the popular demands of hungry diners. Being raised on dim sum, you can say I’ve tried it all — from the ever-popular pork hash or Siu Mai to the adventurous morsels of chicken feet. Yes, you read that correctly — chicken feet! Now don’t tell me that doesn’t have you chomping at the bit to savor. Not sure of where to find the best dim sum in town? I’ve got you covered. Without further ado, here’s a peek into the world of dim sum — “Ono, You Know� style!

his week, I paid homage to my Chinese roots with a tribute to dim sum. Dim sum is a staple when it comes to Chinese dining culture, especially in Hong Kong, here at home and in some parts of the Mainland. For those who aren’t too familiar with this vibrant cuisine, dim sum involves small individual portions of food, all usually served in a small steamer basket or on a plate. Dim sum translates into “a bit of heart,� and it’s with a big heart that these dishes are made. Palace Seafood and feast on the cheapest — but oh, so delicious — dim sum in Honolulu. There’s 45 dim sum selections to please any appetite and at $1.89 per order, you really can’t go wrong. As a family business since 2001, Golden Palace’s Gary Lam says they serve this traditional Chinese food as early as 7 a.m. every day, and wrap things up at 2:30 p.m. Everything is made fresh daily and most orders come with three pieces each. Lam suggests to try it all. Of course, the Baked Char Siu Manapua and Baked Custard Manapua will always leave you satisfied, as well as the Steamed Chive Dumpling with Shrimp. Yet, I dare you to rise out of your comfort zone and try the Braised Chicken Feet with Black Bean & Pepper Sauce. You may be turned off at the mere thought of it, but who knows? You just might take a liking to the hearty flavor of the sauce and chewiness of the meat. I certainly did! Be prepared to work for it though, as you have to eat around many bones. ZIPPING INTO THE HOLIDAYS

here’s something of a buzz surrounding Zippy’s these days as the holiday season approaches — much of it to do with an anticipated rush on Thanksgiving Meals to Go. “We were so busy last year with our turkey dinners,” says Thomas Kehoe, Zippy’s Kahala manager, “that we’re expecting a really busy time again this year.” Thomas believes that one of the reasons for the growing popularity of Zippy’s holiday meals is convenience, and a taste of home-cooked comfort food. “People know what to expect when they’re getting Zippy’s mashed potatoes and gravy,” says Kehoe, “and our customers really like the stuffing and our dinner rolls. It’s food that they’re comfortable with, and that they know tastes good.” A word of warning, though: If you’re thinking of ordering and

leaving the stress of turkey day cooking to the professionals, make the call right now. While there’s a huge number of meals to go being prepared (last year Zippy’s sold several thousand meals), they are not unlimited. Jay Crisologo and a number of other staff members helped man the phone lines last year, and this year they are preparing for the task with almost military-like precision. “We have a call center where we know how many turkeys are left at each location,” says Crisologo, “and we count down as people order. If a certain store sells out, we can direct customers to the next nearest store. Last year we were taking orders right up until 5 p.m. on Thanksgiving Eve and sending people to the nearest Zippy’s locations to pick up. People were really happy to know they could pick up the entire meal. ” And while a Zippy’s-made Thanksgiving meal is indispensable if you’ve forgotten to defrost

the turkey or don’t have time to shop, it also can be a great gift. “We had so many customers last year buying the dinners as gifts,” says Crisologo. “And we had multiple orders from companies buying the meals as gifts to their employees.” There are a couple of different options with Meals To Go. A whole turkey package is $71.95 and includes a 10- to 12-pound pound cooked turkey, gravy, mashed potatoes, stuffing, cranberry/pineapple relish and a dozen sweet dinner rolls. A second, smaller option, features half a turkey (about 5– 6 pounds of roast turkey), comes with the same selection of side dishes and costs just $37.95. Desserts, including pumpkin or custard pies, can be added for just $6.70 more when you purchase them at the same time you order your meal to go. “The desserts and the appetizer platters are really popular too,” says Crisologo. “People like to be able to pick up a platter of sushi or pupu if they’re going somewhere for dinner.” With 48 hours advance notice, you can pick up a sushi platter — 40 pieces maki sushi, 12 pieces cucumber, 12 takuan and 10 pieces inari sushi — for $25.50 (Oahu only). Four party platters (like the one featured in the photo) also are offered. Prices range from $19.95 for Chicken Katsu, to $28.95 for a Korean Chicken Platter. The most popular Pupu Platter No. 1 ($23.95) features teri beef, chicken katsu, Portuguese sausage, mahimahi and hot dog.

