W

hen the alarm clock blares loud and clear at 5 a.m. on weekdays, I dread the thought of crawling out of my warm and cozy bed. As I rub the sleep from my tired eyes, which at this early hour have bags under them, I barely have the energy to grab a bowl of cereal, let alone make a hearty breakfast from scratch. So, it’s the weekends when I can leisurely roll out of bed at 9:30 a.m. that I treasure most. Trust me, nothing beats waking up to the intoxicating aroma of freshly scrambled eggs, garlic, ham, pesto and melted cheese fused into the perfect omelet, with a tall glass of fresh-

squeezed orange juice that has me feeling refreshed and rejuvenated. This week, however, I was hit with a brilliant idea! Why not take the time to sample some of the best “Ono, You, Know� omelets our Island has to offer — on a weekday, no less? I was certain I would be in for a breakfast of champions that would have me energized to meet the challenges of the day. And although every omelet was tasty and filling in its own right, the only downside was that I was lured back to sleep with each kanak attack that hit me.

So much for a chip and chirpy favorite breakfast foods cozily morning. Now, where’s my cof- wrapped in melt-in-your-mouth fee? eggs, what more could I ask for? Oh, I know! How about a Mushroom Cheeseburger Omelet Pancakes & Waffles If breakfast is considered the ($8.25), featuring a homemade most important meal of the day, ground beef patty, mushroom then why not start off grand, and Cheddar cheese? See, a right? So, it’s no surprise that my cheeseburger constitutes breakgigantic appetite led me to this fast! There are a variety of newly opened restaurant just off of Nimitz. For owner Jason Sung, a passion for the restaurant biz runs in the family — his parents own Koa Pancake House. His business philosophy, he says, is “choke and cheap,� and believe me, that’s exactly what you get! Here at Pancakes & Waffles, a kanak attack is guaranteed. Stepping Up to the Plate KAHAI STREET KITCHEN STARTED AS A CATERING BUSINESS IN 2006. TODAY, THE EATERY HAS EXPANDED ITS SERVICES BY SERVING THE MOST DELICIOUS GOURMET PLATE LUNCHES AROUND WORDS & PHOTOS BY JO McGARRY

S

ometimes you walk into a restaurant and know immediately that it’s all good. For me, it never has anything to do with the environment, but everything to do with the people and the food. When I pulled up to Kahai Street Kitchen, I already knew I was in for some great food. What I didn’t know was that I was about to meet a team as enthused about their plate lunches, and as dedicated to customer service, as anyone at any of our city’s finest restaurants. Owners Bruce Watanabe and Nao Iwata opened their catering business in 2006. They were joined a little later by chef David Yamamoto, an experienced chef with a belief that gourmet plate lunches would appeal to everyone. Through word of mouth, and via a website where lunch specials are listed daily, Yamamoto’s gourmet plate lunches have secured a devoted following. I sat down with Iwata recently to eat lunch, talk story and find out why this tiny corner stop in Kalihi is fast becoming a must-stop location for devotees of great food.

NI: (Laughs) Well, we don’t spend a lot of money on the surroundings — we spend it all on the food — but people do like to sit here and eat. Even though (the surroundings are) humble, (customers) do wait for tables and enjoy eating here.

NI: People start calling about 9 or 9:30 a.m. We have certain dishes that run out quickly — every other week or so we make two prime ribs, so that’s about 25 to 30 orders that go pretty quick. And with the gumbo, when the rice runs out, then that’s the gumbo gone. It depends on the special, on how much we have. But it’s good to call early. JM: Anything you haven’t put into a plate lunch yet?

