Flying High on
Chicken Wings
’m definitely no chicken when it comes to thrill-seeking activities. OK, so maybe you won’t catch me jumping out of airplanes just yet or bungee jumping from the highest cliffs, but that’s not to say that I haven’t already fallen madly in love with roller coasters. If it were up to me, in fact, I’d have annual passes to all the major theme parks, including Six Flags, Great America, Cedar Point, California Adventure Park, Knott’s Berry Farm and, of course, Disneyland. Nothing can compare to the pure adrenaline rush I get on these hair-raising rides, particularly the way my body is jolted following each twist, turn, rise and fall of the track. And perhaps the same can be said about what I call “amusement park cuisine.” In my case, I happen to associate
I
tender chicken wings with theme parks. I know, some of you may link this yummy finger food to an ice cold beer or a football game, but I prefer to feast on chicken wings smothered in ranch dressing after disembarking from one of those rides of a lifetime. Like roller coasters, each and every bite into a chicken wing can be an exhilarating experience for your taste buds. Whether it’s creamy ranch, zesty and spicy sauce, or jerk seasoning, chicken wings are an invigorating experience for all your senses. And this week my stomach was ready as I prepared to hit three local hot spots that offer onolicious chicken wings. While some were mild and others fieryhot, I wanted to experience each and every burst of flavor. So, whether it be taking on the fiercest of roller coasters or biting into the spiciest of chicken wings, I can’t help but find myself screaming the same words: “More please! I just can’t get enough!”
RumFire Upon setting foot in RumFire, located inside the Sheraton Waikiki, I have to pinch myself to make sure I’m not dreaming. For one, RumFire overlooks the breathtaking Helumoa Playground set against the captivating backdrop of Diamond Head in this dreamy oceanfront hotel in Waikiki. Secondly, it’s easy to pass the time away while enjoying a relaxing lunch with friends or grabbing pau hana drinks as some of Honolulu’s best contemporary musicians play on. And while all this is enough to make me say, “I’m soooooo lucky to live in this beautiful paradise,” it’s the impeccable cuisine that has me drooling. This chicultra lounge is currently home to a unique Hawaiian fusion menu known as “Bahawaiian” cuisine, or “West meets West,” featuring an exotic blend of contemporary Hawaiian fare and California Baja Mexican-inspired dishes. Guests can enjoy a plethora of various menu items, including Kalua Pork Enchiladas ($14), RumFire’s signature “Kim Chee Fried Rice” ($14), Chipotle BBQ Rum Baby Back Ribs ($14) and Garlic Pommes Frites ($6).
My favorite of the bunch, however, is RumFire’s signature Jerk Seasoned Chicken Wings ($12), served with a hot, spicy and creamy fiesta ranch sauce. Onolicious! “We add a secret jerk spice that has been blended to a finer consistency, – See page 16

Festivities begin at the exclusive Captain’s Welcome Reception on the Star’s 60-foot-high top deck, where guests have the opportunity to sample a selection of summer canapés served butlerstyle, accompanied by a Hawaiian Bellini. Amid a pristine atmosphere, guests are then escorted into the recently renovated Art Deco Super Nova room. Posh in décor, this luxurious dining room, where semi-formal attire is required, is said to seat 230 people. “Nova is really elegant and plush, it's definitely a place where we have a lot of repeat business,” says Gilbert, who studied culinary arts at Johnson & Wales University, then later at Kapiolani Community College. “My main focus as the chef here is consistency — consistency in presentation and quality,” he adds. “My style of cuisine is very much travelinfluenced. I love the local ingredients, and that's a big driving force for my cooking. “At Johnson and Wales I was trained in the classical Frenchstyle of cuisine. I also lived in the Caribbean and Southeast Asia, and of course Hawaii, so I'm also very familiar with Pacific Rim cuisine as well,” Gilbert states. “In the Nova room we focus on culinary arts

