hile growing up, I learned to read by immersing myself in the eclectic world of Dr. Seuss. In fact, one of the very first children’s books I read on my own was One Fish Two Fish Red Fish Blue Fish. Since my childhood, I’ve remained a fan of fish — one of my favorite culinary delights. Fish can be prepared in numerous ways, and studies show that it’s an excellent low-fat food and a great source of protein, vitamins and minerals. The oils in fish also are important for unborn and breast-fed babies, and eating a variety of fish is said to help reduce the risk of a stroke or heart attack. So while there’s plenty of fish in the sea, I took it upon myself to find a few of

The Willows reopened its doors in 1999 after a sixyear hiatus, and now serves as a mecca for locals and tourists alike who can’t wait to feast upon a buffet filled with onolicious local cuisine in a peaceful atmosphere. The dinner buffet is offered daily for $34.95 and the lunch buffet is open Monday-Friday for $19.95. And if you’re wondering, the man behind it all is executive chef Jay Matsukawa, who cooks up local favorites, including kalua pig, poi and some of the best curry around. There’s even a vast array of salads and a carving station that features Garlic and
among locals, but tourists aren’t afraid to sink their teeth into a moist piece of this fish as well. Yet, it’s the ChineseStyle Mahi Mahi that has everyone returning for second and third helpings. “We sear up the mahi mahi and season it with ginger, garlic and a bit of sesame oil. Hawaiian Salt Crusted Prime Rib. I’ve been coming to The Willows for years, and two of my personal favorites are the Misoyaki Butterfish and the Chinese-Style Mahi Mahi. Both are meltin-your-mouth delicious and rotate nightly as part of the dinner buffet. “The Misoyaki Butterfish is a black cod, and what we do is we marinate it for two days with miso, kabayaki sauce and butter,” Matsukawa explains. “The fish is then broiled and garnished with green onion and black and white sesame seeds.” The butterfish is ultimately popular

Ocean House Dinner is served nightly with casual elegance here at Ocean House, located beachfront in the Outrigger Reef Hotel. Guests are greeted to a beautiful dining room warmly lit by candles and tiki torches, and the sound of waves crashing onto shore, all while enjoying an upscale meal right by the water. David Nagaishi has been serving as operations manager for the past nine years and says they offer something for everyone, whether it be steak, chicken and chops or an entree of fresh fish. “Everything is popular here and our prime rib is fantastic,” Nagaishi says, “but we do specialize in seafood and fish.” Executive chef Craig Yasaka prepares line-caught fish whenever possible and recently prepared the Fire Roasted
Monchong ($29.50) — a Hawaiian Pomfret served with yuzu, oyster cream sauce, ginger and cilantro essence over jasmine rice — especially for me! Monchong is a beautiful white meat, full of flavor and amazing in texture. This particular fish also has a lot of character, and it’s something that the chefs can be a little more creative with, Nagaishi adds. Also straight from the sea is the Crab Stuffed Mahi Mahi ($26.50), Lilikoi Misoyaki Butterfish ($31.50) and Parmesan Crusted Opah ($29.50), to name a few. The Crab Stuffed Mahi Mahi is steamed and topped with Bearnaise sauce served with Maui onion mashed potatoes. Honestly, it’s any seafood lover’s fantasy! cover story ocated at Ala Moana Center’s Hookipa Terrace, Jade Dynasty is the first restaurant to open in the U.S. as part of Paramount Banquet Halls, which currently operates 22 locations throughout Hong Kong. The grand opening of this 8,250-square-foot eatery doesn’t take place until Tuesday, and for director Ave Kwok, the timing couldn’t be any better. With the Chinese New Year just around the corner, Kwok believes the restaurant will bring a new dimension of Chinese seafood dining to Hawaii.

Dining Out recently took the opportunity to see firsthand what Jade Dynasty is all about. Open daily, the restaurant is a culinary dynasty that, according to Kwok, is fitting for royalty. DO: Jade Dynasty is beautiful. What is the concept behind the restaurant? Ave Kwok: My concept is one of contemporary elegance. If you’re dining here I want you to feel like a king and queen. We want to draw in more local customers and bring them a true Chinese style (of cuisine). We technically serve a Hong Kong-style cuisine. It’s a whole different level of cuisine with great importance placed on presentation and taste, as Hong Kong diners are constantly eating and have a diverse palate. What we do is we take traditional foods and add our own concepts. It’s delicious homemade food at an affordable price. DO: There appears to be a never-ending flow of traffic coming in for lunch and dinner. What type of crowds are you drawing? AK: I would say we cater to 80 percent of local people from all walks of life. Business people frequent the restaurant on weekdays, and on the weekends it’s all about the families. Fifteen to 20 percent of our clientèle are tourists. The Japanese tourists seem to love dim sum.

