tea— coffee know it’s Sunday and you’ve probably just crawled out of bed, perhaps still lamenting the end of a great weekend. Need a quick pick-me-up? How about a nice cup of Joe to get your day started off right? Nothing, and I do mean nothing, beats the alluring aroma of freshly brewed coffee to awaken your senses. And coffee is good for you! Recent studies show that coffee drinkers are less likely to have type 2 diabetes, Parkinson’s disease and dementia than non-drinkers. Also, coffee lovers are known to have fewer cases of certain cancers (prostate cancer for men, according to a group of Harvard scientists; breast cancer for women, according to a Swedish study) heart rhythm problems and strokes.

This week, I decided to get things started off right by gathering energy — and high levels of antioxidants — from the beloved coffee bean that we all adore. Dining Out recently sat down with the veteran restaurateur, 2 who relished the opportunity to explain what goes into managing two entities that have successfully satisfied the appetites of many for generations. Thankfully, Schoch and his restaurants have no plans to step out of that role anytime soon. DO: What is the philosophy behind Ruth’s Chris Steak House? It’s built up quite a reputation in Hawaii and across the nation, hasn’t it? Schoch: Yes, we offer the finest quality ingredients — finest quality steaks, the finest quality vegetables. We really let Mother Nature shine through. We don’t really oversauce things or do anything too fancy.

DO: What makes the steaks at Ruth’s Chris so amazingly good? Schoch: For starters, we always use USDA prime Iowa-fed, Iowagrown beef products. They have a lot of marble in them, which means that they have a lot of flavor. They are shipped and chilled, and then we cook them at 1,800 degrees and serve the steak on a 500-degree plate. With the steak cooked at this level of heat, it really sears in the juices and your steak stays hot through your entire meal. We add a little bit of butter on there and salt and pepper, and guests are able to enjoy the best steak that Mother Nature made. It’s all about the product here — it’s really gotta shine through. DO: What sort of clientele do you cater to? Schoch: Here in Hawaii, it’s probably 95 percent local business. We cater to everyone from local business people to those celebrating special occasions. DO: How has the restaurant grown and developed throughout the years? And since the restaurant’s inception, has the menu expanded at all? Schoch: Our sales have increased with the expansion of the restaurant

and we’ve started to focus a little more on seafood, but our No. 1 priority has always been our steaks. Our prime cuts of steak are the New York, Porterhouse, Rib-eye and Filet Mignon. We really are just trying to provide a real simple, great product and that really doesn’t require us to do anything too fancy. We also really focus on utilizing local produce as much as possible, such as Big Island tomatoes, Maui onions, goat cheese from Puna. We haven’t really had to tweak the menu too much, except for offering more fresh, local fish. DO: So what can you tell our readers about your signature dishes? Schoch: Our Filet Mignon ($37.50) is 11 ounces of the most tender cut of corn-fed Midwestern beef, and our Bone in Filet ($46.95) is a huge bone-in version of our famous filet. It’s a special item and an outstanding example of USDA Prime at its best. As far as fish goes, the Carpaccio ($15.95) is a sliced rare filet garnished with Caesar dressing, shredded Parmesan cheese, fresh ground and mixed greens. We also have a Seared Ahi/Sashimi ($15.95) featuring Fresh Island Pacific Ahi, perfectly complemented by a spirited sauce with hints of ginger, mustard and beer. For dessert, our Crème Brulee

A truly spirited ‘Evening’ planned at Beachhouse

t will be a night worthy of an upscale four-course menu and specially selected brown spirits when Beachhouse at the Moana hosts an “Evening with The Browns” at 6 p.m. this Friday, May 27. Priced at $99 per person, the menu and whiskey pairing feature the culinary work of Beachhouse chef de cuisine Rodney Uyehara, who is collaborating with Beam Global Spirits & Wine to present a memorable evening.

Guests will have the opportunity to sample a variety of whiskies, including Laphroaig 18 years, Ardmore Scotch, Marker’s Mark Bourbon and Ri1 Rye. Southern Wine & Spirits mixologist Chandra Lam also will be preparing mixed cocktails for the evening using these particular whiskies. New Liu’s serves up Chinese classics ocated in Kamehameha Shopping Center on North School Street, New Liu’s Chop Suey is your one-stopshop for Cantonese-style cuisine. Owner Henry Liu works hard to present diners with a memorable dining experience, offering heaping portions of family-style entrees at affordable prices. According to Liu, his Honey Walnut Shrimp ($9.95) is a must-have dish featuring succulent morsels of shrimp perfectly battered, and topped with a special mayonnaise sauce and crunchy walnuts. “The Honey Walnut Shrimp, along with the Salt and Pepper Pork Chop, has been one of our most popular items for the past nine years,” Liu says. “It’s very sweet and tasty. Most of my customers say they have to order the shrimp and pork chop before they walk out the door.”