And for those who’d rather spend the holiday being catered to rather than cooking and cleaning themselves, Zippy’s offers a warm, holiday welcome — and some new entrees — on Thanksgiving Day. “We are usually busy from breakfast through dinner on Thanksgiving,” says Kehoe. “People really enjoy coming and trying the Thanksgiving specials — and not all of them are turkey.” Look for the newest special on the Zippy’s menu as Stuffed Opakapaka debuts Thanksgiving week.

“It’s a new menu item for us,” says Kehoe, “and we think it will do very well. Our opakapaka has been very popular, and this is a twist on a new recipe where the opakapaka is stuffed with shrimp and imitation crab and topped with a dill mustard sauce.” It’s all served in a typically generous Zippy’s-style portion. Whether you go out, eat in or take home, you’ll find a taste of the holidays, island-style, at Zippys.

Finding bliss with each bite at Zpizza

into the organic wheat crust sizzled to crispbrowned perfection and oozing with hot juicy tomato — and perfectly paired with just the right touch of mozzarella and radiating flavor — you’ve reached pizza nirvana. Seasoned with Z’s homemade roasted garlic sauce and Parmesan, you can’t help but say “yummm” with each hearty bite. Z’s offers outdoor seating, but inside you can watch the experts at work, molding their artistic creations and sliding them into the giant smoldering oven. The price is similar to that of other pizza places on the Island, which is pretty good considering that Zpizza uses fresh, organic ingredients rather than the more common canned, generic stuff. here’s no better comfort food than pizza, and for those of you fretting the island’s lack of piping-hot cheesy goodness, you need look no farther than Zpizza. The hip Ward Center joint sports a number of traditional pies on the menu, but what sets it apart are its specialty pizzas. “The Napoli is one of our most popular pizzas,” said general manager Aliiana Fiu. “It’s got the fresh tomatoes, fresh basil and low-fat mozzarella; each ingredient keeps its integrity. And we make the dough right here every day. We don’t want to give our customers dough that’s been sitting in a freezer. They know the difference. When we bake the pizza — our oven is lined with bricks and it heats up to 600 degrees, so the crust comes out really nice and crisp.” Perhaps Fiu understated the glory of the Napoli, which is basically heaven on a plate. The food always comes hot and steaming from the kitchen, a clear indication of just how fresh each order is made, and the portions are enormous — a true deal considering most items cost no more than $10. The choices are many at Golden Duck Tuesday features the Roast Duck Wo Mein, $7.50, where customers can build their meal with the choice of a soup-style or gravystyle base and three styles of noodles: saimin, e-mein egg noodles, or the skinnier, crispier Hong Kong noodles. Wednesday’s Chicken Oyster Sauce Noodle, $7, is similar to the minute chicken, but pieces of dark meat chicken on the bone grace this platter of vegetables, noodles and oyster-sauce gravy. Thursday has the restaurant’s immensely popular Duck Noodle, $7. What makes this soup dish so popular is, what else, the duck, which is slow-roasted for three hours until it is crispy, juicy and easily pulls away from the bone. On Friday the Chicken Mushroom Noodle costs $7.25. Similar to the Duck Wo Mein, diners choose the base and the noodles with which to pair the boneless chicken pieces and shiitake mushrooms. Saturday is Chicken Chow Fun, $7, a medley of shredded boneless chicken, bean sprouts, broccoli and chow fun noodles. And on Sunday, the Roast Duck and Ginger Chicken on Rice is $7.50. olden Duck celebrates 50 years of creating some of the island’s best Chinese cuisine. The casual, family-friendly restaurant has stood in several locations throughout the years — first near Aloha Stadium and then McCully — but most are familiar with its location on South King Street. Last month Golden Duck opened a second location right across from Kahala Mall at 4230 Waialae Ave. Diners can expect to find the same exceptional dishes such as Chicken with Broccoli, Stew Duck with Bitter Melon, Sweet Sour Spare Rib, and Shrimp Fried Rice, but owner Aaron Fong says the Kahala location also will have exciting new options. “It is similar items, but a little more variety,” he says. “They have sizzling platters and Maine lobsters — fresh lobsters and fresh Dungeness crabs in the tanks. Everything is fresh.” So why the new locale? “We have a lot of local customers, and many of them live in Kahala, but they don’t want to come too far,” says Fong. “For years they’ve requested to open one in Kahala, so I was thinking it about it two years ago, and finally I find a spot, then we just opened.” It is this dedication to customers that has contributed to Golden Duck’s many years of success. Or maybe the flock of duck figurines inhabiting the front of house have something to do with it ... “We have a lot of repeat customers who are real loyal, and when they come they just give me a duck,” Fong says with a laugh. “In Chinese lore, I think the duck means good luck.” Golden Duck is planning a 50th anniversary special in the coming weeks, so stay posted. he holiday season is about to get into full swing at On On Chinese Restaurant in McCully. Long established as one of the city’s most popular Chinese restaurants, On On is a perennial favorite with families looking to spend quality time eating together —

