Now, some of you may be thinking that oxtail is one of those things you would find Andrew Zimmern eating on the Food Network’s hit show Bizarre Foods. Not so! While it may seem a bit strange to some, oxtail soup is a triedand-true staple here in the Islands. This week, hungry for this local-kind grind with its light soup base and mouth-watering oxtail (usually a tail of a steer, cut into segments), I was on a mission to sink my teeth into this unique cut of meat, well-marbled with fat for extra flavor. Yum! And although oxtails may be hard to find at your neighborhood market,

imple. Delicious. Affordable. These three words best describe Bangkok Chef, “where Thai food is simply delicious.” “That’s our motto,” says owner Patrick Chang. “We try to make our food as simple as we can. When you go to other restaurants, they try to make it sophisticated with garnishes and everything else. But ours is just a simple dish — green curry is just green curry, pad thai is just pad thai — without adding anything extra.” This commitment to quality of ingredients, taste and service has served the local restaurant well, helping Bangkok Chef grow from a small produce store in Nuuanu to a popular plate lunchstyle eatery with three locations islandwide. “Many people don’t know we started as a produce market,” Chang confesses. In September 2001, Chang and wife Sansane Pornchairattanakun

began selling fresh, local produce in what was known as Nuuanu Open Market. By the following year, the couple had begun offering homecooked Thai food to shoppers, calling their tiny operation Bangkok Chef. “My wife’s family has a restaurant in Bangkok, so that’s what Bangkok Chef refers to,” Chang explains. “Gradually we changed the whole operation to a restaurant. Nuuanu is the original one, and two years ago we opened one in Manoa.” When space became available in the developing warehouse building at 900 N. Nimitz Hwy., Chang saw the perfect opportunity to expand business even further. “This area is starting to build up, and there’s a lot of people here, either driving along the highway or working in town or at the harbor,” he says. “I think there is a need for Bangkok Chef here, and whenever there’s a need, we go there.” Bangkok Chef’s third location opened just last month, bringing with it the same menu of simple, delicious, affordable Thai food that has won high praise and a

long list of fans over these past nine years. “A lot of people know our name already, so even before we opened (on Nimitz), people were waiting for us!” Chang laughs. “Our menu is not as extensive as other Thai restaurants, where they have hundreds of items,” he adds. “We concentrate on only 30-something items, but everything on the menu sells. You know, sometimes you go to other restaurants and things on the menu just sit there and they’re not selling at all. It’s too much. That’s why we say, keep it simple, and everything on the menu has to go.” Among the items constantly flying out of the kitchen are Mango Salad ($7.80/$8.30), a spicy and flavorful mix of shredded mango, carrot, shallot, Chinese parsley, chili peppers and cashews topped with a house special sauce; Tom Yum Goong ($8.50/$9), a spicy-sour soup made with shrimp, mushroom and tomato

and flavored with a lemongrass and kaffir lime leaf; and Pad Thai ($6.25/$7.25), a fried rice-noodle dish served with egg, chicken, tofu, bean sprouts and chives in a house pad thai 5 sauce. Another favorite are the Spring Rolls ($6.50/$7), which are perfectly crispy, not oily, and filled with a smattering of vegetables including bean threads, carrot, black fungus, onions and taro as well as ground chicken. A vegetarian option also is available for the same price. In fact, tofu may be substituted for meat at no cost for any dish, including Bangkok Chef’s newest dish, Naam Toak Moo ($8.50), a grilled pork loin

prepared with onions, mint leaves and spice in a special lemon sauce. “We use fresh ingredients,” says Chang of the explosively popular dishes, “but I think it’s also in the way we present it. When people think of Thai food, it’s kind of a more expensive kind of food. Ours is a platelunch style.” And just like any good plate lunch, all items may be enjoyed either in-house or to go. “Take-out is still a big part of the business,” Chang says. “(Take-out) is quicker, faster, easier to manage. I think it’s more convenient for most people. Before they go home from

I like it.” It seems the customers like it too, because business is bustling at all three Bangkok Chef locations, which begs the simple questions: Are there plans for additional restaurants in the future? “We’ve been getting a lot of suggestions from as far as Kapolei, Mililani, Kailua, Kaneohe, Hawaii Kai, all over,” Chang says with a smile. “We gotta catch up! But for now we stay here, take it one at a time.”