chef Bun Lau is from Zhongshan and prepares the best Zhongshan Pork Dumplings. The dumplings are filled with pork that has a special, authentic taste, and is mixed with peanuts and some vegetable oil. When you taste it, it’s so smooth. The Date Gelatin is a healthy dim sum alternative made with chrysanthemum leaves and gelatin. It’s usually had as a dessert. Everyone opts for dim sum for Chinese New Year because it’s easy to eat and it has many different flavors and tastes.

And it is that exact attention to tasty detail that caught Cesar Llarenas’ attention during a trip to Newport Beach several years ago. “When I first tried the pizza, it was love at first bite,” Llarenas says. “My dream was always to own a restaurant, but I didn’t know which restaurant it was going to be. Also popular is the Provence, which layers organic tomato sauce, homemade roasted garlic sauce, mozzarella, artichoke hearts, capers, tomatoes and fresh basil over z’s legendary fire-baked crust. “It’s very simple but it’s very good,” Llarenas says. Pizzas come in 10-inch small ($12.95), 14-inch large ($22.95)

and 18-inch extra-large ($26.95) pie sizes as well as by the slice. Choose from one of z’s 12 signature pizza creations, or build your own from the list of never-ending ingredient combinations. “We are a gourmet pizza place where we use a lot of premium ingredients,” Llarenas says. “For example, we have a truffle oil that we use, we use the cremini and shiitake mushrooms, we use a pili pili oil — it’s an olive oil that we mix with a hot pepper and it creates a spicy oil — and pretty much we try to buy as much local produce that we can. “We take pride more in all the quality and all the ingredients that go in the pizza.” In order to offer customers an even greater number of healthful choices, zpizza recently launched the Rusticas, a line of personal-sized, free-form artisan pizzas inspired by global cuisine. There’s the Chicken Curry & Yam Rustica, a blend of mozzarella, curry chicken, yams, mango chutney, raisins and cilantro that takes its cues from India; as well as the Pear & Gorgonzola Rustica, a creamy-sweet mix of mozzarella and gorgonzola cheeses with fresh pear slices and thyme. Other flavor profiles include Mediterranean (mozzarella, feta, artichoke hearts, roasted peppers, Greek olives, oregano and pili pili oil); Moroccan (basil pesto, mozzarella, roasted eggplant, feta, caramelized onions and pine nuts); and Chicken Sausage (marinara sauce, mozzarella, arugula and chicken sausage). Each Rustica will set you back $12.95 and 100 calories, the restaurant promises, but stop in now through the end of the month to take advantage of a buy-one-get-one-free deal. Also be sure to drop in on Vegan Pizza Day Jan. 29, when there will be a special vegan Napoli pizza made with vegan cheese and without Parmesan. “Zpizza is different because it is a lot more creative and we put in a lot of thought to make the taste better,” he says. “All in all, I think we’re more complete as a casual pizza place, focusing on a healthier fare versus just a pizza is a pizza.”

