A new year is like a clean slate, or a fresh palette if you will, where you have every opportunity to start anew and create your own masterpiece in all aspects of life.
So, this week, let’s raise our glass and toast to a fabulous new year, while paying tribute to a few tasty and traditional New Year’s entrees from some of the best Ono, You Know establishments in town — it’s only fitting that we kick off 2012 Above: The editor starts off the new year with a bite of Hinone Mizunone’s delicious Ozoni ($8.75).

Hinone Mizunone Hinone Mizunone rings in the new year in style with its authentic Japanese cuisine, and there’s no better time for operations manager Eiki Tamaki to showcase the restaurant’s traditional ozoni soup. “It’s always been the Japanese custom during the new year to serve ozoni soup,” Tamaki says. “The soup symbolizes long life.” The South King Street eatery will offer ozoni to its patrons this week only (starting tomorrow) for $8.75. Head chef Teruo Aonuma prepares this hearty dish with much precision, making sure each and every ingredient exudes its natural flavor in the broth. “We use a dashi soup base for the ozoni, and then we add a variety of ingredients, including bamboo shoots, fern, daikon, car-

Being that we’re located right in the heart of downtown Honolulu, we cater primarily to businesspeople, and we’re extremely busy during lunch hour (from 11:30 a.m. to 1:30 p.m.) — that’s when the restaurant is packed. A lot of business meetings are held here, so we have private banquet rooms that people can request.

Gau is a Chinese sticky mochi rice that represents friends and family sticking together in the new year. The Gau is garnished with a red date that symbolizes good luck, and sesame seeds that are believed to bring an abundance of good fortune and wealth. In fact, we’re expected to sell more than 200 orders of Gau for this new year. On Chinese New Year, The Mandalay also will host a lion dance at 6 p.m. — a New Year’s tradition.
DO: Fantastic! Regarding the other items on the Chinese New Year Special Menus, what are some of your favorite entrees? DO: What are some of the most popular dishes that The Mandalay is known for? Chan: Well, The Mandalay Delight Salad is always a favorite. It’s a shredded duck salad that also features fresh fruit such as honeydew, cantaloupe and apple slices. 5 This salad is a great starter dish, it’s very refreshing and cleanses the palate for the meal to come. The Honey Walnut Shrimp also is a best-seller, as well as House Special Seafood Noodles and dim sum. from a number of a la carte dishes. DO: Of course, dim sum feeds the masses here. When is dim sum available and what are some of the must-try items? Chan: Dim sum is served daily from 10:30 a.m. to 5 p.m. We have close to 50 items to select from, and we don’t have dim sum sitting in carts for extended periods of time — all of our dim sum is made steamed to order, meaning everything is served hot and fresh. Our most popular dim sum items are Steamed Shrimp Dumpling, Steamed Pork Dumpling, Steamed BBQ Pork Bun, and Steamed Scallop with Spinach Dumpling. DO: What are you hoping for The Mandalay in the new year? Chan: Of course, we’re hoping to get an increase in customers. We also hope that our customers continue to enjoy the food and customer service here.

Customers can find an international fusion menu of appetizers, salads, sandwiches, soups, noodle dishes, burgers, pasta, rice dishes and vegetarian delights. There also are some personal favorites of the Yeung sisters that they grew up eating, such as Won Ton Noodle and Baked Pork Chop Rice. “Quality is very important to us; we cannot give anything less than the best,” adds Annie. “We don’t use MSG, and all the ingredients we use is highquality. We eat here ourselves too. “Doing business (in this economy) is getting harder and harder, and we just want to thank our customers for supporting our business, and we really appreciate our loyal customers who have been coming all these years.”

