Burritos
I’ve since recovered from my misstep and I’m well enough to share with ately, I’ve been falling hard for burritos — literally. There’s just you some of the tastiest burritos out something about this tantalizing there. burritos and more — my choice always happens to be Wahoo’s famous Outer Reef Burrito ($7.99), featuring a gigantic flour tortilla stuffed to the brim with ohee rice, cheese, guacamole, sour cream, savory black or spicy Cajun white beans, lettuce or cabbage, your choice of filling (blackened or flame-broiled fish, blackened or flame-broiled chicken, pork, shrimp, grilled steak, mushrooms, banzai veggies or tofu) and fresh salsa. Talk about complete and utter goodness with every bite! Imagine succulent pieces of meat or fish combined with a zesty salsa and an array of veggies, combined with hearty rice and tortilla to give it substance. Sounds delicious, doesn’t it? To kick it up a notch, I prefer to order my Outer Reef Burrito “Christmas-style” topped with red and green sauce — the red sauce being an enchilada sauce and the green, a fatfree roasted pepper cilantro sauce. Trust me, these sauces just add to what already is “perfection.” So, the next time you’re in the mood for some “Cali-mex” cuisine, head on over to Wahoo’s Fish Taco and grab a margarita while you’re at it. You deserve it!

ith the Royal Wedding of Prince William and Kate Middleton just around the corner, there’s some talk right here at home about where to find local cuisine fit for kings and queens. Well, there’s really no need to go as far away as England to be treated like royalty, because at 4Kings Kitchen on South King Street, owner and chef Kapo Kealoha and business partner Christopher Kegler have been serving up the highest quality of gourmet plate lunches — utilizing only the finest and freshest ingredients in the process. This preferred eatery among locals began its reign earlier this year and Kealoha was happy to share with Dining Out just what makes this restaurant the avantgarde of your favorite local fare.

DO: It’s obvious that you’ve come from a culinary background. What past experiences brought you to where you are today? Kealoha: I worked as the executive chef of Tiki’s Grill and Bar for four and a half years before this and also worked at the Four Seasons in the Bahamas, Jackson Hole, Miami and East Palo Alto.
DO: What can people expect from the menu when dining at 4Kings? Kealoha: Basically, we serve gourmet plate lunches and serve organic when we can. When people come here they can expect good food for a reasonable price. food. I don’t know anyone in our business who would take a jump like this (opening their own restaurant) if they didn’t enjoy working with food.

that everything starts with the freshest products that you can get — fresh fish, locally raised beef, fresh organic vegetables. From there, everything is handled as it would be in a fine dining restaurant. We present the finished product to the customer in a manner that you wouldn’t really expect from a plate lunch place.
is easily one of my favorite items, along with the “Not Your Normal Loco” ($11), a house-made fish burger with fresh caught mahi mahi, served with shiitake mushroom gravy and two eggs your choice of style. The Chinese Steamed Fresh Island Fish ($11) is another customer favorite, steamed with lup cheong, shiitake mushrooms, green onion, carrots and ginger. Of course, it’s made with fresh fish caught daily. My grandparents loved pork chops, and the Red Wine Braised Chops ($9) features well-seasoned pork chops, slow braised in a red wine sauce. All entrees come with a choice of white or brown rice and a choice of MA‘O Farms Sassy Mix Salad or house-made kim chee and cucumber kim chee. If you’re hungry for a sandwich, we have many to choose from. But the Kim Chee Mahi Mahi Sandwich ($10) is really good, made with my own kim chee atop pan-seared mahi mahi on an onion roll. All sandwiches are served with a choice of fries or MA’O Farms Sassy Mix Salad.

DO: Quality is key and you serve many local favorites here. How did the menu come to be? Kealoha: The menu is derived from things that I loved to eat when I was growing up, although I’ve added some little twists here and there. I add my spin on a lot of the foods. I put this menu together because I couldn’t get this stuff every day and now I can (laughs). DO: What were some of your favorite foods while growing up that are now specialties on the menu? Kealoha: My mom made mochiko chicken fairly regularly, so Chef Kapo’s Mochiko Chicken ($10)
DO: What are the benefits to using local products and produce? Where do you see your restaurant headed in the near future? Kealoha: I use local products whenever I can. I’m in the process of trying to bring in Kauai grassfed beef and hope to add a couple more items to the menu with that. Sustainability is important. During my culinary training, all the chefs I was working under always outsourced from the local farms in the area. You always want to use the freshest ingredients you can, as it adds another level of complexity to the food. Therefore, we bring fresh products in on a daily basis. We definitely want to open more locations in the future and keep going with our catering services.

