have been in the best of moods as of late, believe it or not. Why, you may ask? Well, the official beginning of summer is only days away — and summer just happens to be one of my favorite seasons. For me, summer equates to beautiful, glowing complexions and days that just seem all the brighter. And it doesn’t hurt that my birthday (August, if anyone should ask) also happens to be celebrated during the warmest time of the year. Of course, the advent of summer also means rising temperatures and longer days. That’s why this week, I decided to bring to you a few “Ono, You Know” tips to combat the summer doldrums. Try cooling down with some of the best and sweetest non-alcoholic drinks in town. I promise you won’t regret it!

You’ll surely be seeing double rainbows upon your first sip of Rainbow Drive-In’s famous Strawberry Slush Float ($3 large, $2.75 small). This cool and sweet treat is the perfect way to beat the heat during the summer months. According to Lance Shimabuku, executive general manager of Rainbow Drive-In, the Strawberry Slush Float is a hit among locals and tourists alike — making it one of the fast-food restaurant’s most soughtafter treats. Indeed, the pairing is like no other. “This is something that’s pretty unique to us,” Shimabuku says. “Mr. Ifuku added this to the menu at the opening of Rainbow Drive-In.” Seiju and Ayako Ifuku opened the doors to this iconic landmark in October 1961, and today this onolicious eatery is considered to be a staple when it comes to serving up local favorites. Anytime Café If you’re parched from a long day at the beach or pool, there’s no better place to hydrate yourself than at Anytime Café. The eatery is adept at treating its guests like kin because, as it turns out, the restaurant is run by extended family.

While Million has been serving up popular Korean dishes along with its yakiniku menu since its inception in 1989, the restaurant recently expanded its kitchen area and, as of June 7, now features a new breakfast menu chock full of classic items infused with Korean tastes and accents. The breakfast operation is led 1 by the husband-and-wife team of Paula and Erik Gray, while Paula’s mother, Diana Park (one of the original family members who got Million up and running), lends her assistance and knowledge of the business to the next generation of
restaurateurs. “We want all our customers to leave with a smile on their face,” says Erik Gray, who runs the back of the house while Paula manages the operation on the floor. “I was a traveling musician for 15 years in New York and often cooked at night. I thought I’d try (some of what I learned)
here. It’s a working man’s breakfast food; affordable, but still classy.” While Paula and Erik both currently study psychology at the University of Hawaii, they’ve taken on the vast chal-

lenge of launching the new menu from scratch. Dining Out stopped by Million soon after its breakfast items hit the plate to see what’s cooking. DO: What was behind the decision to offer breakfast items at Million? Paula: My uncle, Chang Hyun Park, had the restaurant since it opened, and after renovating the kitchen, he offered the breakfast side to my husband and I — and we took it. Erik: I didn’t want to cook anymore after coming to Hawaii, but this opportunity was presented to us. We want to develop a following, and it’s been getting busier every day. DO: Which dishes have proven most popular among guests? Paula: The Korean Chadol Begi Omelet ($7.50) is very popular. It’s a three-egg omelet with Korean beef brisket, mushrooms, tomatoes, bell peppers and American cheese. Lots of customers have ordered it, as well as the Million Breakfast Special ($2.99), which includes one scoop of fried rice, one egg prepared just how you like it and two slices of bacon. Erik: Breakfast hoagies were really big in New York, so I thought I’d try them here. The Korean Chadol Begi Hoagie ($7) contains the same ingredients as

the omelet only it’s served as a sandwich in a warm hoagie bun. DO: What keeps Million’s loyal customers coming back for more? Paula: We already have regulars that really like the food, and we hope more come to enjoy it. Million
family when it comes to running the restaurant? Paula: It’s all about family. Even though the breakfast operation is separate from the Korean side, we always get together with my uncle and have meetings to stay on the same page. My husband and I planned everything, but my mother is always there to help us. Erik: Our family is right here at work — my wife and my mom. DO: Is it difficult to work together as husband and wife in such a demanding and stressful job? Paula: Right before we opened, things got very stressful. There were some arguments, but once we opened, the pressure was relieved quite a bit. He controls the back while I run the front, so we’re able to stay out of each other’s way.