Where freshness is rolled into one By Chris Fleck t is the freshness of Vietnamese cuisine that makes the Southeast Asian country’s dishes so appetizing and appealing. A healthy blend of spices, vegetables, fresh meat and noodles complement each meal, and those items are sometimes combined and presented in deliciously wrapped rolls. At Saigon House, owner Mandy Nguyen has created her own fresh interpretation of the egg roll. The restaurant’s Finger Shrimp Cha Ram ($8) takes the concept of the egg roll and puts a fresh spin on it. “The egg roll is an ethnic food from Vietnamese cuisine,” Nguyen says. “Vietnamese is very

healthy, very tasteful, so I kick it up a notch with the shrimp because no one can resist shrimp. It is my favorite creation.” Finger Shrimp Cha Ram brings marinated bite-size shrimp together with carrots, cucumber, pickled vegetables and greens. Even better, it’s MSG-free. “In Vietnam, we eat a lot and make a lot of rolls. You roll, you dip and you eat. This is very similar,” Nguyen adds. For dipping purposes, the rolls are served with a fish sauce, which accompanies many Vietnamese dishes. Nguyen — who was born just outside Ho Chi Minh, Vietnam, and raised in Hawaii — created this dish after she and a friend

This family-owned establishment offers mouthwatering Cantonese cuisine, with a hint of Northern Chinese flair — all served fresh, family-style. Owners Cowan and Faith Wong first opened the doors to On On in Kapahulu in 1980, before relocating to its current location 20 years later. Today, their son, Norman, serves as manager of On On at McCully and their daughter, Julia, offers her services there from time to time, while also managing Duck Yun Chinese Restaurant, another family eatery located in Aina Haina Shopping Center. “We have more than 200 items on the menu at On On,” Norman says. And with that, much credit is due to executive chef Min Hong Lee, who

whips up a fabulous array of tasty dishes such as Chinese Chicken Salad ($9.95), Oyster Sauce Chicken Cake Noodle ($9.50) and Shrimp with Broccoli ($11.95). “The Chinese Chicken Salad and Shrimp with Broccoli are healthier options on our menu and can be categorized as a lighter fare,” Norman states. “The noodles itself is more of a heartier meal.” On On’s Chinese Chicken Salad is a refreshing blend of fresh lettuce, chicken and tomato, tossed with special Chinese spices and sesame seed oil, and topped with crispy won ton strips and chopped nuts. Shrimp with Broccoli also has proven to be a favorite among the restaurant’s new and loyal customers. This simple dish features a generous amount of shrimp perfectly seasoned with garlic, salt and pep-

per, then stir-fried with broccoli, carrots and a savory dash of oyster sauce. For many patrons, On On’s Oyster Sauce Chicken Cake Noodle is one of the best they’ve tried, and takes the cake when it comes to irresistible flavor. “There’s a lot of chopped roasted chicken and a lot of cake noodle in this dish, mixedwithchoy sum,” says Norman, adding that the oyster sauce gravy completes the dish. 3

Savoring Kahai’s upscale plate lunches n a quest for the finer things in life, but still yearning for the comforts of home? More Than Just a Bread Shop

awaii’s foodies are whisked away on a European culinary venture immediately after setting foot in Fendu Boulangerie at Manoa Marketplace. Owner and chef Niel Koep is an acclaimed pastry chef, and has drawn crowds to his bread shop from near and far with his remarkable handmade breads, breakfast pastries, desserts and more. Dining Out recently caught up with Koep in the hope that he would reveal the secrets behind his dazzling creations. DO: You obviously have a great deal of culinary experience, Chef Koep. Where did you get your start? Koep: I started my culinary experience while in high school in New Jersey in a small restaurant called the Fromagerie. It’s there that I started off washing pots and then worked my way to the salad station before I started getting into desserts. DO: Was it then that you knew you wanted to devote your time to creating desserts, pastries and breads?