t Tanaka Saimin on North Nimitz Highway, you’ll find diners slurping up a storm, all thanks to the eatery’s mouth-watering saimin. According to owners Joan and Paul Watanabe, noodles are Tanaka’s specialty, from traditional saimin and won ton min to udon and hoso udon. Other local favorites grace the menu as well, including shrimp tempura, teri beef, burgers, sandwiches and more. Dining Out recently stopped by the busy saimin shop and couldn’t help but notice the smiles on the faces of Suzie, Dina and Gigi Lee, who were finishing up a delicious lunch. Suzie Lee: “I ordered the Saimin Combo (small $8.20, large $8.70) and it was delicious! It came with teri beef, shrimp tempura and a nice salad. This is our second time here and we really like the noodles. They’re very fresh.” Dina Lee: “Both Gigi and I ordered the Tanka Special Saimin ($8.45), which is a large won ton min served with two pieces of shrimp tempura.”

s the spring graduation season approaches, so does the season for planning and attending these type of ceremonies. Graduation parties are part of local tradition— the perfect way to celebrate the official end of one’s high school or college days with family, friends and great food.

A Catered Experience specializes in coordinating these events and has created special graduation party packages that help organizers offer great-tasting quality dishes for guests while eliminating the hassle of cooking, storing and presenting food for large groups. “We can customize anything to the customer’s needs,” says manager Ron Hattori. When customers order one of the diverse graduation packages that are on special through August, and order for a minimum of 25 guests, they will receive free delivery to Pearl City, Mililani or Waipahu as well as disposable paper plates, napkins and utensils. For those customers living in other areas of the island, a delivery charge will be applied based on location. Additionally, if customers need help with logistics, such as tables, chairs, tents or other hardware, A Catered

Customers are encouraged to call and inquire about customized “Full Service” packages and rates. “We’re even working on creating healthier menus if customers are interested in that,” Hittori says. “Some of the menus are made with reduced fat or sodium.” The Pupu Menu ($8.25 per
person) is one of the special packages available and includes assorted finger sandwiches (tuna, egg salad, turkey & Swiss, and ham & cheese), assorted fresh vegetable crudite, potato macaroni salad, mochiko chicken, mini hoki (with a wasabi caper sauce), and lumpia (with a sweet chili sauce). The Custom Menu ($9.65 per person, shown in accompanying photographs) is another option and offers up garlic chicken, Okinawan shoyu pork, baked fish, potato macaroni salad, and tossed green salad with a
choice of dressing. The Light Hawaiian Menu ($13.25 per person) is chockfull of local favorites, and the popular combination features a spread of kalua pig, laulau, shoyu chicken, chicken long rice, lomi salmon, macaroni salad and steamed white rice. ith its recent grand opening March 6, SushiSan might be considered the “new kid on the block” in the neighborhood of Kaiten-style sushi restaurants. However, owner Jay Kim has wasted no time bringing new features and flavors to create a unique sushi dining experience for his customers.

SushiSan is similar to other Kaiten-style sushi diners, in that customers can choose variously priced dishes from a conveyor belt that winds throughout the restaurant. SushiSan, however, increases the customer’s selections by providing not one, but two conveyor belts, each loaded with an assortment of dishes. “We have two layers of conveyor belts that go in different (opposite) directions, so people can have more choices,” Kim explains. Another unique feature of SushiSan is its self-serve hot water faucets. Instead of waiting for refills of tea, this “DIY” feature was implemented to increase customer satisfaction. Below the two conveyor belts carrying food dishes is another belt, providing customers with tea bags and empty cups.
“The water faucet is for hot tea,” Kim says, gesturing to the innovative feature. “You grab the cup and put it under the faucet and the hot water just goes in, then you simply put in the tea bags.” In addition to these restaurant features, SushiSan is distinctive because of its eclectic menu, according to Kim. “Our resources make SushiSan different from other restaurants,” Kim says. “I wanted to provide my customers with a high quality of the fish at a reasonable price. We create a lot of different

