worth — but you can bet I won’t be throwing the birds any pancake bits from the following restaurants because, truth be told, I’m not into sharing “Ono, you know” pancakes with anyone!

IHOP Hawaii With a name like the International House of Pancakes, it’s safe to say that you can’t expect anything less than delicious pancakes here. Known for its award-winning Original Buttermilk Pancakes ($8.29) with

he pursuit of the perfect pancake traces its roots to ancient times when cooks relied on freshly fallen snow as their secret ingredient. The belief, at the time, was that ammonia contained in the snow would cause pancakes to become light and fluffy. Today, cooks utilize much more to make their pancakes sing — yeast, baking soda and a bevy of toppings, to name a few. That’s what I discovered in my recent quest to find the most delectable pancakes in town: Whether my search was for something fruity or devilishly sweet, the restaurants had it all! Oh, and for all you wondering about your love life, here’s an amusing bit of pancake lore from the book Better Homes and Gardens Pancakes and Toppings by Darlene Kronschnabel: “If you throw pancakes to the rooster and he eats them without calling the hens, you will remain single. If he calls the hens, you will marry.” Take that for what it’s

“come hungry, leave happy,” as the portions are giganormous! Each will leave you stuffed and if you’re not quite ready for the challenge, I would suggest opting for the short stack — definitely a more doable option. Pair your pancakes with butter or your syrup of choice, be it maple, strawberry, blueberry or butter pecan. A sugar-free syrup also is available for those on a sugar-restricted diet. And if you’re yearning for something a little more fruity, sink your teeth into the Double Blueberry Pancakes ($10.99), four buttermilk pancakes filled with blueberries, topped with warm blueberry compote and a creamy whipped topping. Or, try the Strawberry Banana Pancakes ($11.49), filled with slices of fresh banana and crowned with a cool

Cooking Up a Friendly Atmosphere

inone Mizunone may be one of the most cheerful Japanese restaurants in Honolulu. Guests are greeted with hearty welcomes as they enter the cleverly redesigned eatery — located at the former Taco Bell site on South King Street — with many of the customers acknowledged by name. Amidst clean, contemporary décor and truly speedy service, the restaurant team makes it a point to stop and chat with patrons, both young and old. Since opening two years ago, the restaurant and its unpretentious “home cooking” have garnered a loyal following, including those who argue that Hinone has the best rice in town. The rice, cooked in a traditional pot, is light, fluffy and sweet. I stopped by to chat with operations manager Eiki Tamaki about Hinone Mizunone’s home cooking and the secrets of kamadaki gohan.

JM: There’s a hustle and bustle around this restaurant at lunchtime that’s quite amazing to watch. Orders are flying out of the kitchen! Do you consider yourselves to be a “fast food” Japanese restaurant?

ET: (Laughs) Well, we do pride ourselves on being able to serve people quickly — especially during lunchtime, when we try to get the orders on the table within five minutes. So yes, fast!

JM: The teishoku style is very familiar to people in Hawaii, but your rice is quite different. It’s very pillowy, and a little sweet. Tell me about the cooking process.

ET: We don’t use a rice cooker. The rice is kamadaki gohan, which is rice cooked in a pot. It’s a more involved way of cooking, rather than using a rice cooker and just flipping a switch. With the rice pot, you have to watch the water, stir the rice, watch the heat. It’s more involved. And the rice has a sweeter taste with a fluffy texture. People can taste the difference immediately. JM: I know that home cooking is what you pride yourselves on serving. What dishes best represent that? ET: Our dishes are simple and the kind of foods you’d find in homes in certain parts of Japan. Not fancy, just good, simple food. We have lunch specials that run every day for $8.50, and our evening teishoku are just $16.75 for two choices of entrée and rice, miso soup, sides and pickles.

JM: But because you’re so busy, I’m reluctant to tell people to rush over for lunch. ET: Yes. Definitely the best time to come is if you can wait till later at lunchtime or later in the evening. JM: I know this is not really relevant when talking about restaurant food, but I do like the meaning of the name Hinone Mizunone. A farm-to-fork feast

Kai Market celebrating Hawaii’s paniolo tradition this summer

I

t would be completely inaccurate to refer to the cornucopia of island foods at Kai Market as a “buffet.” The term, after all, usually conjures up visions of sad salads, over-cooked fish and long lines for dessert. Instead, the food at Kai Market, the Sheraton’s newest dining experience, can best be described as a farm-to-fork feast, with an endless array of locally grown greens, Molokai potato salad, Waialua asparagus, Maui surfing goat cheese, Kula farms strawberries, Waianae valley baby bok choy, Aiea watercress, pan fried crispy Hawaiian sea bass and alae salt-crusted, and slow roasted prime rib — all of which make up a tiny portion of the restaurant’s gorgeous display of food. Even better, the menu changes nightly, offering guests an inspired look at the many levels that make up our island foods. This summer, the restaurant offers a twice-weekly barbecue that celebrates island produce and Hawaii’s paniolo tradition. As guests fill their plates with grilled steak, roasted chicken and fresh island fish, independent filmmaker Edgy Lee’s documentary, Paniolo O Hawaii, plays on screens throughout the restaurant. For Kelly Sanders, Sheraton’s general manager, it’s all part of Kai Market’s mission. “Of course our restaurants are about great food,” says Sanders, “but this also is about bringing a story into the restaurant, too. A barbecue is a great family thing to do, and this is a way for us to invite families to eat, share some of the amazing stories of the paniolo and enjoy recipes that have been researched by our chefs. “It’s a unique way to bring food to the table.” It’s also incredibly good food, largely because chef Darren Demaya has an uncommon devotion to his profession, creating original dishes from local ingredients, and recreating recipes sent in by guests. “What makes the difference for me,” he says of the recipes, “is the stories that come with them. Sometimes they go back for generations.” One such example is the paniolo