Fresh, buffet-style offerings at Yakiniku The restaurant mostly caters to locals and tourists from China, Japan and Korea. Customer favorites include kal-bi, spicy pork, chicken and pork belly, which was added to the menu last month. “A lot of people like the pork belly because it’s a lean cut of meat and not greasy,” Maeda explains. “It’s very popular among Koreans and locals. It’s so tasty that no marinade is needed. “Everything is prepared fresh daily and we make our own marinade for the other meats.” Yakisoba noodles also is a rather new item on the menu, along with a variety of sushi. But while the noodles are served throughout the day, sushi is only available during dinner hours, in addition to the sashimi, sirloin meats and ice cream. Yakiniku Camellia’s lunch buffet is priced at $14.95, while dinner costs $21.95.
W
hen it comes to all-you-can-eat buffets, quality and quantity are vital. Yakiniku Camellia Buffet, located on South Beretania Street, proves this by fulfilling both of these necessities. Owner Chang Hak Jeon opened the restaurant close to 30 years ago, and since then Yakiniku Camellia Buffet has been thriving with more than 50 buffet items to choose from, including 30 homemade side dishes such as kimchee, daikon kimchee and taegu. “Customers come here to cook their own food and it’s kind of like a barbecue at home. Kit’s new breakfast meals
E
arly risers are starting their days off the right way by dining in at Kit n Kitchen, the University Avenue restaurant known for its delicious Eurasian cuisine. Since December, owners Kit and May Yiu have been serving up a New England-style breakfast to satisfied patrons. The hearty meals are being offered from 8 to 11 a.m. every Monday through Wednesday. “So far the breakfast menu has been well received, and surprisingly it’s doing better than we expected,” says May, a Toronto native who considers herself a big fan of the New England-style breakfast. Although there is a wide selection of breakfast options to choose from, the Huevos Rancheros, Frittata, Strawberries Crepes and Egg-in-the hole have proven to be top sellers among the bunch. The Huevos Rancheros ($9.50) meal features lightly grilled tortillas topped with two fried eggs and your choice of grilled chicken or Portuguese sausage with baked beans, olives and roasted
potatoes adorned with guacamole, sour cream and chunky tomato sauce. Served in a cast-iron pan, Kit says, the Frittata ($9.95) is a beautiful and creamy dish, baked with garden-fresh zucchini, green peppers, onion, cheese and your choice of bacon, chicken, Portuguese sausage or ham in a bed of eggs and tomato sauce. And for $8.95, diners can feast on Kit n Kitchen’s famous Egg-inthe-hole, an egg cooked to perfection in a hole of toast, served with chunky tomato sauce and choice of meat, along with roasted potatoes or rice. (For an additional $1.95, you can ask for pineapple chicken fried rice.) Finally, the Strawberries Crepes ($6.95) dish features a sweeter flavor in which the
French-style pancakes are topped with fresh strawberries, lightly sweetened strawberry jam, whipped cream and cream cheese. “The crepes are refreshing and our omelettes are quite popular, and so is the breakfast pizza and grilled panini sandwiches,” May adds. “Our breakfasts are made to order from scratch and we serve Asantae Java coffee, which is a delicious antioxidant coffee.”

hough it’s just a few blocks away from Hawaii’s largest shopping center, Million Restaurant is the kind of place that only the most akamai diners might seek out.

Diana Paik, whose family is originally from Seoul, confirms that tourists and even unfamiliar faces are a rarity at this tiny gem of a restaurant. “We have about 90 percent regular customers, all local people,” she says with a ready smile. The Paik family — four sisters, a brother, and their mother, who is now retired — opened Million’s doors in 1998, and have built a reputation for excellent versions of classic Korean favorites like yakiniku and bi bim bap. Located just off Kapiolani Boulevard, their tiny Sheridan Street restaurant seats about 55 diners at big salmonpink dinettes that can hold entire families. Shiny vacuum tubes, two over each table, dangle from the ceiling to suck up the smoke from the yakiniku grills. To tourists and the uninitiated, those shiny metal tubes might be a startling and novel sight. But for neighborhood locals, and especially for Korean-born Honolulu residents who long for a taste of home, everything about Million is familiar and friendly, the source of delicious fragrances and flavors. The yakiniku is the big star at this restaurant. “Korean people love our sliced pork belly ($23),” says Paik. “Everybody else loves our kal-bi, our outside skirt steak, our brisket and our beef tongue.” Three different types of kal-bi are available for yakiniku, at $24 each. The Ahn Chang (skirt steak) is also $24; brisket and tongue cost

$22. A minimum of two orders from the yakiniku menu is required for tabletop cooking. Perhaps the best way to eat yakiniku at Million is to order a set. Each of the four sets here is priced at $45 for two people and all come with bul go gi (marinated sliced beef) or kal-bi or both, plus outside skirt steak and brisket. Set “A” adds tongue and mountain tripe. Set “B” adds tongue and pork belly. Set “C” includes barbecue chicken, and “D” includes shrimp. Changes to set menus are only $3, so it’s easy to create a meal that makes everybody happy. All come with banchan, the little plates of heaven that accompany most Korean meals. Million’s banchan vary constantly, and might at any time include spicy raw crab, taegu (codfish), potatoes, steamed egg or Korean potato salad. And kim chee, of course. “We make our own, and we always have three kinds,” Angela Paik, who manages the restaurant, says proudly. Banchan bowls may be refilled once for free here. Diners who prefer to have their meals cooked before they’re brought to the table may order from Million’s Special Plates menu. At $11 each, plates include favored items like kal-bi, mahi mahi jun, bul go gi, fried salmon, and chicken, some in combinations (regulars say the meat jun is especially good here). Hamachi and fried butterfish plates are also available for $12 each. At

