cheese, lettuce and garlic pesto sauce on a sesame seed bun (made fresh daily at Panya Bakery, of course),
served with a generous pile of crisp french fries. The portabellos rise to the occasion so deliciously that even die-hard carnivores would be satisfied (well, many of them). The fresh basil taste of the garlic-laced pesto complements the earthy flavor of the large, meaty mushrooms, while the creamy mozzarella holds the whole thing together. (Don’t forget to ask questions. Panya will hold the cheese if you're not into dairy, for instance). Do vegetarians love burgers and fries? At Ho Ho Chinese Cuisine in Kapolei, authentic Chinese food is merged with local-style preparation, and customers can choose from numerous selections served up on the all-you-can-eat buffet, or order specific favorites a la carte. The eatery, which gets its name from the Cantonese phrase for “very good,” or “nice,” is well known for its salt and pepper shrimp and crab legs. According to owner Crystal Chan, the recipe consists of a signature blend of spices and seasonings that are infused with the succulent seafood as it is deep fried to crispy perfection. “It’s been the most popular since we opened in 2004,” says Chan of the salt-and-pepper style that also incorporates garlic and other flavorful accents surrounding the deep-fried delicacies. “The customers like it very much, they don’t want us to change!” The shrimp and crab headline Ho Ho’s dinner buffet, which gets under way nightly at 5 p.m. The spread features a wide range of selections including the extremely popular Fried Chicken Wings, Walnut Shrimp and
3 Steamed Sea Bass with Ginger Onion and Soy Sauce, and is priced at an economical $15.95 Monday through Thursday nights, and $17.95 Friday through Sunday evenings. Additionally, selected items are available on Ho Ho’s lunch buffet that is served from 10 a.m. to 2:30 p.m. daily, and is light on the wallet at just $9.50 Monday through Friday, and $10.95 on weekends. “The price is a very good deal,” says Chan, who notes that the recent economic downturn has been hard on the local community. Changing menu, view at Top Of Waikiki s Hawaii’s only revolving restaurant, it’s not surprising that Top Of Waikiki is constantly changing. The view changes as customers dine — the restaurant slowly moves to make a 360degree rotation every hour — providing varying views of the city. “There are reasons to appreciate all times of the evening,” says general manager Craig Bunkley. “You can see the sunset over the ocean, and then you can see the lights popping up all down Kalakaua Avenue.” And in accordance with this ever-changing environment, Top Of Waikiki is launching a new menu tomorrow, which will feature five new appetizers and several new or redone entrees. Many of the new dishes reflect chef John Neff’s talent to blend different flavors together. Neff describes his culinary vision as “globally inspired fusion.” Bunkley says that one example of Neff’s ingenuity is Seared Scallops and Foie Gras ($19), which is one of the new appetizers. In addition to all of these new options, favorites such as the Grilled Atlantic Salmon ($35), which Neff and Bunkley say is one of their most popular dishes, will still be available. “This has Asian and local influences, and takes tofu, scallops and shrimps to make it into a souffle, all in a tempura batter with grilled salmon on top.” Top Of Waikiki also offers Sunset Specials, which include New York Strip Steak and Lobster-Crab Cakes ($23.95) and Seafood Risotto ($22.95), offered between 5 and 6 p.m. nightly. Daily Happy Hour is from 5 to 7 p.m. and from 9 to 11 p.m. and features $4 martinis and cocktails and $7 pupus such as Poke and BBQ Pork Sliders. J New items soon to hit JJ’s Bistro’s menu hef JJ Luangkhot has been delighting local foodies for years with his fresh French-meetsLaotian-inspired dishes. Not to disappoint, the award-winning pastry chef and restaurateur recently has expanded his menu of savory and sweet creations with the introduction of three new items. “We started serving these dishes a few months ago, and so far they have been doing really good and everyone liked them,” explains Luangkhot. “They’re not on the menu yet, but we thought we should let people know they will be soon.” The first of the trio is a Manila Clam Black Ink Pasta ($12.95). Tiny steamed Manila clams and vegetables rest atop black noodles, which get their color from squid ink used in the dough. The ink also gives the pasta a pleasantly unexpected unique flavor. “We also use a special white sauce made with an Italian seasoning,” Luangkhot notes. “I also add a little dried chili to make the sauce a bit more flavorful.” Those seeking something a bit heartier will delight in the Baked Cheese Ravioli with Crab ($12.95), a truly comforting dish made with homemade ravioli, creamy tomato sauce, crab meat and a gooey blend of five different cheeses.