pizza is know for its fresh, healthy approach to all manner of dining options, and that commitment to taste and quality doesn’t stop at the entrees. The pupus, aka the shareables, reflect the same goal of quality and taste. And when I say taste, I mean this stuff is GOOD! Pizza may be the ultimate appetizer item. Cut into easily accessible slices, or Party Cut pieces in Zpizza parlance, the Italian pie is an appetizer, meal and, if you have the willpower to wait, a cool 1 desert or late-night snack. But it’s not the presentation that makes Zpizza special, it is the organic, hydroponic and proprietary items that turn what is often heavy, greasy slabs of dough and sauce into a light and healthy meal. Zpizza’s nearly infinite pizza menu offers 17 standards, five Rustica Pizzas and a build your own pie with a choice of three crusts, seven sauces and cheeses, and 32 toppings. The 2 Mediterranean Rustica Pizza ($12.95) is a thin, crispy crust pizza with mozzarella, feta, artichoke hearts, roasted peppers, Greek olives, oregano and a slightly spicy pili pili sauce. Whether you’re a vegetarian or committed carnivore you’ll appreciate the abundance of flavors. Other popular pizzas, especially with the keiki, are the sausage and mushroom, and the pepperoni made with MSG-free pepperoni. The Parmesan Flatbread Sticks, with
garlic butter, Parmesan cheese and a homemade marinara sauce, and the Garlic Bread are two popular shareable items, but owner Cesar Llarneas says the Mediterranean Plate ($7.95) is the biggest seller. The dipping platter comes
with gluten-free hummus, feta, Greek olives, roasted peppers, cucumber and zdough, is simply delicious. If you are like me and eat most of your hummus out of plastic containers, you’ll be in for a real treat. “The organic ingredients are what really make the difference,” says Llarneas. “You just can’t compare it to other places.” He’s got that right.

hen your sweet tooth gets the best of you, Patisserie La Palme D’or is your answer for all the sweeter things in life. Located in Ala Moana Center, this upscale pastry shop opened its doors in 2006 under the direction of owner Hiromi Tanaka and head pastry chef Akiko Kimura. Together they’ve been able to create the perfect blend of French flavor and Japanese craftsmanship that’s presented in every edible work of art. The La Macha cake, for example, is proof in itself. Priced at $4.45 per slice and $40 for the entire cake, La Macha cake delights diners with a layer of almond bitter chocolate sponge cake topped with another layer of alluring green tea and fine chocolate mousse. “This is a really popular dessert,” Kimura says. “If you love green tea and chocolate, you’ll love this! I also added bits of white chocolate and dark chocolate to the cake, and sprinkled it with hints of cocoa and green tea powder.”
La Palme D’or is always full of festive cheer, so it’s no surprise that La Macha cake is adorned with New Year’s decorations as well. For Kimura, presentation and quality are key: In fact, she utilizes only the best available ingredients — many of which come directly from Japan — and her own personal recipes to whip up these tantalizing treats.

s the calendar turns and 2011 gives way to 2012, diners will be pleased to know that as the new year begins, 3660 On the Rise continues its mission to provide simple yet stunning cuisine to its throng of loyal customers. As the eatery approaches its 20th anniversary, executive chef and co-owner Russell Siu summed up the recipe for success that has kept 3660 thriving since it opened for business in September 1992. “We have become well-seasoned in the industry,” Siu says. “We’re still fine-tuning the restaurant and we’re always striving to upgrade it. We’ve established ourselves as a small, neighborhood restaurant. Our food is very simple, and we try to appeal to everyone’s tastes. The waiters we have, most have been with us for 13 to 15 years, and they’re very good to our customers. We try to keep our prices within reason; we try not to be stuffy.” Ahi Katsu ($14.50) serves as both the flagship appetizer and signature dish on 3660’s eclectic

