sk any of my close family and friends and they’ll tell you that I'm a full-fledged traveler and foodie at heart — I live to eat and travel. My most recent venture took me to New York City last month, the concrete jungle where dreams are made. You could definitely say it was a vacation to remember, as I wined and dined with friends and family, shopped to Sex and the City standards, met the Today Show's Ann Curry, caught a few Broadway shows and even saw my favorite singer Lea Salonga perform live at

The Carlyle on the Upper East Side. Who could ask for more, right? Well, better yet, upon my return home I noticed that despite all the eating that took place, I somehow managed to drop a few pounds (thanks to all the walking I did)! However, this week, with a gigantic pork chop craving before me, I hit up some of the most incredible restaurants our island has to offer, that in fact credit themselves on serving up some of the best pork chops in town. I couldn’t resist. It’s now safe to say that all those pounds I thought I had left for good in NYC have miraculously reappeared, all thanks to these “Ono, You Know” pork chops — but no complaints here! Eat up!

he Royal Hawaiian, a Luxury Collection Resort exudes a taste of pure splendor as it presents a new farmers marketinspired Sunday brunch “Royal 220” from 10 a.m. to 2 p.m. today (Sunday) and Aug. 21 beneath the banyan trees in the resort’s Coconut Grove. In an effort to support the local farm industry in the islands, Royal Hawaiian executive chef Hans Stierli has created a captivating fine dining experience utilizing only the best and freshest local produce provided by farmers within the 220-mile radius of the Hawaiian Islands.

“Using local products is beneficial to the environment, being that you don’t have to worry about shipment of the products,” says Stierli, who has served as executive chef of the resort for the past three years. “You also support the food source and the farmers who are producing quality products. It’s important that people are aware of what they’re getting and what they’re putting into their bodies — it’s safer when you know where the product is coming from,” he adds. The brunch is priced at $48 per adult and $32 per child (ages 3-12) and features hot station selections offering up exquisite culinary masterpieces, such as Soy and Sake braised Kuahiwi Ranch Beef Sirloin Tips on creamed Kahuku Corn served with fried Maui Onion; Fire Rock pale ale and Maui Onion braised Kuahiwi Ranch Sirloin with grilled Surfing

Goat Cheese Polenta; Charcoal grilled Kuahiwi Ranch Sirloin Steak; and Pier 38 Catch sauteed with spicy Wow Farm tomato sauce, steamed jasmine rice infused with coconut grove kefir and lemon grass, to name a few. And for the breakfast fanatic, marvel in the tempting spread of Hawaii ranchers Red Veal Loco Moco with poached island egg and fresh Hamakua mushrooms, not to mention Stierli’s famous Kalua Pork Hash with Poached Egg, topped with a mustard hollandaise sauce and a flavorful Kona Coffee barbecue sauce. Or why not indulge in the Taro Pancakes with Ho Farms apple bananas and coconut syrup? “It all comes down to the quality of the product,” Stierli says. “It's not the chef who makes the ultimate difference, it's the quality of the product. “The idea is to get the farmers to deliver the products on the peak of its ripeness, so deliveries come in three times a week. As for the Royal 220 brunch, we’re so happy to be working with local farmers,” he exclaims. A symphony of fresh fruits and vegetables also will invigorate your senses as Stierli delicately puts the finishing touches on items including the alluring Ahi Sashimi on Big Island Mashed Avocados paired with Nalo Farm microgreens and drizzled with a yuzu-wasabi dressing. The Ho Farm Greek Salad and Hirabara Farm Greens with spiced Macadamia Nuts
served with a coconut grove herb vinaigrette are expected to be a hit with guests as well. Then satisfy your thirst with refreshing juices and smoothies, such as fresh orange and guava juice the Ho Farm Apple Banana and Kula Country Farm Strawberry Smoothies. One of the perks of being in paradise also means sampling a medley of islandgrown fruits, consisting of Haliimaile Pineapple with li hing mui powder, Aloun Farm cantaloupe and watermelon, Kahuku Farm papaya, Kula strawberries and more. “I love to support local farmers and producers, and I think they deserve to be known,” Stierli says. “Usually the chefs are the ones in the spotlight, but I think it’s important that the public knows what these farmers are providing us with.” Indeed, Hawaii is a mecca when it comes to hav-
ing a variety of premier ingredients at your fingertips — a culinary playground of sorts. Finally, end your dining experience on a sweet note, by sinking your teeth into delightful desserts such as the Waialua Chocolate Fondue, Coconut and Strawberry Tartes, and, of course, pies galore! “We have a lot to offer,” Stierli states, adding, “dish selections do depend on the availability of the product. For example, I may have to substitute a vegetable or fruit for another because it's not quite ripe — so there may be a bit of variation to the menu. “What I really want to get across is that I believe a good relationship between the farmers and chefs is extremely important when it comes down to creating an excellent finished product — and that’s what I think we’re offering here.”