J’s Bistro & French Pastry possesses all the charm of a street-side European café, with patrons regularly dropping in for a quick nosh paired with relaxed conversation. Hoping to add to this feeling of being on an overseas holiday, Chef JJ Luangkhot started serving “Afternoon Tea at Le Cacao Bistro” earlier this month at his Waialae eatery. “There are very few places (in Hawaii) that provide afternoon tea,” says Luangkhot. “We just want to have another signature destination for Hawaii.” For the set price of $14.95 per person, diners will be treated to a spread that includes Crab Rangoon, Mini Croissant Sandwich, Smoked Salmon, Ham and Cheese Quiche and Scone, as well as choice of dessert — either an assortment of French macaroons or a medley of scone, tart de citrus, red velvet and le café. “It is more like a tasting menu,” notes the pastry chef. “For eight pieces per person … this is perfect for people to have different, but simple dishes.” Enjoy the finger food with a freshly brewed pot of tea. Flavor choices for the kettle are Earl Grey, Chamomile, Green Tea, English Breakfast or Mango Peach, Chef JJ’s personal favorite. “It is something a little bit tropical,” he says with a smile. “Or, if they want coffee, we have a special coffee they can order for $2 more,” Luangkhot quickly adds. Already in high demand by customers, “Afternoon Tea at Le Cacao Bistro” begins at 11 a.m. and is available until 5 p.m. daily. “Hopefully,” Luangkhot says, “this will become a destination for someone who really does not want to have a very heavy meal for lunch.”

Savor the flavors of the kebab he Monsoon Kebab dish at Monsoon India goes well beyond your typical meat on a stick experience. There are many subtle specialities that give the Monsoon Kebab ($19.95) its appealing flavor. The dish combines a host of assorted delicacies including chicken tikka, lamb boti and jumbo shrimp. The marinade and preparation of the kebabs that chef Sugam Kuinkel creates includes a balanced barrage of spices, as well as a distinct patience in the way the lamb, poultry and shrimp are cooked. “Everything is marinated for 24 hours in a yogurt base with nine different spices including cumin powder, paprika, bay leaf and cinnamon powder,” says Kuinkel, who was a cook in Dubai and Nepal for five years before moving to Hawaii. “Many other restaurants only use a few spices, but we like to use a whole variety of spices that are imported from India. We use a Northern Indian way of cooking. It is healthier and lighter.” After marinating, the meat is cooked in a clay tandoor oven at a 400 degree heat. “The flavor, the aroma comes from the clay oven, giving the dish its special, smokey flavor,” Kuinkel adds. “It is similar to a baked lasagna, but instead of a plain lasagna, we add more cheese on top,” Luangkhot says. And what would a stop at JJ’s Bistro be without dessert? New to the alreadyimpressive lineup of indulgences is a Chocolate Soufflé ($7.95), a light, airy cloud of deliciousness made with only the finest Belgian dark chocolate, eggs and finished with a dusting of powdered sugar. “The soufflé is my specialty dessert from back 20-plus years,” says Luangkhot, who began his career as a pastry chef under the tutelage of patissier Jean Marc Burillier at the renowned Maxim’s in New York. “We are known for our desserts … so I tried to bring back my experiences from New York to Hawaii.”