and not cleaning up in the kitchen. “The holidays begin for us in November and carry on all the way through until Chinese New Year in February,” says Norman Wong. “It’s a very busy time of year for the restaurant and one that we all look forward to.” Thanksgiving Day (the restaurant is only open for half a day) sees a high number of takeout orders as people

W

hen Chang Hak Jeon and his wife, Mi Hee, hear the alarm go off at 4:30 every morning, it signals the start of a day filled with food preparation. The owners of one of Honolulu’s oldest Korean restaurants believe in making everything from scratch, and when a menu involves five varieties of kim chee, homemade soups, marinades, meats and more than 50 different buffet items, the preparation for lunch and dinner has to start early. Fortunately, they love what they do. “We do get up very early to start,” says Chang, who was a chef in Korea and owned a bakery before coming to Honolulu. “But it makes us happy to be bringing a taste of authentic Korean food to our customers. We think our food is something that everybody can enjoy.” Mi Hee is just as enthusiastic about their tough schedule. “I really love to do it,” she says of the preparation that includes making gallons of red bean soup. “The soup takes more than three hours to make each morning, but it is very good, and people really like it, so it’s worth the work.”

ollege students, shift workers, club-hoppers and insomniacs: What do you do when your town rolls up its sidewalks? If you’re an East Honolulu night owl who is hungry for something a little more sophisticated than drivethrough fare, you might want to check out Anytime Café. Located in Market City Shopping Center, this funky Kaimuki eatery was opened in February of this year by Ken and Cindy Wong. The Wongs also own the Sumo Ramen and Curry restaurants here on Oahu. When the Wongs first began making plans for Anytime Café, they thought a lot about the restaurants in Hong Kong. “Late-night, café-style dining is very popular in Hong Kong; you can eat anytime,” explains Cindy Wong, who says the cafés back home inspired their extended hours. “We’re open in the morning, but we also stay open late, too!” Want a take-out order of baked spaghetti and meatballs ($8.95) to enjoy while you watch Letterman, or oxtail soup ($10.95) at the end of a split shift? Craving French toast with peanut filling, Hong Kong-style ($6.25) at 10 p.m. on a Tuesday?

Anytime Café offers a diverse menu with something for breakfast enthusiasts, late-night diners and everyone in between. “We have Asian, Italian, American, plus local flavors like Loco Moco and oxtail soup … we even have risotto!” Wong says, proudly. “Our risotto and pasta are from Italy, and they are so good. Our wonton and noodles are from Canada.” She explains that Vancouver, where their noodles are made, is home to a large population of Hong Kong expatriates. “People say that some food in Canada is better than in Hong Kong!” she adds. Located in the space formerly occupied by the upscale Banana Leaf Italian Bistro, Anytime Café offers an eclectic selection of affordable dishes. The Wongs, who parted ways with their Banana Leaf coowner early this year, have made it a point to keep prices down in the new place. No entrée costs more than $11.95. The couple’s commitment to quality and value is reflected in their dishes. Their wontons, for example, are made in-house according to the exacting specifications of Ken Wong. Most local wontons contain pork and perhaps a tiny bit of shrimp for flavor.

Anytime Café takes it a step further. “We cut a big shrimp into thirds, and include a third in each wonton. You can really taste it!” says Cindy Wong. There are plenty of international classics here, including the Fried Dumplings ($4.95), House Burger ($7.95), Shrimp Wonton Noodle with Broth ($7.95), and Chicken Parmesan ($9.95). Lee also gave me a brief history lesson on dim sum that over the years has grown into an art form all its own. “As travelers were passing through villages in China, they wanted something small, fast and easy to eat, and that’s how dim sum originated,” explains Lee. “From there, it just grew and became very popular among the Chinese.” And the great thing about dim sum is that it can be eaten at any time of the day, for breakfast, lunch or dinner — you pick! However, here at Hee Hing, it’s served primarily for lunch daily from 10:30 a.m. to 2:30 p.m.