Koep: No. It took a few years before I knew that I really wanted to immerse myself into the culinary world. At 19, I was a pastry chef at a small restaurant called the Pear Tree and I was able to meet some famous chefs of the day. Finally, I ended up in New York City.

DO: Is that where you received your training? Koep: I received my culinary training from The New York Restaurant School in Manhattan, and got a grand diploma from the International Pastry Arts Center in Elmsford, N.Y. I also met Didier Rosada at the National Baking Center in Minneapolis. He was one of my French mentors, and it’s from him that I learned the French method of baking. However, my most recent culinary venture took me to the French Pastry School in Chicago, where I studied with the French world champion Pierre Zimmerman, a true master when it comes to French pastries. I still consider myself a student of baking because there’s always something new to learn.

DO: What is the concept behind your establishment? Koep: It’s based on French pastry, and breads are the foundation of the shop, but we’ve also included things like desserts, breakfast pastries, sandwiches and pizza. To be successful nowadays, you have to be diverse, and most recently we’ve also added the chicken pot pies to the menu. We plan to add more variety to our desserts because dessert sales are one of our greatest strengths, along with the breakfast pastries, like the croissants, danishes, scones and cookies.

Then we have our traditional plain croissant ($1.75) and we have a chocolate croissant ($2) that’s also very popular. DO: Every single dessert on display is tempting in its own right. However, can you elaborate on the particular desserts that are flying off the shelves? Koep: Of course! Our Pear and Almond Tarte ($2.75) features a baked almond sugar dough topped with sliced pears and filled with almond and pastry cream. We sell a lot of those. We also have two types of cheesecakes — a Lilikoi Cheesecake and a Guava Cheesecake ($4.50). The cheesecakes are a blending of marscarpone cheese and cream cheese flavored with your choice of lilikoi or guava. We also have a Milk Chocolate Mousse ($5.50) with the bottom layer consisting of a pear jelly, and a Dark Chocolate Mousse ($5.50) with a passion fruit sauce on the bottom. Yes, it’s a business, but to run this business you have to love what you do. It’s a lot of work, but I enjoy it. If I make something and the customer likes it, then everything is a success. Thus, through military efficiency, the hot pot was born. Since 2004, ShabuShabu House in Honolulu has served authentic Japanese shabu-shabu in a setting that includes a personal hotplate at each of the restaurant’s 35 place settings. “These are convection cookers from Japan,” says Kenny Ikeguchi, general manager of the restaurant. “People don’t have to share a pot; they can cook for themselves.” Ikeguchi, who says ShabuShabu House is the first Japanese hot pot restaurant in Hawaii, is from Osaka, home of Suehiro, the first hot pot restaurant in Japan. Suehiro himself called the culinary style “shabushabu” — in English, “swish-swish” — after the sound made when meat is held with chopsticks and swirled through boiling broth. Though he was trained classically, and worked as a chef in a French restaurant in Manhattan for 10 years, Ikeguchi is an unabashed fan of Japanese hot pot cooking. “It’s healthy,” he explains. “We don’t use any broth; just simple seaweed and water. The fat is cooked out so you eat only the plain lean meat.” Located between Pensacola and Piikoi on the makai side of Kapiolani Boulevard, ShabuShabu House is a long, high-ceilinged room painted in cheerful shades of yellow and orange, decorated with images of various hot pot sets. The wall at the entrance is hung with photos — one of actor Josh Holloway, a couple of 2004 Miss Hawaii Jennifer Fairbank, and one of active-duty soldiers in combat gear holding a handwritten sign that says “I’d Rather Be At ShabuShabu House!” Each custom-built place setting includes a cooker and a stainless-steel shabu-shabu pot, plus a basket holding three tall bottles — the restaurant’s famed house-made ginger, sesame seed and ponzu sauces. “I actually created them,” says Ikeguchi with quiet pride. and a dozen are offered. The most popular is the House Special Beef and Pork ($11.95 at lunch; $15.95 at dinner); a Seafood Set ($21.75) includes shrimp, scallops, squid, clams and filleted fish. Four sets with various combinations of Black Angus Rib-eye Beef, Prime Pork Loin and Black Tiger prawn shrimp are available, all at $24.95. But the tastiest hot pots at ShabuShabu House might be the two that feature premium Kobe-style Washugyu beef. “We have the best deal in town: $34.95 for Kobe-style beef!” says Ikeguchi. “A lot of people come in only for this. The taste of Kobe … it’s tender and tasty, and very special. You cannot compare it to regular beef.” All sets come with rice and a plate of fresh choy sum, Chinese cabbage, zucchini, udon noodles, tofu (from Mrs. Cheng’s in Waipahu, according to Ikeguchi) and housemade gyoza. There’s also a piece of kombu (seaweed) to flavor the water in the shabu-shabu pot; non-traditionalists may order a shoyu soup base or chicken broth for $2 extra, if they prefer.