The Poached Fish Country Style ($16.95 full order, $8.50 half order) also is a required dish for customers. This flavorful sole fish entices diners, as it’s cooked to a sizzle in hot oil, seasoned with a dash of shoyu and then garnished with just the right amount of ginger and onion. “Our Oyster Sauce Chicken Cake Noodle is now offered at the special price of $4.50, and that’s hard to beat,” Liu adds. For those who are crazy for noodles, New Liu’s Oyster Sauce Chicken Cake Noodle is a staple requested by many of the restaurant’s loyal patrons. The noodles are smothered in a housemade oyster sauce gravy and paired with tender pieces of chicken and fresh bok choy.

hen it comes to sushi, less is more, and there is no better place to find simply delicious sushi creations than at G Sushi.

Located in Market City Shopping Center in Kapahulu, the sushi shop has been open for a little more than three years in what used to be Catch of the Day. Owners Billy and Lisa Yuan, who also are husband and wife, take pride in their unique creations, many of which utilize the freshest fish found on the island. “We always order every day from the fish market,” says Lisa, who makes many of the popular seafood dishes herself in the back kitchen. “We always make the food fresh by hand, and many are my own recipes,” she adds. One hand-crafted specialty at

G Sushi is the Rainbow Roll ($3.99), a beautifully arranged arc of avocado, crab, cucumber, eel, salmon and ahi. Another masterpiece is the Salmon Skin Roll ($2.89), deep-fried salmon skin artfully combined with cucumber, lettuce and furikake. Less ornate but just as tasty are the Spam Maki ($2.39), Deep-Fried Seafood Cabbage ($2.89), Seared Aji Hotate ($3.59), Vege Tempura ($2.39) and Catch Katsu ($2.89), which is a simple combination of deep-fried fish, special sauces and green onions. The sushi chefs at G Sushi are also well-versed in creating sweets, with a heavy rotation of dessert dishes that includes Deep-Fried Chi Chi Mochi ($1.29), Coconut Mochi ($2.39), Almond Tofu ($2.39), Cheesecake ($2.89), Shave Ice ($2.39) and their famous Peanut Butter Mochi with Kinako ($2.39). With so many options, selecting a favorite proves anything but easy for Lisa. “Every day I have a new favorite

4 3 dish,” she confesses. “I like everything we have, I cannot choose!” When pressed to pick, Lisa chooses the simple Seared Salmon ($2.89), but says spicier items like the Seared Spicy Tuna Cake ($2.89), Inside/Out with Masago ($2.39) and Spicy Tuna with Udon set ($6.79) are highly popular with diners. “They are very popular, and the customers always order them,” she says. And while the sushi is certainly the main feature, a special attraction at G Sushi are the mini boats

that float on a conveyer system in the center of the restaurant, bringing a continuous supply of freshly made donburi, makimono, tempura, nigiri and more right to diners’ fingertips. “The customers, especially the children, really love the boats,” says Lisa with a smile. “We are a family restaurant, and most of the families come because their children like the boats.” This carousel of food also is a convenience for customers, who can hand-pick their meals from the various color-coded plates sailing by.

“The colors mean different prices,” Lisa explains, noting that the price-color breakdown can be found in the menus, which have the full list of G Sushi offerings customers can order at any time. “The customers can see the pictures and order what they like,” Lisa says. No gimmicks, no add-ons, no hassles — clearly, less is much, much more at G Sushi.

The same types of meat are available during both lunch and dinner, with the exception of one, according to Kenji. “Everything (the meat) for lunch and dinner is the same — like kal-bi and barbecue beef — but during dinner time only, we put out flap meat,” he says. “Flap meat is the equivalent of sirloin steak, in English.” In addition to the flap meat, several other special items are featured only during dinner at Camellia’s. “For dinner, we have flap meat and we have sashimi,” Kenji says. “We also