NI: Yeah, they don’t mind. A lot of times people will order 12 or 15 plates for their office, so only one person has to come pick up the food. But between 10:30 a.m. and 1:30 p.m., we can do 200 plates, so that’s a lot of people who don’t mind

Authentic Mexican cuisine comes to 11th Avenue

When you try the simply named Fish Orange Salad at Mexitlan Grill in Kaimuki’s 11th Avenue Atrium, you’re tasting a unique dish inspired by Francisco Dominguez’ childhood in Mexico City. The salad, cubed mahimahi served over iceberg lettuce, is topped with cheese and crispy wontons and drizzled with an orange sauce. The flavors are wonderful, and as a light, refreshing appetizer or entrée, the dish works really well. Dominguez sees it as part of his mission to introduce the true food of his culture to Hawaii. “When we were kids, we would take an orange, peel it and then sprinkle on a kind of salty seasoning,” he says, bringing the spices to the table as he speaks. “I wanted to remember that taste, and so I made it in the salad.” It’s a great example of the kind of food he would make if he wasn’t so concerned with keeping to the idea of “American-Mexican.” “If I started to make the kind of Mexican food that we eat in Mexico, the people here would not eat it — or they would not recognize it,” says Dominguez. “My idea is to introduce the food slowly and then people will see that the dishes are good.” For the most part, you’ll recognize almost all of the Mexitlan menu. There’s Guacamole Made-to-Order ($7.50), Nachos ($7.50) Chili Relleno ($14.95), Tamales ($14.45) and a selection of burritos that start at $9.95. But venture from the comfort-

zone Mexican dishes, and Dominguez has much to offer. Lobster Tacos ($12.95) are a unique item, featuring a grilled lobster mixed with sour cream, aurora dressing and spicy avo cream and served with Mexi rice and beans. “I don’t think that they have lobster tacos anywhere else,” says Dominguez. Chicken Mole ($17.25), sautéed chicken breast served with roasted pineapple and rice, features a brown mole sauce — richly spiced with chili peppers and cocoa. And try the Da Vinci Burrito ($12.95) for something that shows Dominguez’s desire to create new and exciting entrees. The burrito is filled with shrimp,

Monterey cheese, salsa, cilantro sour cream and topped with a chipotle Alfredo sauce. “It’s a combination of Italian and Mexican,” says Dominguez of the rich, hearty dish. For those who measure a good Mexican restaurant by its salsa, one dip of Mexitlan’s homemade smoky chili salsa should convince you of the restaurant’s potential for truly authentic Mexican food. You’ll find Mexitlan inside the 11th Avenue Atrium, next door to Bella Mia Pizzeria. Formerly a Japanese restaurant, a central teppanyaki grill serves as an interesting focal point in this bustling, colorful, must-try, new home to Mexican food.

Wine Tasting at the Row

R

uth’s Chris Steak House at Restaurant Row hosts a special wine tasting this Tuesday in collaboration with Robert Mondavi Winery. The limited-seating event begins with a cocktail reception and oysters, and is followed by a lateral tasting (a tasting of the same varietal from different vintages), and samplings of the 2007 Napa Valley Cabernet and 2006 Oakville Cabernet. Food pairings will include the restaurant’s

famous New York strip and a variety of dishes created specially for the event. Alan Suzuki of Constellation Wines will introduce the wines, and plans to add a sweet touch to the end of the evening. “I worked with Chef Philippe Padovani to create chocolate liqueurs to pair with ice wine at the end of dinner,” he says. “It was a really interesting experience, and the chocolates are outstanding.” For tickets or more information, call 599.3860.

Sweet and buttery goodness is found in three enormous fried chicken thighs covered in Sung’s famous honey butter and served on a warm golden waffle. Ocean House

Feeling the need for something relatively healthy, I ventured on over to Ocean House in the Outrigger Reef Hotel. There’s something calming about this oceanfront abode — I could practically feel the stress melting away and my body going into relaxation mode. Too bad I didn’t have my long board with me to catch a few waves. And as if things weren’t perfect enough, breakfast manager Chris Cole presented me with three magnificent omelets: the Hawaiian Frittata, the North Shore Omelet and the Outrigger Omelet. All are to die for! The Hawaiian Frittata ($12.95) is a threeegg open-faced omelet with sweet Maui onion, spinach, Portuguese sausage, Parmesan cheese and roasted potatoes — scramble that and top it off with melted Monterey jack cheese and you have one heck of an omelet. For a more classic approach, the Outrigger Omelet ($11.95) offers diners a three-egg omelet with hickory ham, applewood-smoked bacon, mushrooms, green onions and Cheddar cheese. Served with nine grain or buttermilk toast, I’ve deemed it your allAmerican dream omelet. However, the North Shore Omelet ($11.95) gives it some