The Fried Shrimp dumpling also is one of the top sellers and consists of mouthwatering shrimp with a hint of celery to give a burst of flavor and crunch. “The Shrimp Dumpling ($5.25) or Ha Gau is the most original dim sum. When people think of dim sum, they think of this,” Chan says. Siu Mai, also known as pork hash, is another customer favorite. For $5.25, the Bean Curd Roll made with fresh bean curd, chicken and mushroom is a tasty option along with the Mochi Ball Red Bean. Love this! “The Mochi Ball Red Bean is more like a dessert dim sum,” Chan explains. And even though this dessert may be a little on the greasy side, it’s a popular dish for many and something I look forward to enjoying with my family, especially around Chinese New Year.

Owner Lisa Lum opened this eatery on Liliha Street in 2008, and since then has been busy serving up authentic Chinese cuisine to her loyal customers. As a family favorite when it comes to dining out Chinese-style, Nice Day offers a variety of decadent dishes. But it’s their dim sum that’s indeed worth mentioning. If you’re new to dim sum, you may opt for the Half Moon ($2.30) with pork, shrimp and mixed vegetables stuffed in a rice wrap, or sink your teeth into the Pork Hash ($2.30), a dumpling filled to the brim with pork and shrimp, which usually sits well with most beginners. Believe me, these will turn you into a dim sum fanatic. Personally, I can’t resist the Deep Fried Taro ($2.30). The Deep Fried Taro is warm and flaky, and consists of pork-filled taro, deep fried to perfection. It’s easy to eat, the pork is tender, and the taro is savory and filling. There’s really no other way to describe it than absolutely wonderful. Lum suggests dipping your dim sum in a mustard soy sauce, which will provide you with that extra kick of flavor. Being that you can partake in dim sum as early as 8 a.m. at this joint, that extra zest just may be necessary. And if you’re in search of a dim sum classic, it’s found in the Baked Manapua ($2.30). The bread, lightly sweetened and fluffy, pairs nicely with the bits of pork you’ll find in each and every bite. I also am a fan of the Black Bean Chinese Malasada also known as Jin Dui. With its sweet flavor and chewy consistency, I’m pretty sure you’ll like it, too.

Mama Kane’s Empanadas

PRESENTS

by Chef Chai Chaowasaree

Filling • 1 teaspoon olive oil • 1/4 medium onion, finely chopped • 1/4 green bell pepper, minced • 3 large garlic cloves, minced • 1/4 teaspoon cumin seed, crushed • 5 large stuffed green olives, finely chopped • 1 1/2 pounds extra-lean ground round • salt and pepper, to taste

Preparation • In a sauté pan with heat set at medium high, add olive oil and onions. Allow to sweat for 30 seconds before adding bell pepper garlic, cumin and green olives. Cook for a minute. Add ground beef and sauté until meat is thoroughly cooked. Refrigerate until ready to use.

Empanada shells • 4 cups all-purpose flour • 2 teaspoons baking powder • 1/2 teaspoon salt • 4 teaspoons butter

• 2 eggs • 1 cup cold water Preparation • Mix dry ingredients together; set aside. Beat eggs, add to dry ingredients and cut in the butter with a pastry cutter until dough crumbles. Slowly add water while kneading dough into a ball. Divide into two even balls and roll dough between your palms until they form long ropes (about 8 inches). Place ropes back into bowl, cover with cloth and refrigerate for at least one hour. • Break off a piece about the size of a ping pong ball. Flatten with hand and roll on floured surface until it is thin. Using a saucer, cut each piece into a round using sharp knife. Put a tablespoon of cooled filling into center then fold over and seal the edges with a fork. Fry in hot oil. • Recipe should make about 18 empanadas. You also can use a small form to make appetizer-sized empanadas.

Rice is Twice as Nice at Hinone Mizunone

T

here are those who argue that Hinone Mizunone has the best rice in Honolulu. The kamadaki gohan — rice cooked in a traditional pot — is soft, light, fluffy and sweet . And it’s considered simply perfect to the palates of a considerably large group of devotees. “We do have a lot of people who say our rice is the best they’ve tasted,” says Hinone Mizunone’s operations manager, Eiki Tamaki. The method of cooking the rice, and the quality of the rice itself, have so much to do with how it tastes. “We use a large pot and we stir the water with a

paddle,” says Tamaki. “It’s a more involved way of cooking, rather than using a rice cooker and just flipping a switch. With the rice pot, you have to watch the water, stir the rice and watch the heat. It’s more involved. And the rice has a sweeter taste with a fluffy texture. “People can taste the difference immediately.” You can see for yourselves by stopping by Hinone Mizunone.