Restaurant itself has a lot of regulars, so we’re trying to build on that. A lot of people think we’re just a Korean restaurant. But the breakfast menu is very diverse, and gets better every day. We try to give big portions at reasonable prices. We also offer a 20 percent discount for seniors. DO: How important is the concept of
DO: While the operation is still in its infancy, do you foresee the menu expanding in the future? Paula: Right now, we only have three people to run the operation, but as we grow, we’re going to add specials and eventually expand the menu. We already have some ideas, but we’re sticking to the basics for now.

Ron Ige, owner of Ige’s Restaurant & 19th Puka, vividly remembers the inspiration for starting the eatery. “We (my brothers and I) played golf all the time and we always went to the 19th Puka whenever we got done,” he says. “It was a place we could hang
out, reflect on the day and enjoy different pupus. I thought it’d be great if we could build our own 19th Puka … that was my dream.” Eight years ago, Ige’s dream became a reality when he opened Ige’s Restaurant & 19th Puka, located in Aiea. watercress, red onions, celery, alfalfa sprouts, tofu and grilled ahi. “People like to eat healthier now, so we made a bunch of salads (for our menu),” Ige says. “We just added a salad bar, too; we started that six to eight weeks ago.” The mixed plate entrees at Ige’s Restaurant & 19th Puka continue to be popular as well. For these entrees, customers can choose any two
items — including pork chops, flap meat and baby back ribs — which come with a choice of starch and a bowl of soup or the salad bar. The mixed plate entrees are also popular because of the discounts, according to Ige. “Every Monday through Thursday, everything is 15 percent off — 15 percent off all our mixed plates and also the daily dinner specials,” he says. “The prices are 15 percent lower than on Fridays and Saturdays … we did it that way to get people to go out and eat. The average price per customer is $15.” Besides its flavorful menu items, Ige’s Restaurant & 19th Puka is a popular destination for parties and fundraisers because of its large venue. “We have a stage; we do
live music,” Ige says. “We can accommodate up to 500 or 600 (people) for parties.” With its variety of menu entrees and casual atmosphere, Ige’s Restaurant continues to be the true “19th Puka” filled with fun, good food and camaraderie that Ron envisioned. “On Friday nights, we do something called ‘Flashback Friday’ that (features) all the bands from the ’60s, ’70s and ’80s, and we have dancing,” Ige says, smiling. “We have an in-house magician (perform) every Tuesday, and every Monday, we have a free karaoke night. It really is a gathering place.”

The cafe that makes it count for busy people
hen 1132 Cafe & Catering opened its second location at the former Spada Restaurant site in downtown Honolulu earlier this year, owner Stefan Kruger thought it best to go with a menu that offered customers — predominantly busy businesspeople — a number of choices. But soon afterward, he

realized his plans were a bit ambitious. So he adjusted, opting for only six permanent dishes on the menu each day and ever-changing a la carte items. As a result, less has become more at the cafe that not only offers great fare for walk-in patrons, but a catering service perfect for business meetings, seminars and parties. “Our menu was too complicated
before. People only have 30minute lunch breaks downtown and they want something already prepared, so we simplified the menu,” says Kruger, who launched his first location inside the former First Hawaiian Bank Building on Bishop Street back in 2006. “We now tell them, ‘Pick your meat, pick your vegetable, pick your starch.’ We made it easy for them.” Indeed. At the next table, a half-dozen middle-aged men speaking a seamless blend of Cantonese and English served themselves from bowls of steaming jook in the center of the table. They ate the rice soup with obvious gusto, a good sign of the good things to come. “Our jook is very popular,” said Peggy Li, who manages the small North

And my mother and father make the jook at 5 o’clock every morning, so it’s fresh.” A bargain at $4.35, jook may be ordered with meatballs, preserved egg and pork, beef, chicken, sea bass, seafood, or a mix of beef, meatballs, and pork. The soup is a generous tureen of creamy comfort, with strips of fresh ginger and rings of green onion. According to Li, Canton House’s bestseller is its Look Funn (known to many Cantonese outside Hawaii as cheong fun). The flat, wide rice noodles are made onsite, she adds, and the