hefty competition and is my favorite omelet of the bunch. Vegetarians love it, too. Nothing could be more appetizing than a healthy combination of fresh portobello mushroom, zucchini and Maui onion in a zesty vine-ripened tomato bell pepper sauce and Monterey jack cheese. Wailana Coffee House When that pang of hunger hits at 2 p.m. — or midnight, for that matter — and omelets are what you’re after, head on over to Wailana Coffee House. This Waikiki landmark serves up breakfast at all hours of the day and night and has done so for the past 41 years. Wailana has all your basic omelets like the Denver Omelet ($8.75) and the Farmer’s Omelet ($8.75), along with the Local Boy Omelet ($8.75), which kamaaina love because it’s loaded with green onions

and char siu. “We can make any omelet you want,” says general manager Kenton Tom. “If you want Spam and cheese or a Portuguese sausage omelet — we can make it.” Tom treated me to their most filling breakfast — the Irish Breakfast ($11.15), a three-egg omelet filled with corned beef hash, topped with Cheddar cheese, complete with a butter-grilled fresh pineapple spear, hash brown potatoes, toast, coffee and your choice of juice. t Panya Restaurant, sisters Annie and Alice Yeung have been making their Thanksgiving dinners-to-go with a local twist for seven years. And as word has spread of their fabulous, festive feats, demand increases every year. “We started out making about 50 dinners the first year,” says Annie, “and each year we’ve grown.” Luckily, the Queen Street kitchen is a

huge commercial space, and with a staff that operates like a well-oiled machine, turkeys and hams roll in and out of the ovens with ease. What makes Panya’s Thanksgiving dinner so popular has as much to do with a fusion of contemporary flavors and local favorites as it does with a traditional turkey and trimmings.

“We like to add different touches to our dinner,” says Alice, “and people seem to like the homemade-style of our sauces and dressings.” There are two complete meals to choose from: Honey Glazed Turkey or Honey Glazed Ham, and this year you can buy a la carte items, too. “So many people want the mochi stuffing and the gravy,” says Annie. “Now they can buy extra.” To make it easy, we did the hard work, and sampled the entire turkey and ham meal, to let you know exactly what you’re getting.

Chef Chai’s Rice Soup with Shrimp

Serves 4 | by Chef Chai Chaowasaree

Ingredients: • 1 pound shrimp, peeled and cleaned • 1 cup celery, sliced • 8 cups chicken stock • 4 cupsrice, cooked • 1 tablespoon Aloha shoyu • Large pinch sugar and black pepper • 1/4 cup green onion, cut about an inch long • 1/4 cup cilantro, cut about an inch long • 1 tablespoon ginger, thin slices

Shoyu Pork | 4 servings Ingredients: • 1.5 pounds pork about 1-2 inches thick • 1 tablespoon vegetable oil • 2 cups Aloha low-sodium soy sauce • 2 cups chicken stock • 1/2 cup sugar • 1 tablespoon ginger • 1 stalk green onion • 1 stalk Chinese parsley • 1 head garlic, cut in half • 3 bay leaves • 1/2 tablespoon black pepper • 1 cinnamon stick • 10 cloves • 3 star anises • 2 pieces dried shiitake mush-

Preparation: • Add chicken stock and celery, bring to a boil, add shrimp on high heat, remove all the scum; add cooked rice. • Season with sugar, pepper, Aloha shoyu, then add ginger, green onion and cilantro. Turn off heat. Tips: Make sure to taste the soup before serving, as some chicken stock may have no sodium. Add more shoyu or salt, if desired. Shrimp can be substituted with
