fter last week’s amazing high of birthday cake indulgence, I’ll admit that I’ve been slowly falling back to earth from that overdose of carbs and sugar. That’s why I’m in desperate need of a cleanse — meaning, I need to partake in meals that are abundant in fresh vegetables and fish with lots of nutrients and omega-3 fatty acids. With that in mind, I decided to treat my body right this week with all the ahi salad my heart (and stomach) desired, and it was quite a welcome change, to be honest. I wound up venturing into some of our island’s finest establishments known for incredible ahi salads — and, without a doubt, they all were “Ono, You Know” worthy, of course! So after feasting on salad all week, I’m happy to report that I’m feeling a bit

lighter on my feet. And now that the sugar rush has subsided and I’m I’ve refreshed, decided to hike up Koko Head. I’m pretty sure I’ll regret this later, but maybe all of can meet me at the top? After all, I may need some help getting back down!

Pagoda Restaurant Sticking with my health kick this week, I stopped in at Pagoda Restaurant on Rycroft Street, where I was immediately greeted by the calm and serene setting of a Japanese garden, koi pond and waterfall. Things were off to a good start far before any culinary treats hit my palate.

ong Kong is a city-state situated on China’s south coast, enclosed by the Pearl River Delta and South China Sea. With a population of seven million people and growing, it’s safe to say that Hong Kong is one of the most densely populated areas in the world, renowned for its amazing skyline, deep natural harbor, and impeccable cuisine that features an exotic blend of East meets West. Ken and Cindy Wong, owners of Anytime Cafe in Market City Shopping Center, long ago recognized the culinary benefits of this former British colony and immediately decided to bring the Hong Kong-style cafe concept to the islands. Originally from Hong Kong and having opened the doors to their establishment in February 2010, the Wongs have extensive knowledge and experience in the restaurant business. “Seven years ago I owned Hong Kong Orchid Cafe, which was known for its more traditional Hong Kong-style cuisine and we brought the traditional style Won Ton Min here,” says Ken, who also previously owned the Banana Leaf Italian Bistro. Dining Out recently caught up with Ken and Cindy over refreshing sips of Hong Kongstyle milk tea inside their cafe, where we bridged the 5,000-mile gap between Hawaii and Hong Kong.

DO: Can you explain how Anytime Cafe is similar to the cafestyle in Hong Kong? Ken: The Hong Kong-style is East meets West, and we do offer Hong Kong-style cuisine, such as wonton noodles, which is very tra-

ditional, along with our Hong Kong-style milk tea. We do serve pasta as well, as do many Hong Kong cafes, but I believe our pasta can be deemed authentic Italian. Hong Kong cafes are open long hours, too. Cindy: There’s a variety of cuisines at Hong Kong cafes and that’s the concept that we aim for here. DO: What’s the difference between a “cafe-style cuisine” and “restaurant-style cuisine?” Cindy: I believe restaurants focus more on a specific type of cuisine, while here at a cafe we offer a bit of everything. Everything on the menu is available to our customers once we open — so they can easily have pizza or pasta for breakfast if they want. DO: Anytime Cafe specializes in Italian-style and Hong Kong-style cuisine, in addition to local favorites including oxtail soup and loco moco. What is the ultimate goal when it comes to this restaurant? Ken: Our goal is to offer a casual dining experience at a reasonable price where there’s something for everyone. We work to make this place very family-friendly, serving only the best-quality products. DO: You folks recently released a new menu. Can you elaborate on your latest culinary lineup?

amaaina would agree that one of the best things about living in the islands is being able to savor the delicious tastes of the hearty plate lunch. And with plate lunch seemingly always on the brain, locals know that Rainbow Drive-In in Kapahulu is their best option for such a tasty meal. Founded by Sejiu and Ayako Ifuku in October of 1961, Rainbow Drive-In is today operated by vice president Jim Gusukuma, the Ifukus’ son-in-law. According to Gusukuma, the establishment offers patrons a wide range of options that span the rainbow. “For the most part we like to stick with the original recipes from years ago, but we have added a few things to the menu throughout the years,” he says. For example, Rainbow Drive-In’s much-loved Shoyu Chicken ($6.25) was derived from a recipe of a former chef years ago. Since then, the alwaysrequested dish has been satisfying the appetites of hungry diners from across the globe. “Our Shoyu Chicken features chicken thighs marinated in a sweet and sour sauce consisting of apple cider vinegar, shoyu, sugar and hints of ginger,” Gusukuma explains. “It’s not an original recipe at

Rainbow Drive-In, but it’s turned out to be one of our most popular dishes and people really seem to like it. It’s one of our standard plate lunches available on Mondays, Wednesdays, Fridays and Saturdays.” As for a Rainbow Drive-In original, the BBQ Steak ($7) is a difficult one to beat. Served daily, diners can expect tender slices of beef served on a bed of cabbage. “Our recipe is old fashioned, and we stick to a more traditional Japanese teriyaki flavor, using shoyu, sugar and a lot of ginger,” Gusukuma states. “This is a very typical 1 plate lunch in Hawaii.” All plate lunches come complete with two scoops of rice and macaroni salad. And in honor of Rainbow Drive-In’s 50th anniversary this year, the establishment also is rolling back the prices to those that were seen in the ’60s and ’70s. Upcoming anniversary specials include 25-cent Saimin Sept. 17, from 5 to 9 p.m.; and $1 Chili Plate Oct. 16, from 11 a.m. to 7 p.m. Anniversary specials will be sold only at the parking lot tent (limit five items each, no phone orders).