The Willows’ marvelous buffets feature top notch local cuisine prepared by Willows’ culinary staff under the direction of executive chef Jay Matsukawa. Matsukawa says The Willows Champagne Sunday Brunch Buffet really draws in the crowds on a weekly basis. Priced at $34.95 (adults) and $17.50 (keiki ages 4-10), the all-you-can-eat buffet is offered from 10 a.m. to 2:30 p.m, and with 40 to 50 items to choose from, there’s something for even the pickiest eaters. In fact, Matsukawa says, The Willows patrons have much to look forward to, as a few new items hit the buffet line starting today. “Here at The Willows we’re really trying to up the quality of our Sunday brunch and 1 offer some breakfast items that you wouldn’t normally get at a buffet,” he explains. “We're just trying to provide the best options to people who want to go out to brunch on Sundays.” Mouths will water as guests for the first time will feast on Matsukawa’s Kiawe Smoked Prime Rib; Eggs Benedict and the Peanut Butter, Banana, Chocolate French Toast.

ade has long been associated with riches and nobility, with numerous cultures all over the world reserving the rare stone for use in only the finest objects, jewelry and art. So when Jade Dynasty Seafood Restaurant, part of the Hong Kongbased Paramount Banquet Halls, opened last December on the fourthfloor Hookipa Terrace of Ala Moana Center, no expense was spared in creating an all-around dining experience fit for royalty. affordability ble-doors, which lead to an aweinspiring dining space decorated in lush fabrics, glass chandeliers and an illuminated bar that stands in the center of the main room. But diners shouldn’t be intimidated by all this grandeur. “We look expensive, but we are affordable,” says restaurant director Ave Kwok, who designed Jade Dynasty around the theme of “affordable elegance.” “Our concept is to welcome everyone to sit in a super nice environment and enjoy what they really like,” he explains. And it seems customers really like the dim sum. “We have many local people visiting us for the dim sum for one simple reason: The dim sum is great!” Kwok says, adding, “We have more than 75 different types of dim sum, starting at $2.95.” Dim sum service starts at
10:30 a.m. and goes to 5 p.m. every day, with new items introduced to the menu weekly. The newest addition is the Snow Mountain Char Siu Buns, what Kwok describes as “hot, melting and ono!” Other popular dim sum dishes with restaurant regulars are the steamed Chive Dumpling ($3.50), Pan Seared Bean Curd Roll with fresh shrimp ($3.50), Red Bean Jim Dui (fried mocha balls with red bean inside, $2.95), Beef Look Fun (minced beef hand-wrapped with rice noodles, $4.50) and Egg Custard ($2.95). But for those dining at Jade Dynasty for the first time, the sheer quantity of delicious dim sum may seem overwhelming. To help newbies get a taste for the menu, Kwok suggests starting with four tried-andtrue favorites: Zhongshan Pork Dumpling ($3.50), soft, mouth-watering pork and gravy wrapped in a

Starting from $12, the dinner specials run all day, with a selection almost as vast as the dim sum. A few popular entrees include Tea-Smoked Shrimp ($23.95), live Dungeness Crab ($18.95), Dynasty Chicken ($19.95/half) made using free-range chicken, and Peking Duck with fresh bun ($48), prepared in

the authentic old Chinese-style in a roast oven to retain the bird’s juices and flavor. “Our famous beef simmered in a spicy broth ($17.95) is also good,” Kwok says. “It is hot and spicy, in a good way.” A cooling treat, the Hong Kong
Style Milk Tea ($3.95) is a specialty people once had to travel thousands of miles just to enjoy. “All Hong Kong people love milk tea, and you do not need to travel to Hong Kong now!” Kwok says with a laugh. Party menu prices start at $230 for a party of 10, and can be customized to meet customers’ personal food preferences. “When you visit Jade Dynasty, we want you to feel like a king and a queen and eat whatever you like,” Kwok says. “When you shop and want good food with a lot of choices, think Jade.”