that are classic French with a bit of a local twist.” As diners are seated, expect nothing but immaculate service, as refined Nova servers present you with Chilled Kahuku Corn Soup with Avocado Granite and Bouquet of Baby Greens consisting of seared scallop, red and gold beet carpaccio, basil oil and passion fruit vinaigrette. The first main entrée showcases an Air-Flown Live Maine Lobster poached in a seasoninfused butter broth, paired with grilled polenta, chanterelle mushrooms, summer truffles and vegetables in a light lobster fumet. “We change up the menu by the season, so every three months you’ll find something new,” Gilbert says. “We prep 90 percent of cuisine on land, then once on ship we reconstitute the food and re-plate it.”
Next, cleanse your palate with a refreshing Mango Sorbet before indulging in the highest grade Prime Tenderloin of Beef accented with savory foie gras stuffed fondant potatoes, saffron cream and porcini mushroom demi glace. “Although we do feature a prix fixe menu, we also do offer special menu items with a 24-hour advanced notice such as Baked Salmon with Dill Lemon Butter Sauce; Roasted Chicken Breast stuffed with mushrooms, spinach and Swiss cheese; Medley of Fresh Fruit; a vegan/glutenfree Black Truffle Risotto with wild asparagus and portabella mushrooms; or Roasted Rolled Eggplant stuffed with French green legumes in a kabocha sauce,” Gilbert says. Finally, round off this exquisite feast with an effervescent White Chocolate
Swan filled with fresh fruit, sponge cake and mascarpone cream all atop a puddle of heavenly lychee sauce. “To make good food is not that difficult, really. What’s difficult is creating new ways to design it, new ways to showcase it, and that’s where molecular gastronomy is a huge tool going forward,” Gilbert explains, noting that molecular gastronomy is a rather new philosophy of cooking. “I love my job,” he exclaims. “Being on the ocean is a great highlight of being executive chef for Super Nova — I see the sunset five days a week from the ocean, and it’s amazing. Sometimes we’ll even see whales up close.” Really, who could ask for more? It’s a feast for all the senses aboard the Star of Honolulu. So sit back, relax and enjoy the ride.

Stage ready to offer memorable dining experience ome restaurants incorporate art in their design schemes with the goal of complementing their food offerings. However, at Stage Restaurant, located on the second floor of Honolulu Design Center at 1250 Kapiolani Blvd., the cuisine represents masterful works of art prepared by executive chef Ron de Guzman and his skilled staff. The food’s presentation fits the restaurant’s theme, and each finely crafted plate serves as a piece of art within a gallery of unique furniture and design elements. When placed before guests, the dishes make even a $20,000 Fendi dining table and chair set fade into the background. Appropriately, pupu items at Stage are presented on the

menu as the opening act of a performance under the heading “Act One: Overture de Appetizers.” The Graham Cracker Crusted Calamari ($13) steals the show as the curtain rises on Stage’s unique seafood starter. The calamari is tossed in finely ground graham cracker crumbs before being fried and served with an accompaniment of dipping sauces: yuzuchili aioli, wasabi cocktail sauce and sriracha. The item is “back by popular demand,” says de Guzman of the dish that is available as a special item, but will soon be gracing the permanent menu. Sticking with Stage’s seafood selections, the Stage Ahi Poke ($13), Pan Seared Manila Clams ($13) and Crisp Lump Crab Cakes ($14) each
offer an eclectic mix of taste and extraordinary color. The poke invites diners with a clever concoction that incorporates avocado, marcona almonds, orange tobiko, Spanish onions, yuzuolive oil and wasabi. “We keep the food fun and different, but we’re not way out there,” explains de Guzman. “We have a footing on our culinary background.” Also, while enjoying the plentiful pupu offerings, tap into one of Stage’s new self-serve draft beer server tables. Each table has builtin beer taps that are controlled via WiFi Internet, allowing one to order by the