Regardless if one stops by Camellia’s for lunch or dinner, though, Kenji emphasizes the freshness and quality of all the ingredients. “We use A-quality meat (for our kalbi and other meats),” he affirms. “Also, our Korean pancake is popular

because it contains all-natural ingredients. It’s made from watercress, sesame seed leaves and many vegetables, with miso … very healthy, no chemicals; only natural ingredients.” When it comes to Camellia’s specialties, Kenji is quick to point out the restaurant’s most popular items, such as the mandoo, kal-bi, somen noodles (with a special sauce), seaweed soup, Jab-Chae (Korean long rice) and orange chicken. The Korean Sweet Tea — a sweetened Korean rice beverage — is also extremely popular. Kenji explains, though, that the eatery’s sauces truly make it one-of-a-kind. “We have different sauces that we make and they are all secret — kal-bi sauce, bulgogi sauce, chicken sauce, wasabi sauce and yakiniku sauce,” he says. Lunch is served at Camellia’s from 10:30 a.m. to 2:30 p.m.; adults cost $15.95 while children (4- to 8-years-old) cost $11. Dinner runs from 2:30 to 10 p.m.; adults cost $22.95 while children cost $12. Kenji recommends that customers make reservations, because of Camellia’s dinner crowds. “(The restaurant is) more packed for dinner,” he says. “Weekends — Friday, Saturday and Sunday — are the busiest days and 5-8:30 p.m. are our busiest hours.”

The Willows n inviting dining experience awaits guests at The Willows, so it’s no surprise why both tourists and locals frequent the restaurant to sample some of the best in local cuisine. mong local foodies, Million Restaurant has long been a source of ono Korean specialties like yakiniku and bi bim bap. Now, thanks in part to a recent expansion of cooking space — 600 square feet in what used to be a beauty shop next door — owner Angela Park has been able to add even more items to the already impressive menu. “We just finished the kitchen last week, and next week comes the new food,” says Angela, who runs the tiny Sheridan Street restaurant with her sisters, Diana, Cindy and Kyung Sook Park, and brother Chang Hyun Park. (Their mother, Yang Ye Park, is retired from the business, but still helps Angela perfect her recipes.) “(Angela) went to cooking school in Korea where she learned everything,” adds Diana. “She studied with a famous Korean chef for six months, then she came back.” Customers soon will reap the rewards of Angela’s studying when they feast on bona fide Korean dishes like Kal-Bi Kim Chee Chi Ke, Sul-Lung Tang, Rice Cake Soup, Organic Soft Tofu Soft, Chicken Feet, Wo Mook Ga

M Million to launch tasty new menu

illion Restaurant has been open since 1989, bringing a genuine taste of Korea to customers who are lucky enough to happen across this hidden dining treasure. (For those still unfamiliar with “Millions,” as it is commonly called, the restaurant is located near Runner’s Route and Walmart on Sheridan Street.) But with more than two decades of business under its belt and a growing customer base, the family-run eatery has long been in need of an upgrade. Well, the times, they are a-changing, and after three months of anticipation, co-owners/siblings Diana and Angela Park are giddy with excitement to show off the results of the restaurant’s recent renovations. “We just finished remodeling everything, and from next week we have a special new menu going on,” says Diana. The project included installing new booths throughout the entire dining area — don’t fret, loyal Million diners, those shiny metal table-side vacuums have not been touched — and making the biggest improvement of all, which, unfortunately, most customers won’t see. “We have a brand-new kitchen,” announces Angela with a beaming smile. Located in what used to be a next-door beauty shop, the 600square-foot kitchen is complete with stainless steel fixtures, wall-to-wall cooking capacity and additional prep space, a musthave considering Million Restaurant will be introducing more than a dozen new menu items next week. “We are going to do the older menu, plus this special menu,” Diana adds. “We still have our old kitchen, but now we can use both sides. We have more room.”

Sauté Shrimp with Mango Mojito Served with sweet mashed potato, coconut milk By Chef Chai Chaowasaree | Serves 2-3 people Ingredients: • 1 pound shrimp, peeled and deveined • 25 leaves fresh mint, chopped • ½ cup mango puree • 1.5 tablespoons lime juice • 1.5 ounces Bacardi rum • 1 tablespoon chopped garlic • 1 tablespoon chopped shallot • ½ tablespoon cumin • 2 tablespoons vegetable oil • 2 tablespoons red bell pepper • 1 cup asparagus, cut to 1-inch lengths • ¼ cup chicken stock • salt and pepper, to taste • 2 large potatoes, cleaned and peeled • ½ cup coconut milk • 1 tablespoon sugar • salt, to taste

Preparation: • Cut potatoes into small pieces and steam until they’re cooked all the way. When done, mash with a masher. Add coconut milk, sugar, salt and pepper. Set aside. • Marinate shrimp for a few hours with mint leaves, half of mango puree, lime juice, half of Bacardi rum, garlic, shallots and cumin. • In a sauté pan on medium heat, add vegetable oil and shrimp, sauté for a minute then deglaze with other half of rum. Add chicken stock, asparagus, bell pepper and other half of mango puree. Sauté for another 1 1/2 minutes. Season with salt and pepper and cook until shrimp is done. • Serve with sweet mashed potato and garnish with fresh mint leaves.