menu. The dish features sashimigrade ahi wrapped in nori, and is deep-fried until medium rare. The delectable pieces of fresh fish come served with a wasabi ginger sauce that provides a distinct punch from the pupu. “The Ahi Katsu is our standard, our best-seller,” says Siu. “It’s been on our menu now for 19-anda-half years. People just love it; we can never take it off the menu.” Soy Sake Fillet of Butterfish ($29.50) is another 3660 favorite, offering up a fresh catch marinated in soy and sake served with a stir-fry of Bok Choy, Haricot Vert and Asparagus, and Ginger Dashi Nage. Siu also recommends New York Steak Alaea ($31) that features Certified Angus Beef panseared with garlic, Hawaiian salt and butter, and topped with crisp onions.
“My favorite is the butterfish,” Siu says. “We marinate the fish with a little soy sauce and sake and let it cook slowly so it’s nice and caramelized.” In addition to enjoying 3660’s enticing menu available from 5:30 to 8:30 p.m. Tuesday through Sunday, the eatery also offers diners an opportunity to partake in two special events this month. On Wednesday, Jan. 18, Siu hosts his popular bi-monthly cooking class dubbed “Tomato Harvest Italian Style.” The class, which routinely sells out, allows diners to watch Siu prepare a fourcourse meal while also getting to enjoy the cuisine along with wine3 parings. This month’s class offers up four mouth-watering creations: Stuffed Tomato with Mozzarella and Balsamic Syrup, and Extra Virgin Olive Oil; Cioppino; Chicken Parmesan; and Panna
Cotta with Fresh Berries to cap off the experience. It gets under way at 6 p.m. and costs $65 per person, which includes tax and service charges. the next edition of its immensely popular Gourmet Dinner held in the restaurant’s private dining room Thursday, Jan. 26, at 6:30 p.m. “Got Truffles?” serves up a host of dishes devised with the fruitful fungi. Most prized among these fungi are Oregon white and black truffles that are treasured for their pungent aromas and flavors. With proper harvesting and ripening, Oregon truffles share similarities to the
European truffle, according to the restaurant’s take on the dinner’s featured ingredient. The five-course meal offers guests a slew of tantalizing dishes including Torchon with Black Truffle Slice on Toast Point; Pan Seared Scallop Studded with Black Truffle and Truffle Ravioli; Maine Lobster Medallions with White Truffle Nage and Yukon Chive Puree; Pan Roasted Halibut with Melted Leeks and Truffle; and for dessert, Grand Marnier Sabayon with Macerated Strawberries and Chocolate Truffle. The dinner costs $90 per person, and diners also can enjoy 40 percent off 3660’s wine list, or a waived corkage fee if one brings wine. Reservations are required by Jan. 22. “The entire dinner is truffle based; it’s a really popular event,” Ogawa says. “Russell and our chef, Lydell Leong — with events like this — they get to showcase their talents in ways other than through our regular menu. We try to do some special events to appeal to different avenues.”

and good health.” This refreshing entree features a bowl of beef broth filled to the brim with tasty morsels of beef, slices of egg and dried nori. Although always a fan of Korean cuisine, I had never set my taste buds on this exotic dish until now. With the first spoonful, the rice cake soup was very refreshing, and believe me, you’ll want to enjoy it to the very last drop. “The soup isn’t spicy at all, so it’s served with kim chee on the side for an added spice,” Chang says. So, take advantage of this once a year deal at Choi’s Garden; however, if you can’t make it to the restaurant today, don’t worry, the soup is a mainstay on the menu for ($9.98).

Max’s of Manila It's a Filipino fiesta this new year at Max’s of Manila, my go-to hot spot for all my Filipino favorites. With more than 120 branches in the Philippines alone and additional locations nationwide, Max’s also calls the Islands home with one eatery on Dillingham Boulevard and another in Waipahu Shopping Plaza. Although the establishment is known for its famed fried chicken, it’s the pork and chicken adobo that also has mouths watering. According to Elizabeth Joven, operations manager of the Dillingham location, Max’s Adobo Festival is drawing in quite a crowd. “Max’s Adobo Festival is a recent thing, and we’re featuring three different adobo
says, noting that Classic Chicken Adobo ($9.95), Marinated Braised Pork Adobo ($11.95) and Coconut Cream Chicken Adobo are festival highlights. Stick to the classics with Classic Chicken Adobo, a popular Philippine chicken stew richly marinated in a sauce comprised of vinegar and shoyu. The meal is enhanced with subtle flavors of bay leaf, garlic and whole peppercorn, garnished with a hint of green onion and egg. If you adore the classic chicken adobo, add some zest to your meal this new year, and sink your teeth into Coconut Cream Chicken Adobo (Adobo Sa Gata). “The Adobo Sa Gata has gained much popularity since we put it on the menu,” Joven adds. “It features chopped chicken slowly simmered in coconut milk, vinegar
whole chili.” These dishes are absolutely delicious, but, when pairing an adobo with savory garlic rice, my preferred choice is Marinated Braised Pork Adobo (Pinatuyong Adobo), with marinated pork chunks braised in a vinegar and soy sauce reduction, and topped with savory garlic, peppercorn and other special seasonings. Finally it's dressed with bits of green onion, succulent diced tomatoes and chopped onions to make it a sarap (tasty) dish like no other.