lunchtime, from 11 a.m. to 3 p.m., plates are priced at $9.50-$10.50. One of the most popular items on the menu at Million is the Dol Sot (stone pot) Bi Bim Bab. Some regulars say it’s so good because the stone pot is a particular size or shape, and always served sizzling hot; many insist that it’s the best on the island. The seven different varieties here, all priced at $12, include kal-bi, bul go gi, spicy shrimp and chicken. At lunchtime, the stone pot is available with bul go gi for $8.50. Asahi beer is available on tap by the glass for $3.50, or by the pitcher for $12 (three domestic bottled varieties are also available). Million’s cooler holds soju, of course, as well as bottles of Kooksoondang Makkoli (rice wine), Baek Sae Ju (rice corn wine with herbs), and Bok Bun Ja Joo, the delicious Korean black raspberry wine. Diners may bring their own wine for a $10 corkage fee. Every inch of the small space at Million is used to its best advantage; a couple of tables are tucked into a nook behind the Asahi keg in the front of the restaurant, and a small room just beyond that holds a few more. But the hardworking Paik family has big plans for the new year. “In April,” confides Angela excitedly, “we are going to expand next door! There will be a lot more room.” The new space, which once housed a salon, will add about 600 square feet to the restaurant.

appy Day Chinese Restaurant is making the lives of Hawaii’s foodies all the brighter, thanks to a diverse selection of dim sum and other Chinese favorites. Lisa Lum has owned and operated the Kaimuki eatery for the past 10 years, and with Chinese New Year quickly approaching Feb. 3, Lum and her staff are busy cooking up specialty foods specifically made for this time of year. For instance, Chinese mochi or gau is available now through February, priced at $5 each. “Gau represents good luck and we’ve been making it for the past three years at Happy Day to celebrate Chinese New Year,” Lum says. Made out of Chinese mochi powder and brown sugar, Lum says, this sticky dessert takes up to six hours to cook and steam.
“We make more than 50 gau per day, which totals up to close to 3,000 by the end of February,” Lum states, adding that it’s best when eaten fresh, but can last for seven to 10 days. “The seed in the middle also represents good luck and the gau is sprinkled with sesame seeds. The stickiness of the gau represents the family sticking together throughout the year.”

The menu at Kochi Restaurant and Lounge reads like a local guy or gal’s ultimate foodie wish list: Gyuhiku no Tataki, Hamachi, Shrimp Tempura, Wafu Tofu Salad, Misoyaki Butterfish, USDA New York Steak, Loco Moco and, for dessert, Deep-Fried Haupia Fritters. So it should come as no surprise to learn a good portion of Kochi’s menu comes straight out of the mouths of customers. We started off with core menu items but then maybe people would ask do you have, for example, udon, which we didn’t have from the beginning but we brought later on,” says Denise Takara, who co-owns Kochi with husband Lee. “We just add things that people kind of were looking for.” Two new items at Kochi’s in-house sushi bar are the Spicy Tuna Donburi and Salmon Ikura Donburi ($12.95 each). Handcrafted from only the freshest ingredients by sushi chef Aaron Kumura, the donburi are presented so elegantly, you don’t want to eat them for fear of ruining Kumura’s latest masterpiece. But Kochi is not the place to feel delicate or froufrou. We’re not talking about fancy here — this is more where a local person would feel like they could come more often than once,” Mochizuki says. Favorites of repeat customers include Amaebi (sweet shrimp, $8.50), Deep-fried Hash Balls ($7.95), Furikake-crusted Mahimahi ($12.95) and Kurobuta Kakuni ($16.95), aka the Kobe of pork. “It comes from the Berkshire pork — it’s a certain lineage of pig and it’s handled and raised a certain way, kind of like the way See page 13–