4 dish may be ordered plain, or with Spare Ribs, Shrimp, Scallops, Beef or Char Siu, for $2.88. “All of them are good, but our beef look funn is the most popular,” she said. This version consists of a fat rice noodle wrapped around soft, rich beef, seasoned with parsley, green onions and cilantro. As Li spooned lightly sweetened and seasoned soy sauce over the noodles, she explained that her father, Yat Quan Lee, and her mother, Lu Ya Lin, formerly owned and operated a restaurant in their native China. “Back in Canton, they made dim sum for more than 20 years,” she said. Many items that once appeared on the menu at their Canton restaurant have now become favorites at their Chinatown eatery. One can enjoy a delightful and varied meal with friends here for just a few dollars apiece. Dim sum at the Canton House is priced at $2.08 per selection, and masterfully prepared and presented. The Baked BBQ Manapua consisted of three warm, yeasty buns, generously stuffed with pork filling that was sweet and savory in perfect measure. Two kinds of Siu Mai, pork and chicken, were both tasty and rich, and the Half Moon dumplings were plump with fresh water chestnuts, cilantro and shrimp. A trio of cakes was served: Taro, Turnip and Pumpkin. They’d been lightly sautéed on the griddle at the front of
5 the restaurant. The taro brick tasted a bit like fivespice; the turnip cake was made of soft shredded daikon and not much else, and both were delicious (versions with chestnuts and chives are also available). The pumpkin cake, a soft orange bun made with mushrooms and garlic, is an exclusive Canton House creation. “It’s made with a family recipe,” Li commented. “People are trying to eat healthier, so we’re coming up with healthier items.” Lighter offerings include Vegetable Spring Rolls (with cabbage, carrots, garlic, and other vegetables) and Stir-Fried Choy Sum, with oyster sauce or garlic. Décor at Canton House is bright and cheerful, with posters of fantastic landscapes, plenty of red paper lanterns, and lots of wall hangings and scrolls. The walls are hung with handwritten signs in English and Chinese, advertising special dim sum such as Zong, made with red and green beans, pork, and sticky rice wrapped in a lotus leaf, traditionally eaten during the Dragon Boat Festival season. Like many other Chinatown restau-

rants, Canton House allows patrons to bring their own favorite adult beverages. There is no corkage fee. The restaurant is open daily from 7 a.m. to 4 p.m. Catering is available on request, with a couple of days’ notice. Though they are many years and thousands of miles away from their Cantonese roots, Yat Quan Lee, Lu Ya Lin, and Peggy Li of Honolulu’s Canton House Restaurant are working hard to keep the art of dim sum alive and well. Their efforts were recognized at the seventh annual Top 100 Chinese Restaurants Awards Show in San Francisco this past January, when Canton House was named a Top 100 Specialty Winner.

ff Nimitz Highway, you can slip into an inviting, elegant oasis to get away from the hustle of downtown and enjoy a tasty Thai meal. Started in 2001 by the husband-and-wife team of Patrick Chang and Thai Sansane Pornchairattanakun, Bangkok Chef combines authentic knowhow with fresh ingredients from local farmers. But what is now a successful restaurant chain — the Laotian couple also has venues in Nuuanu and Manoa — didn't begin as a restaurant at all. “We started out as a produce market,” says Chang. “And there, we also car2 ried some ingredients for Thai food.” It wasn’t long before the two realized they could expand their market to offer delicious cooked meals. “We had all of the produce there, and the Thai staples that we were selling,” Chang says. “And the most important thing was that my wife is a good cook. “We started from two tables, and then added another, and then another.” And now, the three restaurants have lots of tables — and lots of customers to fill them. Even on a recent weekday, a few patrons still lingered at the restaurant, leisurely enjoying a late lunch, and many more shuffled in and out to pick up to-go orders. “For one thing, cus-
treat isn’t always on the menu, but it’s offered on certain occasions, including Father’s Day. After all these years, the restaurant hasn’t strayed too far from its produce market origins, as Bangkok Chef still serves up fresh, local vegetables from Oahu farms. “We typically try to use fresh, local ingredients for our dishes. The tomato, eggplant, shallot, mango, lemongrass, ginger and basil are all from local farmers,” Chang says. Now that it’s mango season, you can stop in for fresh fruit in the Mango Salad ($7.80). The dish, which is one of Chang’s favorites, is mixed with parsley, cashews and red onions and is accented with a tangy, sweet sauce.

