I

’ve been waiting all year for Christmas, and with it fast approaching on Saturday, I hope my festive foodies are enjoying all the wonderful things this season brings. I love absolutely everything about this particular holiday, from the fragrant smell of the fresh Christmas trees sparkling aglow (Yes, even my dog Kea gets a 4-foot Christmas tree of his very own), the joyous music playing non-stop wherever you go, the homemade cookies my mom and I bake together, the many holiday parties with loved ones and, yes, I even don’t mind the crowded malls filled with holiday shoppers. I admit, I have a little obsession with Christmas.

So, while I assume your to-do list is probably long this time of year, when Christmas Eve comes upon us Friday night and you’re getting the little ones to sleep or crawling into bed yourself — please don’t forget good ole St. Nick. Dear Santa and his elves have been working very hard year round to make sure you get everything your heart desires and all your wishes granted. By the time he reaches you on Christmas Eve, he, Rudolph and the eight other reindeer will be a bit fatigued from delivering presents to all. Therefore, instead of offering him the usual cookies, milk, hot cocoa and egg nog or whatever else you may leave out, I present to you a few grand options that are easily

winter festivities here in Hawaii, but there’s no question that JJ Luangkhot, executive chef and owner of JJ’s Bistro & French Pastry, has been baking up a storm in honor of Christmas. Buche de Noel is so superb that it saddens me to even take a bite in fear of ruining a masterpiece. For all you foodies not quite familiar with Buche de Noel, it’s a traditional dessert served during the Christmas holiday in several Christian-populated francophone countries like France, Belgium, Lebanon, Quebec, as well as the UK. The cake is generally prepared and decorated so as to resemble a log ready for the fire.

ono, you know The eggnog cheesecake is a fantastic blend of mascarpone cheese and cream cheese, and Koep adds some dark rum, cinnamon and nutmeg to spice things up. The bottom layer of this cheesecake creation is an almond crust baked in dough form, and lastly it’s adorned with holiday decorations, complete with the finishing touches of white and dark chocolate, along with fresh strawberries and a sprinkle of powdered sugar. Koep has been working in the culinary industry since 1978, and has been inspired by many chefs and culinary cultures and styles along the way. All this is quite evident in Fendu’s Stollen Bread ($20, large and $10, half-size). Stollen Bread is a bread-like fruit cake quite popular during this time of year. “We sold 80 of them in three days,� he explains. “I believe long ago in Europe’s village sides, the Buche de Noel resembled warmth and what was needed to create heat,� Luangkhot explains. So I guess it’s proper to say that JJ’s Buche de Noel will definitely warm your heart. “It’s basically made from a Genoise cake and chocolate butter cream with three butter cream flavors to choose from, including the original chocolate, chocolate mocha or chocolate raspberry,� he says. “The outer layer of the cake is also made with chocolate butter cream and topped with sugar dough holiday creations.� There are four different sizes to suit your appetite, ranging from 8 to 24 inches, and priced at $28 and up. JJ’s is one of the few bakeries in Hawaii to serve up this type of Christmas cake, so Santa will be quite impressed and honored with this unique pick. here are buffets, luaus and celebratory feasts being offered all over the islands during the next two weeks, but it’s at Hilton Hawaiian Village where you’ll find the center of celebrations. With a stunning starlight luau that features local favorites and a vast array of holiday foods, a fine dining menu at Bali Steak and Seafood, an all- you-can–eat buffet with few rivals at Rainbow Lanai, and entertainment, fireworks and a star-studded event for New Year’s, it’s enough to make you want to spend the weekend. Which you can do, of course, at a very reasonable kamaaiana rate. With so much on offer at so many different restaurants within Honolulu’s largest beachfront resort, it’s hard to fit the enormity of the Hilton’s seasonal cel-

ebrations into one small feature. What appeals most about the celebrations is that there’s something for everyone. “We have food and entertainment to suit all ages,” says Hilton’s executive chef Jeffrey Vigilla. “Whether people want to spend Christmas Eve at our Waikiki Starlight Luau, eat Christmas lunch on 2 0 1 0

the beach at Tropics, or enjoy a fine dining experience at Bali Steak and Seafood, we think that there are so many really great options for our guests.” At Bali Steak & Seafood, Chef Brett Villarmia is embracing the holiday season. “I love cooking at this time of year,” he says, “and being able to bring local produce, fresh-island fish and high-quality prime steaks to our guests makes me feel like I’m giving something back.” Using local produce is high on Villarmia’s list of essential ingredients for any meal. “At Bali we offer prime steaks, but we’re also able to offer side dishes made with all local vegetables,” says Villarmia, whose Christmas and New Year’s menus demonstrate his dedication to supporting local farmers and suppliers. “Christmas Eve, Christmas Day and the New Year’s menu reflect what Hawaii is to me — a mix of great, local food cultures.” On the Christmas menu at Bali, you’ll find Pan Roasted Pacific Snapper, Lehua