Side dishes and plates include Lamb Leg or Beef Tongue ($7.95 each); Arabiki Sausage ($3.95); Mixed Mushrooms ($6.95) with a half-dozen varieties, including shiitake, enoki, bunashimeji,and oyster; and the charmingly named Mrs. Choy plate ($3.95), with choy sum, a-choy and baby bok choy. Plates of vegetables, including watercress, broccoli, cauliflower, bell peppers and zucchini, may be ordered separately for $3.95 each, or $7.50 for an assortment. Guests are welcome to bring their own wines; the corkage fee is $10 per party. Sho-chiku-bai Sake ($5.75) may be served hot or cold, and a variety of beers, including Budweiser, Coors, Kirin, Asahi and Orion from Okinawa, are also available from $3.95 to $6.95 per bottle. It’s now been almost seven years since Ikeguchi opened ShabuShabu House with owner Maki Matsuzaki. “It was a bit scary, because shabu-shabu is a hot pot, and Hawaii is very … hot!” he says with a smile. By Ikeguchi’s count, at least eight or nine hot-pot restaurants have opened in Honolulu since 2004. “Some are still

open; some have closed,” he says. “But I believe we are the best shabu-shabu in town. It’s easy to get into a rut, especially when it comes to eating out. And while it’s all well and good to have a few trusted standbys on your dining radar, sometimes it’s nice to get off the well-traveled restaurant path in favor of exploring new horizons. Take, for example, New Liu’s Chop Suey. Located near Longs in Kamehameha Shopping Center, New Liu’s can be easy to miss for those unfamiliar with the area. But once you step inside the restaurant’s doors and sample from its expansive menu of Chinese delicacies, you’ll discover why New Liu’s is a favorite spot among area foodies. “We’re getting very popular now, so I want to introduce (some of our signature items) to newcomers,” says owner Henry Liu. The best way to get acquainted with the New Liu’s menu is by ordering from the Daily Special lunch menu, where everything costs less than $5. “We have more than 30 signature Chinese dishes for under $5,” Liu says. “We offer this for lunch all day long for the busy people who need to come and go fast.” One of the most requested items on the menu is the Salt & Pepper Pork Chop with Rice ($4.75). Unique to the restaurant, this untraditional dish of two tender, seasoned pork chops over a bed of sticky rice follows a “forgotten recipe” Liu created himself. “My master taught me the recipe, but I forgot it,” Liu says with a laugh. “Everybody does it differently, and See page 18–