o matter what kind of diet you keep, if your food isn’t digested properly, you won’t get all the nutrients your body needs — and your stomach won't be happy either. If you often suffer from indigestion, there is a school of thought in the health and nutrition field that the culprit could be food combining or trophology. I’m not a nutritionist or health professional, but the theory is that you shouldn’t eat carbohydraterich foods and protein-rich foods in the same meal. So starch with vegetables or protein with vegetables, but not all at the same time. There are other food combination no-no’s, but vegetables and leafy salads are believed to com-

bine well with all types of foods. The science is that protein needs an acidic stomach to digest, and starch needs an alkaline environment, so they digest differently and impair each other. And without complete digestion, nutrients can’t be assimilated fully by the body. As an added incentive, it’s also believed that you can lose weight by following this diet. If you’re ready to give it a try, it’s not hard to do. Think pasta topped with mushrooms (hold the cheese, please) with a green salad, or even a sandwich or tortilla stuffed with fresh or sauteed veggies. A dish that honors the heart, heritage of diners at Kochi our years ago when Kochi first opened, senior partner Lee Takara was waiting for the right time to introduce the Kurobuta Kakuni to the menu. “I've always wanted to do it, but we didn't have the right set-up or it wasn't the right time. Now that we have the right set-up, we're able to provide it for our guests,� says Takara. Kochi and its partner, neighboring delicatessen Gulick, have always been known for quality of food, which celebrates both heart and heritage. Kochi’s Kurobuta Kakuni is a celebration of pork, and is known for its exquisite taste, texture and flavor. Breeding of this exceptional pig began nearly 300 years ago at the House of Windsor in Great Britain. Berkshires eventually were introduced to Asia, shared and bred for emperors and their families. Consisting of the belly portion of the Berkshire, Kurobuta Kakuni ($18.95) is braised for five to six hours.

or businesspeople looking for a quick breakfast or a healthy lunch, 1132 Café & Catering provides a plethora of delicious selections. “Our main business is catering for offices — for office functions, meetings, training sessions and seminars,” owner Stefan Kruger says. “Our main audience is businesspeople.” Kruger and his wife, Edna, opened the restaurant’s first location five years ago at 1132 Bishop Street. They named it “1132 Café,” in hopes that it would help customers to recognize its location. “(The first location is) a 25-story building, but it doesn’t have a name,” Kruger says. “It’s very difficult to describe, but everybody knows how it looks … the best reference is to say it’s the former First Hawaiian Bank building.” The Krugers decided to open 1132 Café’s second location three months ago, a few blocks down on 999 Bishop Street, inside the First Hawaiian Center. Although the two locations

are not even a mile apart, Kruger acknowledges the differences between them. “The first location was not so well-known because you cannot see it from the street; the second location is open to the street, so more people see it,” he says. “At the first location, we can do baking but we cannot do cooking (because of the kitchen), so there is no hot food over there. We have sandwiches, salads and breakfast, but we wanted to have hot catering; now, (at our second location), we have a kitchen for hot catering, hot breakfast and hot lunch, and it also has a good pizza oven.” When it comes to the restaurant’s “one-of-akind” factor, Kruger says its combination of different menu elements makes it unique.

“We’re trying to offer more variety,” he explains. “A lot of places in downtown sell standard food. For years, they don’t change the menu. Nowadays, you have everything that’s specialized. Here, you have a combination of hot food, pizza, sandwiches, salads and pastries, also, all freshly made on location.” Many items on the café’s menu have become customer favorites. The 1132 Salad ($4.97 small, $6.92 large)—lettuce topped with strawberries, mangoes, cranberries and glazed walnuts—reigns as the eatery’s signature dish. The Chicken Pesto Pizza ($3.77 per slice, $14.99 for whole 15-inch pizza), consisting of basil pesto sauce, baked chicken breast, mushrooms, mozzarella and tomato sauce, is another popular choice. The Lasagna ($4.97 small, $6.92 regular) and the Chili with Beans and Portuguese Sausage ($6.92) are widely requested hot entrees. While the restaurant features several permanent hot lunch plates, it offers à la carte options that change weekly, including the famous 1132 Baked Chicken with Spicy Coconut Sauce, Grilled Mushroom Steak and Teriyaki Chicken. The eatery also provides weekly specials, such as the Furikake Eggplant & Tofu with Rice ($5.97). “For the hot food, we have six permanent dishes

that we have all the time,” Kruger says. “Then we have the à la carte, which is three or four (dishes) that we have for one week. We just started the Furikake Eggplant & Tofu with Rice last week; it was so popular that we kept it for another week.” 1132 Café is not only popular for its breakfast and lunch menu, but also for its catering services.