enny’s Restaurant chef Ernesto Yeban credits his homestyle cooking skills to his mother. “My mother is a good cook,” Yeban says. Originally from the Philippines, Yeban grew up in the kitchen. “I would always cook for my friends.” These days, Yeban likes to experiment with new dishes and is an expert in various types of cuisine. While Kenny’s Restaurant has been a longtime local favorite, it’s certainly not stuck in the past. Yeban and other Kenny’s cooks are constantly updating the restaurant’s menu and concocting new dishes. The restaurant offers a rotating set of specials — specials change every two weeks — for 20 percent off regular prices. Right now, Kenny’s is creating a new list of specials that is based on customer input. Yeban explains that the restaurant has a loyal set of customers — many of its patrons are regulars who just can’t get enough of Kenny’s cuisine. “I know we have some new menu items that people are asking for, and so I am trying to see how I can include these in the specials,” Yeban explains. “I try to work with the customers before putting up new specials.” He adds that a common request is for Japanese dishes, and the restaurant is currently working to add Yakitori and Tonkatsu to an upcoming specials list. In the new year, Kenny’s patrons can expect to see some new customer-inspired 20 percent off specials for breakfast, lunch and dinner.
American Faves with a Local Flair
K
enny’s Restaurant has been a favorite local haunt for more than 40 years. Located in Kalihi, the eatery has the homelike feel of a classic American diner — with a local spin. The cuisine itself, too, is a mix of American favorites and local creations. So slide into a roomy booth by the window or take a seat at the counter and enjoy break-
fast, lunch or dinner served by Kenny’s helpful, friendly staff. “It’s island food,” says chef Ernesto Yeban. “It’s a combination between local food and international dishes.”

Popular breakfast items include Vegetarian Benedict ($9.99), which features spinach, garlic, tomato and poached eggs — topped with a creamy hollandaise sauce and served with hash browns. Another morning favorite is Kenny’s Specialty Full Stack Pancakes ($10.25), which come in four flavors: Chocolate Chip with Almonds, Strawberry, Peach and Haupia. For lunch and dinner, Kenny’s offers an array of burgers, sandwiches, salads, soups, noodles and other entrees. Customer favorites include Kenny’s Famous Chinese Chicken Salad ($10.79), Shrimp Scampi ($15.99), Lumpia ($5.99), Barbecued Beef Tri-Tip ($16.99) and Kenny’s Cobb Salad ($10.79). Plus, Yeban adds, popular localstyle dishes include Pork Adobo And Vegetable Lumpia Combination ($12.99) and Chicken Katsu ($13.09).
And according to many of Kenny’s regular customers, Yeban says, Kenny’s fish dishes are not to be missed. “Part of what Kenny’s is known for is serving fish,” Yeban says. “And many of them are local fish.” For a taste of what everybody is raving about, try the Mahi Mahi Filet ($14.99) or the Fresh Ahi ($9.29). Another must-try is Kenny’s Hawaiian Plate ($16.89), which is offered every Friday. The plate includes lau lau, lomi lomi salmon, chicken long rice, kalua pig, and a choice of haupia, rice or poi. In the new year, Kenny’s is looking to offer the Hawaiian Plate on Thursdays as well. Contact Christina O’Connor at diningout@staradvertiser.com

ahoo’s Fish Taco, which started in 1988 in California, has been a local favorite in Hawaii since the early 1990s. The Wahoo’s brothers (Wing, Ed and Mingo) bring to the menu Mexican, Brazilian and Asian influences — and don’t worry, they have healthy vegetarian options, too. Only minutes from Kahala Mall, Wahoo’s Fish Taco is a hot spot for both locals and visitors, and is perfect for a refueling session before doing more shopping. The friendly staff and great food make for an excellent dining experience. Dining Out recently caught up with the Power family, as Debbie, Taylor, Blake, Scott and Dwight enjoyed their lunch near the lanai. Taylor Power: “I had the Outer Reef Salad ($11.69). The fish is really fresh, and I like the guacamole — it’s fresh and there’s a lot of flavor.” Blake Power: “Classic Burrito with steak ($8.99). I like the steak, rice and cheese combination.”