When the drive-in’s popularity began to wane in the 1960s, Kenton’s father, Francis Tom, decided it was time to develop a new restaurant, and in 1969 founded Wailana Coffee House on the values of good food, good service and value, which the Tom siblings continue to follow to this day. “His principles really guided us,” Kenton says. “We’re reasonably priced, we have a lot of variety on the menu, and we offer a lot of value for what you order.” A dish that proves you can have both quality and quantity food is the Oxtail Soup ($11.25). Offered every Thursday, the special is a comforting bowl of tender oxtail, peanuts, dried red

dates, sliced black mushrooms and succulent kai choy, topped with Chinese parsley and shredded ginger. “It’s a local favorite,” Kenton says, adding, “We cater a lot to local people, because we believe that if the local people come to the restaurant, tourists will follow. If local people come to the restaurant, tourists know it must be good.” Other menu items popular with locals and tourists alike are the Broasted Chicken ($10.95), which is a plate of oven-roasted chicken breast, leg, thigh and wing; Hibachi Sampler ($12.50), a trio of chicken breast, shrimp skewer and mahi mahi filet prepared hibachi-style; and the Eggs Benedict ($9.85), an ensemble of poached eggs, smoked ham and turkey breast piled atop an English muffin, served with a house-made hollandaise sauce and hash browns on the side. “We make a lot of things from scratch; it’s not out of the can,” Kenton reveals. Homemade food seems to be the major draw for customers, especially when the words “all-you-can-eat” precede the item’s name. “People love our pancakes,” Kenton says, referring to the all-you-can-eat Buttermilk Pancakes ($5.50). “They’re so good, if you just enjoy the taste
of pancakes, you don’t even need the syrup!” The batter for the pancakes is prepared a day in advance, which allows the mixture to aerate and yields a fluffier pancake. Extras such as blueberries, bananas, macadamia nuts, coconut and pineapple also can be added for an additional $1 charge. “You can even ask for a combination of banana and macadamia nut, for example,” Kenton suggests. All pancake orders come with eggs, bacon, as well as whipped butter and a trio of syrups on the side. Besides breakfast, the menu offers even more mouthwatering choices, from soups and salads to spaghetti, saimin, fried rice, beef stew, fish and chips, short ribs, kal-bi, even desserts. (Note: Most entrees come with a choice of rice, mashed or baked potato, or fries, as well as choice of soup, fruit cup or salad bar.) “We have feature sandwiches like the Patty Melt ($8.75), French Dip ($9.50) and the Reuben Grill ($9.35), and we also have a lot of hamburgers, like the Paniolo Burger ($7.65), which comes with chili and onions, and the Tokyo Burger ($6.75), which is a teriyaki burger rather than a regular hamburger,” Kenton notes. “We have a large menu,” he adds, “and we have all kinds of things, all day long.”

ith dishes bursting with flavor, Max’s of Manila remains a popular choice for locals seeking delicious Filipino cuisine. “It’s traditional Filipino cooking,” says managing director Maly San Luis, “and through Max’s, we’ve been able to take that internationally — to Filipinos living abroad — as well as to newcomers to Filipino cuisine.” Max’s of Manila differs from other Filipino restaurants thanks to its fusion of flavors. “Here in Hawaii, many of the Filipino restaurants are more northern cuisine, which is an Ilocano style of cooking,” explains San Luis. “The northern cooking is exotic; it takes an acquired taste for it. Because it (Max’s) originated in Manila, it’s more central Filipino cooking, which, I think, is more acceptable to a wider group of diners. It’s Chinese mixed with Malay mixed with Spanish.” Max’s of Manila has two branches in Hawaii, both of which are located on Oahu — the Waipahu branch, which opened in March 2006, and the Dillingham branch, which opened last year. While the restaurant is popular with the local Filipino community, San Luis notices that Hawaii locals as a whole are likely to try the flavorful cuisine at Max’s.
“Our base is still Filipino because they know the restaurant; they know the name from back home,” she says, “but we are beginning to get a lot of adventurous locals who are venturing into Filipino food.” The international chain’s trademark dish — Max’s Fried Chicken — continues to be immensely popular. “Through the cooking process, you end up with a product that’s crispy on the outside, but very tender and tasty on the inside,” San Luis says. “Originally, that’s what started it all. “Crispy Pata is crispy pork knuckles,” she says. “It’s very tender and we cook it for hours, and then it’s deep-fried and served with a vinegar soy sauce dip.” Another of the restaurant’s signature dishes is the Lumpiang Ubod ($5.95), which contains shredded heart of palm mixed with pork, shrimp, vegetables and crab meat and is served with a fresh peanut sauce. “This signature dish we have is not offered by any other