“One of the popular catering options is the ‘All Day Meeting’ service ($19.50 per person),” Kruger says. “That includes breakfast and lunch, so you can have pastries or hot breakfast and coffee, then for lunch, you can have a sandwich and wrap platter. Another popular catering choice is the ‘1132 Lunch Treat’ ($11.99 per person), where you have a combination of sandwiches and wraps plus two side salads or pastas.” While the restaurant’s menus currently change with the addition of new dishes, the biggest upcoming change is the start of take-home meals. “The take-home meals would be available after 2 p.m.,” Kruger says. “That is a restaurant-quality meal you can take home and heat up in the microwave. We have actually started the takehome pizza already and within the next two weeks, we will start the take-home meals.” The introduction of take-home meals could lead to further changes, depending on its success. “We might expand the closing time in the afternoon to 5:30 p.m., if it becomes popular,” Kruger says.

hile Pho My Lien Restaurant’s headliner remains the beef noodle soup after which it is named, the Vietnamese eatery also features a plethora of un-pho-getable pupus to choose from. The menu is versatile in that each dish can serve as a starter, main or side dish, and can be enjoyed in solitude or with a large group. While the pho (pronounced “fuh”) keeps satisfied customers coming back again and again, restaurant owner Tommy Dang says that the Rice Vermicelli ($8.50 for one choice of meat, $9.95 for two choices and $11.95 for three choices) also is extremely popular. Guests may choose from a variety of succulent meats, including barbecue beef, barbecue shrimp, barbecue chicken, barbecue pork or crispy egg rolls. The rice vermicelli is served in a large bowl with chopped cucumber, mint leaves, bean sprouts, crisp lettuce and is accompanied by a special house fish sauce. Those wishing to spice things up may choose to add some hot chili sriracha sauce — the perfect addition to the dish’s alluring aroma. The Green Papaya Salad ($7.50) is another guest favorite, and features freshly shredded green papaya, shrimp, mint leaves and peanuts, and is served with a special house salad dressing. Ron Ige, owner of Ige’s Restaurant & 19th Puka, explains that his mom started a business years ago, selling local favorites like saimin and chicken teriyaki. Let me just say that I’m addicted to Anytime Cafe, which serves up anything and everything I crave at all hours of the day and night. Good eats is what it's all about here — be it pasta, won ton, pizza and more — this Market City Shopping Center establishment has it all! It's all about pork chops this week, and trust me, Anytime Cafe owners Ken and Cindy Wong sure know the secrets to serving up the pork chop of all pork chops that is succulently delicious — the Baked Pork Chop with Fried Rice ($12.95). A Hong Kong favorite, this dish features three tender pieces of pork chops topped with a melted mozzarella cheese and paired with a zesty tomato sauce, which according to Cindy, is made from a secret recipe. “Our tomato sauce has a hint of sweetness to it, really adding to the dish,” Cindy explains, noting that the Baked Pork Chop with Fried Rice is a highly requested item on the menu. The tender morsels of pork chops are then garnished with savory sauteed onions and served on a bed of mouthwatering fried rice. Better yet, your meal also comes with two pieces of piping hot garlic bread and your choice of soup or salad.

When it comes to Chinese cuisine, my list of favorite dishes runs the gamut, but, honestly, a Chinese meal isn’t complete without an inviting order of Salt and Pepper Pork Chops to intrigue your appetite. Owner Henry Liu opened the doors to New Liu’s Chop Suey in Kamehameha Shopping Center in 2002, and says diners have flocked to this Kalihi eatery to satisfy their meaty cravings. New Liu’s Chop Suey’s famous Salt and Pepper Pork Chop on rice runs for a reasonable price of $4.75 (half order) and $7.95 (full order). According to Liu, he was taught this recipe by his mentors, and over the years has made it his own by adding his signature twist. “Just the smell alone is inviting,” says Liu of the pork chops. “We marinate the pork chops with a variety of spices, including Chinese five spice, pepper, salt and of course a lot of garlic,” he adds. “Then we fry the pork chops to a crispy golden brown and lastly garnish it with more slivers of garlic, red chili pepper and some white wine.” If you have yet to experience the wonders of this incredible dish, wait no longer and head down to New Liu’s Chop Suey — you'll be more than glad you did.