Kozo Sushi

I

f you’re craving sushi, but don’t have the time to dine in, look no further than Kozo Sushi. With five convenient locations throughout Oahu — Pearlridge Center, Kahala Mall, Moiliili, Pearl City and Keeaumoku — Kozo and its takeout services are available to the masses. Maybe best of all, Kozo’s quality restaurant-grade sushi comes at reasonable prices. The Dynamite Maki, one of the newest additions to the Kozo menu, includes shrimp tempura, spicy ahi, masago, green onion, chili sauce and wasabi — all rolled up in a breading of barbecue potato chips. Another new dish is the Tsunami ($6.99), which combines a California maki (avocado, crab and cucumber) with ahi and chopped green onions, rolled in tempura chips and drizzled with sweet chili sauce on top. The chefs at Kozo Sushi are constantly inventing new dishes, so stop in often to discover their latest creations. The chefs enjoy drawing on local flavors, playing

with different ingredients and mixing things up. Kozo is in the process of inventing new sushi dishes right now and hopes to unveil the items next month. hoever coined the term “a little slice of heaven” undoubtedly was talking about Larry’s Bakery’s White Chantilly Cake ($13 for an 8-by-8-inch cake). “We created the cake for people who cannot have chocolate,” explains Iris Yafuso, who co-owns the bakery with her brother, Lance. But even chocolate fiends will find this one unbeatable. Light, fluffy and moist, the delectable treat is filled with a white chiffon frosting and sprinkled with macadamia nuts on top. While this may be one of the bakery’s most well-known concoctions, it’s certainly not all Larry’s has to offer. Larry’s has a vast menu of treats, including pastries such as Cinnamon Twist ($1.40) and Apple or Coconut Halfmoon ($1.40); pies such as French Apple ($11), Pear ($11) and Coconut Custard ($10.50); and cakes such as Haupia, Guava and Dobash. Larry’s has been a family-run operation since the late ’60s, when Yafuso’s father opened it. Yafuso and Lance have been in

charge for about the past decade. But they haven’t strayed too far from their roots as they still use oldschool, baking techniques and still offer up customer favorites that people remember from back in the day. “We brought back a whole bunch of stuff that we did years ago,” says Yafuso. The Long John ($1.30), for instance, returned to the menu after customers kept asking about it. “The nicest compliment that we get is when customers say, ‘The pastries still taste like they did 1 when I was little,’” Yafuso says. Another blast-fromthe-past pastry is the Butterhorn Danish (99 cents), one of Yafuso’s favorites. “I had that every day before school when I was a kid,” she recalls. The resurrection of original favorites upon popular request exemplifies Larry’s Bakery’s unwavering commitment to its customers. This kind of customer involvement is everyday fare for the bakery — Yafuso

and her staff will work with customers to conjure up specialized desserts, including cookie lei, customized birthday cakes and hand-decorated cookies, for any occasion. “We can personalize the order to what you want,” says Yafuso. “We do a wide variety of cookies — jungle animals, fish,

honu, baby bottles.” The personalized items are popular for graduations, baby showers and birthdays. Plus, Larry’s designs treats tailored to each holiday, most notably, pumpkinshaped shortbread cookies for Halloween and cupcakes with red frosting for Christmas. ome Oct. 22, Sikdorak Korean Restaurant will be celebrating one year of business, and so far, so good, to hear co-owner Andy Chang tell it. “We’ve been doing pretty well; business has been going up,” says Chang, who started Sikdorak with partner Patrick Choi last year. Located in the Samsung Plaza on busy Keeaumoku Street — commonly called “Koreamoku” for the abundance of Korean eateries found around this bustling downtown neighborhood –— Sikdorak is a haven for those craving a bit of Korean yakiniku cuisine. Chef Chai’s Rice Soup with Shrimp Serves 4 | by Chef Chai Chaowasaree Ingredients: • 1 pound shrimp, peeled and cleaned • 1 cup celery, sliced • 8 cups chicken stock • 4 cups rice, cooked • 1 tablespoon Aloha shoyu • Large pinch sugar and black pepper • 1/4 cup green onion, cut about an inch long • 1/4 cup cilantro, cut about an inch long • 1 tablespoon ginger, thin slices Preparation: • Combine chicken stock and celery, bring to a boil, add shrimp on high heat, remove all the

scum; add cooked rice. • Season with sugar, pepper, Aloha shoyu, then add ginger, green onion and cilantro. Turn off heat. Tips: Make sure to taste the soup before serving, as some chicken stock may have no sodium. Add more shoyu or salt, if desired. Shrimp can be substituted with scallop, calamari, fresh fish, chicken, etc.

Shoyu Pork | 4 servings Ingredients: • 1.5 pounds pork about 1-2 inches thick • 1 tablespoon vegetable oil • 2 cups Aloha low-sodium soy sauce