restaurant,” San Luis says. “It’s a fresh lumpia; it’s not deepfried like the normal lumpia that is served.” Besides its variety of menu items, Max’s is a popular choice for parties and private events. “In both branches, we have private rooms that accommodate parties,” San Luis states. “Here (at the Dillingham location), we have two rooms; both rooms can hold about 35 each.
For bigger groups — parties up to 150 people — we accommodate them toward the back of the main dining area. We’ve got two rooms at the Waipahu branch — one can accommodate about 30 (people) and the other, 100. In the branch itself, we can accommodate parties up to 180-190 (people).” For the summer, Max’s of Manila is offering takeout package options. The Quick Picnic Package ($26.99) includes Max’s chicken, Lumpiang Shanghai (Filipino style eggroll) and the customer’s choice of Pancit (noodles). The KO Package ($16.99) comes with Max’s chicken (legs and thighs), Lumpiang Shanghai and Chicken Chicharon (the chicken version of fried pork skins). In addition to these summer specials, the restaurant has most recently expanded its dessert choices with the inclusion of the Caramel Bar, the most popular item featured at Max’s Bakery in the Philippines. “In the Philippines, there is the Max’s restaurant and the Max’s bakery; we don’t have a bakery line here yet in the U.S.,” San Luis says. “We launched that (the Caramel Bar) this past year; we offer that with our combo meal as a dessert and we also sell it for retail. It comes in six pieces for $6.99.”

Once seated, be sure to remove the napkin from its place-setting, unfold and place on your lap. Then, as the server begins to serve the meal, it’s important that you first
wait until everyone is served at your table before you start to eat. I know the sheer amount of dinnerware can be overwhelming, but don’t be discouraged — it’s actually really simple. Always remember that any food dish to the left and any glass to the right is yours. As far as utensils, start with the fork, knife or spoon that is farthest from your plate and work your way in. Usually the salad fork is on your far left, next to your dinner fork. Your soup spoon is on the far right, and is preceded by your beverage spoon, salad knife and dinner knife. Finally, your dessert spoon and fork are placed above your dinner plate. Beyond these rules, the best advice I can give you is to try and relax and just be yourself.

nation. Constantly being on the move this time of year means the need to fuel up without slowing down, and that’s exactly what active foodies will find at Hinone Mizunone. Since opening three years ago, the South King Street restaurant has gained a steady following of fans thanks to what can best be described as “affordable Japanese comfort food.” But what many people may not know is that Hinone Mizunone also offers bentos, perfect for these busy summer days. “We make anywhere from 40 to 50 bentos every single day,” says operations manager Eiki Tamaki. The bento boxes come in eight different varieties — Ton Katsu ($7), Chicken Katsu ($6.50), Karaage ($6.25), Hamburger ($6.75), Butterfish ($7.25), Salmon ($7.50), Saba Nitsuke ($6.75) and a Small Mixed Bento ($5.50) — and include croquette, egg, pickled vegetables, gobo and – See page 18