M Getting familiar with New Liu’s delicacies

ON

uch has changed in the surrounding Kalihi neighborhood since New Liu’s Chop Suey opened in 2002. But, according to owner Henry Liu, one staple on the Chinese restaurant’s menu has always been the Honey Walnut Shrimp ($9.95). “I always praise my shrimp. It’s always the best-seller,” says Liu. “My shrimp is different from other people’s. Once you taste my shrimp, you won’t want to taste other shrimp. You’ll remember it for the next 100 years.” The seafood dish lives up to this promise, with a light, sweet flavor that comes for a special homemade batter that complements rather than overpowers the petite crustaceans. Fresh walnuts are added for a nice crunch and smooth taste that further complement the dish’s other components. “My guests have to have the shrimp, or else they cannot sleep! Every time they come they have to have the shrimp before they walk out the door,” Liu attests. Another favorite at New Liu’s is the Steamed Fish ($8.50/one piece). Actually, the steamed fish is not steamed at all; it is poached, a technique Liu says leaves the first-class sole fillet flaky and tender. “Everybody steam, but we poach. It’s very different, the taste. Poached is less fishy (in taste),” he explains. “We season it with hot oil, shoyu, and of course ginger and onion. It is so simple but tastes so good.” All menu items are available for takeout (in fact, Liu says 75 percent of business is to-go to accommodate customers’ busy lifestyle), and catering and private party options also are available. “We do lots of parties on the weekends,” Liu says of the restaurant, which can hold up to 200 people at a single time. For smaller parties, the restaurant offers three value party menus ($99-$140) that can easily feed 10 people. “Our price is the cheapest in town,” Liu says of the $99 Menu A, which comes with Egg Blossom Soup, Sweet Sour Spareribs, Beef Broccoli, Salt & Pepper Shrimp, Steamed Fish, Oyster Sauce Chicken, Gon Lo Mein and Steamed Rice. “It’s a lot of food for 10 people,” he adds. Chef Sing Lee is the man behind the magic at Tanaka Saimin, and with 45 years experience under his belt, I knew I was in for a meal of a lifetime when he presented me with their famous ox tail soup. According to Lee, this piping hot dish is cooked for almost two-and-ahalf hours, resulting in remarkably tender meat that falls right off the bone. With the first sip of the savory broth, it was quite evident that this was something special. Seasoned with a few secret ingredients, the soup is extravagant, filled to the rim with shiitake 16

And that’s not hard to believe, as on any given night here at Tanaka Saimin you’ll find locals slurping up every last drop of ox tail soup and devouring every last morsel of meat off the bone. the recipe I came up with for the pork chop is very flavorful. The taste, the guests like it, and all of the repeat customers order that. “The pork chop has become a signature dish. It’s so popular here,” Liu adds. Another signature at New Liu’s is the Stuffed Eggplant on Rice ($4.75). Derived from a Forbidden City recipe from northern China, the stuffed eggplant is deceptively simple yet intensely flavorful. Fresh eggplant is stuffed with ground pork, which is flavored with sesame oil and just a pink of salt, then covered is a slightly sweet-and-sour vinegar-base sauce that has just a hint of spice indicative of Beijing-style cuisine. “If you don’t have an appetite, it’ll give you an appetite,” Liu promises. “When

Singaporean Spiny Kipahulu Lobster with Macadamia Nut Coulis And Spiny Lobster Lomilomi Serves 4 | By Chef Chai Chaowasaree

For the Lobster: • 4 1-pound Hawaiian spiny lobsters • 2 tablespoons garlic, sliced paper thin • 2 tablespoons shallots, sliced paper thin • 1/2 teaspoon pink peppercorns, ground • 1/2 teaspoon white peppercorns, ground • 1/2 teaspoon black peppercorns, ground • 2 cups lobster stock, chilled • 1/2 cup white wine • 1/2 cup fish sauce

• 1 tablespoon oyster sauce • 1 tablespoon cooking oil • 2 tablespoons butter • 1 lemon, juice only, for each lobster

Procedure: • In a small container, combine stock, wine, fish sauce and oyster sauce and set aside. • To break down the lobsters, remove the head from the tail. Then set aside the head and segment tails width-wise along their natural cross sections (shell included). You should get five

segments per tail. • In a hot sauté pan, add oil and sauté garlic and shallots until they barely start to caramelize. • Add in segmented lobster tail and all three peppers; stir until pepper is toasted and becomes aromatic.