The Kappa Spicy Tuna ($2.20) is another highly requested dish, according to Kim. “The Kappa Spicy Tuna has spicy tuna and rice surrounded not by nori, but by cucumbers,” Kim says. “People think that’s really interesting; a lot of people have tasted it and really love it.” Another customer favorite is the Kim Chee Gunkan ($2.80) — lightly fried and seasoned kim chee as a topping on rice

and nori — the most recent addition to the restaurant’s menu. However, one of SushiSan’s signature dishes is its Combination (Hot) Donburi ($5.80). “This donburi is a hot stone bowl dish,” Kim says. “It comes with buttered and seasoned rice at the bottom. Unagi, Maguro, Salmon, Ika, Ebi, Ikura and Tobiko are toppings on the rice. I think that one is very popular; we have a good reputation for that dish.” The variety of dishes on SushiSan’s menu range from $1.50 (Brown Plate) to $4.80 (Black Plate), with an assortment of donburi, temaki and side dish options as well. The average price range per customer would be $12 to $13, according to Kim. When asked about upcoming changes for SushiSan, Kim is quick to answer in terms of expanding the restaurant’s menu.
“I’m mostly trying to focus on developing my menu,” he says. “I want to put more variety of foods using different resources (on the menu). We also have a takeout menu we are developing, too … I’m just trying to make more choices for my customers.” For Kim, seeing customers — especially families with children — enjoying their food truly “wraps up” his vision for the restaurant. “I want my restaurant to have a comfortable atmosphere so anyone can come in,” Kim says. “I want to see more families have a great time together. I love to see kids eating and families seeing their kids enjoying it (the food). In starting my own business, that’s the whole point seeing my customers happy.”

Spicing things up with Thai curry By Chris Fleck rying to narrow the origin of curry down to any one country can be a difficult endeavor, but there’s no disputing the spicy dish enjoys a firm foundation in Indian and Pakistani cuisines, and is a common delicacy in Southeast Asian countries such as Indonesia, Malaysia, Laos, Cambodia and Thailand. Historically, curry, with its zesty spices and blend of herbs, was introduced to Thailand by monks traveling from India centuries ago. One of the modern-day beneficiaries of this dish is Patrick Chang, owner of Bangkok Chef, who invites diners to experience several Thai curries on his menu:

‘G’ keeps sushi moving
ith all its boats in a row, G Sushi is rowing toward premier sushi status, as customers can’t help but rave about the diverse array of sushi at this Market City Shopping Center establishment. By offering a “sushi-go-around” type of experience, each plate of sushi is served on a boat floating in water that passes all tables. Owner Lisa Yuan takes pride in the fact that G Sushi only promotes the freshest fish in its sushi creations. “We have two sushi chefs here and they always use the best ingredients, making our sushi very popular,” she says. According to Yuan, G Sushi’s Sashimi Boat ($8.99), Ebi Tempura ($3.99) and Diamond Roll ($3.99) cannot go unnoticed. El Charro Mexicano Aiea Restaurant Readers, you all know how much I adore food, right? Some people eat to live, but I live to eat! (I know — surprise, surprise.) And while it’s definitely difficult for me to pick a “favorite” restaurant, I must admit that El Charro Mexicano Aiea Restaurant is one that’s hard to top. Having just opened its doors six months ago, El Charro is owned and operated by husbandand-wife team John and Sofia Ramirez. John is from Mexico and Sofia is from Uruguay, so judging from their Central and South American backgrounds alone, I knew I was in for an incredible culinary treat. Sure enough, on my early morning venture to this Mexicano restaurant,on the third level of Aiea Shopping Center, Sofia kindly presented me with two particular burritos that were, well, out of this world! The first to grace my palate was the SUPER Charro Burrito ($12.99), and the name says it all. Of all burritos, this one entices diners with a 12-inch flour tortilla stuffed with grilled chicken, steak, rice, beans and cheese. Topped