inone Mizunone literally means “sound of fire, sound of water,” and refers to the way in which the eponymous Japanese restaurant prepares its rice — the old-fashioned way in a big pot over a carefully monitored fire. “We don’t use a rice cooker,” says operations manager Eiki Tamaki. “We cook the rice in a big pot — you can see it in the front window when you enter the restaurant.” The end result, according to Tamaki, is rice that is sweeter and fluffier. In fact, it was the desire to share this style of rice with locals that prompted Masahiro Fujio to open his first U.S.-based Hinone Mizunone restaurant in Hawaii in May 2008. “Hawaii is a rice culture. People here eat a lot of rice — even at McDonald’s you can order rice,” exclaims Fujio, president of Fujio Food Systems, the parent company of Hinone Mizunone. “But even though people eat a lot of rice, they don’t respect the rice,” he quickly adds. Fujio gives the example of serving rice with an ice cream scoop, which cuts the rice and alters the texture and taste. This practice, he explains, is disrespectful to the rice farmers and their product. “It’s etiquette to the rice farmers to serve the rice well, just like it is etiquette for wine growers to serve the wine in a wineglass and not, say, a rice bowl,” Fujio says. “We wanted to show Hawaii a better way of serving and enjoying rice.” Mission accomplished, as customers of the family-friendly eatery have embraced Hinone Mizunone for its rice as well as its affordable selection of Japanese comfort foods. “(Japanese food) should be something people can afford to eat every day,” Fujio says. “I wanted local people to be able to come down and eat here as much as they can.” Fujio’s personal favorite dish on the menu is the Saba Nitsuke ($8.50). A true delicacy, the simmered mackerel plate is a top-seller both here and in Japan, as the company goes through a whopping 1,500 tons of mackerel each year! Ingredients: • 4 large portobello mushroom caps • 1/4 cup olive oil • 2 cups Dungeness and/or snow crab meat, drained well • 1/4 cup finely diced green bell peppers • 1/4 cup finely diced red bell peppers • 1/4 cup Spanish or Maui onions, finely diced • 1 tbs. chopped garlic • 1 tbs. chopped parsley • 1 tsp. sambal oelek or chili paste •1 cup breadcrumbs • 2 whole eggs • 4 cups spinach (half Okinawan, if available) • salt and pepper, to taste
Preparation: • Pre-heat oven to 425 F. Clean portobello mushroom and remove “gills,” then coat with olive oil in a large bowl and season with salt and pepper. Place on a roasting pan and roast for
20 minutes. • Saute green and red bell peppers, garlic and onions until onions turn translucent. Let cool. Once cooled, combine with the remaining ingredients. • Adjust seasoning to taste. • Remove mushrooms from the oven and place upside down on rack to cool slightly. When cool enough to handle, fill each one with the crab mix to make an even saucer shape. • Saute until brown in a large pan with crab side down first. • In another frying pan, lightly wilt the spinach then place a thin layer over crab and cut mushroom cap in half. • Place one half on top of the other so spinach meets, to make a sandwich. Cut in three wedges and place around plate with wilted spinach in the center. • Serve with roasted garlic cream and cabernet reduc-
tion. (See recipes below.) • Garnish plate with wholeroasted garlic cloves. Roasted garlic cream: • 20 garlic cloves, peeled • 1/4 cup olive oil • 2 cups white wine • 2 shallots, finely diced • 2 tbs. finely diced celery • 2 tbs. finely diced carrots • 1 bay leaf • 1 cup chicken broth • 2 cups heavy cream • salt and pepper, to taste. Preparation: • Place garlic and olive oil in a small roasting pan and cover over low heat on stove top. Roast until garlic is golden brown and soft, approximately 20 minutes. • Pour wine in pot and add the diced vegetables and bay leaf. Bring to a boil and let reduce until dry. Add chicken broth and reduce
by half. Blend in heavy cream and simmer for 5 minutes, then strain. • Place cream sauce in a blender with eight garlic cloves and blend. • Strain again then adjust seasoning. Cabernet reduction: • 1 cup red wine • 1 shallot, finely diced • 1 tbs. finely diced celery • 1 tbs. finely diced carrots • 1 bay leaf • 1 can beef broth, reduced to 3 tbs. • 1 tbs. unsalted butter • salt and pepper, to taste Preparation: • Pour wine in a pot and add diced vegetables and bay leaf. Bring to a boil and reduce until almost dry. Add reduced beef broth and mix in butter, then strain.