When it comes to the Euro-Asian restaurant’s most popular entrees, owner Kit Yiu recommends the Pepper Lamb (ranging from $14.95 to $20.95). “The lamb is an all-time favorite; it’s been part of the menu for the past six years,” Yiu says. “It’s not frozen; it’s fresh from New Zealand. So the kal-bi is more of a play on a Korean dish,” says Neff. “Instead of taking the skinny kal-bi that most people are used to, we take a nice boneless short rib and braise it, then finish it with a kal-bi sauce.” Accompanying the kal-bi short ribs are homemade baby bok choy, sweet and sour cucumbers, Maui onion kim chee and peppers escabeche. “It is so tender, it just melts,” says general manager Craig Bunkley. “The flavors are very good, very unique. The Oyster Rockefeller ($17.95) features large, fresh oysters laid atop a bed of spinach and bacon, and covered with a hollandaise sauce before being baked to infuse

he words “healthy” and “pizza” normally don’t belong in the same sentence. But at Zpizza, these words are tossed around as frequently as its handmade, 100-percent certified organic whole wheat pizza dough. Founded under the guiding principles of creativity, originality and craftsmanship, Zpizza prides itself in being a leader in the pure food movement through its use of fresh, local ingredients and inspired flavor combinations. It was only natural, then, that the Zpizza Hawaii ohana decided to take inspiration from its island home and put a local spin on the Zpizza menu. “We wanted to feature a pizza that’s Hawaiian, a taste that is more familiar to locals and for visitors who desire to taste our local foods,” explains Cesar Llarenas, owner of the Zpizza Hawaii franchise. What the restaurant came up with was the Hawaiian Pizza, a savory-sweet pizza made with Hawaiian luau plum sauce, kalua pork, caramelized onions, Chinese cabbage, fresh pineapple chunks and a garnishing of green onions — a concoction that epitomizes Hawaii and its melting pot of cultures and cuisine. “The Hawaiian Pizza is by far one of my favorite pizzas,”

Pan-Seared Scallop with Lobster Reduction and Linguini Zucchini By Chef Chai Chaowasaree
Ingredients: • 8 pieces Day Boat Scallops (largest size) • 1 tablespoon vegetable oil • 2 tablespoons butter • 1 large zucchini cut into strips, linguini shape • pinch of chopped garlic and shallot • 1 tablespoon truffle oil • 8 tablespoons lobster reduction • 1/4 cup micro greens (for garnish) • salt and pepper, to taste
Preparation: • In a hot pan, sear scallops with oil and butter on both sides until cooked. Set aside. • In another hot pan, sauté zucchini with 1 tablespoon butter, garlic and shallot for a minute or two, then season with salt and pepper. Set aside. • Spin the zucchini linguini noodles into small ball, repeat eight times and plate scallop on top. Drizzle with some truffle oil and garnish top with micro greens. Serve with lobster reduction around the scallop.
Lobster Reduction Ingredients: • 1 pound lobster shells or shrimp shells • 2 quarts chicken stock • 1/2 cup chopped onion • 1/2 cup chopped celery • 1/2 cup chopped carrots • 1 medium-size ripe tomato, diced • 3 cloves garlic • 3 bay leaves • 2 stems fresh thyme • 1 stem parsley • 1 tablespoon minced shallot • 2 tablespoons minced white onions • 1 cup butter • 1/2 cup flour • 1/2 cup dry sherry
• 1 teaspoon paprika • 3 cups heavy cream • salt, white pepper Preparation: • In a soup pot, add chicken stock, lobster shell, onions, celery, tomato, carrot, garlic, fresh thyme and bay leaves. Bring to a boil, remove all scum and simmer between 45 and 60 minutes. If stock is not rich enough, add lobster base to make sauce richer.
Strain and remove all shell and vegetables; keep only the broth. • In another soup pot, melt butter, then add flour and keep cooking until flour is nice and toasted. • Add in stock, paprika and heavy cream, and let simmer for 10-15 minutes on slow heat (not boiling). Taste and season with salt and pepper, if needed. • Lobster may be substituted with crab or shrimp in order to make crab or shrimp bisque.

The friends agreed that out of all the places offering similar food and similar DIY treats, Shabu Shabu House is the place they prefer. All four ordered the beef set ($15.95), which the friends say is one
of their stand-by favorites. Tamra Nakai: “Shabu Shabu has good prices, good food and good service. We come here all the time. We always get the beef set.” Dan Tanioka: “We keep coming back here because we like the sauces. The sauces they offer here are not like anywhere else. All three of them are really good.”

“The Pear & Gorgonzola Salad is my favorite salad, and a great way to start your meal,” he says. “It would go nicely with the Hawaiian Pizza.” A 10-inch Apple Pie Pizza ($10.95), made with mascarpone cheese, Fuji apples, almonds, caramel sauce and powder sugar, also would pair nicely for dessert.