with a special El Charro red sauce and melted cheese, the burrito is served with traditional rice, beans and pico de gallo. “A lot of customers order the SUPER Charro Burrito because they like the flavor of our carne asada steak,” Sofia says. “What we strive for at El Charro is to give the best fresh-tasting Mexican food to our customers, even serving fresh, homemade salsa and chips.” A favorite burrito of Sofia’s that is not on the menu, but can be ordered a la
carte or with rice and beans, is none other than Sofia’s Burrito ($8.50, $10.50 with rice and beans). This burrito can be ordered with grilled steak or grilled chicken and features roasted bell peppers, mushrooms, zucchini, lettuce, guacamole, sour cream and mozzarella cheese in a 10-inch flour tortilla. “It’s a way lighter burrito compared to the SUPER Charro Burrito and it’s a bit more healthy because it has all the veggies in it,” Sofia explains. “It has so much flavor — it’s a perfect option for lunch because it’s not too heavy.” In other words, Sofia’s Burrito won’t give you a kanak attack. But really, every now and then a kanak attack is totally worth it when it comes to muy caliente cuisine! Experience a taste of Mexico at Serg’s Mexican Kitchen right in the heart of Manoa Valley. As a lover of all foods South of the Border, I often frequent Serg’s when that craving for some delicious carne asada hits. Chef and owner Sergio Arellano runs this restaurant, along with a second location in Waimanalo, with the help of his wife and business partner, Claudette. The food here speaks for itself as the restaurant is always bustling with those yearning for delicious and affordable cuisine. Carnivores take note: The next time you find yourself at Serg’s, make sure your taste buds are all over the Carne Asada Burrito ($8.75). ink your teeth into a slice of sweet nostalgia at Larry’s Bakery, where owners Iris and Lance Yafuso are using the same recipes developed by their father more than 40 years ago. “My dad was Larry, and he opened the business,” Iris explains. Larry opened the original Larry’s Waiau Bakery in Waimalu Shopping Center in the late 1960s. Sadly, he passed away at the age of 49 from a brain aneurism, leaving his wife and children to carry on operations. “My mom took over the whole business,” says Iris, who was only 9 at the time. “My brothers were still in high school, and I was the young baby back then. It was just kind of crazy and we got kind of thrown into everything. “It’s totally family-run,” she adds of the tiny storefront, now located near Target in Salt Lake. “It’s my brother and I who are doing everything, and we have our classmates and friends and family helping us run everything.” And she means everything. Every pastry, cookie, cake, pie and bread loaf is made from scratch, by hand and fresh every morning. “Lots of it is old recipes that we just continued on,” Iris says of familiar favorites like Cinnamon Bread ($4), Apple Cinnamon Bread ($4.50), Blueberry Cinnamon Bread ($4.50) and Soft Cottage Bread ($4) that fly off the shelves daily. “The newer stuff,” she adds, “comes from brainstorming, like, oh, let’s try this just for us to eat, but then it’s like, oh, wow … just making stuff that we think would be ono and we want to eat but it turns out to be something crazy good.” One example of this experimentation is their popular White Chantilly Cake ($12.50 and up), concoted to accommodate a niece who has an allergy to chocolate. “We started making it at home for our parties, then we started doing it for our customers and now it’s just taken off. It's crazy,” Iris says. “We’re also doing the cakes and bringing out the new ideas like the cupcake bouquets, the decorated cookies, all the fun stuff — the fun stuff we never got to do before but now we can,” she adds. “But we gotta thank my dad, who left all this behind for us.”

One immensely popular confection making a comeback at Larry’s is the Stick Donut ($1.50), glazed doughnut holes skewered with a stick. “It’s all stuck together and you peel it off,” Iris says. “Some people will pull the stick off and then piece by piece eat it, or bite it off in the middle. Somehow, it’s just fun to eat when it’s on a stick.” Other old-school favorites being offered once more are the flaky and flavorful Apple and Coconut Sticks ($1.35 each), as well as the Okinawan Sweet Potato Manju (95 cents), a nod to the Yafuso ohana’s Okinawan roots. “A lot of the recipes are my dad’s, so it’s not like we’re re-creating the wheel here,” Iris says. “It’s stuff we had from before, plus some new stuff that's just coming out now.” Brand-new to the Larry’s line is a Chocolate Brownie Butter Mochi ($2) that tastes even better than it looks.
“The bottom half is chocolate brownie with chocolate chips, and the top half is butter mochi,” Iris says of the rich and creamy dessert combination that was dreamed up just last week. “You can use that for party favors or just to eat. And I just started doing the cupcakes,” she adds. Available in vanilla, chocolate and red velvet, the cupcakes can be frosted with buttercream, chocolate fudge or Chantilly and are sold by packs of 12 for $19.95$22.95.

Japan benefit to feature isle’s top musical acts orld-renowned chef Chai Chaowasaree of Chai’s Island Bistro is teaming up with some of Hawaii’s most celebrated chefs, including Roy Yamaguchi, Alan Wong, George Mavrothalassitis and D.K. Kodama, to support Hawaiian Airlines “Lei Day for Japan,” a special fundraising effort to help in the country’s recovery efforts following last month’s devastating earthquake and tsunami.