hile much may have changed since Kochi Restaurant and Lounge first opened in 2007, one thing has always remained the same: its dedication to its customers. “This whole Kochi restaurant always would change, it was always spontaneous, but we always want to know what our customer wants or is looking for,” says owner Denise Takara. Whether it be serving generous portions of local-Japanese cuisine at bargain prices, or creating a welcoming atmosphere suitable for both family gatherings and parities with friends, Kochi is that one-stop restaurant for every occasion and milestone in life. “You’ll see the guys who come in all the time in their shorts and slippers, then on the next table everyone’s dressed up for an occasion, but everyone feels comfortable,” says manager Reid Mochizuki. “We want to cater to everyone of all ages,” Takara agrees. She and husband Lee achieve this balance in their main dining room by filling the cozy space with cushy high-back chairs and tables purposefully lacking the starch-white tablecloths Mochizuki says breed an air of stuffiness. There also are flat-screen TVs at all four corners of the room that provide that “dining at home” feel. “Again, I keep saying local, but locals like TVs in the dining room,” Mochizuki says with a laugh. “We always have them going on mute, but they can watch what’s going on, and sometimes when there’s Hawaii football everything stops so everyone can watch.” A lounge and bar area adjoin the restaurant and is the perfect hangout for younger diners who may want to stay out a bit longer after their dinner party departs. “It really is restaurant and lounge,” Takara says. “Sometimes people will sit right at the bar and have their miso soup and butterfish and sashimi ...” “It’s pretty common for people to have complete meals there, but it’s about wherever they’re comfortable,” Mochizuki adds. “And that’s what we wanted,” Takara says, “a place where we would feel comfortable hanging out in, coming in with big groups or with family on a Monday night. “We do big family-size portions of things, so we’ll have a whole plate of fried rice or noodles, then we’ll have a big plate of pork chops ... but you can also do a complete meal just for yourself,” Takara says. “A lot of people come in for big parties, and they’ll order all different things and share, and that’s the best way to get a taste of our menu.” Right: Kochi manager Reid Mochizuki is ready to serve customers one of the ever-popular dinner combination plates.

ou’re in the mood for some quick, delicious Japanese food, but since you’re not a meat eater, you may overlook Sushi Ichiban just because of its name. If you’re like me, when you think of sushi, fish, of course, first comes to mind. Oh, sure, there may be a cucumber roll on the menu, but that’s about it. Hold on to your chopsticks. Sushi Ichiban manager Manny Nakasenh has let Veg’n Out in on a tantalizing little secret — and, of course, we’re more than happy to share it with all of our readers out there who choose to go meatless. You won’t find Vegetarian Tempura on the menu — it’s by request only — but the restaurant is happy if customers are happy, so just ask! It’s that simple. Nakasenh assures us that they use no eggs in the tempura batter, in which carrots, zucchini, eggplant, onions and mushrooms are dipped and then quickly fried. “It’s nice and light and crispy,” he says. Served with miso soup (which gets its flavor from nutrient-rich seaweed, not fish, says Nakasenh), salad, rice and tsukemono (Japanese pickles), this satisfying, full-course lunch costs just $8.95. Now that’s enough to make any veggie lover smile!

Spanish Paella By Chef Chai Chaowasaree (Recipe courtesy of Natalie Aczon of Whole Foods Market)
Ingredients: • 1/2 cup Spanish extra-virgin olive oil • 6 large prawns • 1 medium Spanish onion, diced • 1 chorizo (cut in 1/2-inch pieces) • 1/2 cup pureed ripe tomatoes • 1 teaspoon kosher salt • 1 teaspoon saffron threads • 1 tablespoon sweet pimenton • 1 pound cleaned cuttlefish or calamari, cut into 1-inch pieces
• 2 quarts fish stock • 2 cups Valencia rice • 1 pound boneless skinless chicken — cubed and cooked • 1 pound mahi mahi, cut into cubes • 1 pound Manila clams, scrubbed
until golden brown on both sides, about 3 minutes per side. Transfer to plate and set aside. • Add onion to pan and cook until soft, about 8 minutes. Add tomato puree, stirring it into onions, and cook for 3 minutes. • Add salt, saffron, pimenton and cuttlefish and cook, stirring, for 5 minutes, or until calamari firms up slightly. Add stock, bring to a boil and cook for 5 minutes. • Add rice and stir well to distribute it evenly, and do not stir. Add chicken, mahi mahi and clams, arranging them nicely. Bring stock back to a boil and cook, without stirring, for 10 minutes. • Add prawns, taste for salt and cook, again, without stirring, for an additional 10 to 15 minutes, or until liquid is completely absorbed and pan starts to make a boiling/crackling noise (don’t worry, as this is what you want). Remove from heat and let rest for 10 minutes before serving.
Tips: • Grind saffron threads and kosher salt in hand grinder. You may also add chorizo (with onions). Preparation: • Heat a paella pan over medium- • Rice should be from Valencia to high heat. Add oil and heat until get that al dente but flavorful smoking. Add prawns and cook Spanish paella taste.