Sushi Izakaya Shinn etermined to make a fresh start, you’ve decided to improve your lifestyle this year by eating healthier to stay fit and lose weight. It’s an admirable goal, but it can be discouraging at times when visions of sugarplums (or more likely cookies or pie) are still dancing in your head after all that holiday noshing.
D
Lighten up! You just need a little help. The timing couldn’t be better now that many Island restaurants are opting for fresh, locally grown produce and rethinking the way they prepare their dishes — using less fat and salt, for instance — as well as offering small-plate selections. It’s a trend that fits perfectly with the resolution to start eating right. But although it may be a new thing for some restaurants, Japanese cuisine has always been a frontrunner when it comes to light, healthy and artfully presented food. Sushi Izakaya Shinn’s clean, contemporary decor provides the perfect ambiance for Japanese tapas-style dining,

and it’s also familyfriendly. There’s something for everyone here with its robata grill counter, sushi counter, Western-style tables and tea roomstyle seating. General manager Yuki Yamamoto notes that, although Sushi Izakaya Shinn has an extensive menu, most of its dishes are made 2 with dashi, which contains fish. So we put our heads together and discovered some small-plate delicacies just right for those who prefer not to eat meat or fish: grilled vegetable skewers from the robata bar: Shiitake Mushroom Skewer ($2.25) and Japanese Leek Skewer ($2.25), served with a shoyu teriyaki sauce, and Shishito Pepper Skewer ($1.80). Revamping Romano’s Macaroni Grill
omano’s Macaroni Grill is ready for a fresh start with its brand new lunch and dinner menus. All the classics are still available, but the establishment has introduced more than 25 Italian-American inspired menu items to sink your teeth into. From 11 a.m. to 4 p.m., the new lunch menu offers enticing options such as brick-oven flatbread and paninis. The Smoky Shrimp Flatbread delights with the exciting flavor combination of smoky mozzarella and slightly spicy tomato sauce. Pancetta and seared shrimp deepen the flavor experience. The flatbreads, great for sharing, have been among the most popular new items, with savory options such as Wild Mushroom & Goat Cheese Flatbread ($15). A bed of caramelized onions replace tomato sauce and is richly layered with pre-marinated, seasoned wild mushrooms, goat cheese and a drizzle of truffle oil for the finishing touch. Fresh pasta is another winner, especially with the new healthy lunch options, such as Whole Wheat Fettucine ($14) with roasted chicken, broccolini, pecorino Romano cheese and whole wheat pasta served al dente. “It’s a really nice, light, healthy dish,” says chef Mike Longworth. It’s a small, you know, very personal, intimate restaurant — it’s not like a corporate business. Everyone is very personable, very customer serviceoriented,” says Rae Tanaka, general manager of both Manoa and Waimalu locations. blend of fresh clams, Hamakua mushrooms, garlic, a touch of chili flakes, housemade white wine butter sauce and a secret ingredient. Diners also may select the perfect accompaniment to any meal at Paesano — wine — from their extensive, international collection visible on wine racks throughout the eatery. A variety of reds and whites are available by the glass or bottle, and small parties have come to adore the charming bar hidden in the corner offering menu services and a full bar. The Waimalu location serves up the same tantalizing menu while extending just as much aloha, and its private room is ideal for larger parties. No matter which locale you frequent (parking is a breeze at both shopping centers), the Cioppino ($26.90) is always a favorite. A compilation of mixed seafood, sugarsnap peas, tomatoes, Hamakua mushrooms and capers is brought to life in a lemongrass, saffron and fennel broth-style sauce, complete with garlic bread for soaking up richly flavored remnants. Before you know it, you’ll be another regular chatting with owners Billy and Nila Rattanasamay. For it’s the little touches at Paesano, such as friendly service, scenic paintings on the wall from a friend’s gallery or the freshness of a made-to-order meal, that make for the warmest dining experience in town.