Some of the best in authentic Chinese cuisine can be found at Hee Hing Restaurant on Kapahulu Avenue. This family-run establishment opened its doors to the public in 1984, and since then has become a household name when in the mood for Chinese comfort food. “We recently introduced the Beggar’s Chicken ($38) to our menu. I think we’re the only restaurant in Hawaii to offer this dish so far,” says Hee Hing Restaurant director Michael Lee. The Beggar’s Chicken can feed eight to 10 people and features a whole stuffed chicken wrapped in lotus leaf and encased in a hard flour shell. “We request that you do order the chicken 24 hours in advance because it does take six hours to prepare,” Lee says, adding, “We also have a Beggar’s Chicken Menu available throughout the month. Specially priced at only $219 for a table of 10 (regularly $239) this prix fixe menu includes dishes such as Peking Duck, Wintermelon Soup, Beggar’s Chicken,
Pepper Salt Shrimp, Mongolian Pork Chop, Sauteed Shanghai Bok Choy with Garlic, Braised E Mein and the popular Steamed Island Mullet with Lemon Shoyu. “This fish has a very mild taste. I would say it’s a very clean-tasting fish,” Lee states. The Steamed Island Mullet with Lemon Shoyu is sold individually as well (1.25 pounds $19.95, 1.75 to 2 pounds $39), and garnished with fresh parsley, ginger, scallions and lemon slices.

One-of-a-kind dishes puts Richo cuisine in a class all its own
ince opening in 2008, Richo Korean Cuisine has become known for its creative Korean cuisine done with a distinct Japanese twist. Now, the Kaimuki eatery is looking to make a name for itself as an after-hours hot-spot where busy nine-to-fivers can drop in for a quick nosh after work hours. Last month Richo started offering a Happy Hour menu in the hope of attracting a new crowd of customers. “A lot of people like Happy Hour in Hawaii, so my boss (owner Takeshi Urushido) thought it would be something good to start,” says assistant manager Ayako Hanzawa. “Also, people can come and have a good time!” Among the offerings are three varieties of Kimchee and Namul ($4.95); half-size portions of Tofu Salad ($3), Beef Chapchae ($6) and Seafood Chijimi ($6); and Kushiyaki ($4.95), a choice of yakisoba-style white-meat chicken, chicken thighs or chicken wings that come prepared on skewers with a plain, spicy or teriyaki sauce. “This is a customer favorite,” Hanzawa says of the Kushiyaki. “Most of the people, what they do is order all three styles of chicken and share.” In fact, sampling as many items from the menu is the whole point, according to Hanzawa. “The food comes in smaller portions,” she says, “so people can get a taste for it and then order the larger portions the next time they come.” Happy Hour goes from 5 to 7 p.m. and again from 9 p.m. till last call Tuesday through Friday.

For a slightly more filling dish, there is the Charcoal Bar Mixed 5 Skewers ($9.95) and the Spicy Sundubu Chige ($8), a hot-and-spicy soup made with tofu, prawns, scallops and clams. “The customers really like this soup,” Hanzawa says. “It has a lot of seafood in it, and that goes really well with the tofu.” Vegetarians and those with seafood allergies can order the soup without the seafood, just be sure to let the server know your preference when ordering. Another customer favorite that Hanzawa says can be customized according to dietary needs is the Hot Stone Bibimbap ($10). A hot stone
bowl comes to the table filled with a medley of fresh vegetables including spinach, bean sprouts, carrots and royal fern sautéed in a spicy sesame oil sauce all served atop white rice. When your waiter serves the dish, he’ll top it off with an egg and mix everything together with the sauce of your choice, be it a mild shoyu or spicy-hot sauce. 2

Directions: • Mince 3 cloves of garlic, and combine in a small bowl with mayonnaise, anchovies, 2 tablespoons Parmesan cheese, Worcestershire sauce, mustard and lemon juice. Season to taste with salt and black pepper. Refrigerate until ready to use. • Heat oil in a large skillet over medium heat. Cut the remaining 3 cloves of garlic into quarters and add to hot oil. Cook and stir until brown, and then remove garlic from pan. Add bread cubes to the hot oil. Cook, turning frequently, until light brown. Remove bread cubes from oil, and season with salt and pepper. • Place lettuce in a large bowl. Toss with dressing, remaining Parmesan cheese and seasoned bread cubes.