Honey Brined Poussin, Hauula Tomato Risotto and Grilled Petit New York Steak. The fixed price dinner is $75 for adults and includes appetizers and dessert. “We’re doing a Kona lobster bisque and an Italian-inspired panzanella salad with Hawaiian ahi simply seared and tossed with hearts of palm, fern shoots, Hirabara greens and local tomatoes,” says the chef. And dessert is a traditional yule log, from a recipe by award-winning pastry chef Andre Fusero. “The yule log brings the Christmas spirit right to the end of the meal,” says Villarmia. Bali’s New Year’s menu offers similar fine dining fare, with an emphasis on seafood, steak and duck. If fine dining for the larger appetite is more your style, then head on over to Waikiki Starlight Luau, where the holiday offerings are bountiful. “The luau is amazing,” says Chef Vigilla. “It’s a journey through Polynesia with music and dance, and we keep the food as locally grown and as traditional as possible.” This year, in addition to the dozens of dishes offered at the luau, Vigilla and his team have added some show-stopping favorites. “The food is local all the way,” he says, “and we’re adding charred, carved prime rib done teriyaki style, as well as turkey, hams and all the Hawaiian traditional favorite foods.” With traditional Samoan, Tahitian and Hawaiian dance with music and a firework finale, the Starlight Luau offers spectacular all-round entertain-

ment and an unforgettable way to celebrate the holidays. And amid the bounty of allyou-can-eat buffets Hawaii has to offer, Hilton Hawaiian Village’s Rainbow Lanai is hard to beat. “I go to a lot of buffets and this one is really one of the most extraordinary,” says Vigilla, laughing. “It isn’t just amazing value, but it’s the presentation, the quality of the food and the fact that you have a wonderful beachfront view. Kamaaina families love to come to Rainbow Lanai for the buffet, and this year we hope they will come and enjoy the special chef stations we’re creating for them, too.” Expect to see chefs carving roast leg of lamb and prime rib at the Christmas Eve, Christmas Day and New Year’s Eve dinner buffets, and expect to see a number of seasonal dishes especially for the holidays. “We’ll have seared crab cakes to order, oysters Rockefeller and clams casino made by chefs at cooking stations, and we’ll be grilling beef and chicken sate to order,”

Vigilla explains. “Steamed crab legs, poke and a dessert table also should prove major attractions.” And while dining at Tropics Bar and Grill may be casual, the restaurant certainly has something unique to offer its patrons: “Christmas and New Years at Tropics — who wouldn’t want to celebrate at 80 degrees on the beach?” Vigilla says. To add to the season’s celebrations, Hilton Hawaiian Village is offering a kamaaina room package of just $189 per

night, which may come in handy if you decide to spend the last night of the year relaxing into the early morning hours in the company of two of Hawaii’s best-loved musicians. “We have top-rate entertainment early in the evening with the world-renowned impressionist Andre-Philippe Gagnon,” says Vigilla. “And we’ll head into 2011 with Cecilio & Kapono.” Come young, old, tourist or local, for Hilton Hawaiian Village has the entire holiday season all wrapped up.

t Top of Waikiki, executive chef John Neff has created a menu that combines his culinary travels with some local twists. One of the hot spots for New Year’s Eve, Top Of Waikiki offers fine dining in a casually elegant arena, a varied menu and, as general manager Craig Bunkley says, “a 360-degree view of the fireworks.” Neff recently sat down with Dining Out and shared the thought process behind his dishes.

JN: It’s the same with the blackened seared ahi. I wanted to use the Kahuku sea asparagus, so I created the dish around the sea asparagus rather than around the ahi. The sea asparagus is a little salty already, so I added a wasabi aioli vinaigrette, and then the spice comes from the blackened seared ahi, and there’s a balance with the sweet and sour fennel and Maui onion salad with orange segments. JM: Lots of flavors on one plate. JN: I like to give variety so on the menu people will find there are different themes. There’s Middle Eastern flavor, for example, in the lamb dish chops with curry flavors, mint-infused basmati rice, Hamakua mushrooms, a cabernet pomegranate reduction and curried cippolini onioins.

f you’re looking for some great-value, high-quality sushi during the holidays, head to Sushi Ichiban on Waialae Avenue, where a sushi bar dominates the intimate dining room, and reasonable prices abound. At lunch, sit at the sushi bar and enjoy a wide range of fresh nigiri and sashimi from the hands of sushi chef Mann Nakasenh. Deconstructed d Scallop p Pot Pie e with h Lobsterr Reduction

by Chef Chai Chaowasaree Serve 10 as appetizer / 2 as entree

Ingredients: • 10 pieces sea scallop, about 1 pound • 10 pieces pearl onion, peeled • 1 tablespoon vegetable oil • 10 pieces fresh shiitake mushrooms • .5 pounds spinach • 1 tablespoon chicken stock or hot water • 30 pieces cooked pumpkin gnocchi • 2 cups lobster reduction • 1 sheet puff pastry • 1 whole egg wash • 10 ramekins

the ramekins, brush with egg wash and bake in preheated 375-degree oven until puff pastries turn to golden-crisp (about 25-30 minutes). Set aside. • Split mushroom-spinach mixture into 10 portions and put in the ramekins. Make sure each ramekin has one pearl onion. Add one piece of seared scallop, 3 pieces of gnocchi and three tablespoons lobster reduction to each ramekin.

Preparation: • Dry scallops with a towel, season lightly with salt and pepper, and pan-sear both sides on high heat for about 30 seconds on each side. Then set aside.

• Blanch pearl onion in boiling water for about five minutes. Set aside.

• In medium-low heat in a sauté pan, add pearl onions and oil, and cook for a minute or until onions caramelize. Turn heat to high, add fresh shiitake mushrooms and cook for one minute, then add spinach and 1 tablespoon chicken stock, and cook for a few seconds. Turn heat off and set aside.