large part of what may make or break a restaurant is its location and if the eatery is a fit in the community. For Happy Valley Pasta & Pizza, it seemingly is perfect for the friendly Diamond Head neighborhood where it held a grand opening in October. The restaurant is delightfully decorated with bright colors and an ambiance that emulates that of a restaurant you may find along the streets of Venice or Florence. Owner Yuki Saito, who has seven similar restaurants in Japan, wanted to expand to the Islands and share his take on Italian food with an American style. Two menu items Saito is always pleased with are Homemade Meatball and Spaghetti and Happy Valley Style Margherita Pizza. Homemade Meatball & Spaghetti — served for

Happy Valley Style Margherita Pizza — priced at $9.98 — starts as a basic pizza with tomato sauce and mozzarella cheese, but it’s the topping, comprised of Saito’s own basil pesto sauce, that makes this pizza stand out from the rest. Other popular pasta dishes Happy Valley offers are Grilled Chicken & Basil Pesto ($9.98) and Karaage Chicken & Basil Pesto Pasta ($9.98). From 11 to 7 p.m. Happy Valley also offers its Happy Hour drink menu that consists of $1.50 to $2 beers, and glasses of select wines starting at $3.

Kaew’s Thai Villa

ith the start of a new year, people often make the resolution to “eat healthier” … but what exactly denotes “healthy food?” At Kaew’s Thai Villa, customers will find out. While it only opened about seven months ago, with “Healthy Thai Food” as its tagline, Kaew’s Thai Villa, located on Liliha Street, has quickly attracted individuals craving healthy Thai dishes that do not compromise on taste or flavor. Restaurant owner and chef Kaew Anuttsara offers customers her perspective of what makes a healthy dish. “In our restaurant, we use lots of fresh vegetables and lots of fresh Thai herbs,” she explains. “We make everything homemade-style — very fresh and healthy. To me, healthy means eating a lot of vegetables

… but meat and fish also can be healthy. We don’t use MSG in our dishes. ‘Healthy’ ultimately means balanced meals for your body.” Not only are the meals at Kaew’s Thai Villa healthy, but the eatery provides dishes at reasonable prices. Anuttsara is quick to point out that the restaurant features daily lunch and dinner specials ($7 for lunch, $8 for dinner). The majority of the specials are served with Thai Jasmine or brown rice and customers can choose the degree of spice (mild, medium or hot). Of the restaurant’s specials, the Pad Thai — famous Thai noodles with egg, tofu, bean sprouts, peanut crunch and the eatery’s pad Thai sauce (made fresh daily) — and the Green Curry (kang

kaiew wan), or sliced meat marinated in green curry sauce, non-sweetened coconut milk, kaffir lime leaf, basil, peas and eggplant, are some of the most popular items. “People love the curry; the Green Curry is the most popular,” Anuttsara says. “People also love the Hot Evil Jungle Prince (pad peth) — stir-fried with curry paste, vegetables and lightly non-sweet coconut milk.” In addition to its daily lunch and dinner specials, Kaew’s Thai Villa offers customers a variety of appetizers, soups, salads, entrées, curries, rice and noodle dishes on its dine-in menu. The Fried Calamari ($9) is a popular appetizer, while Basil Calamari ($10.95) is a hit entree. Anuttsara also mentions the restaurant’s daily chef signature dishes are frequent orders among customers. “The Crab Fried Rice ($12.95) comes with the crab claw and the natural crab meat,” she says, of the dish that includes stirfried rice and green onions. “The Tom Yum Hi So Seafood ($16.95, serves two to four people) is very healthy with fresh vegetables. It’s in a Thai hot pot and served family-style.” After Jan. 1, the eatery will offer its customers a new dinein menu. While the new menu will feature most of the same items as the current menu, it also will include new dishes such as the chef special Thai Steak with Grilled Shrimp. “The new menu will have a few changes, just to try out the different dishes,” Anuttsara says. While the eatery currently offers both dine-in and takeout menus, Anuttsara says the takeout menu differs slightly, as it does not offer the daily chef signature dishes. She says that Kaew’s Thai Villa also provides customers with a catering menu, which can be found online (kaew-
sthaivilla.com). The catering menu includes customer favorites such as Vegetable or Pork Spring Rolls ($35), Spicy Fried Rice with Green Curry ($40) and Grilled Salmon Panang ($75). Each tray equates to approxi-
mately six orders, and the eatery’s catering service is perfect for special events, parties and conventions. “People can look at our website and order online,” Anuttsara says.