night potato salad, a recipe shared by Sheraton employee Sean Ono, and recreated by Demaya. “Sean’s mom passed away, and this potato salad was the best his family had ever had,” says Demaya. “Of course I wanted to try and make it for him. What was touching for me was when the whole family came for dinner — three generations of his family — and they were so happy to see other people enjoying their family recipe, and to have it still going strong.” Looking for an old-style taste of chicken hekka or real pipikaula? You’ll most likely find them here, along with dozens of locally inspired dishes that tell the story of Hawaii’s rich culinary culture. There’s a menu of plantation inspired foods offered Mondays and Wednesday, and on Friday and Saturday the focus turns to seafood. And for those craving barbecue, Paniolo Nights on Sundays and Tuesdays may offer the solution to their hunger pangs. Items include freshgrilled corn, baked beans, whole five spice oven roasted chicken with slow braised baby leeks, garlic and herb butternut squash smashed potatoes, Niihau-style seafood chowder, clams, baked potatoes, rice, corn bread and biscuits, prime rib and fresh fish. Meanwhile, the side dishes include watermelon salad with feta, Caesar salad with baby romaine, and hundreds of peel-and-eat shrimp. Demaya also shares his island-style mac and cheese with pipikaula. “We like to put a local twist on everything,” he says. You’ll also find a strong contender for the finest glazed short ribs in town in Demaya’s ribs — kalbi-style baby back ribs with a bourbon glaze. They’re slow cooked and then covered with a mango barbecue sauce. “I hope they’re good,” he says modestly of the sweet, succulent ribs. “I think people like them.” If you’re in the mood for a dining experience that speaks of Hawaii, both new and old, head to Kai Market for a summer evening of unusually good food. 2 0 1 0

Island-grown products the focus of Farm Fair

D

on’t miss the annual Hawaii State Farm Fair today on the grounds of Bishop Museum. The agricultural extravaganza offers activities for all ages and includes a 4-H livestock exhibit of lambs and cows. This year’s theme focuses on Hawaii’s agricultural independence, and there’s plenty of evidence to support our growing efforts at producing more food in the islands. Tasting booths will offer examples of Hawaii-grown and Hawaiimade produce, and Kau coffee farmers Michelle Galimba of Kuahiwi Ranch and Will Tabios of Kau’s Rising Sun will discuss their internationally award-winning coffee. “Will’s coffee won ‘Best in Origin’ and took seventh place at the SCAA (Specialty Cupping Association of America) International Cupping Awards,” says promoter of local agriculture, Dan Nakasone. “It’s incredible that these small farms on the Big Island are making some of

the best coffee in the world. Crispy Frog Legs with Hamakua Mushroom Risotto

Hamakua Mushroom Risotto

10 pieces frog legs Ingredients • 1 tablespoon chopped garlic • 1 tablespoon chopped shallot • 1 tablespoon chopped ginger • 1 tablespoon chopped green onion • 1 tablespoon chopped Chinese parsley • 1 tablespoon whisky • 2 tablespoons Aloha Shoyu • 1/8 tablespoon ground black pepper • 1/8 tablespoon sugar

Preparation: • Clean frog legs, set aside • Combine ingredients and use as the marinate • Marinate frog legs for 2 hours or overnight. Turn frog legs every hour to ensure they are marinated evenly • Remove legs from the marinate and dust with flour, then deep fry at 300-350 degrees in oil or until the legs turn golden brown. Set aside and serve on top of risotto

Ingredients • Serving 2 • 1 cup Hamakua Mushrooms • 2 tablespoons olive oil • 1 tablespoon chopped fresh leek • 1 small clove fresh garlic, chopped • 1 clove fresh shallot, chopped • 2 cups of Aborio rice • 1 ounce dry white wine • 3 cups chicken stock • 2 tablespoons diced zucchini • 2 tablespoons fresh green peas • 1/2 cup heavy cream • 1/2 cup shredded parmesan cheese • 1 tablespoon unsalted butter • 1 tablespoon truffle or truffle oil • pinch of fresh herbs, lemon zest

Preparation: • In a pan, sautée shallot, garlic and leek with olive oil for a minute at medium high heat, just to sweat the items. Then add Aborio rice, cook for another minute and add white wine and one quarter of chicken stock. Keep stirring to prevent the rice from sticking to the pan before slowly adding the stock. Cook the rice for 15-20 minutes or until the rice is about 90 percent cooked. • In another hot pan, sear the mushroom with a tablespoon of oil or butter both sides until they cook perfectly, for 1-2 minutes. Add risotto. • Add heavy cream, zucchini and green peas, and cook for a minute before adding butter, truffle and Parmesan cheese. Cook for 30-45 seconds, then turn off the heat. Add fresh herbs and lemon zest with a pasta bowl. Plate some risotto in the middle of the bowl and top with sautéed frog legs.

The pancake mix is so good that it’s even available for purchase. However, it’s not the mix that makes the pancakes so ono, rather it’s all in the technique. “Some chefs have been here for more than 30 years,” says general manager Michael Skedeleski. “The secret is that we use really cold water in the mix and keep it at a lumpy texture. It helps to keep the pancakes fluffy and light,” he adds. I highly recommend the Strawberry Whip ($10.50), a definite choice of locals and tourists.
